The Once-Golden State of California
Bakersfield, CA, 10-13-2013 Sunday: Something we have not discussed up until now is the fact that California has now become a “Sanctuary State” and not just a collection of sanctuary cities from one end to the other across the Golden State.  We have a new law, the TRUST Act aka “The Transparency and Responsibility using State Tools Act” is one that will forbid California law enforcement officers at all levels from turning illegal aliens over to federal authorities unless they are felonious, violent criminals.  At the time of this writing, the law was awaiting the signature of the state’s governor, Jerry “Moonbeam” Brown, which in all likelihood, is one he is going to sign.  This year has been a difficult year for Californians because our state is undergoing what the nation is undergoing albeit in a smaller arena, most of which has not made national news or radio talk shows.  If the governor signs this disgusting act, it will turn our beloved state into a sanctuary state in which, illegal aliens will have no enemies and will be allowed to do all sorts of things heretofore impossible.  As if it is NOT bad enough that they now can obtain driver’s licenses, serve on juries, work in polling places, and even practice law in our state, they now will be out of the reach of law enforcement unless, of course, they commit violent crimes.  What the hell is going on in this state?

  Politicians here see it as a slap at what the highest court in the nation did in upholding the State of Arizona’s ability to ask those whom police have stopped as to what their immigration status is.  That happened in 2012 and the TRUST Act has been smoldering on the books of the lawmakers until now when it is becoming reality.  As home to more than 2.5 million of the more than 20-30 million illegal aliens living in the country, California has long been in favor of preventing federal immigration authorities from screening prisoners throughout the state’s jails in an effort to curry favor with immigration radical activists.   We are swamped with illegal aliens who run amuck at all levels of society, driving, drinking, killing people on the road or committing the majority of violent crimes around the state.  We have high incidences of gang-related crime activity here and if something is not done about this outrage and soon, the exodus out of this state is only going to continue and much more stronger.   We need our elected leaders NOT to continue forcing one radical law through the Assembly and Senate after another because we simply cannot stand up underneath this incessant outrage!

The problem in California is that the state’s lawmakers want to mimic the stuff they see the federal government shoving through against Congress much to the anger of a majority of the nation’s population.  They are smart enough to know that if they do not add greatly to the number of their voters, the whole thing might collapse in upon itself come November of next year.  The midterm elections next year appear to be an onrushing political bloodbath of sorts because the Tea Party is springing to action once more now that the Internal Revenue Service’s illegal actions have been exposed to the world.  People are preparing to put up numerous candidates to attack entrenched Democratic lawmakers at all levels and unless the Democrats somehow stop this growing trend, they will most likely lose more seats from top to bottom across not only California but the nation than they did in the 2010 Mid-terms.  Anger is growing; the people realize that next year may be the LAST time to stop the all-encroaching socialism that is eating us alive.  I know that there is going to be plenty of blowback against these enemies of the country!

Add this outrage to the Bathroom Bill, AB 1266, the one in which, transgender children can now cross the line and use bathrooms, locker rooms, and sex-segregated sports depending upon how they feel on any given day.  Many people do not even know about this act that is slated to kick in on January 01, 2014 and are oblivious while others, however, are already planning on how to subvert it.  We live in times I keep proclaiming to be the antebellum of the End Times because virtually everything that is ongoing now are things that daze the minds of those who do their best to live a moral life.  No wonder the leftists fight so hard to shove their secular ways down our throats because they know that if they can offset the teachings of religious leaders, churches, and philosophers, then they can shove their sick agenda down our throats.  We need to do something and to do it soon as otherwise, the only thing we will be able to do is to escape this immoral nation.

The fact that Tom Ammiano, the author of the Bathroom Bill, is also one of the writers of this act should tell you something about what is going on here.  These lawmakers seek to transform every sensible and moral act passed by generations of Californians that preceded us.  They feel that if they can stop the government from doing its duty and deporting thousands of illegals that they are increasing their power base.  I think the time has come to begin fighting back against these criminal legislators because if we don’t, we will not recognize this state in another decade.  It will be overrun with illegal aliens committing criminal acts, no one will be safe and there will be no refuge from them.  They almost are a protected species now!  Let us move on to the final recipe of the week now so we can call it a week and I can head out the door.   We are going to finish with a recipe Stinkbug presented on Wednesday, December 29, 2010 for his amazing enchiladas!  Here we go:
(#1053) BEEF ENCHILADAS



Making basic enchiladas is simple; it takes time, the most important resource so allot your day to find time to make them.  Usually, you can expand the recipe to feed more and the only thing required is the time in which to do it and also, if you cannot make the rice and beans—the traditional accompaniments—you can buy mixes such as Rosarita Refried Beans and Rice-A-Roni Spanish Rice mix.

Method:

1.      Mis-en-place: have everything ready with which to work!

2.      Combine the first six ingredients listed in a saucepan and place over a medium-high flame.  In a small bowl, combine the vegetable oil and the flour to form a roux.  Blend well and when the contents of the other pot come up to a boil, whisk it in with a whip.

3.      Let the sauce simmer for 4-5 minutes, stirring frequently.  When time is up, lower flame to moderate and permit sauce to simmer gently for 45 minutes or so.  When it is flavorful, it is ready and if too thick, adds some hot water or a little more chicken broth.  Things tend to cook differently over flame or electric heat so use your best judgment.

4.      Now, it is time to work on the carne, the meat for our enchiladas.  Use ground beef with a high fat content, 30%, for the flavor and do not worry about the fat; sometimes, fat is good.

5.      Get out the old black skillet because it has worked to do!  Place it over a medium-high flame, add the oil and the meat, and begin to cook and as you do so, break it up so it becomes all crumbly like it should be.  Cook until a good deal of fat has been rendered and no pinker shows.  Add the rest of the ingredients and keep cooking.

6.      At that point, add the rest of the ingredients listed and lower flame to medium.  Continue sautéing until meat is completely cooked and onions are tender; set aside.

7.      Okay, by this time your kitchen should smell wonderful!  We are getting close, so hang in there, tan pronto, tan pronto! Before we begin, please note that we will use a half-cup of the grated cheese in the filling of the enchiladas and the rest will go on top.  Also, preheat your oven to 375°F.

8.      Place the shortening in a heavy-duty, preferably medium-sized to small skillet and place over a medium-high flame.  When hot, place a tortilla into it, one at a time, cook for half-a-minute then turn over and cook for another half-minute; then, place in your pot of mole quickly, and then remove and place on a sheet pan.  Continue this same procedure until all tortillas have been done the same way.

9.      When you cook the tortillas, do not cook them till they are hard like a tostada shell.  Cook only until they are no longer raw, kind of when their “blemishes” (the tortilla’s brown spots) begin to show up.  At that time, they are done.

10. Turn your attention to the mole-dipped tortillas lying on the sheet pans.  Fill each in the following manner: 2 tablespoons of meat, 1 tablespoon of cheese, and one teaspoon minced onion, and 1 teaspoon of green onions.  Note—these are approximates so do not hold yourself to “precise” measurements. Roll each one up and place side-by-side in a casserole dish.

11. Pour the rest of the mole over the enchiladas and scrape the scraps off the sheet pans onto the top so nothing is wasted, I mean nothing!  Cover with the rest of the cheese, the green onions, and the black olives.  Place the pan inside your preheated oven on the middle rack and bake about 20 to 25 minutes or until the heat penetrates the enchiladas throughout—they should be at least 155°F temperature-wise.  At that time, these delicious babies are ready to serve and enjoy!

12. May I suggest (as I’m running out of room) that you accompany your enchiladas with some delicious Rosarita-brand refried beans, los frijoles refritos enlivened with grated cheddar-jack cheeses of course and some Spanish rice, if you’re in a pinch, use some Rice-a-Roni-brand, it’s good enough especially if you don’t have time.

13. Also, get out your recipe for salsa or go buy a jar of Herdez salsa, as hot as you can stand it.  Ai caramba!  Muy delicioso!

14. Cool leftovers to below 45°F as quickly as possible and then transfer them into a fresh, sanitized pan.  Cover with plastic wrap, label, date, and refrigerate and be sure to use them within the next 1-2 days.  You can freeze them for use later but use within ONE week for best results.

Everyone needs to know how to make enchiladas and this basic recipe is a good place to begin. Mexican food is always good and maybe I picked this recipe because of today’s topic, illegal immigration, something that hurts everyone and helps none.  I have heard others compare employers to running water that they seek the easiest way out when it comes to paying wages.  I think that all of us should go back to where wages were back in the 1980’s because since then, we have gone backwards for more than 20 years, something that is NOT beneficial to the citizens of this country; let’s fix it!
