PERSONAL FAVORITES, PART IX—BRIAN CARRICK’S STOCKDALE COUNTRY CLUB CARROT CAKE

 DAY NUMBER FIFTEEN OF OBAMACARE

“Personal Favorites, Part IX: now a Fan of Radio Talk Show Host, Jaz McKay, Chef Olaf explains his move from Far Left Liberalism to Conservatism and then presents B. Carrick’s Stockdale Carrot Cake!” by Chef Olaf Bologolo

1,059th BLOGPOST AT THE AICP-END!
Bakersfield Talk Show Radio Host, Jaz McKay
Bakersfield, CA, 10-15-2013 Tuesday: I must say, I never quite thought I would be agreeing with Bakersfield radio host, Jaz McKay (on Radio 1560 AM), but I find myself agreeing with him more and more.  I heard him speaking on the Seventh of this month regarding how the man for whom I voted, TWICE—no less!—has shut down the National Mall in Washington, D.C.  Mr. McKay mentioned the fact that over the course of the weekend of October 04-06, how the government forcibly removed veterans at the Vietnam War Memorial and how the Feds closed all of the other memorials including the World War II one forcing aged veterans to return to their hotel rooms.   As I mentioned yesterday, I am somewhat stunned at what is going on, at the level of childishness that is the federal government today and when combined with the Lois Lerner scandal at the Internal Revenue Service, the NSA scandal, Fast and Furious, and Benghazi, well, we have a REAL problem on our hands!  I hate to say this because again, I voted for the man—TWICE NO LESS, I REITERATE!—but we have a petulant man-child running our nation and it’s not difficult to see where that has placed our nation in a dangerous world.  I am fearful, something I hate to admit, but if we cannot do something about this next year, I truly do not know if the United States can stand another three years of this.  We have to come out in 2014 and vote this man into lame duck status because if they somehow win the House back and maintain the Senate or worse—get another supermajority like what they had from 2008-2010—there is no going back!
Lois Lerner—still needs to be held accountable!
I used to think that Jaz McKay was a muckraking slimeball of ill repute who fed off the bottom of the media pond whereas now, I must say, I listen to the man enthusiastically!  When I come to town, I listen avidly and when I am down south working at the hotel in Century City, Los Angeles, I pick his show up on the office computer or have my wife record it at home, so I can listen to him, Rush Limbaugh, and Mark Levin.  I think listening to Mr. Levin set the stage for my transformation because when I consider all of the things going on across the nation—especially during this temper tantrum of the President!—I see that I have made a mistake.  Even the fact that I am a member of the Green Party and a believer in environmental issues, I see that what the White House is presently doing to the energy industry is something that is going to cause our nation to collapse.  Heck, the clean air regulations here in California have driven the price of food UP, which is something that we must sadly pass onto the customers.  Add to that the increase in the minimum wage, the advent of Obamacare, and the other countless taxes, hidden and visible, it is going to be impossible to run a successful business.   I say ‘kudos’ to those involved in the fight to put things back on track as if we do not do something to bring this administration’s power to an end next year, you can kiss this nation goodbye!
Governor Jerry Brown
I must now mention the other hideous acts taking place here in California alone and again, I must concur with my good friend James Tobiason, I believe that California governor Jerry Brown is going to toss his hat into the presidential melee of 2016.  The reason I believe Chef Tobiason is right (please see his post o 10-07-2013) is because of his incessant and shameless pandering to the illegal aliens living here in the state.  California has long been destination number one for every illegal alien crossing the southern border because our state provides those housing credits, food stamps, healthcare, education for their kids, and tax-free income.  We have gone from having sanctuary cities to being a sanctuary state in which, illegals can obtain driver’s licenses, serve on juries, work in polling places, practice law, and live in comfort knowing that they will NOT be handed over to ICE and other immigration authorities!
San Francisco Assemblyman, Tom Ammiano
On Saturday, October 05, 2013, Governor Jerry Brown signed AB4, written by radical Assemblyman Tom Ammiano, a San Francisco Democrat, limits the reasons WHY local law enforcement CANNOT turn criminal illegal aliens over to the feds.  Like Tobiason, I believe that all of this pandering to the illegal community living in the state, with estimates of it being between 2-5 million border-crossing criminals, is his way of securing at least the vice presidency on a Democratic 2016 ticket.  If any of you have a memory long enough, Governor Brown, who served two terms back in the 1970’s and ran for president TWICE did not do well but maybe the world was not ready for him back then.  Now, however, he might be just what the liberals are seeking, a man who is illegal alien-friendly and has signed numerous laws basically giving Mexico back to its former owners (How come no one ever discusses the fact that it belonged to various Indian nations and NOT to the Mexicans?).  Yes, I believe that this is the substance of forming a presidential campaign and that he might actually have a darned good opportunity at winning it, I just hope the Republicans are smart enough to run rock-hard conservatives if they wish to win the White House!
President Barack Obama
Now, I must apologize to my longtime friends who are now probably wondering as to WHY their friend and coworker, Olaf Bologolo, is crossing the divide between liberalism and conservatism.  Look, I will never forego my environmentalist issues nor will I surrender my liberalism but let’s face it, at times, we need to have our nation’s senses get a reality check just as it did by electing Ronald Reagan to succeed Jimmy Carter!  At first, I was enamored of Jimmy Carter, I thought he was going to right the nation’s many wrongs following the loss of the Vietnam War, Watergate, and President Gerald R. Ford’s bumbling ways.  However, I did not expect Mr. Carter to be the loser he turned out to be so when Ronald Reagan won the presidency, I have to admit, he gave us near six years of unimpeded economic growth!  Then, when his vice president became president, President George Herbert Walker Bush continued doing what he did and as a businessperson, I was happy at what I saw!  Our nation has to undergo these experiments with liberalism so it can return to prosperity, good benefits, lots of jobs, and economic success!  That is what we need now but we cannot allow the Democrats to win the House and retain the Senate, we must knock them out of the picture!  We will discuss more of this in the days to come but right now, we have to make our recipe!
Chef Brian Carrick
Back on Wednesday, April 13, 2011, Chef Lilah Paulikovich presented a recipe written by Chef Brian Carrick, our illustrious publisher here at the AICP-END, for his famous Stockdale Country Club Carrot Cake.  The man has a knack with desserts and this recipe has appeared here on more than one occasion.  I think that it deserves another look and that all of you will appreciate seeing it once more.  Without further discussion, let us delve into it, shall we?

2
Cups
Granulated sugar

1-1/3
Cups
Vegetable oil

2
Teaspoons
Vanilla extract

.5
Teaspoon
Pineapple extract

2
Tablespoons
Zested orange rind

3
Cups
Grated carrots

1
Cup
Chopped pecans

Carrot Cake Frosting

Philadelphia-brand cream cheese
At room temperature
2.25
Cups
Powdered sugar

2
Ounces
Butter
At room temperature
1
Teaspoon
Vanilla extract

Carrot Cake Garnish
.25
Cup
Grated carrots
Steamed
2
Tablespoons
Crushed pineapple, squeezed dry

2
Tablespoons
Chopped pecans

  1. Preheat standard oven to 375°F or convection oven to 325°F.
  2. Combine the first five ingredients together and sift twice.
  3. Using an electric mixer equipped with a PADDLE attachment beat the eggs at high speed until light.  Then, gradually add the granulated sugar followed by the vegetable oil and beat at high speed until creamy.
  4. Next, on low speed, add the DRY ingredients to the creamed mixture and blend well.  Then, add the next five ingredients listed and mix the batter on slow speed until combined.  Don’t overmix however!
  5. Prepare your cake pan now: I prefer to use a reflective aluminum pan and never a dark non-reflective one.  It is important to bake using aluminum so that heat is reflected away from the cake rather than drawn into it. Reflective pans keep the finished cake from being too dark, which is unattractive so always use aluminum or glass if you must.  Spray the pan with PAM or other food-release spray and then line with wax paper.  Spray the wax paper with food release spray, too.
  6. Pour the batter into the prepared pan and shake gently to settle it.
  7. Now, insert the cake into the preheated oven on the middle oven rack and bake for approximately 45-55 minutes or until a toothpick or cake-tester inserted in the center of the cake comes out CLEAN.  An additional test is to touch the center of the cake with your index finger: if the depression springs right back up, the cake’s done and if not, bake for a short while longer. One important idea to note is that you should always strive to remove the cake or quickbread a moment or two before it’s completely done as it will finish baking in the pan on the cooling rack for a couple of minutes. It is best that it be a touch under-done than overcooked.
  8. When the cake is baked, remove from the oven, place on a wire rack, and allow it to cool completely.
  9. When the cake is completely cooled, place it in your freezer as this will simplify the frosting process; it’s always easier to frost a semi-frozen cake than one at room temperature.
  10. Frosting: using your electric mixer and the paddle attachment once again, beat the softened cream cheese until soft at high speed. Drop the speed to low and gradually beat in the powdered sugar, butter, and the vanilla. Return to high speed once more, finish beating until light and creamy, and then stop. Should it appear a little too lose, incorporate more powdered sugar.
  11. Frosting Procedure: leave the cake in the pan when you remove it from the freezer and then spread it liberally with the cream cheese frosting.  Use a decorator’s comb (what we called a “cock’s comb” in the old days) to spread lines at an angle across the top of the frosting.  Finally, sprinkle the prepared garnishes across the top of the cake and refrigerate until you’re ready to serve.
  12. Note: you may substitute zucchini in place of the carrots for a wonderful cake if you so desire.  Keep the recipe the same and just use grated zucchini, preferably the outsides so it’s all green and discard the inner white parts.

Green Zucchini
Yes, indeed, that is a wonderful recipe and one I felt obligated to share with you, the committed readership of this amazing blog!  Did you know that we increase our readership on a daily basis because not only do we offer our own blog, we also provide the links to so many more and of ALL political persuasions!  I enjoy reading the far left communist bloggers, as they seem to feel they are as normal as is sunshine when in fact, commies are not, they are an aberration of failure that has happened many times before but never met with success.  Add to that the modern-day liberal scourges of men like what we presently have running the country and you can see all sorts of light blasting through multitudes of cracks.  We need to have a coalition of voters next year seize power back from the nuts currently running the Senate and their underlings in the House, if ever there was a chance to right this nation, 2014 is going to be it.  I just fear that maybe the federal government will rig some sort of ‘national emergency’ that will postpone—perhaps indefinitely!—ALL elections.  We must be on guard at all times!

We urge our readership to write to us, leave comments, and if there are any of you, who would care to write an article for us, please get in touch via Magnolia Hilltop Brewers, P.O. Box 20669, Bakersfield, CA 93390-0669.  We obviously do not pay anything but give YOU full byline and that, my friends, is worth its weight in gold.  We want as many people who want to write to be able to do so and we believe that by presenting a forum for our fellow chefs, we are doing something for our beloved industry.  We love diversity and hope to add new and different authors to our pantheon of chefs, food and beverage directors, and culinary professionals.  Come on and join us, it will be fun! Expect that when all of us have run through our cycle, we will be introducing some brand-new talent or so Stinky says.
ANYWAY
We have touted the AARC Technology Company here in Bakersfield, CA, and must add the Nerds on Call.com folks.  Without them keeping our blog up-and-running, there is no telling where we would be now.  We have a great many problematic issues here at the AICP-END because even with the best security systems in the world, malware and other terrible fecal materials manage to penetrate the blogsite.  Do yourself a favor, hire the best, and note, you can have online help via a remote button on your desktop for just $25 per month!  Get in contact with the Nerds now!  Here’s another note: do NOT do business with Galkos Construction, Inc., those people are nothing but crooks as if you lease your system, you will never pay it off, plus you have to pay them for excess energy produced by your system, the electric company does not buy all of it nor do they!  AVOID GCI AT ALL COSTS; DO NOT DO BUSINESS WITH THESE CROOKS!
OLD SONGS, NEW SONGS
We are selling recipes all the time and you can order things you would like copies of simply by mailing us your name, address, the recipe you would like and a check for $1.00.  You can buy an entire week’s worth of recipes when we do a series simply by sending us a check or money order (no cash please!) for $20 and we will have it out to you in the next day’s mail.  Please become a part of the AICP-END by sending us your names, addresses, and information and we will welcome all of you with open arms!

God bless each single one of you amongst our fan base!
BANDSTAND
Liberal friends, I am so sorry that I am seemingly becoming a “traitor” to the cause but let’s face it, the nation cannot afford to keep spending levels at what they now are.  Things were difficult enough without us fixing the entitlements of Social Security and Medicare but now with the Affordable Care Act piled atop us, there is no way we can keep from flat-lining in the red for good.  Just like a dying patient, already overwhelmed with TWO serious diseases, add a third to his misery and he’s going to go down quickly and with no hope for survival. The time has come for the people of this country to put the nation back onto its tracks so it can continue its journey for the good of the citizenry of this nation.  God bless the United States and its people!  I will see you tomorrow but first, let me suggest you buy some of these fine CDs by Family, they are one of the all-time greatest British bands and yet, not many people know of them nowadays!  I love this band, as should you so please!  Check them out, buy some CDs, listen to them, enjoy, and we will pick up tomorrow where we left off today! Bye!
IT’S ONLY A MOVIE
Anyhow, let us close with this impassioned plea—please leave some comments and/or become a follower. What's more, why not spend some money and purchase an album by Family, the Grateful Dead, the Association, the Byrds, and Spirit and/or buy a cookbook from Amazon.com—we want to make some money here so help us out by buying something!  Allied with them, we are pleased to market their merchandise!  Amazon.com is one of the greatest—if not the ultimate greatest!—online department stores in which, one can find almost everything on the planet.  We love them and they love us and we want all of you to visit them daily, take advantage of their deals on everything from kitchen equipment to cookbooks, CDs, DVDs, and everything else a person could want.  Everything you buy from them puts money into our pockets, which allows us to keep this fine blog up-and-running 24/7/365!  God bless America and God bless Amazon.com!
PEACE!
