What happened in the U.S. House of Representatives LAST Week?
Bakersfield, CA, 10-13-2015 Tuesday: As I sat here in my drugged bliss last Thursday at the time of writing this post, I almost sprang out of my chair, got on the phone to my congressional representative and called her up to harangue her.  I was going to call her so I could let her know that I did NOT want her casting a vote for Kevin McCarthy in the soon-to-be-vacant position of speaker of the House.  Unfortunately, I then realized that redistricting made Congressman McCarthy MY representative.  Democrat Lois Capps used to be MY representative and even though I am somewhat of an independent, I maintained a cordial relationship with her and her office, which allowed me to express my opinions.  Granted, she would not vote for McCarthy anyway but what happened last week on Capitol Hill blew my mind.  McCarthy dropped out and Boehner slammed the door shut.  All I could do was to ponder what the heck was up?  Okay, here is our next muffin recipe:  
(#0015)  CARROT CAKE’R’S MUFFINS


I am reputed to make the best carrot cakes on the planet and we, professional chefs, have long known around the area in which, I live and work to be the master cake baker of the world.  I also make the best muffins and transformed the recipe for my delicious carrot cakes into these fabulous Carrot Cake’r’s Muffins, the best in the west, as well as the east, north, and south and every point in between.  You will love this excellent recipe, as will both your guests and the friends and family of your staff or your home.  Try them once and if you really want to make them decadent, make an elaborate cream cheese frosting and dab them with it prior to service. 

Yield:  10 medium (3/8-cup) or 15 small (0.25-cup) muffins / Mis-en-place: 45-60 minutes:

Method:
1.      Mis-en-place: have everything ready with which to work!
2.      Prepare the Glazed Walnuts recipe FIRST but note: if you don’t wish to spend the time doing this part of the recipe, use regular nuts instead, which won’t have the same flavor but saves time and expense:

Method:
3.      Mis-en-place: have everything ready with which to work!  Bring water to a boil and when it is, drop the walnuts into it and keep there for no more than 30 seconds—remove and drain.  Turn your standard oven onto 400°F or your convection oven—fan “on”—to 350°F.  Spray a sheet pan with PAM or some such other food release spray.

4.      Combine the pineapple juice and the powdered sugar in the bowl of an electric mixer.  Place the walnuts onto the sheet pan and cover with the sugar mixture, blending well.  Place the pan inside your preheated oven on the middle rack and bake until the sugar mixture has pretty much dried and the nuts are crusty with sugar.  Stir them around several times during this process; note—it might take 15-20 minutes to do this, possibly longer depending upon the time of year.

5.      Remove from the oven and place the pan on a wire rack to cool. When completely cooled, transfer the nuts to a sanitized storage container and store in the refrigerator.  Label, date, and use on salads, desserts, or baked goods.

This is an old country club recipe that has always been a favorite of almost everyone I know with the exception of those who either do not care for nuts or who cannot eat them.  This is a great one to have on hand so definitely make sure you keep it handy for use at any time.

6.      Second, prepare the muffin pan(s) using ONLY stainless steel or aluminum bakeware and NEVER dark bakeware.  The reason for this is to prohibit overbrowning of the sides and tops of the muffins due to excessive heat absorption, which the reflective bakeware prevents.  Spray the cups heavily with PAM Baking Spray or some such other food release spray, and then line them with either paper or aluminum baking cups.  Finally, spray both the cups and the top(s) of the pan(s) heavily with food release spray, too, as this makes it easier for the consumer to peel away the paper when served; set aside.

7.      Double-sift the first EIGHT ingredients together and then stir in the raisins, walnuts, and crushed pineapple with juice and set aside until required; then, hook up your Kitchen Aid (small) mixer or your Hobart (large) mixer with a PADDLE attachment. 

8.      Begin beating the egg(s) on medium-high speed then add the sugar and beat the two together until light and fluffy; then, add the vegetable oil and beat until you have creamed the mixture.  Finally, add the remaining ingredients, blending well, then begin folding the DRY ingredients into the WET using the least amount of medium-slow mixer rotations necessary. 

9.      Mix just until you moisten the DRY ingredients then stop.  Scrape the sides of the bowl, paddle one more time, and mix for another 20-30 seconds.  Scrape again, cover the bowl with plastic wrap, and rest the batter for 10-12 minutes.  Fire up your standard oven to 375°F or your convection oven—fan “on”—to 325°F. 

10. With the aid of an ice cream scoop occasionally dipped in warm water to keep the mechanism fluid, fill the cups almost to the tops but NOT all the way.  Shake the pan(s) gently to settle the batter, then place the pan(s) on the middle oven rack(s) avoiding the uppermost rack(s) in either a convection or a standard oven (heat is more intense there) and bake for 18-24 minutes OR until a paring knife inserted into the middle row(s) of muffins withdraws clean

11. Check the muffins at the earlier time but you also KNOW your oven(s) and how quickly they cook due them being either colder or hotter so definitely pay attention to the baking process so as NOT to over-bake them.  As soon as they test POSITIVE for doneness, remove the pan(s), place atop cooling rack(s), and rest for 1-2 minutes; then, with the aid of the paring knife, de-pan the muffins and leave them atilt in the muffin cups.

12. While they cool, combine the ingredients listed underneath “the Finish” together in a bowl or in the bowl of your electric mixer using the paddle attachment.  As soon as the muffins have cooled a bit more, remove them, place them directly atop the cooling rack(s), and place drip pan(s) underneath them.  Begin swirling the glaze over them in a loopy fashion so that you festoon them with it.  Use the entire glaze and when finished, stop.  Now, they are ready to serve.  You can serve them on elaborate serving trays lined with doilies or you can keep them warm for individual service. 

13. Cool leftovers and then wrap each one individually with plastic wrap, then zip up tight in Zip-Loc Freezer Bags, label, date, and FREEZE, never refrigerate breads, as this tends to dry them out.  If you plan to use them within the day, cover them with wax paper and leave out at room temperature; otherwise, prepare for use at a later time.  Be sure to use them within 5-7 days at the most; then, cut up and use in bread pudding or grind up for usage in crumb cake toppings. 

These are fabulous muffins, extremely delicious, and inspired by my carrot cakes, one of the best items in my massive repertoire of self-created recipes.  Imagine little bits of carrot cake in muffin form glazed with a tasty frosting, man, oh, man, this is akin to St. Peter allowing one entry into Heaven!

I have to say, I am enjoying this format, it reminds me of the good old days, when we did all sorts of stuff, shared recipes, discussed sports, and ALWAYS made sure we covered the music of the day.  Last week, we had the amazing opportunity to see Gordon Lightfoot at the beautiful FOX Theater in downtown Bakersfield, California, I was lubed to the gills with anti-pain medicine due to my back surgery but kept my focus on the man, his band, and of course, his music.  He let us know that he is in the process of recovering from a horrendous aortic aneurysm that kept him out of action for two-and-a-half-years.  God bless the man, he is 76-77-years-old, a great musician very much in charge of his career and more important, his life.  Thanks for joining me today, we welcome everyone.

TODAY IN HISTORY—OCTOBER 13, 2015:

The Pittsburgh Pirates vs. the New York Yankees:
  1. A.D. 54: Roman Emperor Claudius I died poisoned, apparently at the behest of his wife, Agrippina.
  2. 1307: King Philip IV of France ordered the arrest of the Knights Templar on charges of heresy; many suffered execution in a variety of horrifying ways and it was this betrayal by Philip that led to the superstition surrounding Friday the 13.
  3. 1710: British troops occupied Acadia (Nova Scotia) and would eventually drive the French citizens out of the area; most would settle in Louisiana.
  4. 1760: A combined Russian- Austrian army begins evacuating Berlin ahead of German troops.
  5. 1775: The United States Navy had its origins as Congress ordered the construction of a naval fleet.
  6. 1792: The cornerstone of the Executive Mansion, later known as the “White House,” was laid at a ceremony in the District of Columbia.
  7. 1812: At the Battle of Queenstown Heights, British forces thwart an American effort to invade Canada during the War of 1812.
  8. 1843: The Jewish organization B’nai B’rith was founded in New York City.
  9. 1845: Texas voters ratified a state constitution.
  10. 1864: Maryland voters adopt a new constitution including the abolition of slavery throughout the state.
  11. 1884: Greenwich becomes the universal time meridian of universal time.
  12. 1914: Pro-German Boers begin rebellion against British authority in South Africa during World War I.
  13. 1915: In the 12th World Series, the Boston Red Sox beat the Philadelphia Athletics, 4 games to 0, the first sweep in World Series history.
  14. 1921: In the 18th World Series, the New York Giants beat the New York Yankees, 5 games to three.
  15. 1932: President Herbert Hoover and Chief Justice Charles Evans Hughes laid the cornerstone for the U.S. Supreme Court building in Washington, D.C.
  16. 1943: During World War II, former Fascist Italy declares war on former Axis partner, Nazi Germany.  Elsewhere, Rick Vito, future guitarist with Mick Fleetwood’s Zoo and Fleetwood Mac is born.
  17. 1944: American troops entered Aachen, Germany, during World War II.
  18. 1949: Rick Vito, future guitarist and vocalist with both Fleetwood Mac and Mick Fleetwood’s Zoo, is born.
  19. 1957: CBS-TV broadcast “The Edsel Show,” a one-hour live special starring Bing Crosby designed to promote the new, ill-fated Ford automobile.
  20. 1960: John F. Kennedy and Richard M. Nixon held their third televised debate of their presidential campaign with Kennedy being in New York while Nixon was in Los Angeles.  Meanwhile in the 57th World Series, the Pittsburgh Pirates beat the New York Yankees 4 games to three.
  21. 1962: Edward Albee’s searing four-character drama, “Who’s Afraid of Virginia Woolf?” opened on Broadway with Arthur Hill as George, Uta Hagen as Martha, George Grizzard as Nick, and Melinda Dillon as Honey.
  22. 1963: After an appearance by the Beatles at the Hollywood Palladium, reviewers coin the term, “Beatlemania.”
  23. 1972: A Uruguayan chartered flight carrying 45 people crashed in the Andes; 16 survivors who resorted to feeding off the remains of the dead in order to remain alive were rescued more than two months later.
  24. 1974: Longtime television host Ed Sullivan died in New York City at age 73.
  25. 1981: Voters in Egypt participated in a referendum to elect Vice President Hosni Mubarak the new president one week after the assassination of Anwar Sadat.
  26. 1990: The first Russian Orthodox Church services in 70 years take place at St. Basil’s Cathedral in Moscow, Russia.
  27. 1993: The Anaheim Ducks win their first NHL game.
  28. 1999: The Senate rejected the Comprehensive Nuclear Test Ban Treaty.
  29. 2006: The United Nations General Assembly elects Ban Ki-Moon the new secretary-general.
  30. 2010: Rescuers in Chile using a missile-like escape capsule pulled 33 men one-by-one to fresh air and freedom 69 days after they were trapped in a collapsed mine a half-mile below ground.         
  31. 2012: The U.S. space shuttle, Endeavor, inches its way through Los Angeles city streets on a trolley, bound for a museum within the city.
  32. 2013Following an elaborate two-day state funeral, national independence hero of Vietnam, General Vo Nguyen Giap, undergoes burial.
  33. 2014The Vatican issues a document indicating that the Catholic Church is taking a softer stance on relationships outside of traditional marriage, upholding the church's views but advocating respect for unmarried couples and homosexual unions.

Chef Jimmy mentions that last week, some strange stuff went down in the U.S. House of Representatives what with Kevin McCarthy, the number two behind retiring Speaker John Boehner throwing in the towel because he failed support. James mentions that up until 2013, he had a Democrat representative in Santa Barbara where as now, he has Kevin McCarthy—WOW—that sucks!
