DAY NUMBER SIX OF OBAMACARE!

1,050th BLOGPOST AT THE AICP-END!
Guthrie’s Alley Cat bar in Bakersfield, California
Bakersfield, CA, 10-06-2013 Sunday: Today is the final day of the week for me as well as our 1,050th blogpost, an accomplishment for us and one we plan to celebrate at Trout’s cocktail lounge tonight!  One of the great things about coming into Bakersfield to do our stint is the fact that we get to go out and see the sights, party at all of the famous watering holes whether it’s Guthrie’s Alley Cat, the Mint, Trout’s, or even the Belvedere!  We also arrived in Bakersfield in time for the Kern County Fair and had the opportunity to see Mickey Thomas’ Starship (a great show!), Los Lobos, and the Four Tops!  Unbelievably, there is still at least one original member of this venerable singing act but the show was absolutely amazing!  All I can say is that we have a great time whenever we come to town and that makes it all worthwhile, not to mention that we get all of the CDs we advertise if we do not already have them so we can promote them that much more!  Some of them like the Lovin’ Spoonful’sRevelation/Revolution ‘69” once were very hard to find but now, we have enough copies for all of us!  Great!
Trout’s Bar in Bakersfield, California
You know what happened in Kenya over the course of the final week of September what with the terrorist attack by the al-Qaida affiliate on the Nairobi shopping mall tells us that the terrorist threat is still alive and well.  The fact that quite a few of these men and women came from America should put the fear of God into every single one of us because it says that now, we are producing more and more terrorists for the world terror market!  The other thing of comment is the fact that the new Iranian president rather blew off President Obama at the U.N. “Dictators’ Week” was something we all expected.  I mean, after drawing numerous red lines in the sand against the Syrian government of Bashar al-Assad he then capitulated to the wily Russian leader, Vladimir Putin.  Like other authors here at the blog, I suspect that the President NEVER wanted to go to war against the Syrians but was hoping to offset some of his scandals here at home as well as the implementation of Obamacare.  Now, he looks like the loser he is and that makes the country and its citizens look very weak.  Good Lord Almighty, how much worse can it get for the United States?  We have a cream puff for a President when it comes to foreign affairs but he will NEVER—I repeat NEVER!—negotiate with the Republicans!  This is crazy and besides!—if there was an uprising against Obama in this country and they were winning, do you think that Mr. Obama would not use poisonous gas to put it down if he feared he was going to lose?  You had better believe he would, dictators do whatever they must do if they are going to remain in power!
Russian Leader Vladimir Putin
It’s Sunday, we are here at the end of the week so let’s get into the final amendments we have time to discuss, you know, to the U.S. Constitution.  We have made it to the 14th Amendment so that means, we will begin with the 15th.  Here we go:
The Flag of Kenya—under Assault by al-Qaida
The Fifteenth Amendment (Ratified on February 03, 1870) says in Section 1: “The right of citizens of the United States to vote shall not be denied or abridged by the United States or by any State on account of race, color, or previous condition of servitude.”  Section 2 tells us, “The Congress shall have the power to enforce this article by appropriate legislation.”  Again, we see that the Southerners were doing everything they could to circumvent the previous two amendments, which gave the former slaves their newly won rights, carved into stone, no less.  Now, we have all sorts of illegal immigration activists who seek to use these amendments via new interpretations to force the government to legalize 20-30 million illegal aliens living in the country and more to come.  At some point, we have to fight this attempt to bring down the federal government and yet, in California, illegal aliens now have the right to practice American law! What the hell?
Actor Wesley Snipes—jailed for Tax Evasion!
The Sixteenth Amendment (Ratified on February 3, 1913) is the BIG one!  It says, “The Congress shall have the power to lay and collect taxes on incomes, from whatever source derived, without apportionment among the several States, and without regard to any census or enumeration.”  This is the amendment that allows the Congress to levy taxes on its citizens, and all those who use other parts of the Constitution to fight this one are wasting their time.  Look at Wesley Snipes, he’s in prison for not paying taxes, do you want to join the smuck or would you rather knuckle under and become a slave?  I guess we are all slaves!
The Flag of Syria
The Seventeenth Amendment (Ratified on April 8, 1913) to the U.S. Constitution tells us, “The Senate of the United States shall be composed of two Senators from each State, elected by the people thereof, for six years; and each Senator shall have one vote.  The electors in each State shall have the qualifications requisite for electors of the most numerous branch of the State legislatures.  // When vacancies happen in the representation of any State in the Senate, the executive authority of such State shall issue writs of election to fill such vacancies; Provided, That the legislature of any State may empower the executive thereof to make temporary appointments until the people fill the vacancies by election as the legislature may direct. // This amendment shall not be so construed as to affect the election or term of any Senator chosen before it becomes valid as part of the Constitution.”  This amendment made senators electable instead of appointed by the State legislature of the state in which, they resided and also determined their terms of office.  Important as to the fact that senators have some sort of term imposed upon them and are accountable to the people.
President Barack Obama—not a Defender of the Constitution!

The Eighteenth Amendment (Ratified on January 16, 1919) to the U.S. Constitution says, in Section 1: “After one year from the ratification of this article the manufacture, sale, or transportation of intoxicating liquors within, the importation thereof into, or the exportation thereof from the United States and all territory subject to the jurisdiction thereof for beverage purposes is hereby prohibited.”
Section 2: “The Congress and the several States shall have concurrent power to enforce this article by appropriate legislation.”
Section 3: “This article shall be inoperative unless it shall have been ratified as an amendment to the Constitution by the legislatures of the several States, as provide in the Constitution, within seven years from the date of submission hereof to the States by the Congress.”  All told, the 18th Amendment issued in Prohibition, a noble effort to say the least but one that gave the nation organized crime in a BIG way.  A total failure, crime broke out across the nation, from one end to the other, and from top to bottom, sort of what we have now with the failing War on Drugs.
The Nineteenth Amendment (Ratified on August 18, 1920) to the U.S. Constitution says, “The right of citizens of the United States to vote shall not be denied or abridged by the United States or by any State on account of sex.  Congress shall have power to enforce this article by appropriate legislation.”  This amendment gives women the RIGHT TO VOTE.
My friends, I will have to present the other amendments to the Constitution in a separate article a short while from now.  It is important that every American knows and understands the Constitution and its Amendments.  Eventually, we will post the entire text of the Constitution and hope that it brings some understanding to you.  It is the ONLY document in the world that has created a nation such as ours and now, the Democrats are undoing it as rapidly as they can.
Salsa Chicken

Today, we are going to make our final recipe, Salsa Chicken, a great Coffee Shop Classic if ever there was one. I no longer use chicken breasts but thighs because let’s face it, thighs have so much more flavor, remain moist longer, and come in boneless form now.  Add to that the fact that they are reasonably priced and easy to find, they are the perfect dish! Here we go:
(#1821) SALSA CHICKEN

Chicken and salsa are two things that complement one another and kin a dish such as this one, you will find it a work of art, albeit a simple yet powerful one.  You can use homemade salsa or you can buy it, either way, it’s your choice in the end.  This one is an excellent coffee shop dish that always sells out and never fails to do well.  Keep the recipe handy and run it once every other week for best effect and you will sell out and make plenty of revenue for the house!

Chicken thighs

Seasoned Flour (Recipe #1592)
2.5
Cups
All-purpose flour

1
Teaspoon
Cayenne pepper

1
Teaspoon
White pepper

1.5
Teaspoons
Hungarian paprika

1.5
Teaspoons
Granulated garlic

1
Tablespoon
Kosher salt

2
Teaspoons
Parsley flakes

The Cooking Mode:
Vegetable oil

1
Quart
Warm chicken stock

The Finish:
3-4
Cups
Baked or barbequed bean

3-4
Cups
Vegetables du jour

8
Each
Sprigs fresh parsley
Rinsed and dried
Freshly minced parsley flakes
Rinsed and dried
Freshly chopped cilantro

Method:

1.     Mis-en-place: have everything ready with which to work! Salsa: combine all ingredients together in a sanitized container and label, date, and refrigerate.  Keep no longer than 4-5 days.

2.     Preheat standard oven to 375°F or convection oven to 325°F.

3.     Have chicken thighs ready to go.  Make the seasoned flour and then dust the chicken thighs in it.  Have either a flattop griddle or a pair of heavy skillets over medium-low flame and when warm, add the oil to it and bring it to medium-heat.

4.     Place the dusted chicken things into the oil and brown them on both sides.  When you have browned them, transfer them into a sanitized baking dish or hotel pan sprayed with Crisco Pan Release or some such other food release spray.  Pour chicken stock over the thighs and cover the pan with aluminum foil using an airtight seal.  Place the pan onto the middle oven rack and if using a convection oven, flip the switch to “on” now.

5.     Bake the thighs for 45 minutes and then check for both tenderness and doneness, noting that chicken must read 165°F or higher to be considered “safe.”  When they are as described, remove the pan, pour off the liquid (saving it if you use a lot of chicken stock) and cover with the salsa.  Top with freshly minced parsley flakes and cilantro and return to the oven uncovered.  Bake an additional 10 minutes or until the salsa is, HOT.

6.     Place the chicken thighs with plenty of salsa atop them two to a plate.  Place baked or barbequed beans at the 10 o’clock and vegetables at the two o’clock.  Place a sprig of parsley onto each plate and dust the chicken portions with another dose of both parsley flakes and cilantro and serve.

7.     As for leftovers, always remove the chicken from the salsa and discard the latter while bringing the former to 45°F or below before storing in a sanitized airtight container, which you then label and date.  Use the meat within 1-2 days; otherwise, seal it airtight in freezer Ziploc bags and use within 15-20 days for best use.  After that, use it or lose it!
Chicken Thighs
Everyone loves salsa chicken, a classic coffee shop dish if ever there was one.  It depends on the quality of the salsa and we now use chicken thighs as they maintain moistness and flavor, something most chicken breasts do NOT. You can use boneless or you can use bone-in, it is up to you!
Family—Great British Band of the 1960’s-1970’s
Very soon now, we will wind up promoting CDs by the Association (a band I once saw back in the late 1960’s so I feel fortunate for having done so!) and then will move on to the famed British band, Family, which became the Streetwalkers and had an amazing run before finally calling it a day.  I hope you will buy all of the CDs we advertise as we promote great deals at Amazon.com by giving you the links to the appropriate pages where you can buy them!  Hallelujah for that!

GOODBYE COLUMBUS
As always, we have a great time around here and that is why we want all of you to become a part of the organization by submitting articles to us for inspection and full-credit.  It is a great thing if you would do this, as it is a symbiotic relationship: we give you the space to share your recipes and in return, you send us more and more people who will become dedicated followers of the AICP-END.  Currently of multi-diversity across the Internet, it is important that we hear the voices of more and more people from all walks of the foodservice profession —join us. We urge our readership to write to us, leave comments, and if there are any of you, who would care to write an article for us, please get in touch via Magnolia Hilltop Brewers, P.O. Box 20669, Bakersfield, CA 93390-0669.  We obviously do not pay anything but give YOU full byline and that, my friends, is worth its weight in gold.  We want as many people who want to write to be able to do so and we believe that by presenting a forum for our fellow chefs, we are doing something for our beloved industry.  We love diversity and hope to add new and different authors to our pantheon of chefs, food and beverage directors, and culinary professionals.  Come on and join us, it will be fun! Expect that when all of us have run through our cycle, we will be introducing some brand-new talent or so Stinky says.
THE ASSOCIATION LIVE
We have touted the AARC Technology Company here in Bakersfield, CA, and must add the Nerds on Call.com folks.  Without them keeping our blog up-and-running, there is no telling where we would be now.  We have a great many problematic issues here at the AICP-END because even with the best security systems in the world, malware and other terrible fecal materials manage to penetrate the blogsite.  Do yourself a favor, hire the best, and note, you can have online help via a remote button on your desktop for just $25 per month!  Get in contact with the Nerds now!  Here’s another note: do NOT do business with Galkos Construction, Inc., those people are nothing but crooks as if you lease your system, you will never pay it off, plus you have to pay them for excess energy produced by your system, the electric company does not buy all of it nor do they!  AVOID GCI AT ALL COSTS; DO NOT DO BUSINESS WITH THESE CROOKS!
STOP YOUR MOTOR
We are selling recipes all the time and you can order things you would like copies of simply by mailing us your name, address, the recipe you would like and a check for $1.00.  You can buy an entire week’s worth of recipes when we do a series simply by sending us a check or money order (no cash please!) for $20 and we will have it out to you in the next day’s mail.  Please become a part of the AICP-END by sending us your names, addresses, and information and we will welcome all of you with open arms!

God bless each single one of you amongst our fan base!
THE ASSOCIATION 95 AND A LITTLE BIT MORE
I want to bid you all farewell and wish you a great rest of the year—that is, if Obamacare is NOT crushing you!—and then as merry a holiday season as is possible. I am fearful about the future, my friends, I hope to God that somehow the nation rights itself and finds its way to move forward but I am afraid that the way things are now going, there is going to be nothing for your grandkids or my grandkids, the nation is going to hell.  We must throw all of these bums out of office come November 2014 so remember, the battle commences now—let’s fight it and let’s win it! If we don’t, we will slide into Third World status and become the laughing stock of the world, which we might already be now, it just is not apparent.  See you in 2014 but I will finish the Constitutional Amendments at some point before then! See you soon! Bye!
JUST THE RIGHT SOUND—THE ASSOCIATION ANTHOLOGY 1966-1981
Anyhow, let us close with this impassioned plea—please leave some comments and/or become a follower. What's more, why not spend some money and purchase an album by the Grateful Dead, the Association, the Byrds, and Spirit and/or buy a cookbook from Amazon.com—we want to make some money here so help us out by buying something!  Allied with them, we are pleased to market their merchandise!  Amazon.com is one of the greatest—if not the ultimate greatest!—online department stores in which, one can find almost everything on the planet.  We love them and they love us and we want all of you to visit them daily, take advantage of their deals on everything from kitchen equipment to cookbooks, CDs, DVDs, and everything else a person could want.  Everything you buy from them puts money into our pockets, which allows us to keep this fine blog up-and-running 24/7/365!  God bless America and God bless Amazon.com!
Thank you!
