HUMP DAY!
Bakersfield, CA, 10-31-2013 Thursday: Currently, our nation is $17 trillion in debt and that is something no one ever thought would happen.  Granted, President George W. Bush added some to that figure but the man we now have running the country—Barack Hussein Obama!—has added most of it and next year, we will be in another fight to raise the debt limit some more!  We still have 2.75-3 years of this man in office and it’s becoming clearer by the minute that he will have the debt limit at or around $28 trillion when he leaves office!  This is unsustainable and the country cannot survive under the weight of this massive amount of debt, debt that we, the people, cannot repay.  The only way we could escape it would be to nationalize the debt and to throw the creditors overboard to the sharks.  This would forever destroy the creditworthiness and rating of this nation forever, something that would have long-lasting effects on those of the generations to come.  This is what banana republics, Third World dictatorships do, NOT the greatest nation in the world.

You know, I ponder the QUESTION that others before have asked as to WHY we no longer have an opposition party?  Like everybody else, I believe that the Republicans have been co-opted by the nefarious and secretive National Security Agency among other governmental bodies charged with monitoring the American people and others around the world.  Did you see that the NSA culled more than 40 million phone calls from France and also monitored former Mexican president and Obama Ally, Felipe Calderon?  Hell, these people monitor all of us and it would shock most Americans to see the dossiers the government has compiled on them.  The All-Seeing Eye of the NSA has spread across the United States and gone around the world as it sweeps in all electronic and other forms of mail for reasons of ‘national security.’  This should frighten the hell out of everyone because if you thought Hillary Clinton’s FBI files was scary, this is far worse because it shows that a portion of the government exists without any sort of oversight or control.

Welcome to the HUMP DAY edition of the American Institute of Culinary Politics-Elemental News of the Day, this is the place where we cover the hot topics of interest to American and global foodservice workers.  Politics is of course the most important part of what we do because it is important for us to educate and to enlighten those working beneath us as well as our friends, I am not talking about having nothing but illegals working for us!  At some point, we need to bring Americans back into the professional kitchens of America and treat them as we did back in the 1990’s backward.  Did you know that the hourly wage of the 1980’s was MORE than what most line cooks and chefs make now?   Yes, back in those days, there was a lot of money one could earn and without much stopping it or putting the kibosh on it.   Now, in 2013, a line cook is lucky if he or she can get $11 an hour, which is one lousy buck above what soon is going to be the minimum wage of the screwed-up state of California.  It makes me sad to see people accepting little remuneration for their hard work and yet, that is what happens every single day in the United States, because if one complains, an illegal alien ends up with his or her job.  This is a travesty of what this nation once had and the fact that so many young people remain unemployed and live at home with mom and dad is simply horrid to me, horrid!   We need to put Americas back to work, we need to send the illegals home, we need to elect free market Republicans who have s spine, men and women like Ted Cruz, Mike Lee, Marsha Blackburn!   We need to make sure that President Obama does not come up with some sort of “trick” so he can finagle a third term out of the electorate!

I hear you laughing at me but there are many out there who seem to feel that Mr. Obama will step down in January 2017 when his term ends and the new president takes office.  This makes me laugh because I know this man is somehow going to come up with some sort of crisis, some sort of ruse that will allow him to declare martial law and hold onto power.  The fact that there are SO many ignorant individuals running around the country who could care less that the U.S. Constitution has been brushed aside and totalitarianism takes hold, well, that is enough to make a grown, freedom-loving man cry!  I urge all of you to join the National Rifle Association, take training with firearms, buy them, keep them, train with them, and join with like-minded others to form self-defense groups.  I am telling you, tougher times are coming what with Governor Jerry Brown’s never-ending assault on the citizens of this state by releasing hardened felons and other criminals onto the streets of our state!   Violent crime in the state of California are rising by the day and sexual assaults continue unabated.  We need to be able to defend our families at all time as well as our businesses, our neighbors, and our friends.  Dark days are coming, I think we all know that and it’s important that we arm ourselves so we can beat the tide of crime back and somehow make it to the end of the socialist regimes running California and the federal government.  Keep your eyes and ears open and never let your guard down, it’s up to each of us to defend the dwindling liberties left to us!

Our cookies for today is a great recipe, one for Brown Sugar Cookies, a very delicious form of sugar cookies.  I do not know what it is about brown sugar and fat but once combined together in the bowl of your mixer, the flavor is almost as bad as doing ecstasy!   Granted, I know nothing of doing stuff like that, I have just heard how amazingly powerful and mind-bending it can be and these cookies fit that bill!  I think that once you make and bake them, you will become a lifelong fan so without further discussion or erudition, let’s dive into the meat of the recipe NOW:  
(#1828) BROWN SUGAR COOKIES
Brown Sugar Cookies
In this life, there are few things in life that bring such primal, everlasting joy to one’s life than baking classic, five-star cookies.  Sex is great, in fact, most chefs cannot live without it but when it comes to second-best orgasmic experiences, baking cookies such as the one I am going to show you now is going to blow your mind.  Everyone thinks sugar cookies come in but ONE form, granulated sugar but I’m here to tell you that brown sugar cookies are as delightful as their white sugar cousins are.  Once you try this delicious recipe, you will collapse in a swoon causing your spouse to ask you, “What the heck you been doing at work, eh?”  You had better tell her and maybe even bring some of the sensual items home, trust me; you will be as addicted to them as you are!

Method:
Hobart Mixer
1.     Mis-en-place: have everything ready with which to work! Chef’s Note: generally, I prefer making my cookie dough the night before I plan to use it because I feel that it bakes better when it is COLD at bake time.  You can make and bake them within the same day but trust me; they come out better if you chill the dough overnight after scooping the balls and then baking it first thing in the morning.  Do NOT pay attention to the old wives’ tale that baking powder-baking soda dough’s do not do well if not baked immediately, this—simply—is NOT true.

2.    Set up your Kitchen Aid (or Hobart mixer depending upon the size of the batch) and attach the PADDLE attachment.  Add the two fats and the brown sugar and beat them at medium-high speed.

3.     After about 30-60 seconds, STOP mixing, scrape down the sides of the bowl, paddle, and then add the egg, heavy cream, and the flavorings.  Rotate the paddle slowly around the bowl then stop, resting it.

4.     Double-sift the cake flour, the baking soda, and the salt and then add it to the mixture already in the bowl.  Begin rotating the paddle slowly around the bowl working the ingredients into homogenous dough.  Stop; scrape down both the bowl and paddle, then rotate the paddle again on low speed for another 20-30 seconds.

5.     Pull 2-3 sheets of plastic wrap or wax paper onto your work surface, then pull the dough out onto it and wrap it up tight in a ball.  Place the dough package in your refrigerator and chill for about 30-60 minutes; then, pull it out and using a #30 ice cream scoop, scoop balls of uniform size.  Take care to pack it into the scoop, then scrape off the excess and continue balling the dough.  Place them onto a pan lined with wax paper, cover it tightly with plastic wrap so that the balls do NOT pick up any adverse scents lurking within your refrigerator and refrigerate overnight.

6.     The next day, preheat your standard oven to 375º F or your convection oven to 325°F with the fan in the “off” position for now. 

7.     Select 1-2 stainless steel or heavy-duty aluminum half sheet pans and line them with wax paper.  Spray the paper with PAM Baking Spray, Crisco Pan Release, or some such other food release spray.   Now, it’s time to pan the cookies but first, a quick note: on half sheet pans, we normally space the cookie balls in rows of 3 x 6.  This allows for the cookies to spread out and become somewhat firm whereas if we pan them in rows of 4 x 6, they do NOT spread out as much and remain much more moist and chewy, lasting for a day or two at room temperature.  However, you do this is up to you but pan your cookies and have them ready to go. 

8.     Do NOT press or flatten the cookies, just place the pans onto the middle oven racks avoiding the uppermost in the convection oven (flip the fan “on” now) and both the bottommost and uppermost racks in a standard oven, as this is where the heat tends to concentrate the most. 

9.     Baking time 3 x 6 in Standard Oven: 8-12 minutes or 4 x 6, bake them about 10-13 minutes.  Convection ovens: 3 x 6, bake about 6-8 minutes and in rows of 4 x 6, about 7-9 minutes.  NOTE: the cookies will puff up and as soon as they begin to brown around the bottom edges, pull them out and place them atop cooling racks noting that the cookies will bake another minute or two from the heat retained in the metal of the pans.

10. After about 1-2 minutes, begin lifting the cookies off the pans using a spatula and transfer them directly onto the cooling racks with drip pans beneath them.  Prepare a batch of the following glaze below and then loop it over them in swirls and ribbons before serving them.  Take care to make the glaze either the day before or first thing in the morning and then keep it warm prior to serving time OR heat one cups of it about 20 seconds in your microwave oven, then use it, keeping the rest refrigerated.

11. Serve your cookies on doily-lined serving trays and if you have leftovers, seal them up airtight in Ziploc freezer bags.  Use within 2-3 days, after that, use them or lose them!  

Below is one of the best glazes I have ever had in my culinary repertoire, it’s one I know all of you are going to love and revere just as I do.  This is more than just a glaze, it’s a fudge icing, which is perfect for not only cookies but also muffins, quickbreads, cupcakes, cakes, you name it, it’s good for it, even eating it by its decadent self! 

(#1520) WHITE FUDGE ICING

This fudge icing is one that I have had in my repertoire for years and while some might not say, it is a “true fudge,” I say, “once you taste it, you will know that it is!”  Generally, I make a larger size batch, which I keep in the refrigerator for use over the course of a week or so and it is an excellent one to say the least.  Keep it handy as you are going to love it, too!

Method:
Water and Fat in the Saucepot
1.    Mis-en-place: have everything ready with which to work!  Place the first FIVE ingredients into a saucepot atop medium-high flame and place the remaining items in a sanitized mixing bowl attached to your Kitchen Aid mixer. Attach the WHIP attachment.  As soon as the liquid boils, begin pouring it into the powdered sugar and vanilla all the while rotating the implement around the bowl until a thick mixture forms. 

2.     Scrape down the sides of the bowl, whip, and then begin ladling the white fudge across the cookies, coating them well.  Any remaining fudge, transfer to a holding container and store in your fridge for use with additional cookies later.

Like gravy on potatoes, icings on sweet baked goods are precisely what make them go from being average to stupendous!  This is perhaps the best recipe I have ever used for my cookies, cupcakes, cakes, and other delicious tidbits like Danishes, coffee cakes, heck, it is even good eating it by itself!

I am sure that once you make the above recipe, you will the joys inherent in baking your own cookies, desserts, you name it, baking is good for the soul as well as the pocketbook!  Having begun working in the foodservice profession more than 45 years ago, there was a time when my scratch-baking skills kept me employed while others lost their jobs, I can tell you, in many places, it is a dying art, which I must say is in need of a revival!

It is important for all chefs to know how to make a wide variety of cookie recipes because cookies are a big thing nowadays.  As I have said before over the course of this week, all too many times, chefs resort to doing things on the cheap by buying whatever their purveyors sell them, frozen doughs, shaped doughs, you name it, the purveyors have it and want to sell it!  You can make your own cookie dough, keep it rolled up in wax paper in your baker’s ice box and bake them to order, giving the customers a delicious treat at any time of the day or night!   That is the key to success—not buying everything premade and ready to go because that, my fellow chefs both at home and on the job, is the sign of laziness!  We need to re-instill into the American people the spirit that made us the greatest nation on earth, not some rap music-fueled, drug-addled, entertainment-based culture that chases people on motorbikes, drags them out of their cars and beats them near to death, shame on that sort of crap!  BAKE YOUR OWN COOKIES AND FORGET ABOUT BUYING STUFF FROM THE LIKES OF U.S. FOODSERVICE! There, I got it off my chest, I feel better now!

You know what?—I forgot to wish all of you a very Happy Halloween, my friends!  Today is Halloween, the best holiday out of the year!  I remember long ago when I was a young strapping buck how we used to drop acid and then go out trick-or-treating and man, sometimes we would end up on the other side of town, twenty miles away from where we started!  Now, again, I do not encourage drug use or abuse among the younger people of the country much less the older ones but all of this medicinal marijuana crap is just another way of putting drugs into the hands of the younger generation and leaving them messed up worse than where we started.  At least back in the early to mid 1960’s, we did not do half the stuff we do now but let’s face it: I was born in 1939 and by the time I was in my late twenties, I was a pretty adventurous young guy who felt that he would last forever not matter what he did!  Well, I have to say, I am lucky to be alive at this point in my life and the only thing I do now is drink my schnapps at the end of each shift.  Besides, at age 74, I could retire if I wanted to but as long as I have the fire in my belly, you had better believe I’m going to work! That is, until the Obama Zombies come looking for me to force me into retirement in some sort of ‘home’ that George Noory might suspect to be a concentration camp for old folks.  Christ, I will be glad when and if we move the blog to the British Virgin Islands, this is not a place where one wants to grow old anymore.  Happy Halloween, buy some albums and I will see you tomorrow, November 01, 2013, the Good Lord willing!     TOMORROW: the Vanilla Fudge!
