Dinesh D’ Souza is a powerful filmmaker
Honolulu, HI, 03-06-2018 Tuesday:  Aloha, welcome once more to the BEST blog on the Internet that allows professional chefs, food service professionals, and even people working in associated industries to share their thoughts, comments, ideas, and even their complaints.  We are always seeking NEW chef-authors willing to become one with us, become part of a family that seeks to empower those whom it calls ‘members.’ 
What’s more, we love doing what we do and several years have passed since we last added a new chef-blogger so if you believe you might be the one, please send us your resume and a sample of your writing to the post office box address listed at the top of the page and we will gladly get in touch and see if you fit the bill.   
Moving on, I recently watched Dinesh D’ Souza’s somewhat new film (we are always way behind in our movie viewing), “2016: Hillary’s America,” his follow-up to “2012: Obama’s America.”  I must admit, the movie made an impression upon Lalo and me, one that transfixed and opened our minds to the history of the Democratic Party and its long-established connection with racism on the Mainland. 
Even here in Hawaii, racism has been a long-standing issue, but things did not begin that way, the negative thoughts and feelings from the Mainland found their way across the ocean from BOTH east and west, not just from one direction. 
Do not ever let anyone tell you that racism is not real here or that it does not exist in the Islands because it does.  Mainlanders do not always see it because they visit the grand hotel resorts, go to touristy places, spend time on joint tours with other like-minded visitors, and interact with Locals who are used to interacting with them. 
However, if you come from the Mainland and go to work for the State of Hawaii or one of the several Hawaiian counties (Oahu, Maui (includes Lanai and Molokai), Kauai, or the Big Island) and move into a locals’ neighborhood, then you see the OTHER side of Hawaii, the one that folks unassociated with the Islands call the ‘dark side.’ 
In many ways, white mainlanders who have never experienced racism often experience it here and while it takes them aback, it also provides an education that cannot be obtained anywhere else in the United States. 
It was white people, after all, who forced our queen to abdicate for her ‘own safety’ and added us first as a territory and then as a state followed by the Japanese who seemed to come here so they could run the bureaucracy and the various institutions such as law enforcement that the Yankees held open for them. 
I mean, first time folks moving here to the Islands who get their salt-encrusted car off the Matson barge when it docks on Oahu or on Maui usually find themselves pulled over by a beefy Japanese-American Hawaiian cop who gives them the ‘what for’ so they know to obey the laws.  It is akin to a rite of passage.
Back to the film, I must say, it was somewhat depressing to see how the political party—MY party (affiliation, at least)—has done everything imaginable to conceal its past while transferring it onto the Republicans who now through constant repetition of the charges millions of Americans now see as the ‘racist party.’
The Democrats also bear the blame for slavery, lynchings, Jim Crow, and the rest of the despicable things that haunt American history and yet, people somehow believe the Republican Party is the egregious one, one that forced people to live in ghettos, slums, and in other ramshackle accommodations so it could remain in indefinite power.
Yes, the Democratic Party is responsible for the liquidation of the Native Americans in the same way it subjugated the Islands.  Granted, we did not suffer to the extent the Native Americans did but how would you feel if a looming global power far stronger than you suddenly engineered a coup d’ êtat, deposed your queen, and said you now ‘belonged to them?’

This is a photo of me back in the 1980’s when I was working at a hotel in Honolulu, HI, on Waikiki Beach.  I began my career in the early 1970’s when I apprenticed to cook under one of the masters on the Big Island where I was born.  I moved to Oahu in the early 1980’s after having worked in both Kona and Hilo, HI, and have been there for most of my professional career.  I have also worked on Maui for a few years (1995-1998) and have been on Kauai (2001-2003) before returning to Honolulu.  My goal is to prepare the next generation of chefs for the future and to help the underprivileged in their struggle to attain careers in the foodservice industry.

Live at Topanga Corral” (1971)





Canned Heat next released a live album recorded earlier in their career, “Live at Topanga Corral” (1971).  (The show took place at the Kaleidoscope, not at the TC as the title suggests but what the heck—it is a great show from 1969.  This is a great CD capturing the band at its stoned, smoking best, Bob “the Bear” Hite lets everyone know he is feeling ‘no pain’ and the band rolls into action, rocking-and-rolling.  There are many great tunes on this CD, including “Bullfrog Blues” and “Dust my Broom” by the great Elmore James.  If you want to hear 1960s rock-and-roll music at its best, then this CD is the one all of you need to buy, add it to your collection by going to Amazon.com by using our link and once there, get it however you like it.  We know that you will concur with our assessment of this amazing CD!
