Obamacare—End it Now!
Bakersfield, CA, 10-09-2013 Wednesday: The number of horror stories regarding the signing up for healthcare under the Obamacare plan seems to be increasing by the day.  I think everyone who had any idea regarding this difficult boondoggle knew deep down in their heart that this plan was doomed to fail from the start.  There is no way the government can run a plan like this when it cannot run anything else, only the private sector has the ability to undertake a job this complex, this momentous, this all-encompassing and to do it well.   I think every one of us living in the United States has stories regarding how they are treated by the folks at the post office, by people at the Department of Motor Vehicles, by those running the IRS because none of these three examples works very well nor is it customer friendly.  I think that we are going to be in a period of upheaval, of distress, of confusion, and of intense scrutiny because what we have here is the government going down the path traveled by many dictators before them.  Virtually every dictator of the 20th Century pushed healthcare reform as a means of taking over control of their citizens because once the government gives you healthcare, it controls you from cradle to grave.  I mean, who the heck is going to work against the ruling elite when they can pull your healthcare out from underneath you by making it impossible for you to afford. 
Undo Obamacare!
We live in a time of growing concern about the overreaching power of the federal government and how it seems to feel that it is the ONLY entity in the United States to tackle every problem the nation faces and to provide every job the people hold.  Since Barack Obama assumed power, we have seen the decline of private sector jobs while the government continues to expand, as do the accompanying labor unions.   If we wanted to work for the government, I think that that is something that we would have sought from the start but it’s not something most of us want save for the Millennials.  All the Millennial Generation knows is the control of BIG GOVERNMENT and that is all their education has taught them, that BIG GOVERNMENT is their salvation, their ultimate savior.  Capitalism to them is unfair, it keeps some people out of the market while promoting others to heights unimagined by them.   They think that the word, PROFIT, is a negative thing of a dying generation and let’s face it, the educational system is doing a pretty damned good job of co-opting their thought processes.   I think that Adolf Hitler and Josef Stalin would have been jealous of what we have going here in the U.S. and not about or freedom but about the power exercised by the National Security Administration and the other intelligence and police agencies that spy on the people 24/7/365.  I truly believe that one of my favorite television shows, Person of Interest, which appears on CBS is truer than any of us can imagine.  I believe that both federal and state governments have all sorts of surveillance apparatuses that keep tabs on every American citizen no matter where they are—there are cameras everywhere!   I would be surprised that the feds know nothing about each of us, they have an all-seeing, all-reaching EYE atop the pyramid in such a way that it is reminiscent of Sauron in Mordor.  I am truly quite fearful over this ongoing situation and I would love to find a way out of this morass, I do hope that the blog eventually moves to the British Virgin Islands.  We need to get out of this place!

Today, we are going to do another personal favorite of mine, truly a dish I think everyone will enjoy!   The recipe I have chosen for today’s post is one that Chef Stinkbug did back on Thursday, December 20, 2010 for his meatloaf, an awesome one if ever there was one.  What we do is we go through the entire catalog of our recipes here and then we replicate them here at the AICP-END test kitchens out here in Oildale, California, on Robert’s Lane.  We do the recipe several times and then we serve it in the cafeteria for the homeless that come in through the door and gauge their responses to see if we did well or not.  This recipe earned me more than FIVE stars so I have to say, I think it’s going to be perfect for you, too!  Here we go:

Meatloaf is a standard coffee shop favorite, much loved by many people, as it typically is a comfort food.  This is an excellent recipe for making it, one everyone seems to love and appreciate and even though it takes a bit of prep time to make it, it is definitely worth the effort!

Method:

1.      Mis-en-place: have everything ready with which to work!

2.    The day prior to cooking the meatloaf, place both meats in separate colanders so the juices can drain.  Cover with plastic wrap and refrigerate overnight. 

3.      Blanch the vegetables separately in boiling salted water until each one is al dente-tender.  Drain immediately and plunge them into ice water to retard further cooking.  When cold, drain and combine them together, keeping them refrigerated overnight. 

4.      The Rice: first, preheat standard oven to 375°F and have ready; then, bring the beef broth to a boil in a small saucepot, add a pinch of salt, and add the jasmine rice.  Stir until the mixture comes to a boil, then clamp on a tight-fitting lid, and place on the middle oven rack of preheated oven.  Bake it for 20-25 minutes or until the rice absorbs the liquid.  Remove it from the oven, remove the lid, and allow it to steam out; then, fluff with a fork, remove it from the pot and place it into a small pan and cover with wax paper until below 45°F.  Cover with plastic wrap and refrigerate overnight.

5.      The next day, beat the eggs until light with the aid of an electric mixer equipped with a whip attachment.  Soak the ten slices of Roman Meal bread in a bowl with the measure of beef broth until it becomes wet; then, mash it with your hands and combine it with the eggs and the seasonings. 

6.      If possible, place the meats into the mixer’s bowl and hook up a paddle attachment but if you cannot, place it into a large mixing bowl.  Add the rest of the ingredients, the bread, the vegetables, and the rice.  Mix until thoroughly blended then place into a holding pan and FREEZE for 5-10 minutes.  Preheat standard oven to 400°F or convection oven to 350°F with the fan in the “on” position. 

7.      Roll out a large sheet of aluminum foil and then roll out another exactly the same size.  Overlapping one another, fold the crease between the two “shut” and crimp the edges so that it is ONE piece.  Then, spray it heavily with food release spray and line it with two sheets of wax paper, spraying them with food release, too.

8.      Bring the meatloaf mixture out of the freezer and heap it up in the center of the foil-wax paper.  With your hands, work it out into a loaf shape and then fold the sides in—right and left—until they meet in the middle or are close to it.  Then, fold the top half over the top and roll it up into a LOAF.  Take care to crimp the edges closed again so that it is an airtight seal or as close to it as possible.

9.      Spray a sheet pan large enough to hold it with food release spray such as Crisco Pan Release, PAM, or some such other food release spray.  Line the pan with a sheet of wax paper and then spray it with food release spray, too.  Place the foil-wrapped meatloaf atop it and place it onto the middle oven rack of the preheated oven. 

10. Bake for 30 minutes at the starting temperature; then, drop the heat by twenty-five degrees and continue baking for another 60-90 minutes or until a quick-temperature thermometer inserted into the center reads 165°F.  Pull it out from the oven then and place the sheet pan atop a cooling rack.  Slit the covering open with a sharp knife and allow the steam to exit the loaf.  Leave it that way for 15-20 minutes so the meatloaf can firm up with the absence of the heat. 

11. When very cool, remove the wrapper, transfer the loaf to a sanitized sheet pan, and cover with plastic wrap.  Refrigerate it overnight.  The next day, slice it and heat it to order in the microwave oven to 165°F.  Serve with brown sauce, mushroom sauce, or Spanish sauce.  Accompany with mashed potatoes and vegetables of choice. 

12. Always keep the meatloaf refrigerated and if not used within the first day of usage, individually wrap the portions, label, date, and freeze for use when required.  Use it within 5-7 days as after that, it begins to break down as meatloaf typically attracts ice crystals.

This is the classic way of making meatloaf; it is beautiful and delicious, definitely worth making. Meatloaf is truly one of those dishes that many people claim as one of their ‘comfort foods’ and trust me, it’s mine, too.  There are so many ways of making meatloaf and what with all of the modern-day reinterpretations of this time-honored dish, it is almost comical when one considers all of the ‘foreign’ ingredients tattooed wonder chefs shove into it.  There is nothing better than the real deal and this, my friends, is definitely the way meatloaf should be made. 
Obamacare—coming soon to your Neighborhood!
Right now, there is a great deal of consternation occurring in the United States as people attempt to come to grips with the horrendous Patient Protection and Affordable Care Act because the money they expected to have for years to come has already been used up and since gone.  How in hell this administration is going to continue promoting this failing program, you tell me.  All I know is that the President and his minions truly believe that they can push single-payer healthcare onto the citizens of this great nation and all I can say is that we must fight it with all our hearts lest it become permanent.  Yes, I know there are people who truly need help with their healthcare and I say, “Let’s give it to them” but for those who do not want to participate in this lunacy, there should be a way to push delete and start over without incurring the wrath of the federal government.  More on this in the days to come!

We are in to our second album by Family today and let me tell you, both of these offerings are exceptional, the vocal abilities of Roger Chapman are unique to say the least.   In some ways, they remind me of another great British band, Traffic, at this point and in some ways of the Rolling Stones.  I wish they had gone on for far longer than their brief career but then life is what it is, I guess.  I also want to push you to pick up the CDs by the Association as this band is one of the all-time best, their vocal talents are amazing and they were a sign of the times from whence they came.  Whatever you take away from our blog on a daily basis, let this be one of them: the music we promote is nothing but the best!  You need to know the music from the past before you can accept that of the modern times!  Most of today’s bands would never have made it in the golden era of rock-and-roll, no way would any of them ever have!  See you tomorrow, buy some CDs, leave some comments and God bless all of you!  Bye!

  1. 1776: A group of Spanish missionaries settled in present-day San Francisco.  
  2. 1910: A coal dust explosion at the Starkville Mine in Colorado claimed the lives of 56 miners.
  3. 1930: Laura Ingalls became the first woman to fly across the United States as she completed a nine-stop journey from Roosevelt Field in New York to Glendale, California.
  4. 1936: The first generator at Boulder (later Hoover) Dam began transmitting electricity to Los Angeles, California.
  5. 1940: Rock-and-roll legend John Lennon of the Beatles was born in Liverpool, England.
  6. 1958: Pope Pius XII died at age 82 ending a 19-year papacy.  Pope John XXIII succeeded him.
  7. 1967: Latin American terrorist, thug, and murderer Che Guevara was killed by the Bolivian army a day after they captured him for inciting armed insurrection against their government.
  8. 1974: Businessman Oscar Schindler, credited with saving the lives of about 1,200 Jews during the Holocaust, died in Frankfurt, West Germany.  At his request, he was buried in Jerusalem.
