HUMP DAY!
Bakersfield, CA, 11-14-2013 Thursday: We have arrived at the HUMP DAY edition of the best blog in the world, the American Institute of Culinary Politics-Elemental News of the Day, this is the place where we cover the topics of the day and then head into the kitchen to do some serious culinary arts! Lately, we have been viewing the ongoing dismantling of the nation under this president, a man I must admit for whom I voted not once but twice.  I now am beginning to regret my wasted votes but at the time, I felt that his predecessor damaged the nation almost beyond repair but let’s face it: Mr. Obama is finishing the job and doing a much better job of it than did Mr. Bush!  How damned difficult is that to admit, I ask you, it is not something of which, I am proud to admit but admit it I did in yesterday’s post and boy oh boy, did I receive some flak for doing it!   For one thing, my relatives called me up and said, “What is wrong with you, Pedro,” and when I tried to explain it to them, well, some of them slammed the phone down and didn’t answer me when I returned the call.  Look, people, mi familia, amigos, please, the nation is unraveling before our very eyes and it is not something any of us have ever wished to see!  Yet, they were angry with me, they accused me—ME!—of throwing the president under the fricking bus and that if I keep saying what I’m saying then our relatives will never attain citizenship and may even end up being deported back to Mexico

That’s it, then, I am beginning to see that we are in an era of a brand-new Civil War of sorts, that families are rending themselves apart over whether they agree or disagree with this polarizing president.  I see it all around me, I see the level of outrage and anger growing by the day, and it’s in our everyday lives, on the television, out in the streets.  This president is going to go down in history with MORE incidents of gun crimes and mass shootings than any other in the nation’s history has.  One cannot turn on the nightly news without seeing someone shooting up a school, college, a church, or an airport.  One cannot take their personal safety nor that of their family members for granted anymore, one never knows when he or she leaves their homes to go to work whether or not they will return at the end of the day.  Yes, we have had gun crimes throughout the nation’s history but the level of rampage, of hatred against one another, the level of impersonal shootings by people who do not know one another has gone through the roof and I blame it on the level of anger in the nation’s political discourse and dialog!  What is happening to this country is something that should concern every American citizen and non-citizen and at some point, we have to address this situation and put it to rest.  We need to restore civility to the nation’s political discussions and I believe that members of my party have done their best to hurl insults at the other side without them hurling them back.  Yes, they can say the RIGHT-WINGERS are as insulting as we are but I have not seen it, Ted Cruz certainly has said nothing negative nor did his compatriot Mike Lee.  In fact, these men maintained a very peaceful dialog as they fought to defund Obamacare and should be complimented and commended for it.  It certainly is something from which, our side can learn!

I think that the nation is in great peril, that we are wide open to a major terrorist attack because of our preoccupation with one another.  I would urge Mr. Obama if he will not step down and resign his office, that maybe he would place his signature healthcare act on hold while we strive to fix it.  I believe it can be fixed but it’s not going to be fixed if we somehow cannot cross the aisle and have a respectful dialog with one another.  The other side is NOT ‘bomb-throwers,’ ‘terrorists,’ ‘kidnappers,’ ‘hostage-takers,’ and ‘whacko birds,’ as those on our side or who collude with our side have said about those frightened of the national debt, the debt ceiling, and healthcare reform.  We need to talk to one another and bring about some sort of peace accord from which, we can move forward, one nation unified under God.  Yes, I said it, I said, “GOD,” God is what keeps this nation safe and secure. Nonetheless, like some of the other bloggers here at the AICP-END is the idea that if we keep being the number one nation of baby killers, i.e., abortion, then at some point, we will lose our much-favored status with the Lord if we have not already done so.  We cannot maintain the devastating loss of unborn life that we do and have for decades now without some sort of consequence.  At one point, when the Israelites failed God and fell by the wayside, He did punish them by allowing the Ancient Babylonians to destroy both Israel and Judah and again when the Romans taught them a lesson. (Please see the article here at the blog: “War in the Wild, Wild East: the Great Jewish War”) and you will see what I mean.   We must find our way back to the path of righteousness and put an end to this sinful way in which we live our lives, it is indeed a highway to hell and a damned sure fast one!

I know I probably put my big foot into my mouth once again, but what the hay, my friends, after today, we have three more days and I will not be back until next year. Next year the election that will set the nation onto whatever course it’s going to be is going to happen in November so every post from January 01, 2014 is going to be a shot across one bow or another.  Whatever happens, we must protect the country, ourselves, our progeny, and our way of life, it is something that has great importance so I hope you will all be ready for the fight of our lives!  Okay, let us move into another item for our holiday menu in a couple of weeks, potatoes are always important and my feeling is, mashed spuds are what it’s all about, right, a vehicle for the gravy we made yesterday!   I like using red potatoes, golden potatoes, they are all good, no longer do we need just to use russets, there is so much for us to use!  We are going to make mashed red spuds now:
Red Potatoes
(#0884) MASHED RED POTATOES

Nowadays, we make mashed potatoes out of all types of potatoes so we can be on the cutting edge of the culinary world.  This recipe using red potatoes is a great one, people love the creaminess, the flavor, and the overall sweetness of the potatoes.  It is important to have a variety of side dish recipes so one can appeal to all customers or family members and this one is one you need to keep in your personal recipe books for future use!

Minced Fresh Garlic
Method:
Boiling Water
1.     Mis-en-place: Place the red potatoes into a large pot and cover with boiling water.

2.     Place the pot over a medium-high flame and bring to a boil; once there, allow it to boil for 3-4 minutes and then lower it to medium-low and allow them to simmer.  Cook until the potatoes are al dente to the point of a knife; remove then, from the stove and drain the water.

3.     Transfer the potatoes to the bowl of an electric mixer equipped with a whip attachment and begin beating them at medium speed.  After a few minutes, add the butter, spices, and milk—incorporate well.  Then, begin adding the cream until the potatoes are smooth and creamy but if you DON’T need to use ALL of the cream DON’T.

4.     Mix just until the potatoes are the proper consistency.  Then, transfer to a serving bowl and decorate the top of them with a cock’s comb or a decorator’s triangle.  Give them rows curved around the bowl and then top with additional melted butter, parsley flakes, and a few shakes of paprika for color. 

5.     Leftovers: you can save leftover mashed potatoes for use in soups but the way to do it is once you know you have more spuds than you can utilize at one sitting, place them into a shallow pan placed atop a cooling rack with a sheet of wax paper atop them.  Get them to 45°F as quickly as possible then transfer the dish into the refrigerator.  Once COLD, transfer them into a sanitized airtight container with a tight-fitting lid, label, date, and keep refrigerated until needed but make sure you use them within 24 hours and that you reheat them to 165°F!
Red Potatoes
Red potatoes are the popular side dish nowadays and with garlic added, they take on an entirely new dimension.  This fabulous recipe is one that everybody will love.  The key to the dish is NEVER to overmix it; the gluten in the potatoes can become rubbery if you do.  Use your best judgment, pay attention to the mixing process, and note that no two-potato recipes are the same: sometimes, they need more liquid and sometimes less so pay attention and “feel” your way— you’ll be successful each and every time.

You can also use blue potatoes, you know, the lovely ones that come from Peru, a great potato if ever there was one in place of the reds.  Golden spuds are beautiful, too, and of course, all other types work just as well.  I think that it’s good to experiment in the kitchen and to devise all sorts of tasty ways with which, to wow one’s guests, friends, family, you name it, they love them as potatoes are a gift from the culinary gods!  We live in a time when almost every foodstuff from around the world is available to us and it’s something that ALL of us can afford so please, take chances, go out on a limb, just be careful about those for whom you vote: we cannot stand another disaster after what we have in the White House now!  Sorry, relatives, I had to say it, it is what it is, mis amigos!

I do hope you are having an enjoyable week so far as we travel through the comfort foods that everyone associates with the holiday season.  I hope that you will find room in your hearts for those less fortunate than yourselves such as foster children for which, the mattress giant, Sleep Train, has a wonderful charity!  You can take an unwrapped toy, game, book, or puzzle to any of their stores and donate it to foster kids who truly need to have friends during the holidays.  You can also go online to their site and donate through it, something I urge all of you to consider doing!  I realize that many Americans are in dire straits at this time of the year and that what with the liberal policies that are damaging our nation—something to which, my eyes are now opened wide, I assure you!—it makes it hard to find extra cash for those in need.  While I do not give to beggars standing out in front of your local Wal-Mart, I do believe that giving money to our churches, to charities, and to other things such as the United States Marine Corps Toys for Tots program, we can all make the world a better place!  I feel we need to help those of us HERE in the country and not folks living in a country to which, we’ve never ever been, as that makes absolutely no sense.  To me, those who donate time and money to foreign children are more of an ego trip than a charitable act; we have too many people and kids here in the U.S. who need all our help!  God bless you all, I will see you all tomorrow, mis amigos!

  1. 1862: During the Civil War, President Abraham Lincoln gave permission to proceed for Major General Ambrose Burnside’s plan to capture the Confederate capital of Richmond, Virginia; the resulting Battle of Fredericksburg proved to be a major disaster for the Union.
