“Classic Quickbreads and Muffins, Part CXXV: Did Kevin McCarthy drop out of the running for the Speaker because he was schlepping a Colleague or a Staffer PLUS a Cherry Muffin Recipe” by Chef James “Jimmy” Hall

The next album released by the Who was “Tommy—the Movie Soundtrack from 1975” in 2001, an album that was out at the time of the movie’s release but then which became a collector’s item.  Well, not anymore, this album had an all-star musical and Hollywood cast and it had some additional tunes used in the movie to flesh out the story if you will and to add musicians such as Eric Clapton and Tina Turner to the mix.  We urge you to seek this CD so you know the drill: use our link to go to Amazon.com so you can get it there in the format, the condition, and the price that is right for you, your ears, and your pocketbook—you will thank us for sending you there!

FALL SESSION 2015

BLOGPOST #1,789 AT THE AICP-END

Was Kevin McCarthy schlepping one of his Colleagues or one of his Staffers—is that why he dropped out of the running to replace John “Crybaby” Boehner?
Bakersfield, CA, 10-15-2015 Thursday: Politics is a horrible thing, granted, I think politics in the United States HAS ALWAYS had a dirty underground in which, various politicos do their best to tarnish the reputations of their political and sometimes NON-political enemies.  There was a great deal of discussion as to the reason WHY Congressman Kevin McCarthy SUDDENLY dropped out of the race.  Rumor has it that like many politicians who find themselves drunk with power, he was in the midst of a long-time affair with one of his colleagues or a staffer.  I mean, someone put the question to him at the microphones on Thursday to which, he brushed it off as though there was nothing to see here.  Hmmm, time will always tell but if that is the case, WHEN will someone reinstall some sense of morality into a body with moral decline?  Ah, well, a topic for someone else to expound upon seeing as how I am drifting in and out of sensibility thanks to the medication prescribed to me for my back surgery.  Here is our recipe:

(#0025)  CHERRY MUFFINS

This recipe is one of the best muffin formulas I have ever seen, made, or tasted over the course of my life.  They beckon the consumer simply by looking the way they do, which is good for your business or for your guests at home.  Once you make them, believe me, you are going to become an ardent fan of them so why waste time?  Get going!

Yield:  10 medium (3/8-cup) or 15 small (0.25 cup) muffins / Mis-en-place: 45-50 minutes:

Qty.
Measure
Item
Other
2
Cups
All-purpose flour

.5
Cup
Cake flour

1-1/3
Tablespoons
Baking powder

1
Tablespoon
Bob’s Red Mill soy flour

1
Tablespoon
Powdered milk

1.5
Teaspoons
Baking soda

.5
Teaspoon
Salt

1
Tablespoon
Lemon zest

.5
Cup
Finely-chopped walnuts

1
Large
AA egg

.75
Cup
Granulated sugar

3/8
Cup
Vegetable oil

.5
Cup
Sour cream

.5
Cup
Finely-minced maraschino cherries with juice

1
Teaspoon
Vanilla extract

1
Tablespoon
Torani’s cherry syrup

The Finish:
.5
Cup
Powdered sugar

.25
Cup
Pineapple or cherry juice

1
Teaspoon
Vanilla

Method:

1.      Mis-en-place: have everything ready with which to work! Prepare your muffins pan first using ONLY reflective bakeware such as stainless steel or aluminum, never dark bakeware.  The reason for this is that the former, unlike the latter, reflects heat away from the pan rather than draws it in leaving the finished product with beautiful sides and crowns, not over-baked or burnt.  Spray the pan with PAM or some such other food release spray, line with paper baking cups, spray the cups with food release spray, too, and set aside.

2.      Double-sift the first SEVEN ingredients together and then stir in the lemon zest and the nuts, blending well; then, add the nuts and raisins and set aside. Cover the bowl with plastic wrap and set it aside until needed.  Preheat standard oven to 375°F or convection oven to 325°F with the fan in the “off” position until ready to bake.

3.      Hook up the Kitchen Aid mixer with a paddle attachment and begin beating the egg at medium-high speed until light and frothy.  Then, add the sugar and the oil and again—beating at medium-high speed—CREAM the mixture together until it is homogenous, light, and fluffy.

4.      Add the sour cream, the minced cherries and juice, the vanilla extract, and the cherry flavoring.  Rotate the paddle on medium speed using the ring guard to prevent splattering the kitchen’s walls with it.

5.      Now, rotate the DRY ingredients into the WET using the fewest rotations necessary to fold the former into the latter.   This is a lumpy batter but the “lumps” cook out during the baking process, so do not worry about them.  It is more important NOT to over-mix the batter as this develops the gluten in both the all-purpose and whole-wheat flours, leaving the finished products chewy, tough, and unappetizing.

6.      Cover the bowl with plastic wrap and allow the batter to rest for 5-10 minutes at room temperature; then, with the aid of an ice cream scoop and a cup of water in which, to dip it to keep it fluid and moving, fill the cups to the rims but NOT over with batter.  Be sure to stir the batter a few times prior to use and again as you approach the bottom to keep the ingredients mixed.  Shake the pans gently to settle it within the prepared cups and then prepare to bake.  If using a convection oven, flip the switch “on” now.

7.      Place the pan(s) on the middle baking racks, taking care to avoid either the bottom or especially the TOP of a five-rack oven; however, if baking all at once, try to rotate the pans around the shelves 1-2 times to keep them baking evenly.

8.      Bake 20-25 minutes but check at the 18-minute mark for doneness by inserting a paring knife into the center row(s) of muffins and then withdrawing it: if it comes out “clean,” they are ready to pull out and if not, continue baking the rest of the time.  Check the muffins again prior to the 25-minute mark as if slightly underdone, they finish baking in the pans for 1-2 minutes.

9.      Pull them out of the oven when ready and place atop cooling racks to cool.  After a couple of minutes, gently rap the pan(s) to loosen the muffins then turn them atilt in the baking cups to finish cooling.  After another 4-5 minutes, remove the pan(s) entirely and finish cooling.

10. Rap the pan lightly on the edge of the counter to loosen the baked muffins and then de-pan them.  Allow them to rest atilt in the muffin cups to complete the cooling process.  If desired, you can make a glaze out of powdered sugar and pineapple juice and glaze them with the aid of a wire whisk.  Twirl it around over the muffins so that the sugary glaze is ribbony atop them.  If you would like, sprinkle some finely minced maraschino cherries over them the minute you stop glazing them.

11. The muffins are ready to serve.  Leftovers should always be plastic-wrapped once they are completely cool.  You can leave them out at room temperature for a day or two but then you should refrigerate or freeze them for use at later.  It is best to freeze them and reheat them in the microwave rather than store them in the fridge, as this tends to dry them out.

Not only are these muffins beautiful, they taste good, too, and most people tend to love them just as you are going to love them.  Keep the recipe in your personal cookbooks and allow it to turn you into a muffin-baking superstar, which is good not only for your personal reputation but also for your business.  People love fresh baked homemade goods and muffins and breads are the way to go.  Do not buy FROZEN doughs and batters as that makes you one of the sheep and not one of the wolves.  Trust me, I know of what I speak.

PLEASE BUY ALL OF THE ALBUMS WE ADVERTISE AT AMAZON.COM!
PLEASE SEE MUSICAL ALBUMS AT THE END OF THE BLOG
As always, we have a great time around here and that is why we want all of you to become a part of the organization by submitting articles to us for inspection and full-credit.  It is a great thing if you would do this, as it is a symbiotic relationship: we give you the space to share your recipes and in return, you send us more and more people who will become dedicated followers of the AICP-END
Currently of multi-diversity across the Internet, it is important that we hear the voices of more and more people from all walks of the foodservice profession —join us. We urge our readership to write to us, leave comments, and if there are any of you, who would care to write an article for us, please get in touch via Magnolia Hilltop Brewers, P.O. Box 20669, Bakersfield, CA 93390-0669.  We obviously do not pay anything but give YOU full byline and that, my friends, is worth its weight in gold.
We want as many people who want to write to be able to do so and we believe that by presenting a forum for our fellow chefs, we are doing something for our beloved industry.  We love diversity and hope to add new and different authors to our pantheon of chefs, food and beverage directors, and culinary professionals.  Come on and join us, it will be fun! Expect that when all of us have run through our cycle, we will be introducing some brand-new talent or so Stinky says.
We have touted the AARC Technology Company here in Bakersfield, CA, and must add the Nerds on Call.com folks.  Without them keeping our blog up-and-running, there is no telling where we would be now.  We have a great many problematic issues here at the AICP-END because even with the best security systems in the world, malware and other terrible fecal materials manage to penetrate the blog site.  Do yourself a favor, hire the best, and note, you can have online help via a remote button on your desktop for just $25 per month!  Get in contact with the Nerds now!
Here is another note: do NOT do business with Galkos Construction, Inc., those people are nothing but crooks as if you lease your system, you will never pay it off, plus you have to pay them for excess energy produced by your system, the electric company does not buy all of it nor do they!  AVOID GCI AT ALL COSTS; DO NOT DO BUSINESS WITH THESE CROOKS!
We are selling recipes all the time and you can order things you would like copies of simply by mailing us your name, address, the recipe you would like and a check for $1.00.  You can buy an entire week’s worth of recipes when we do a series simply by sending us a check or money order (no cash please!) for $20 and we will have it out to you in the next day’s mail.  Please become a part of the AICP-END by sending us your names, addresses, and information and we will welcome all of you with open arms.
To buy paintings, recipes, or full article series, please send us your information by mailing us at P.O. Box #20669, Bakersfield, CA, 93309-0669.  You can call about paintings at 661-374-1430; we will take all calls and provide to you as much information as is available.  It is time that we begin taking the next step and to immortalize Beverly Carrick for eternity and begin moving towards the establishment of a website of our own! God bless each single one of you amongst our fan base!
You know, we keep hearing about businesses running afoul with the gay and transgender communities and then losing their businesses because they have made some sort of gaff or a mistake.  I am telling you, Portland, Oregon, has a great reputation of being open to everyone and yet a bar owner there has found himself in trouble because he asked trannys coming into his establishment to PLEASE not wear the drag, fellows, because the bulk of my customers no longer come in because you boys all look like fruits.  A group of cross-dressing she-he’s have won a $400,000 judgment against the man who owns the bar because he made them ‘feel bad.’  Oh, good Lord, folks, what the hell do we need to do to STOP the encroachment of the REST of our rights by the fruitcakes?  Leave some comments, let me know, and we will engage in a meaningful dialogue so we can sort things out.  I will see you all tomorrow, have a great day.
The Closing Words of our Founder, Stinkbug:
Anyhow, let us close with this impassioned plea—please leave some comments and/or become a follower. What's more, why not spend some money and purchase an album by the Who, John Entwistle, Keith Moon, Pete Townsend, Roger Daltrey, Quicksilver Messenger Service, and everyone else we advertise here and/or buy a book by any of the authors we advertise here! In addition to that, we occasionally offer cookbooks and other oddball items so always pay attention to whatever you find in the tabs on the right side of the home page, everything you need is there!  Allied with them, we are pleased to market their merchandise!  Amazon.com is one of the greatest—if not the ultimate greatest!—online department stores in which, one can find almost everything on the planet.
As everyone knows, we love them and they love us and we want all of you to visit them daily, take advantage of their deals on everything from kitchen equipment to cookbooks, CDs, DVDs, and everything else a person could want.  Everything you buy from them puts money into our pockets, which allows us to keep this fine blog up-and-running 24/7/365!  God bless America and God bless Amazon.com, the world’s largest online marketplace in the world and most likely in the Universe!
Thank you!
