I have a bit more to say today so let me say it:
Bakersfield, CA, 10-16-2015 Friday: We find ourselves living in dangerous times, both here at home as well as abroad.  As a young man, I was a member of the Peace and Freedom Party of California, a party devoted mostly to smoking pot, helping poor and the minorities, and doing other things people see as being ‘hippie.’  Over the years, through both achieving success in business as a cook and then as a chef and marrying the right women, especially the one to whom I am now married—the lovely Sasha—and having nine kids by all three of the women to whom I have been and am married, I have grown up.  I have grown up a great deal and I must admit that I am somewhat concerned about the world we are going to leave them.  I love Santa Barbara but at times, the damned city is so expensive to live in that I fantasize about moving to Bakersfield.  The summers here are so dreadful; they make me love the beach community that much more because there is NO place quite like it.  You should visit us sometime.  
We are seeing a New Axis Powers forming right before our very eyes…
What concerns me is that it appears that we are seeing a new realignment in the Middle East, the Russians, the Iranians, the Syrians, and other assorted characters and actors over there seem to be forming a rock solid clique of sorts, one that is going to be difficult to displace once it solidifies.  Of course, if the Russians keep dropping cluster bombs on their Iranian allies by mistake, the New Axis might begin quibbling among itself, which would be good for we who live here in the Free World.  I see them cutting off the supply of natural gas to Europe and the supply of oil to the United States and to the rest of the world unless they play ball with them.  I just hope our government can find some sort of way to come together so we can maintain our freedom instead of submitting to the yoke and becoming slaves.  Let us make some muffins:  
(#0028)  APPLE BUTTER MUFFINS



Many folks have NO idea WHAT the heck apple butter is so I will inform them.  Apple butter is a refined applesauce of sorts, dark brown-red in color, sweet to the point of causing a diabetic to fall into a swoon.  When used as the basis for a great muffin recipe, the finished product is so flipping good that people find themselves instant fans of this Pioneer-era stalwart of ingredients.  Without further word, let us get into the recipe now:

Yield:  11 medium (3/8-cup size) or 15 small (0.25-cup) muffins / Mis-en-place: 45-60 minutes:

Method:

1.      Mis-en-place: have everything ready with which to work! Spray the muffin pan(s) with PAM or some such other food release spray; then line with paper or aluminum baking cups; finally, spray both the cups and the tops of the pans with food release spray, too.  This makes the process of removing the muffins that much easier and if you use only reflective bakeware such as aluminum or stainless steel, your finished products are that much better because their sides and tops are not over-browned.  Dark bakeware absorbs heat rather than reflects it, which causes muffins to over-bake in even medium-temperature ovens.

2.      Hook up the Hobart Mixer and equip the PADDLE attachment, never a whip attachment as the latter beats in excess air, which causes the half-baked muffins to collapse.  Now, double-sift the first SEVEN ingredients and then stir in the whole-wheat flour, raisins, and set aside. 

3.      Now, beat the eggs with the sugar until the mixture is light and fluffy, then, add the vegetable oil and CREAM the mixture together beating it a medium-high speed.  Once there, add the buttermilk, apple butter, green apple syrup, and vanilla extract, blending well.

4.      Fold the DRY into the WET using the least amount of paddle rotations at medium-low speed until the former is moistened; never over-mix any quickbread batter as the overdevelopment of the flour’s gluten occurs, which makes the finished products chewy and tough.  Mix it just until loosely combined and then stop, noting that most lumps cook out during baking.

5.      Preheat standard oven to 400°F or convection oven—fan “off”—to 350°F until ready. 

6.      Cover the batter with plastic wrap and set aside for 10-15 minutes; then, with the aid of an ice cream scoop dipped in cold water, fill the cups to the rims.  Then, gently shake the pans to settle the contents, place upon the middle oven racks, and bake 8-10 minutes. Then, lower the heat to 375°F (325°F convection) and bake another 10-12 minutes or until a paring knife inserted into the center of the middle rows withdraws, “clean.”  Note: it is important to avoid the uppermost shelves due to an increase in temperature at the tops so if utilized, rotate the muffins at least 1-2 times during baking to keep them baking evenly. 

7.      Place the pans atop cooling racks and cool for 1-2 minutes—if NOT quite done, the residual heat in the muffin pans finishes them so never fear.  After time is up, de-pan the muffins by rapping the pans gently on the edge of the work surface and then removing them, with a butter knife if necessary.  Leave them atilt in their cups for several minutes; then remove completely and place them directly atop the racks with a sheet pan beneath them.  Dust them with powdered sugar forced through a fine-meshed sieve and serve.

8.       Serve the muffins with apple butter and honey upon a doily-lined serving pan.  Muffins can remain out at room temperature for 16-24 hours (covered by plastic wrap or wax paper); after that, individually wrap in plastic wrap and zip up tight in Zip-Loc Freezer Bags.  Freeze after labeling and dating, but be sure to use them within 5-7 days.  After that, cut them up for bread pudding or dry and grind for use as coffee cake toppings or crumb cakes.

These are old-fashioned, old-time muffins much loved by everyone.  Smucker’s-brand makes delightful apple butter, as do many other locales, each blessed with their own unique brands.  The great thing about this is that I do not believe that the flipping Iranians, Russians, or Syrians have any knowledge as to WHAT apple butter is and that might be the reason they are all screwed up—food can save the world.  Even Mohammad the False Prophet had to eat—LOL!

God Bless Bill O’Reilly and Jesse Watters—they upset the flipping Muslims!
I am sorry if I offend our Muslim readers because we must face the fact that their sense of humor is not very good.  I was watching a segment of Bill O’Reilly last week in which, he sends his aide Jesse Watters out into the world to speak to various groups and subsets of people and in this case, Watters went to Dearborn, Michigan, lovingly referred to as “Dearbornistan” because of all the flipping Muslims living there. What Watters does is what we call ‘satire,’ he asks questions of people and then records their answers.  Some Muslim imam dude came on Bill’s show and was critical of everything Watters did while Bill informed him that it’s ‘satire, imam, do you know what satire is?’  The imam apparently did not and then bitched and moaned—oh, boohoo.  Look, Muslims, go back home—even if this is YOUR home, go back to fucking Mecca and leave the rest of us alone.  I will see you tomorrow, God bless and keep the faith and Muslims—go the hell home!

The Milwaukee Bucks vs. the Chicago Bulls:

  3. 1793: During the French Revolution, Marie Antoinette, the Queen of France, met her end on the guillotine.

  16. 1939: The comedy, “The Man Who Came to Dinner,” by George S. Kaufman and Moss Hart, opened on Broadway. 
  17. 1940: The U.S. Selective Service Administration holds the first pre-World War II draft with #158 being the first number drawn.
  18. 1941: Romanian troops enter Odessa, Russia, as the Germans approach to within 60 miles of Moscow.
  19. 1942: A tropical cyclone in the Bay of Bengal kills some 60,000 people south of Calcutta.
  20. 1943: Chicago Mayor Edward J. Kelly officially opened Chicago’s subway system during a ceremony at the State and Madison Streets’ station.  Meanwhile, in Rome, Italy, German troops surround the Jewish ghetto there and send them to Auschwitz.
  21. 1944: In Hungary, the government of Admiral Horthy falls as the Nazis install a dupe ahead of the Russian advance.
  22. 1945: Roger Hawkins, future session drummer and for a short time, a member of the British band, Traffic, was born in the United States on this date.
  23. 1946: Following their trials at the Nuremburg War Crimes Tribunal, 10 Nazi wartime leaders meet their end at the gallows.
  24. 1947: Robert “Bob” Weir, rhythm guitarist and vocalist with the Grateful Dead was born on this date.
  25. 1956: William J. Brennan, Jr. becomes a Supreme Court Justice.
  26. 1962: National Security Advisor McGeorge Bundy informed President John F. Kennedy that reconnaissance photos revealed the presence of missile bases in Cuba.  Meanwhile, in the 59th World Series, the New York Yankees beat the San Francisco Giants 4 games to 3 for the 20th Series win and the ninth of the last 14.
  27. 1964: During the Lyndon Baines Johnson, Democrat, presidential administration, Communist China set off its first atomic bomb, codenamed “596,” on the Lop Nur Test Ground.  Elsewhere, Harold Wilson of the Labour Party assumed office as prime minister of Britain, succeeding Conservative Sir Alec Douglas-Home. 
  28. 1968: In their first NBA game, the Milwaukee Bucks lose 89-84 to the Chicago Bulls
  29. 1969: The New York Mets capped their miracle season by winning the World Series, defeating the Baltimore Orioles, 5-3 in Game 5 played at Shea Stadium in New York City.
  30. 1972: Creedence Clearwater Revival breaks up, ending one of the best bands of the 1960’s to the early 1970’s.
  31. 1973: Maynard Jackson becomes the first black mayor of Atlanta.
  32. 1978: The College of Cardinals of the Roman Catholic Church chose Cardinal Karol Wojtyla to be the new Pope; he took the name John Paul II.
  33. 1983: In the 80th World Series, the Baltimore Orioles beat the Philadelphia Phillies 4 games to three.
  34. 1987: A 58.5-hour drama in Midland, Texas, ended happily, as rescuers freed Jessica McClure, an 18-month-old girl trapped in a well.    Meanwhile, Mike Tyson scores a TKO in the 7th round over Tyrell Biggs for the heavyweight boxing title of the world.      
  35. 2012: The British government announces due to threats of terrorism, it will close its consulate at Basra, Iraq.
  36. 2013: Divers at Chelyabinsk, Russia, recover a portion of the meteorite that hit the city, weighing approximately 1,255 pounds.  
  37. 2014: U.S. President Barack Obama provides authorization for military reserves to head to West Africa if needed to help respond to the Ebola epidemic; the president also does not see the need to ban travelers from West Africa from entering the U.S..
