Bakersfield, CA, 10-18-2015 Sunday: I am grateful that I have survived my week and that you have remained here with me.  I also am grateful the Communist Chinese have accepted our apology over someone here at the blog slamming their Alibaba marketplace online.  Look, if the Chinese would like to cut us some checks to promote their web service then we will happily do it but until everyone here at the blog begins receiving a monthly check of $5,000 plus our pick of the goods, we will refrain from giving them a big thumbs up.  People lack confidence in the Chinese because all too often, the goods they ship to America kill our pets, give our children autism, and make sane people go crazy.  We want to TRUST you, China, so help us do it and maybe then, we will give you the BIG nod.  Okay, let us make a final batch of muffins:  



(#1742)  FRESH CRANBERRY-NUT MUFFINS



Fresh cranberries are marvelous fruit; they lend themselves well to so many things besides cranberry sauce at Thanksgiving.  Nowadays, we can find them all year round and keep them in the freezer.  This particular muffin recipe is simply amazing, beloved by all who have the opportunity to try them.  Add them to your cookbook of recipes and you will find that people love coming to visit you during the winter holidays, as this is definitely an excellent muffin recipe!

Yield:  12 medium (3/8-cup) or 18 small (0.25-cup) muffins / Mis-en-place: 2 hours:

Method:

1.      Mis-en-place: have everything ready with which to work! The first thing you must do is to freeze the fresh cranberries.  Preferably, one does this overnight but if you must make them sooner than that, freeze them for at least two hours.  Once rock hard, place them into the bowl of a food processor or shortcut and grind them to “rough” status but do not pulverize them so much as to practically liquefy them, as you want them to stand out within the batter.  After grinding them, return them to the freezer after tossing in a small amount of cake or all-purpose flour to give them individual distinction.

2.      Next, double-sift the next EIGHT ingredients listed and then stir in the zest and walnuts then set aside until needed. 

3.      Prepare your muffin pan(s) by using only reflective bakeware such as stainless steel or aluminum, never dark bakeware if you can help it as the former deflects heat away from the muffins rather than absorbing it as does the latter.  This helps keep the finished crumb (the body) of the muffins lighter, less crisper, and much tastier.  Spray the pan(s) heavily with PAM Baking Spray, Crisco Pan Release, or some such other food release spray.  Then, line the cups with paper or aluminum liners and finally, spray both the liners and the top(s) of the muffin pan(s) heavily with food release spray, too, as this makes the process of de-panning the muffins and the liners by the guests much more easily.  Professionals never want the guests to remove the liners taking part of your beautiful muffin with it—this is a pro “no-no!”

4.      Now, hook up the Hobart or Kitchen Aid mixer and equip it with the PADDLE attachment, never the whip as the latter incorporates excessively much excess air, thereby creating a potential collapse. 

5.      Add the egg, sugar, and oil and beat them at medium-high speed until you cream the mixture together thereby causing it to lighten and to become fluffy.  This essential step guarantees a lighter, finished product, essential for favorable results.

6.      Preheat standard oven to 400°F or convection oven (fan “off”) to 350°F.  Place a pan of hot water on the oven floor to humidify the oven. Add the remaining ingredients listed up to the “Finish” to the mixture, blending well on low speed.  Scrape down both bowl and paddle. 

7.      Now, begin combining the DRY mixture with the WET using the least amount of mixer rotations necessary in order to combine the two parts together.  Do NOT worry about lumps as they bake out during the cooking process.  The important thing here is NOT to over-mix the batter thereby causing the gluten contained in the flour to overdevelop and causing the finished product to become chewy, tough, and/or disgusting. 

8.      Now for the “tricky” part: remove HALF of the batter from the mixing bowl and place half of the frozen cranberries atop it.  Return the other half of the batter atop it followed by the rest of the cranberries.  Now, using a rubber spatula, fold them into the batter with slow gentle strokes in order to incorporate them as best you can without overly discoloring the batter.  Work slowly, taking care to scrape from the bottom of the mixing bowl up and then, when you have completed the task, stop stirring the batter.

9.      Rest the batter for 10 minutes, then, scrape down the bowl and paddle attachment.  Now, using a #10 ice cream scoop (3/8-cup or six tablespoons) for medium-size muffins or a #16 (0.25-cup or four tablespoons) scoop, fill the cups almost to the rims.  Should you have any empty cups, place about 1-2 tablespoons of hot water into them in order to equalize the pan(s) during the cooking procedure.

10. Gently shake the pan(s) to settle the batter, then place on the middle oven rack(s) and if using a convection oven, flip the switch into the “on” position now.  Bake for 10 minutes, then drop the heat by 25° (standard to 375°F and convection to 325°F) and remove the pan of water from the oven’s floor.  If using a large oven, rotate the pan(s) around it using only the middle shelves.  If using a home oven, should you have more than ONE pan of muffins, bake them in shifts.  The problem with most ovens is that both tops and bottoms are generally much hotter thereby overbrowning your baked products.  Take your time, do it right!

11. Combine the ingredients listed underneath “the Finish” together in a bowl to form a sugary glaze.  If you select cranberry juice for the liquid, you will have a reddish glaze and if pineapple juice, a whiter one.  Whichever way, it is your call!

12. Bake for another 15-20 minutes, possibly even less depending upon your oven’s calibration and then test the muffins for doneness by inserting a cake tester, toothpick, or paring knife into the center rows.  If it withdraws “clean,” they are ready to be removed and if not, turn the pan(s) around and bake until the tester shows they are finished.

13. Remove the pan(s) from the oven, place atop cooling rack(s) and note: you can remove the muffins from the oven slightly underdone if you wish as they finish baking in the pan(s) for another minute or two.  Leave the muffins in the cups for 1-2 minutes, and then gently shake the pan to loosen them, and then lift them out leaving them atilt in the muffin cups for a few minutes longer.  Finally remove and place them directly upon the cooling rack(s) with drip pan(s) underneath.   Stir the glaze then swirl it atop them back and forth, over and above to coat them with a sugary glaze.  Permit them to rest another minute or so, and then they are ready to serve.  Place them atop doily-lined serving trays, accompany with whipped honey butter and preserves, and then they are good to go!

14. Wrap leftovers—WHEN TOTALLY COOL!—in plastic wrap, then zip up tight in Ziploc freezer bags for storage.  Never store baked goods in the refrigerator if you can help it, as they tend to dry out leading to an unpleasant reheat.  Either freeze or leave out at room temperature but never for longer than a day covered with plastic wrap if doing the latter.  After a week’s time in the freezer, use or lose them but note—you can cut up leftover muffins for use in bread puddings.

These are great muffins for any time of the year but are wonderful around Thanksgiving and Christmas.  Using fresh cranberries is a wonderful thing and these muffins are among the best in my baking repertoire of quickbreads and muffins.

The Toronto Blue Jays vs. the Atlanta Braves:
  1. 707: John VII ends his reign as Catholic Pope.
  2. 1622: French King Louis XIII and the Huguenots sign the Treaty of Montpelier, granting the French Protestants the right to practice their faith unmolested.
  3. 1685: King Louis XIV signed the Edict of Fontainebleau, revoking the Edict of Nantes that had established legal toleration of France’s Protestant population, the Huguenots.
  4. 1767: The Mason-Dixon line, the boundary between Pennsylvania and Maryland, was set as astronomer Charles Mason and surveyor Jeremiah Dixon completed their survey.
  5. 1812: During the War of 1812, the British ship, the HMS Frolic, was captured off the coast of Virginia by the USS Wasp, which in turn was captured by the HMS Poitiers.
  6. 1862: At Lexington, Kentucky, Morgan’s Raiders capture the Federal arsenal.
  7. 1867: The United States took formal possession of Alaska from Russia.
  8. 1892: The first long-distance telephone line between New York and Chicago was officially opened; however, it could handle only one call at a time.
  9. 1898: The United States raises the colors in Puerto Rico.
  10. 1908: Belgium annexes the Congo Free State.
  11. 1912: Black boxer Jack Johnson was arrested in Chicago, Illinois, accused of violating the Mann Act because of his relationship with his white girlfriend, Lucille Cameron.  However, the case collapsed when Cameron refused to cooperate, but later, the authorities rearrested Johnson and convicted him on the testimony of a former mistress, Belle Schreiber
  12. 1922: The British Broadcasting Company, Ltd. (later the British Broadcasting Corp.) was founded.
  13. 1931: Inventor Thomas Alva Edison died in West Orange, New Jersey, at age 84. 
  14. 1941: Japanese police arrest Soviet spy, Richard Sorge, in Tokyo.  Meanwhile, Billy Cox, future bassist with Jimi Hendrix and a friend from their time in the U.S. Army paratroopers was born on this date.
  15. 1942: Adolf Hitler orders the execution of all Allied commandoes captured by Axis troops.
  16. 1944: During World War II, Soviet troops invaded Czechoslovakia in their pursuit of the Nazis.
  17. 1948: During their War of Independence, Israeli troops launch Operation Ten Plagues against the Egyptian army.
  18. 1954: Texas Instruments unveiled the Regency TR-1, the first commercially produced transistor radio.
  19. 1962: James D. Watson, Francis Crick, and Maurice Wilkins were honored with the Nobel Prize for Medicine and Physiology for determining the double-helix molecular structure of DNA.
  20. 1967: The American League votes to allow the Kansas City Athletics to move to Oakland, California, and to expand the league to 12 teams in 1971 with new teams the Kansas City Royals and the Seattle Mariners.
  21. 1968: Circus Circus opens in Las Vegas, Nevada.
  22. 1969: Rod Stewart joins the English rock band, the Small Faces, which would soon become just “Faces.”  Meanwhile, Paul Kantner of the Jefferson Airplane undergoes arrest for possession of marijuana.  Finally, the federal government banned artificial sweeteners known as cyclamates because of evidence they caused cancer in laboratory rats.
  23. 1972: Congress passed the Clean Water Act, overriding President Richard M. Nixon’s veto.
  24. 1977: West German commandoes stormed a hijacked Lufthansa jetliner on the ground in Mogadishu, Somalia, freeing all 86 hostages and killing three of the four hijackers.
  25. 1979: Irans Ayatollah Khomeini orders all further executions of the Shah’s time in office to stop—for the time being.
  26. 1984: Actor Jon-Erik Hexum, 26, was taken off life support six days after shooting himself in the head with a pistol loaded with a blank cartridge on the set of his TV show, “Cover Up.”
  27. 1992: In the NFL, the Philadelphia Eagles’ quarterback, Randall Cunningham, sets the all-time quarterback scrambles record of 3,683 yards in his career.
  28. 1993: The first non-U.SMajoLeaguBaseball team to win the World Series game was the Toronto Blue Jays, 5-4, over the Atlanta Braves.
  29. 1995: American businesspeople buy the NHL team, the Winnipeg Jets and relocate them to Phoenix, Arizona, to become the Coyotes.   
  30. 2001: CBS News announced that an employee in reporter Dan Rather’s office had tested positive for skin anthrax. Meanwhile, elsewhere, four disciples of Osama bin Laden were sentenced in New York City to life without parole for their roles in the deadly 1998 embassy bombings in Tanzania and in Kenya, Africa.       
  31. 2004: President George W. Bush and Democratic rival Senator John Kerry traded accusations over the war in Iraq, with Bush saying his Democratic challenger stood for “protest and defeatism” while Kerry accused Bush of “arrogant boasting.”  Elsewhere, an Anglican church commission urged the U.S. Episcopal Church not to elect any more Gay bishops and called on the conservative African bishops to stop meddling in the affairs of other dioceses.
  32. 2010: The Obama Administration determines that China is helping the Iranians beat U.N. sanctions by giving them advanced missile technology and help in developing nuclear weapons.
  33. 2011: The original bassist with Fleetwood Mac, Robert “Bob” Brunning, died from age-related illnesses.
  34. 2012: Anti-austerity measures attract tens of thousands of Greeks to take to the streets to protest the looming measures.    
  35. 2013: NASA discovers Asteroid 2013 TV135, which has a 1 in 63,000 chance of colliding with the earth in 2032.
  36. 2014: A male of the rare northern white rhino species has been found dead at the Ol Pejeta Conservancy in Kenya; only six animals remain in the world, of which only one is a breeding male
