The Patient Protection and Affordable Care Act—an Oxymoron if ever there was one!
Bakersfield, CA, 10-27-2013 Sunday: This past couple of weeks has been one heck of a ride, what with the government shutdown, the acrimonious debate, the name-calling, the insults, and in the end, I think we all know that the Republicans are going to cave if they have not done so already.  At the time of this writing, approximately nine days ago, it appeared that the Senate was going to fold while the House still fought hard to delay Obamacare.  That is ALL we want right now, we will NEVER get a budget under this president, we will never have a government with checks and balances because he will not permit it but what we want is for EVERYBODY to be subject to the Affordable Care Act, not just those lucky enough to whom the President gave a pass.  You see, in the United States of America, we expect everyone to be EQUAL under the law with NO exceptions and yet, yet, that is what we have.  The President has given carve-outs to not only the House and Senate but also their staffs, political appointees, unions, union thugs, VIPs, and whomever else the President seems to feel needs to be exempt while the REST of us have to suffer under this horrendous, un-American act!

Last week, Louisiana Republican Senator David Vitter proposed the so-called “Vitter Amendment,” which would require EVERYONE living in the country to be subject to the Patient Protection and Affordable Care Act!  No one should have an exemption, a carve-out, an excuse NOT to be subject to this frightful law, no one and yet, many people do.  We now have several classes of people alive and well in this nation, we have the citizen class and we have the Ruling Class, guess which one is above the other—if you guessed the latter, then you are 100-percent correct.  It would seem that winning an election and going to Washington, D.C. puts you above your fellows in the Citizen Class, that even if you reside on the opposition side, you still get all of the perquisites, the exemptions, and the benefits, while those of us who toil away, attempting to keep America up-and-running have the scraps thrown to us.  When I watch that worthless overweight slug, Mitch McConnell, bowing and scraping to Harry Reid, Chuck Schumer, Dick Durbin, and the skanks from California, Dianne Feinstein and Barbara Boxer, I want to puke my guts.  It is too much to bear, I cannot stand it, and I know at times that my husband and I consider tossing it in and going somewhere else to live.  Like others at the American Institute of Culinary Politics-Elemental News of the Day, we have thought long and hard over what our next career move should be and I will tell you this: my husband Eric has already been looking at jobs in Costa Rica, Panama, and even Ecuador. The reason for this is that to remain in the country is to watch it slide into the muck, to disappear forever, never to reappear!  Yes, it breaks my heart, it is tragic, I never thought I would say this but like what Michelle Obama said prior to the election of her husband in 2008, “there are times my country has made me ashamed,” more or less what she said.   She said concerning “people of color,” well let me say this, “I am a person of color and I am probably darker than any of the rest of you.  I am a native Hawaiian and I am proud of it but I have never felt as though the country and the world owed me anything more than what I have earned for myself!”

Life truly is sinking into the muck, I monitor the emails sent to me by my business manager back in Kula telling me about the attempts of the employees to sign on to the exchange we have in the islands and what they have encountered is not what they expected!  For one thing, it takes anywhere from 3.5-5 hours to input the information and then if the system does not crash—consider yourself lucky!—the plans are more than most can afford.  To purchase an insurance plan from the site means that your rates will go up and if they go up too much, you then will qualify for a subsidy from the government.  Therefore, prior to going to the exchange, you might have felt you were an independent individual but after you go there and sign up, you then become a ward of the state because you need that subsidy to have insurance.  How diabolical is this, I ask you, and when you add the fact that maybe your employer will cover you but not your family, you find yourself confronted by increases in rates where maybe you were paying $400 per month for the family but now find it at $850-900 per month.  Let me tell you something, living in Hawaii is not cheap, my home state is an expensive place.  You can go to the Foodland grocery store in Pukalani and spend $30 for four items in your shopping bag.  We have to add floors to our houses and build cottages on our lots because our progeny cannot afford places of their own.  This is how it is and Obamacare is going to make it far worse!

Now, I would like to add a final prediction to what I said yesterday about the President somehow nationalizing if you will the system of benefits in the American workplace.  As you know, I believe the President is a man full of anger, of disgust and distrust of the American model of doing things.  I think he would like to turn the country upside down and to give ALL to the few whom he feels have not been given their just due or worse, have actually been taken advantage of by Old, Rich, and White Men!  I think he would love to give them what he believes is their just rewards in the same way the poor have their Obama Phones, government subsidies, government help, you name it, they got it and he wants to give them MORE.  I suspect that in 2015, when the race for the White House commences in earnest, Hillary Clinton will NOT win the nomination but will find herself displaced once again, this time by Michelle Obama!  Yes, I said it—let me be the first to say that this is my prediction—I suspect that Michelle will win the Democratic nomination in 2016.  Once again, we will have another Black American in office, albeit controlled by her husband and her handlers and quite possibly a full SIXTEEN YEARS OF OBAMAISM should she win the election in 2016 and again in 2020.  Once again, if anyone criticizes this woman, not only will her proponents call them “RACIST,” they will also call them “SEXIST” leading to a reborn RepublicanWar on Women!’ Can you imagine how that will destroy the country, what with a full sixteen years of the Obamas running the nation?  All I can say is that I think that somehow, the Clintons would prevent that from happening!  I am not wishing ill on anyone but that is what I suspect but note it now, that I am the first to predict this!

Enough of this, the time has come for us to look at our final recipe of the week and then my farewells so I can return home on Monday morning.  I have something that many people associate with the Hawaiian Islands but as we know, the fruit comes from New Zealand, what I am talking about is kiwifruit and today, we are going to make the original, institutional-sized muffin recipe using this fabulous fruit.  I think that once you sink your teeth into these beauties, you, too, will become a lifelong fan of using them in baked goods.  Trust me, I know of what I speak so you will become a bakery warrior, too, leading you to fame, fortune, and culinary historical longevity in your locale!  What’s more, you can enter the things you learn here from us at your local fairs and win some awards, no one need know where you ideas came from, these things we do mean o share with all of you, our dear loyal readership.  You make us what we are and without you, we would not be having the fun and excitement that we do!  Here we go:
Fresh Kiwifruit
(#0029) KIWI MUFFINS—ORIGINAL FORMULA—INSTITUTIONAL SIZE

Original Kiwifruit Muffins
The first time I tasted kiwifruit, I was blown away, it was sort of like eating a green strawberry, it absolutely mesmerized my tastebuds!  I knew that baking in them muffins, quickbreads, or even cakes was the answer to using them and once I concocted the proper muffin formula, I began baking them in institutional-sized batches at the hotel restaurant in which, I underwent my culinary arts apprenticeship.  I think that once you taste this muffin formula, you will admit that it is one of the best you have ever tasted and will find a way to introduce it to your customers, trust me, they will become enamored of it at almost the speed of light!

Bob’s Red Mill Soy Flour—adds freshness to baked products
Method:

1.  Mis-en-place: have everything ready with which to work! Prepare the batter the night before you plan to use it noting that there is NOTHING wrong with making a baking soda or baking powder batter and then resting it overnight in your refrigerator.  This does NOT adversely affect it in any way whatsoever and in fact, improves it!

2.     Set up your Hobart mixer and attach the paddle attachment but first, double-sift the first FIVE ingredients together and then stir in the remaining three items under the “Dry Mix.”

3.     Next, begin beating the eggs and sugar together CREAMING the mixture together as this is important to the overall success of the completed batter.  Beat until it is light, fluffy, and homogenous, then add the oil and continue beating until again, you have a combined mixture—we know this process as the CREAMING METHOD. 

4.     Next, add the remaining ingredients to the mixture taking care to scrape down both the bowl and paddle once or twice before folding the DRY mix into the WET using the least amount of low speed mixer rotations necessary to moisten the former with the latter.  Never overmix a muffin/quickbread batter as this causes the gluten to overdevelop leading to a chewier, tougher finished product.  Just mix the two components until you have a lumpy batter, taking note that lumps bake out during the baking process.  Do make sure you get the contents at the BOTTOM of the mixing bowl folded into the batter and once you do, transfer the batter into a holding bowl and cover it tightly with plastic wrap.  Refrigerate for at least 1-2 hours or preferably overnight.]

5.     The next day, prepare your pans by selecting nothing but stainless steel or heavy-duty aluminum muffins pans.  Spray the pans heavily with PAM Baking Spray or some such other food release spray and then line the cups with paper liners.  Spray the liners and the tops of your pans heavily with food release spray, too, as this makes for easier de-panning.  Nothing is worse than wasting some of the product simply because you did NOT spray the pans thoroughly with no-stick spray.  Chef’s Note: we never use dark bakeware as this draws in the heat rather than dispelling it, which leads to a final product that is dark, ugly, and not fit to serve.  Always invest in the best bakeware and you will NEVER go wrong!

6.     Bring the batter out of the refrigerator and let it sit for about 10 minutes; meanwhile, preheat standard ovens to 350°F or convection ovens to 300°F with the fan in the “OFF” position for now.  Place a pot of hot water atop the stove for use in keeping your ice cream scoop free and clear of batter as you scoop it into the prepared cups.

7.     When everything is ready, begin scooping the batter into the prepared cups filling them close to their rims.  Gently rap the pans to settle the batter then place them onto the middle racks of your fired-up ovens.  Chef’s Note: in standard ovens, avoid both the uppermost and bottommost racks and in convection ovens, avoid the topmost rack, as heat tends to concentrate in these areas leading to lost product.  If you use the convection ovens, flip the switch to “ON” now.

8.     Baking time standard oven: normally, muffins tend to take about 20-25 minutes and the more pans in the oven, add a few more minutes to the total.  Convection oven baking time: baking muffins in convection ovens requires about 15-20 minutes but whichever mode you choose, always keep a close eye on the muffins as they bake and take care NEVER to move them around in the ovens once they begin to rise. 

9.     To test for doneness:  look at the middle rows of muffins and note if they are still wet or are not; test them by gently pressing your fingers against them and if they seem to be FIRM, insert a paring knife or toothpick into their centers.  If the tester removes CLEAN, the muffins are ready to pull and if not, continue baking them until they are.  At this point, some pans might be done sooner than others so if you need to pull them, PULL them and if you need to move some of the others around now, move them.

10. As you pull them from the ovens, place the pans atop cooling racks and cool down for about 1-2 minutes; then, lightly rap the pans to loosen the baked goods and begin prying them loose leaving them atilt in the muffin cups.  As you do this, prepare the glaze listed under the “Finish” by mixing the glaze in your mixing bowl with the aid of your WHIP attachment.  Keep it warm over any residual hot water. 

11. When you have rested your muffins for about 5-10 minutes, remove them from their pans completely and place them directly atop the cooling racks with drip pans placed underneath each rack.  Begin swirling your glaze over and across the muffins so that you have covered them in thick, loopy swirls and ribbons of glaze, giving them a magnificent appearance!

12. The muffins are now ready to serve so present them in whatever fashion you choose.  You can place them onto cloth napkin-lined serving trays for presentation on brunch or luncheon buffets or you can keep them warm in bread drawers for individual service.  Whatever you do, serve them in an attractive way and people will be beholden to you for life, they are that good!

13. Always wrap leftovers in plastic wrap and if you plan to use them within the course of the day, you can keep them out at room temperature otherwise, seal them up airtight in Ziploc freezer bags, which you then label, date, and FREEZE.  Muffins and other breads do not do as well in the refrigerator as they do in the freezer, the reason for this being the lack of humidity in the former.   Use them within the space of 5-7 days for use; after that find something for them quickly or risk losing them to the ravages of freezer storage.  To use them, pull the muffins out of the freezer the night before and if wrapped in collective batches in hotel pans, poke a few holes for moisture to escape as otherwise, they might become soggy.  You can warm them up in bread warmers for individual use.
Kiwifruit Muffins
Kiwi muffins are absolutely delicious but take care to use nothing but ripe fruit and never hard or worse, truly green fruit as this does not make a five-start product.  Kiwis are quite delicious and now that we grow them on mainland America, their cost has declined dramatically since we first began using them back in the early 1970’s.   Kiwifruit muffins are absolutely delicious and I know that once you enjoy the first delicious bite, you, too, will be as hooked as I am!

You know, I hate making the predictions that I have over the past few days but let’s face it, we are in the midst of a bloodless coup—as Rush Limbaugh has said for the past year or so!—and seemingly, there is no way out of it.  We hope that the military will do the right thing if it should come to that one day but then, no one knows what will happen in this “me” world.  We hope that they will come to the aid of the American people should we undergo similar events such as what has taken place in Egypt over the past year and that if we need help reestablishing the Republic, then we need the help and may need it soon.  I truly am fearful of what transpires in our nation and has over the past 4.5 years and one thing I know is that we no longer have a bicameral system—we have ONE-PARTY RULE, plain and simple.  God help us!

Thank the Lord the week has come to an end because I am telling you, it becomes very stressful whenever I come to the mainland because at least at home, we feel somewhat insulated rather than standing at Ground Zero.  I cannot imagine how the people living in and around the Beltway of Washington, D.C., do not feel as if they are going insane and yet, they seem to be withering under the strain of constant media scrutiny, intrusive reporting, and a whole host of other ugly aspects.  I think that if we have to find some place to go before leaving the country, we might hide in Hana on Maui or go over to Molokai and take refuge there.  Whatever we do, we need to find somewhere in, which, we can tuck ourselves away, and not have to listen to this unceasing insanity!  Have a great 6-7 months and I will see you sometime in 2014—the Good Lord willing!—and we then will begin working toward making 2014 into a second coming of 2010!  I hate to say it but we need to throw all of the traitors out and to do it soon!  Buy some albums, buy some books, leave some comments, become a follower, you know how to get in touch with me so please do!  Aloha again!

  2. 1795: The United States and Spain signed the Treaty of San Lorenzo (or Pinckney’s Treaty), which provided for free navigation of the Mississippi River.
  3. 1858: The 26th president of the United States, Theodore Roosevelt, was born in New York City.
  4. 1880: Theodore Roosevelt married his first wife, Alice Lee.
