FALL SESSION 2019

BLOG POST #3,276 AT THE AICP-END

382 DAYS UNTIL ELECTION DAY 2020

My family has firsthand experience when it comes to opioids…
Visalia, CA 93277, 10-20-2019 Sunday:  Folks, we are living in the ‘End Times,’ or so it seems what with the opioid crisis that is besetting our country with misery and causing millions of our fellow citizens either to become addicts or to die in the streets, victims of a warfare being waged on our nation by (1) China and (2) Mexico as well as some bit players who aid in the transit and/or manufacture.
I think all of us have been in severe pain at one time or another over the course of our lives.  If you work in the world of professional foodservice, you most likely have been a victim of pain, perhaps excruciating, debilitating pain.  I remember the first time I cut my finger as a kid.  I was helping my father cut meat, learning the ropes, when I came down upon my thumb with the meat cleaver and there but for a fleshy thread lay my digit on the table among the sliced beef.
My dad said, “What the hell, JT,” gathered up my digit, stuffed in a bag full of ice and off we went to the emergency room.  I can still hear my poor old mother wailing as we left, “I told you he was too young to learn the art of meat-cutting.”
Well, the doctors reattached my thumb and although it works pretty well some 50 years later, it has never been right in the sense that it seems a bit crooked and is seldom free from pain.  There is always an element of pain, especially as arthritis sets in and problems with carpal tunnel syndrome have dogged me.  I wish I could say that my thumb was my ONLY work-related injury but I can’t.  Things happen when you work with sharp knives, meat saws, fire and flame, and slippery floors, you name it, stuff happens and none of it is pretty or fun to experience.
My wife has had to undergo two knee replacements having worked in restaurants as long as I have and she has always had to live with a degree of constant pain.  I hate to say this but in the ‘old days,’ kitchen crews and floor servers and bartenders and what not treated their pain with moderate to large amounts of alcohol as well as found other ways to deal with their work-related discomforts.
In recent years, doctors have been much more free-handed in dispensing opiates to an already opiate-flooded world and it is easy to get hooked on the stuff if one lacks the fortitude to be a good patient and to get rid of whatever remains in the prescription bottle after one’s pain seems to moderate somewhat.
Back to my wife, Lena, she had to be on opiates for months because getting one’s knees replaced is not easy nor is it attractive to a woman with hot legs.  However, working the floor for 10-18 hours per day leaves its marks and over the years, she has had to seek help, especially after being rear-ended one day while at a stop light by a pickup truck driven by an intoxicated farmworker.
The ensuing accident left her in a bad way and it took months for her to recover.  She ended up having one knee replaced and then the other and the road back was extremely long and painful.  The doctors made sure they treated her pain with copious amounts of painkillers and like most normal folks, she became dependent upon the medications.
When the physicians finally decided that they should wean her off what they had prescribed her, it was not easy.  In fact, she had to undergo at least two stints in rehab facilities because the downside of living through the injuries from the accident and a lifetime of restaurant work was that she became an addict and extremely dependent upon the meds.
Now, Lena knew she was addicted and that she had a problem.  She never tried to seek out extras on the street which in the world of professional foodservice are not all that difficult to do, far too many people waiting tables, bussing them, washing the dishes, working the cooks’ line, or tending the bar- not to mention delivery personnel- have access to all sorts of medicinal ‘helpers,’ legal or not.
Not to go into great detail about it, the first time she went through withdrawals, she was able to go off the opioids for about six months until a long stretch of heavy business forced her to seek help again.  She went back to her pain management specialists and they moved her from one prescription to another which they said would not be as addictive compared to what they had given her.  She went from a real opioid to a synthetic and the problem became more advanced and even more difficult to beat.
She had to go to a rehab facility for about four months the second time.  Imagine the cost.  But getting my wife back to me was worth any price and so we did what we had to do and by the time she was in recovery and came back home, she was in good shape.
The biggest nation importing opioids into the country is China[i].  Some of my colleagues have said they are waging a ‘reverse opium war’ on the United States so they can dominate us by addicting our citizens to the poisons they and the Mexicans and others pour into our country.  No matter we voted overwhelmingly for Donald Trump.  He said he would stop the scourge and he is working hard to keep his word.
Friends, we must do whatever we can to fight this blatant attempt at destroying our country from within, even if it means buying NOTHING from China and buying American or some other country NOT in the business of dealing addictive, destructive drugs to our people.
See you next year.   Let’s support Trump and let’s pushback on those seeking to ruin our country.

The above cartoonish caricature of me by Bakersfield, California, by up-and-coming street artist, Simone, resembles me back in the 1980's when I was an Executive Sous Chef at a hotel in Monterey, California, 10-20 years later.  I originally came from Salinas, California, spent time in Fresno and Bakersfield, and currently am working at a fine-dining restaurant in Visalia, California.  I began cooking in 1967 when I apprenticed under a top chef working in the Napa Valley.

[i] China is breaking every international law and norm by pouring opioids into the United States.  We hope that President Trump continues waging economic warfare against them to force them to play fair as if they don’t, we must cut the ties between them and us.
[ii] Do you think it has worked?
[iii] Up until Barack Obama became president and Hillary Clinton his secretary of state, the Libyan dictator was working with the United States.  Instead of fighting ISIS, Obama worked hard to topple this man.  What a scumbag.

FEATURED ALBUM OF THE DAY:

The Climax Blues Band released an album by Pete Haycock and his guitarist friend, Robin George, entitled, “Broke Heart Blues” in 2015.  The two collaborated with other musicians to knock out the blues a final time as Haycock’s health was not where it should be and in fact, he died from the results of a heart attack on October 30, 2013 at the age of 62.  The album came out posthumously and is one that all fans of the band definitely need to own, as it is superlative, a masterpiece—at least, we think so.

SPECIAL ALBUMS OF THE DAY:

Posted @ the Sunday, January 27, 2013 Blog Post:

Today’s Frank Zappa and the Mothers of Invention album is their seventh album, “Mothermania,” which appeared on record store shelves on March 24, 1969.  This is a somewhat difficult album to find although Amazon.com does have it.  It is somewhat of a ‘best of album’ plus more unique and interesting cuts, one that every collector alive must have.   As always, this is a great record, one every fan of the musical times needs to own and you can own it simply by visiting whatever site you do for nothing but the best in rock-and-roll music.

Posted @ the Friday, September 12, 2014 Blog Post A:

Robert Plant came back with yet another decent seller, “Dreamland,” which he released on July 16, 2002.  He jettisoned his old band and returned with a somewhat new one- Strange Sensation- and with a new sound more reminiscent of his earlier work with Led Zeppelin.  Joining him were Paul Thompson and Justin Adams (guitars), John Baggott (keyboards), Charlie Jones (bass), and Clive Deamer (drums).    This album garnered awards for its covers of blues and rock classics.  Say what you will, Plant no more needed Led Zeppelin as he was moving beyond that stage of his life and charting a new course.  Please, give it a listen.
