Bakersfield, CA, 10-07-2013 Monday: A week ago, an amazing thing began unfolding around the nation’s capital as the Republicans began fighting back against a president and a senate full of Democrat firebrands, slanderers, and name-callers, people who would NOT give up their Obamacare subsidies!  They would not give up their subsidies because it would “cost them too much” but I say, if it is good for the people of this nation to suffer under Obamacare, then it is good enough for them and their families to suffer as well!  I am a liberal Republican, I believe in conservative economic but am liberal when it comes to social issues but the time has come when Americans need to stand up and say to the nation’s leaders that we are NOT going to take this anymore!  We do NOT want Obamacare, NO one I know wants Obamacare, and the employees do not want Obamacare, why the hell can they not see this or consider how we feel on this very disgusting topic?  Do you know that if the government wanted to provide healthcare to those who do not have it but want it, it would be easy enough for them to do so.  Providing the uninsured with healthcare is not what it’s all about, it’s about forcing the nation into single-payer, public healthcare a la the DMV or the Post Office style of doing business and NOT serving the nation’s people!  The American people are NOT going to stand for this outrageous behavior and I can assure you, the readership that we, the voters, are NOT going to forget this come election time next year. I assure you, Senate Majority Leader, Harry Reid, no matter if you throw the borders of this nation wide open and allow the Third World to pour in, smothering us, we are NOT going to forget this!  The time is coming for us to adopt the ways of Mahatmas Gandhi and to throw our bodies into the streets to force the government to back down on this subject, we are not going to budge and no matter how many of us the Internal Revenue Service imprisons, we are not going to back down!  The Second American Revolution is coming and the enemies of this nation are going to pay!

  Let me welcome you to the American Institute of Culinary Politics-Elemental News of the Day, it has been approximately seven months since last we met and I am pleased to be here and also pleased that I get to open a brand-new category, Personal Favorites!  This is one in which, the chef-host for the week can pick and choose from across the many years of posts and present our favorites by other chefs.  I think that is great because for once, we get to be the editor and to select the recipes we like and present them to you, our friends and fans.  We have presented more than 1,500 recipes since we have opened our blog after the last one shut down due to the federal government’s manipulation of our old site at Choseit.com.  We have more recipes than most bloggers have serious posts and that is a great thing because we have done all of it for you.  The fact that we are hard at work bringing our original posts up to date is also an important part of what we are doing to make this the greatest blog of all time so please!  Tell your friends, family, neighbors, coworkers (if you have any left), and even strangers about the good work we do here at the AICP-END

The opening recipe for this new category is one Stinkbug first presented on Friday 12-10-2010 for Chicken-and-Dumplings, one of my favorite recipes.  I hope you like it, here it is in all its delicious glory:

Method:

1.      Place the first TEN ingredients in a large saucepot and place over a high flame.  As soon as it comes to a boil, lower flame to medium and simmer 45 minutes.  The liquid in the pot should not be higher than a gentle simmer; at no time permit it to roll or to approach a boil as what we’re doing is poaching the chicken.  Skim occasionally during the aforementioned time.

2.  While the chicken is cooking, prepare the dumpling batter.  Using an electric mixer equipped with a paddle attachment beat the eggs until frothy.  Add the salt, baking powder, and parsley. 

3.      Next, stir in the milk and combine together well.  Finally, blend in the flour and mix until smooth but DON’T overmix, as this will toughen your dumplings.

4.      If you mix your batter correctly, it should slowly break off the paddle attachment as it lifts above it.  To test it further, drop a small piece of batter into the simmering liquid of the chicken pot.  In the space of 1-3 minutes, it should bob up to the top of the pot after dropping to the bottom.  If it does this—it’s perfect.  Should it not do this, the batter might be too heavy so stir in a little more milk.

5.      When the batter’s ready, cover it with a piece of wax paper and set aside until called for.  Anything else you wish to ready for dinner, do it now.  Preheat your standard oven to 400°F or your convection oven to 350°F. 

6.      When you have simmered the chicken for 45 minutes, test for doneness.  If it is, it’s time to make the gravy and if not, simmer the chicken a bit longer until it is ready.  Note: you should still have a great deal of liquid left in the pot and if not, add more boiling water or chicken stock. 

7.      Under the heading “gravy,” strain out 3.25-quarts of chicken broth from the pot.  Place in a saucepot over high heat and leave the chicken in the remaining liquid to rest taking care to keep it covered.  In another 4-5-quart saucepot, combine the vegetable oil/chicken fat with the flour to form a roux—blend well.

8.  Place the roux over a medium flame and cook it for several minutes, stirring almost constantly.  When the 3.25-quarts of chicken broth have come to a boil, pour it into the roux a bit at a time whisking it fiercely all the while.

9.     When you have combined the gravy, allow it to come to a boil and remain there for two minutes; then, lower the heat and simmer 4-5 minutes.  Stir in the white pepper at this time.

10. Pour 8 cups of the gravy into a large, semi-deep roasting pan.  Using a 2-ounce ice cream scoop or a tablespoon, scoop 14-16 dumplings out of the batter and into the hot liquid.  They’ll drop like stones but will soon rise to the surface.  Cover the pan with foil, sprayed with PAM or some such other food release spray OR a tight-fitting lid, and place inside preheated oven on the middle oven rack.  Once there, cook for 20 minutes.

11. Remove the rest of the broth from the chicken and reserve it.  Replace it with the rest of the gravy.  Cover the chicken and set it alongside the dumplings in the oven for the same amount of time.

12. While everything’s finishing, now’s the time to prepare your vegetables.  Cook chopped carrots and peas in separate pots using the remaining chicken broth and/or water.  Add salt to the liquid and cook until al dente and immediately remove from the liquid and plunge into ice water to retard further cooking.  Then when it’s time to serve, place in a bowl with some butter and microwave.

13. When time’s up, remove everything from the oven, divide between four plates, and pour sauce over all.  Garnish with plenty of parsley and your cooked vegetables. Serve with hot biscuits or bread and you’re ready to go!

This is obviously a great dish for the fall or winter but is also good in the spring so keep the recipe handy, as it’s a good one, especially if you run a coffee shop or some such other small restaurant frequented by local folks, working people, and God-fearing Americans.  These are the dishes of our grandparents, these are the dishes our mothers, aunts, and other female relatives made with love, presented at the dinner table and then dished up for each family member.  Honor your relatives by sharing the memories of dishes such as this one with everyone you know, they will be delighted when they savor the first delicious bite!

I hope you have had a good time today because I am always fearful if I try something new that maybe the readership will not like it!  I am excited about doing this category as it allows us to reach out and do something different because after a year or two go by, usually no one looks at the older posts so it is important for me and for the blog to bring them back and share them with the readership.  Let’s not forget for a moment, however, that the President is real good at throwing all sorts of hateful words here and there about those with whom he disagrees.  I truly believe that the man hates the opposition and that he wants to beat them down as though he were doing what he did to attain office in the first place, you back in the “Chicago Days.”  We know that he drove his competitors out of the early races by disclosing sealed records that allowed him to expose things that did not sit well with the public.   I think that if you live by the sword, then you will die by the sword and that someone worse than him is going to take him out of the picture.  I do not know anything, I just know that the circle goes round and round!

In the 1980’s, it was the Red Lion Inn but back then, I was the night sous chef and ran the cook's line at the age of 24. I’ve had the privilege of working in Texas, Arizona, and elsewhere in California but have always returned home to Bakersfield.  Currently, I am at one of the five country clubs.

TODAY IN HISTORY—OCTOBER 07, 2013:

  1. 1777: The Second Battle of Saratoga during the American Revolution commenced on this date with the result being that British forces under General John Burgoyne surrendered 10 days later.
  2. 1849: Author Edgar Allan Poe died in Baltimore, Maryland, at age 40.
  3. 1858: The fifth debate between Illinois senatorial candidates, Abraham Lincoln and Stephen Douglas took place in Galesburg. 
  4. 1929: Former Interior Secretary Albert B. Fall, one of the main figures of the Teapot Dome Scandal, went on trial in Washington, D.C., charged with accepting a bribe from oil tycoon Edward L. Doheny.  Fall was found guilty and sentenced to a year in prison and fined $100,000 and ended up serving nine months; however, rather ironically, Doheny was acquitted at trial of offering the bribe that Fall was convicted of taking.
  5. 1949: The Republic of East Germany was formed on this date.
  6. 1960: Democratic candidate Senator John F. Kennedy and Republican candidate Richard M. Nixon held their second televised debate in Washington, D.C.
  7. 1982: The Andrew Lloyd Webber-Tim Rice musical, “Cats,” opened on Broadway.  The show closed September 10, 2000, after a record-setting 7,485 performances.
