Bakersfield, CA, 11-21-2013 Thursday: One of the major issues of our time is the idea of same-sex marriage and how business owners must act or not act when offering or declining services to these people.  While I realize that the Gays would have us believe that the percentage of society they claim to hold goes as high as .125-to-.25-percent, a recent study coming out of the University of California Los Angeles (UCLA) says they are about 1-2 percent of the nation’s population.  Now, there is a case heading to the Supreme Court of the United States (SCOTUS) regarding a refusal by a business to photograph the commitment ceremony of two lesbians. This business was hit not only with a lawsuit, which they lost but also thousands of dollars in court costs for the Gays, which many see as a blatant attempt by government to tell us how to run our businesses.  To answer this using Libertarian Principles, let us look further at our Libertarian Statement of Principles, so that we know precisely what MY party’s philosophy says on this very thorny topic:
The Rainbow Flag—they deserve the same rights as everyone else does!
First, let me welcome you to the HUMP DAY edition of the American Institute of Culinary Politics-Elemental News of the Day, the place where we cover and discuss the topics of interest in our country and around the world.  This is what our statement of principles suggests about personal liberty:
1.0: PERSONAL LIBERTY: “Individuals should be free to make choices for themselves and to accept responsibility for the consequences of the choices they make.  No individual, group, or government may initiate force against any other individual, group, or government.  Our support of an individual’s right to make choices in life does not mean that we necessarily approve or disapprove of those choices.”
1.1 Expression and Communication: “We support full freedom of expression and oppose government censorship, regulation or control of communications media and technology.  We favor the freedom to engage in or abstain from any religious activities that do not violate the rights of others. We oppose government actions which either aid or attack any religion.” 
1.2 Personal Privacy: “Libertarians support the rights recognized by the Fourth Amendment to be secure in our persons, homes, and property.  Protection from unreasonable search and seizure should include records held by third parties, such as email, medical, and library records.  Only actions that infringe on the rights of others can properly be termed crimes.  We favor the repeal of all laws creating “crimes” without victims, such as the use of drugs for medicinal or recreational purposes.”
1.3 Personal Relationships: “Sexual orientation, preference, gender, or gender identity should have no impact on the government’s treatment of individuals, such as in current marriage, child custody, adoption, immigration or military service laws.  Government does not have the authority to define, license, or restrict personal relationships.  Consenting adults should be free to choose their own sexual practices and personal relationships.”
The Libertarian Flag—don’t tread on us!
Now, my beliefs are that government has no business regulating or directing what is moral or immoral. However, what I believe is that in the case of the photographers who refused to do work for the lesbian couple, do they NOT have the right to ‘deny service to anyone they deem unfit to serve” or to turn business away that they do not want?  Granted, you cannot refuse to serve someone because he or she is black, which should carry over to whether or not someone belongs to a religious minority they deem to be subversive such as Muslims.  Likewise, they cannot deny service to someone because he or she is Gay/Lesbian but they can deny service for other reasons that that and that was the mistake of the business owner who obviously asserted their religious preferences/beliefs.   They should have said, “we are too busy to take this particular job but we can suggest someone who might.”  Let’s face it, we have to play the game to remain legal within this society but at the same time, we also have to set our religious preferences aside at the door so as not to offend others.  We live in difficult times in which, many members of society seem to be angry or upset with another and at some point, we need to find a way in which, we can find a way with which we can all live and work together.  We need to get government out of our lives and live in freedom, the way God intended us to or whatever your belief system tells you!
Tortilla Soup Ready-to-Serve


Pork and Tortilla Soup
Today, we are going to make a lovely institutional-sized batch of pork-and-tortilla soup, one of the more popular soups given the Hispanic population’s rapid growth and the accompanying culinary reawakening or culinary craze!  People love these soups and this one is perfect, especially if you deep-fry your own tortilla chips to order such as in this recipe.  Here we go:

Tortilla soups are always popular and this is a good one as it uses leftover pork chops or any other cooked pork meat and then covers the finished soup with HOT tortillas straight out of the fryer at serving time. Nowadays, Mexican and Latino foods are super popular and I can guarantee you that this one is one of the best soups if not the all-time best tortilla soups you and your friends have ever tasted!  I say keep this recipe on hand and run it at least twice a month and you will see a spike in repeat customers as well as increased profits at the cash register.

Yield:  about 9-plus gallons  / Mis-en-place: 45-60 minutes:

Roux slurry to thicken the soup

The Finish:

Method:

1.      Mis-en-place: have everything ready with which to work! This soup is made in a slightly different way so pay attention to the differences.  First, it’s important to have roux slurry to thicken the soup at the end of cooking time, as we aren’t going to formulate the roux first.  Always melt butter and do so in a heavy-bottomed saucepot sprayed with PAM or with some such other food release spray.  Never allow it to scorch! Stir all-purpose flour into it until it’s moderately thickened and then lower the flame and cook it for 10-15 minutes, stirring constantly, until it’s “blond” and puffed up. 

a.      The alternate way to do this is to prepare it the same way (combining the flour and butter over a low flame) and then transferring it to a 375°F standard oven and cooking it for 15-20 minutes.  Cover it with a piece of wax paper but stir around occasionally while it cooks.  This way, it allows you to do other things without having to watch and to stir it almost constantly.  It also develops a better flavor and will add a great deal of additional flavor to your finished product whether it is soup or sauce.

2.    Combine the first FOURTEEN ingredients in a large saucepot sprayed with PAM or some such other food release spray and place over a medium flame.  Allow it to come to a high simmer and keep there for 15-20 minutes.  During this time, it will develop flavor.

3.      Bring your roux out and if too thick, add some additional melted butter and return it to medium heat.  Cook until the butter’s been incorporated and the roux is pourable.  It should be more like slurry for easy combining.  When both the soup and the roux are hot, raise the heat under the soup pot to full and begin whisking the roux-slurry into it.  Don’t stop until a lump-free soup has formed and then after a minute of constant stirring while boiling, drop the flame to medium-low and simmer for about 20 minutes—this will cook out the flavor of the flour (if it hasn’t already been) and will tighten the soup.  Keep it warm in the top of a double boiler or Bain Marie.

4.      This soup is a popular one in foodservice with the customers but is a pain for the cooks, as they have to do a second part, which normally, they do NOT.  When it’s time to serve the soup, the servers place freshly cooked deep-fried corn tortilla chips in the bottom of the soup cup or bowl, fill it up with soup, and then set it up in the hot window where they call one of the line or pantry cooks to finish it.  That cook comes over and takes it and tops it with sour cream and grated cheese.  He or she then places it underneath the overhead Salamander oven and quickly melts it and then garnishes it with paprika and freshly minced cilantro and returns it to the hot window.  The server then trays it out to the waiting diners.

a.      At home, this part of the process is not a problem because you use your overhead broiler but in the restaurant business, anything that requires extra work like finishing the soup is a burden to both the server and the cook but it is what it is. 

5.  Leftovers should always be chilled to below 45°F as quickly as possible and then transferred to a sanitized airtight container for storage.  As it’s a broth soup, it will keep fresh under refrigerated conditions for 4-5 days but like all foods, should be used sooner rather than later.  Always reheat to 165°F or higher to prevent any possibility of foodborne illness as it is the chef’s duty to protect the health of their customers—never fail in this!

Like all things “Mexican” (at least food-wise), this is a popular soup found in many different foodservice establishments whether they are country club, hotel, institution, or coffee shop.  It’s been popular for the past 20 years so give it a shot and enjoy!
