Welcome to St. Patrick’s Day 2016 at the American Institute of Culinary Politics-Elemental News of the Day
Pasadena, CA, 03-17-2016 Thursday: Today is St. Patrick’s Day, which is a great time to be a restaurateur because people LOVE to drink whenever there is a ‘holiday.’  People love Cinco de Mayo, just as much as I do because they also love Oktoberfest—now, that is a good one, too—I love foreign food and drink and make my living serving it.
Everyone enjoys knocking back alcoholic beverages anytime we can celebrate some sort of holiday regardless of how mundane or made up, it might be.  You can bet all of Pasadena, California’s restaurants just as across the greater Los Angeles area and the nation will be celebrating this holiday from the time the Sun rises until the time it heads west for the night. 
We will serve green beer; we will sell hundreds of pounds of slow-cooked corned beef with crates of cabbage.  Parslied potatoes, Colcannon, soda bread, baking powder biscuits, you name it, we will sell it and people will stand in lines outside the door and winding around the block just to taste the way WE make it. 
Slow cooked, brown sugar-caked-and-baked corned beef steamship rounds are phenomenal; people snap their fingers and smack their lips—absolutely splendid!     
Political Correctness has taken away much that people once enjoyed
Now, everyone knows I am a Democrat who is a professional chef and a professional chef who just so happens to be a Democrat. 
One of the problems in recent years regarding holiday themes is the sad fact that POLITICAL CORRECTNESS—the infamous ‘PC’—now looms as a specter over each ethnic festival. 
We hear crazy stuff that university campuses no longer can hold ‘Mexican Night’ in their cafeterias because it is ‘insensitive’ and ‘hurtful’ to Latino students even though people of all skin colors and hues love eating tacos and enchiladas. 
Moreover, we hear that on Halloween, white folks cannot dress up as Mexican banditos or as Chinese laborers—Coolies, if you will—because it might anger Chinese folks.  Others become angry if they see black folks going about dressed as wee folks, you know, Leprechauns. 
We hear all sorts of things we cannot do anymore and it makes many of us blessed with both brains and common sense sad because it is harmless fun.  People like masquerade balls, they like being something or someone else for a short time and they do it without evil intent.  Yet, their fellows come down on them as would a load of bricks if they do something someone somewhere deems ‘hurtful’ to someone else—even though it might not be.  
No one recalls exactly when this insanity began
No one is sure at what point, we began moving down this path, at one time, the nation and the world were SANE.  Black people could dress up like Tyrolean beer burgermeisters; white people could dress up in black face as jazz singers, Latinos, could dress up as Egyptian slaves building the pyramids whereas others could dress up as Hitler and white kids could dress up as black rappers. 
Now, everyone looks at everyone else and begins to bawl, tears running down their faces as they scramble to find the nearest PC policeperson so they can ostracize and punish those they consider ‘evildoers.’ 
What the heck has happened to the country?  I cannot even write ‘policeman’ anymore, I have to say, “POLICEPERSON,” this is crazy and yet, it is what it is!  
Now, we have a brand-new protected group
Now, we not only have to watch out for that, we have to keep an eye open so as not to insult or hurt a transgender person. 
Back when I was growing up, we looked at men who wanted to dress up as women as sick SOBS, (at least, that is how my parents schooled my siblings and I) whereas now, they are a protected class.   
Worse, if we business owners mislabel the sign on the door of the commodes, in some places (New York City), one can find him-or-herself hit with a massive fine. 
While it is none, of my business, whether a man wants to prance around in female clothing or not, I do not feel I should have to go out of my way to give them a ‘safe place’ to go take a leak.   Here is the deal: if you have a schlong dangling between your legs, go into the men’s room and if you do not, then go into the women’s room.    
I have to watch myself around my younger employees
Even my younger employees have gone nuts going down this path and I have to be careful not to appear ‘insensitive’ to them lest they rat me out to the PC authorities. 
They take this crazy stuff seriously and there are times, I would love to slap them across the face, which is WHY we at the blog write with pen names, we cannot say some of the things we have the ability to say here at the blog if we used our REAL names. 
Ergo, for those of you, who think we are all bull-mongers, let it go, you would do the same thing if you felt you were under intense scrutiny and people could ruin your business.  Look at the poor couple that owned the bakery and did not want to bake a wedding cake for a lesbian couple—they lost their business and own a substantial fine—is that fair?   
Let us not forget the lesson of Donald Sterling, former owner of the Los Angeles Clippers NBA franchise
What’s more, let us recall the case of Donald Sterling—former owner of the Los Angeles Clippers—that man said some improper things in the solitude of his own home and to someone with whom he felt he had a reasonable expectation of privacy, his mistress, V. Stiviano. 
What he said was not correct—but at one time, even if people said stupid stuff, it did not destroy their lives or cost them their businesses—and the NBA took away his profitable franchise. 
Here is the deal: when a person cannot speak his or her mind in the comfort and seclusion of their own home without someone recording them and then using it against them, we are living in the Soviet Union.  Hell, the situation is even worse than that because even in the crapper, we no longer have the reasonable right to the idea of the sanctity of our personal privacy.  
I am not defending racists; however, I am defending our freedom of speech rights
I hope you do not misinterpret my words because I am not defending racist scumbags but in the time of my parents, they used to say, “I may not like what you say but I will defend to the death YOUR right to say it.” 
In essence, what they were saying is that ‘we do not care for your language but the protections of the First Amendment guarantee your right to say whatever stupid feculence you are saying and we will defend your right to say it.’ 
Now, however, say something out of line and there is no second chance, people in their teens and in the twenties come after you like fascist banshees.  They take you to court; they tattle to the PC police, they make your life miserable and then the readership questions as to whether or not the person writing a blog post is a REAL person?  Of course, I’m real, I just do not want to lose every customer and every friend I possess as well as the business I have spent years building.
Political Correctness is WRONG
As I mentioned early in this essay, I am a Democrat and a professional chef, you can put them in whichever order that pleases you but that is who I am.  I think political correctness is WRONG, I think people are better off when they hear things that might sound hurtful to them because it makes them better people. 
Nowadays, university and college campuses have to have SAFE ROOMS so students whom certain speech might offend can go find refuge there, just as if they could crawl back into the wombs of his or her mothers.  This is insane, I raised my children to be better than this, to follow the standards set by my parents—their grandparents—that freedom of speech is imperative to a free and functioning society. 
Sure, there are numerous Republicans and some Democrats I would love to give a knuckle sandwich but I ignore what they say and let them say it.  
Unfortunately, the young people want censorship, minorities and ethnicities want to go backwards in time and re-segregate themselves for ‘protection.’  Our country is in deep trouble and unless we wake up and put it in order, our grandchildren will grow up under future Stalinists and Maoists. 
Sounds crazy coming from a Democrat, I know; however, I see the mess we have placed ourselves in and know that we must do something to save ourselves.  Have a great St. Patrick’s Day, dress however makes you happy and remember to cherish our Constitution, as it is the ONLY thing that separates us human beings with thinking minds and beating hearts from the beasts.

  1. Fritz lambastes the dimwits who have traumatized the nation’s younger generations through instilling the idea of POLITICAL CORRECTNESS in them. Simply by saying that this is plain LOCO, I am sure I am committing multiple microaggressions. What has happened to the country is the question my friend and colleagues poses and he also points out why most of us write using pen names and avoid sharing old photos of ourselves. We have profitable food service businesses and sure as hell do not want the young and dumb protesting our rights to FREEDOM of SPEECH—what do you say about that, folks? / Posted by Chef Elmer K.
