Bakersfield, CA, 10-30-2013 Wednesday: Today is the thirtieth day under the horrendous Obamacare Bill, the one that caved in upon itself almost from the start and has caused numerous individuals and their families across the nation more grief than they deserve.  I had to laugh when I watched our president standing before the microphones last week with his props behind him, you know the flunkies they round up from a casting agent to stand behind a politician as he or she gives a speech and saw the woman faint behind him.  Gee, that was almost reminiscent of the heady days of Obamaism when he first ran for office, I recall woman after woman collapsing behind this sparkling young leader in the mold of JFK, it was almost unbearable!  Do you recall the night he won the election and he gave the speech in ‘sweet home Chicago’ what with the Grecian pillars behind him as though he were mighty Zeus high up on Mt. Olympus?   I think we got a clear sign that the nation had elected its first ‘Cult Leader’ in the form of the deceased Jim Jones, you know, of Kool-Aid and Guyana fame.   Well, when you elect someone based solely upon their personality, you have elected a ‘Cult of Personality’ executive, which means we are at the mercy of someone who lacks the skills to run a nation such as ours and worse, doesn’t give a damn about this country but only about his own legacy!  This is a recipe for disaster—it’s almost as if we have a Fidel Castro or Hugo Chavez on our hands rather than an ‘American President!”  The fact that the healthcare bill has collapsed should put the fear of God into ALL of us and yet, many remain oblivious to the danger under which, we now live! 
The Obama Kool-Aid
The fact that the Patient Protection and Affordable Care Act is now a proven disaster does not sit well with many Americans.  The fact that the President is so damned obstinate and will NOT negotiate with the Republicans is frightening, too, because he will negotiate with the Iranians!  When the Republicans shut down the federal government, the one thing they wanted was for EVERYONE and not a select group to suffer under Obamacare but nope!  The President was not going to budge, he bought off the majority of the nation’s elected leaders by either exempting them or by giving them a subsidy of 75-percent to help pay for their healthcare insurance!  He also exempted most union members, appointed leaders, Senate and House staff members, VIPS, his friends, family, and anyone else he felt he needed to buy so they would keep their mouths shut!  We now have an aristocracy, something the Founders did their best not to allow to happen but now, our elected leaders rule us rather than we ruling them.  Sure, we still go through the electoral process and maybe at the bottom of the heap, elections are free, but at the top, it seems like our leaders have become more and distant to us, which means they rule us, not we them!  This is NOT something that any of us should accept, we need to reclaim our runaway government and make them accountable to us, this is precisely HOW we had the Obamacare law shoved down our throats or if you like, up our keysters! 
Obamacare—does NOT have to be the Disaster it is!
The thing that saddens me is the fact that if we ever get this mess fixed, it is going to be too late for the majority of the nation’s citizens.  People are protective of their healthcare because employers have conditioned us to depend upon them to provide this for us.  I think that the nation could have a national pool in which, ALL citizens could participate and received lower cost healthcare.  It rather resembles the idea we have now with one different tenet: the government would enroll everyone at birth into the system and we would all pay a set amount.  We would be able to choose from a wide variety of providers who would be allowed—again by federal and state governments—to compete across state lines; this would bring healthcare costs DOWN rather than increase them!  Yes, if healthcare providers could compete across state lines, the costs of doing business would decrease dramatically and Americans would be able to find the sort of healthcare insurance they desire and without having the government involved in the process other than as an overall regulator of the system.  At age 18, individuals would then be able to move from their parents’ protection to their own policy, which would be theirs as long as they live.  This would make everyone a part of the system so that NO one would ever suffer financial collapse because they or their family members contracted a dreadful disease.  This is what we want, not this fascist takeover of the nation’s healthcare system!
Tort Reform—YES, the Jury is still out!
The other thing that would have to happen is for the federal and state governments to pass tort reform so physicians and hospitals would not have to carry exorbitant amounts of malpractice insurance.  If there was a cap on every possible negligent outcome—this is where government comes in—then lawyers could not go after amounts that dwarf the psyche to understand.  This would be fair—something the President always seems to be concerned with!—and equitable for all, whether for the doctor or the patient.  This is an essential part of the overall healthcare plan for the nation’s citizens and maybe even the immigrants ‘living in the shadows.’  Yes, we need to something for them, too, but first, the feds must seal the borders to prevent the nation being flooded by millions of additional illegal aliens. 
Citizens demanding Tort Reform!
I think we could offer some sort of healthcare coverage to immigrant workers entering the nation who have jobs here as well as sponsors.  It would be in effect for the time they lived in the United States and would end when their time was up and they returned home.  This would prevent the illegals from flooding and ruining hospitals, which is where the healthcare crisis originated, NOT because of evil people ripping off the system!  The number one reason why we are where we presently find ourselves is because the borders are wide open for one reason and one reason only: the Democrats need to border-jumpers enrolled to vote, nothing more.  This needs to stop!

The Border Patrol—needs to STOP Illegals!
Okay, we will discuss more of my ideas tomorrow but now, we find ourselves at the recipe of the day, a delicious gingersnap cookie that will make the diners swoon more than a one-hour speech by our great leader, King Obama!  I think most people love ginger cookies and these are the absolute best, everyone I know enjoys this cookie more so than any other cookie recipe possessed by me.  I think that once you try it and taste the flavor, you, too, will become a lifelong fan of this exceptional cookie recipe!  Here we go:

Gingersnap Cookies

Gingersnap cookies are one of those delicious gems one typically finds around the holidays when all sorts of delicious goodies burst forth from kitchens across the United States.  This cookie recipe is mild in some aspects compared to other ginger-flavored cookies, which in my opinion makes them palatable to everyone. This is a recipe you definitely want to add to your growing recipe collection because it is one of the best recipes ever given me by my grandmother more than fifty years ago so it should be as special for you as it has been for me!

Yield:  28-30 1.25-ounce cookies / Mis-en-place: 8 hours / Prep and Cooking Time: 45 minutes

Method:
Ground Ginger

1.     Mis-en-place: have everything ready with which to work!  You will need an ounce scale, which come in TWO-pound sizes as in making the fudge frosting, it is important to have an accurate measurement.  Any fluid amount in the frosting recipe is a WEIGHT measurement so you will place a two-cup measure atop the ounce scale; make an adjustment so the scale reads “0” at the start of the measuring process.   Chef’s Note: ALL professional bakeries use weight measurements when making large recipes for accuracy because one can use volume measurements and sometimes come up with different recipes. 

2.     Set up your Kitchen Aid mixer and attach the PADDLE attachment.  Add the shortening and the sugar and begin beating it at medium-high speed until it is light and fluffy.  Stop, scrape down the sides, and add the baking soda, ground ginger, salt, molasses, and the cream. 

3.     Begin beating the mixture again at medium-low speed until it becomes an unattractive-looking mixture; this is because the light cream and the molasses ‘break up’ and appear broken but do not worry—this is totally fine. 

4.     Stop, scrape down the sides of the bowl, paddle for any solids, and mix the preliminary batter again.  Now, add the two flours at the same time and begin mixing the dough at low speed until it forms.  When it has formed, stop, scrape down the mixing bowl, paddle once again, and then pull the dough out of the mixing bowl onto a large sheet of plastic wrap.  Scrape everything out of the bowl and wrap it up in the plastic wrap into a tight ball.  Refrigerate it for EIGHT hours or more.

5.     The next day, preheat a standard oven to 375°F or a convection oven to 325º F with the fan OFF for now.  Line two reflective half-sheet pans with sheets of wax paper and then spray the paper with PAM Baking Spray or Crisco Pan Release spray. 

6.     Bring your refrigerated dough out of the fridge and using a #30 ice cream scoop, scoop out even balls of the same size for approximately 28-30 1.25-ounce balls. 

7.     Next, using gloves roll the balls into rounds and then place the rounds onto the prepared pans in rows of 3 x 6. 

8.     Next, spray a third sheet of wax paper with food release spray and then lightly press the balls on each tray just to flatten them slightly!  Do NOT flatten them, just press lightly to start the process. 

9.     When the oven’s hot, place the pans onto the middle shelves and bake (standard ovens) for 12 minutes or convection ovens—fan in the “on” position—about 8 minutes but no longer for either oven type.  The cookies might look WET but do not worry, pull them out, place the pans atop cooling racks and let them cool on-pan for about 3-4 minutes.  The cookies finish baking on the sheets so do not worry that you have removed them too early. 

10. After 3-4 minutes, use a spatula to lift the cookies off the pans and place them directly onto the cooling racks with the drip pans beneath them.  Proceed to the white fudge topping now (taking care to weigh all of the ingredients—but not the salt and vanilla obviously)—using a two-cup measure placed atop the ounce scale:  Weigh the water, corn syrup, the sugar, all of those things because weight measurements do NOT lie whereas volume ones can and do.  

11. Place the first FIVE ingredients into a saucepot atop medium-high flame and place the remaining items in a sanitized mixing bowl attached to your Kitchen Aid mixer. Attach the WHIP attachment.  As soon as the liquid boils, begin pouring it into the powdered sugar and vanilla all the while rotating the implement around the bowl until a thick mixture forms. 

12. Scrape down the sides of the bowl, whip, and then begin ladling the white fudge across the cookies, coating them well.  Any remaining fudge, transfer to a holding container and store in your fridge for use with additional cookies later. 

13. Place the cookies onto doily-lined serving trays and serve immediately.  Always wrap leftover cookies up in plastic wrap in batches of 2-4 and then zip-up tight in Ziploc storage bags or store them in sanitized airtight one-gallon containers with tight-fitting lids and store at room temperature.  Label, date, and use within five-7 days; after that, use them or lose them.  As for the fudge, it remains usable in your refrigerator for about 10-14 days and always be sure to reheat it before use. If you like, use yesterday's white fudge topping for the final master stroke! 
Gingersnap Cookies
Gingersnap cookies are wonderful but topped with white fudge topping, they are even better so keep this recipe for the special occasions when people expect five-star cookies, like at the holidays, especially the winter ones!  Never underestimate the value of homemade cookies in professional foodservice, I realize that many different foodservice purveyors provide all sorts of prefabricated products, which are so simple that NOT to use them seems to be a waste.  However, I believe that if one actually makes and bakes their own from scratch, that you will carve out a name for yourself, both in your local area and around the state.  Word gets out, people come, your restaurant goes on for more years than most of your competitors.  That is the sad thing, most restaurants do not make it into their third year as once the novelty wears off, people end up going to Hooters rather than coming to you, which is your loss.  I think that one can encourage and keep repeat customers simply by providing them food they will remember for years to come!

BBC RADIO 1 LIVE IN CONCERT VOLUME II 1971-1973
One thing I need to mention is the fact that the two bands we currently find ourselves offering, Family and Streetwalkers, are one of the greatest British bands of the 1960’s and into the mid-1970’s.  I love this music, the voice of Rodger Chapman is somewhat astounding, the man has pipes on him that when they blast out of my car stereo’s speakers, the punks listening to gangster rap in the cars next to me roll up their windows, it’s that overpowering!  I hate it when some punk pulls up alongside me, his windows and car vibrating from this oppressive bass and machine-drums so I always turn my stereo up to the breaking point and drive them mad.  The band is so good, however, that they have so much more than just Chapman’s voice to offer, I love two albums in particular, “Fearless” and “Bandstand” because John Wetton of King Crimson and Asia fame co-sings with Chapman for a very delightful vocal sound.  I urge you to buy all of their albums as well as the spin-off band, Streetwalkers, because the addition of the very talented Bob Tench made the band even more explosive!  Take a tip from me, buy these albums now and then the day after tomorrow, we begin promoting Vanilla Fudge! Yes, that’s right, the Fudge so be here or be nowhere, see you all tomorrow! Bye!

  2. 1921: The silent film classic, “The Sheik,” starring Rudolph Valentino premiered in Hollywood, California.
  3. 1938: The radio play, “The War of the Worlds” starring Orson Welles, aired on CBS Radio.
  4. 1939: Grace Slick, singer of both the Jefferson Airplane and the Jefferson Starship was born on this date. Prior to joining the Airplane, she was the singer of her husband’s band, the Great Society.  
  5. 1944: The Martha Graham ballet, “Appalachian Spring,” with music by Aaron Copeland, premiered at the Library of Congress in Washington, D.C., with Graham in a leading role.
  6. 1945: The U.S. government announced the end of shoe rationing, effective at midnight.
  7. 1953: General George C. Marshall was awarded the Nobel Peace Prize. Dr. Albert Schweitzer received the peace prize for 1952.
