Hello and welcome to a RETURN of Culinary Articles!
Bakersfield, CA, 10-12-2015 Monday: Folks, I am recovering from back surgery, which is never a fun thing to do so instead of debating the issues, I think we will spend some time this week trying to do what we used to do in the early days, making fabulous foods and doing it in minute detail.  Besides, something is going on that we do not quite yet understand as we have been under heavy assault by UNKNOWN assailants online, they mess with our visibility and our numbers and have attacked our individual posts making them unreadable at times to the readership.  Maybe it is the government interfering or maybe it is some sort of unknown virus eating away at the guts of our blog.  Either way, it is difficult so we will go down a different road this week.  Here we go:
(#0008) RED, WHITE, AND BLUE MUFFINS—INSTITUTIONAL SIZE

Always in search of new and exciting combinations for gourmet muffins, this idea popped into my head one Fourth of July like a firecracker going off within the confines of my head.  I had all of the ingredients on hand in the kitchen and quickly transformed a blueberry muffin batter into a patriotic one that went over extremely well.  I am sure they are going to do the same for you so try them and run them anytime of the year.

Yield:  about 80 medium (3/8-cup) or 120 small (0.25-cup) muffins / Mis-en-place: 60-75 minutes:

Method:

1.      Mis-en-place: have everything ready with which to work!  First, prepare the muffins pan(s) by using nothing but reflective bakeware, such as aluminum or stainless steel.  Never use dark bakeware like Chef’s Choice as dark absorbs heat rather than reflects it causing the finished muffins to have crusty sides and overbrowned tops.  Spray heavily with PAM Baking Spray or with some such other food release spray and then line with either paper or aluminum baking cups, then spray both the cups and top(s) of the pans heavily with food release spray, too, which makes the process of removing the muffins much easier; set them aside.

2.      Preheat standard oven to 375°F or a convection oven to 325°F with the fan in the “off” position for now.  Then, hook up your Hobart mixer and attach the PADDLE attachment, never the WHIP, as the latter beats in too much air causing the muffins to collapse during baking whereas the former does NOT.

3.      Double-sift first SEVEN ingredients together using a fine-meshed sieve, then stir in the coconut and set aside until required.  Now, dust the cherries with 2-3 tablespoons of all-purpose flour and place them in one pan while doing the same with the blueberries and placing them in another.  Place both in the freezer for 15-20 minutes so they are not WET.

4.      After time is up, beat egg until light and foamy; then add the sugar and the vegetable oil and beat together at medium-high speed until creamed.  Finally, blend in the dairy products and the flavorings.

5.      Now, fold the DRY into the WET using the least amount of low-speed mixer rotations necessary as what you want to do is to moisten the former with the latter but never over mix and overdevelop the flour’s gluten—this makes for a chewy product.  Scrape the sides with a rubber spatula, cover with plastic wrap, and rest for 10-15 minutes.

6.      Scoop the batter into the muffin cups and shake the pan to settle.  Bake muffins on the middle oven rack for 10 minutes and then, lower temperature by 25°F and cook 15-20 minutes OR until golden-brown and the blade of a boning knife inserted into the middle of each comes out clean.

7.      Remove from the oven then and place pan on wire rack to cool. After 1-2 minutes, rap the pan on the kitchen counter to loosen them and turn them out or the pan gently. Allow them to finish cooling.

8.      If so desired, make a 2:1 glaze of powdered sugar to water or juice and drizzle across the tops of the muffins while they are still warm. This will create an attractive web-like glaze and sprinkle with crushed walnuts or some such other nut item. Alternatively, you can just push powdered sugar through a sieve to dust them.

When completely cool, you may wrap the muffins in plastic wrap and leave out at room temperature for a day and then freeze or refrigerate and after a day, refrigerate or freeze. You may reheat quickly in the microwave oven in 8-10 seconds.  Never keep muffins in the freezer for longer than 4-6 days for optimum usage, ALWAYS use well within that range.  After that, cut them into cubes for use in bread puddings or dry them, grind them, and use them as crumb toppings in crumb or coffee cakes.

The above muffin recipe is a great one, one I know the readership can and should use around the holidays as well as on the Fourth of July.  We constantly work at improving our recipes so that they are the crème de la crème, which helps the readership by giving them confidence that the recipe they plan to make will be as good as it looks in the photographs we provided for you here today.  Let us know what you think—we are here to serve you.

I do hope you do not mind me returning to OUR roots, it is important that we maintain our original purpose, instructing the novices in the ways of the elite chefs of the world.  We moved into politics because chefs are the number one molder of political thoughts because our employees always debate the issues in the kitchen and ask our input.  It is important to provide them the knowledge they need so when they enter the voting booth, they will make the RIGHT choices.  We instruct our illegal aliens who vote because everyone knows that they do indeed vote, thanks to Motor Voter Registration here in California.  If one party set it up so they use it against the other, we have made fair use of it ourselves, as that is the ONLY way to go.  I will see you all tomorrow, have a great day and God bless.

  21. 1960: an ultranationalist student, Otoya Yamaguchi, who hanged himself in jail, stabbed Japanese Socialist Party leader, Inejiro Asanuma to death during a televised debate in Tokyo.  Meanwhile, at the United Nations General Assembly, Soviet leader Nikita Khrushchev pounds his shoe on the podium, promising to ‘bury the United States.’
  22. 1962: The devastating Columbus Day Storm, also known as the “Big Blow,” struck the Pacific Northwest, resulting in some 50 deaths.
  23. 1964: The Soviet Union launched a Voskhod space capsule with a three-man crew on the first mission involving more than one cosmonaut; the flight lasted for 24 hours.
  24. 1966: The Jimi Hendrix Experience forms with Jimi on guitars and vocals, Noel Redding on bass and vocals, and Mitch Mitchell on drums and vocals.
  25. 1967: In the 66th World Series, the St. Louis Cardinals beat the Boston Red Sox 4 games to 3 as Lou Brock steals a record 7 bases in one World Series.
  26. 1971: The rock opera, “Jesus Christ Superstar,” opened on Broadway.   
  27. 1973: President Richard M. Nixon nominates Gerald R. Ford to replace Spiro T. Agnew as his vice president.  Meanwhile, in Argentina, Juan Peron becomes president.
  28. 1984: British Prime Minister Margaret Thatcher escaped an attempt on her life when an Irish Republican Army bomb exploded at a hotel in Brighton, England, killing five people.  Elsewhere, actor Jon-Erik Hexum suffered mortal wounds on the set of his TV show, “Cover Up” when he jokingly shot himself in the head with a prop pistol loaded with a blank cartridge; doctors declared him dead six days later.
  29. 1986: The superpower meeting in Reykjavik, Iceland, ended in stalemate, with President Ronald Reagan and Soviet leader Mikhail S. Gorbachev unable to agree on arms control or a date for a full-fledged summit in the United States.
  30. 1987: Former Governor Alfred “Alf” M. Landon, Republican- Kansas, died at his Topeka home at age 100.
  31. 1994: The Magellan space probe ended its four-year mapping mission of Venus, apparently plunging into the planet’s atmosphere.
  32. 1997: Singer John Denver lost his life in the crash of his privately built aircraft in Monterey Bay; he was 53 years old.
  33. 1999: Pakistan’s military overthrew the democratically elected government of Prime Minister Nawaz Sharif.
  34. 2000: A suicide bomb attack on the destroyer USS Cole in port at Aden, Yemen, killed 17 sailors. 
  35. 2002: Bombs blamed on al-Qaida-linked militants destroyed a nightclub on the Indonesian island of Bali, killing 202 people, including 88 Australians and seven Americans.
  36. 2011: The 'underwear bomber', Nigerian Umar Farouk Abdulmutallab, pleads guilty to attempting to blow up an airplane on Christmas, 2009.
  37. 2012: The 2012 Nobel Peace Prize goes to the European Union for 'over six decades (having) contributed to the advancement of peace and reconciliation, democracy and human rights in Europe'.
  38. 2013:  When Typhoon Nari hits the Philippines, 2 million people lose power and five die. 
  39. 2014: President Vladimir Putin orders Russian troops along the Ukrainian border to withdraw to their home bases by President Vladimir Putin; the move comes ahead of meetings between Putin and Ukrainian President Petro Poroshenko.
