Bakersfield, CA, 10-25-2013 Friday: At the time of this writing, I have to admit that already, I was looking forward to going home.  If one thing exists in Hawaii, it is the fact that national politics do not carry as much weight as do local races so while watching the daily news here in the Bakersfield hotel in which, I am residing at the moment, is making me sick!  If I have to watch that lying little kid, Jay Carney, continue hurling insult after insult in the direction of the Republicans, I swear to God, if I were thirty years younger, I would put a lamp through the television screen!  I cannot handle the load of lies that the TV talking heads spout each and every night, it is enough to make one want to jump off the Padre Hotel’s roof, I simply do not know how the hell the people on the mainland handle the amount of lies spewed by the Democrats!  I consider myself to be a kind and gentlewoman, I do not believe that we should fight one another physically or verbally but the constant cries of “hostage-takers,” “terrorists,” and such other invective is maddening, I am not kidding you.  This nation (or so I learned in school) demands that politicians debate the issues and then come together to form a consensus.  However, the golden boy at the top of the heap seems to feel that like a kingpin, once he issues his walking papers, people become obliged to do whatever it is he wants!  This young whippersnapper has no right to sling the mud he and his party members continually hurl because all the Republicans are trying to do is to fix his fricking healthcare bill before it collapses completely!

I, like everyone else, have areas in which, I disagree with the opposition but the last thing I want to do is to characterize him or her as being worse than Osama bin Laden!  However, in Barack Obama’s mind, he seems to feel that bludgeoning the opposition is something of merit and that if anything bad comes of it, well, the OTHER side deserved it because they would not agree with him.  If anyone were a terrorist, I would say that Mr. Obama is the one because we all know how he came to national office in the first place, right?  TWICE his minions back in the Windy City opened sealed divorce records exposing dark secrets his Democratic competitors thought they had hidden from sight.  Using these exposures, he was able to force withdrawals by both opponents and then did the same when it came time to run for the United States Senate by forcing Republican Jack Ryan to withdraw over the same matters.   American politics is definitely a dark mess but at some point, one has to question the idea that if one can win a seat only by running unopposed, what does that say about the candidate?

Here’s the other side of the coin: when he ran for the presidency, Hillary Clinton was thought by all to be the shoe-in for the Democratic nomination.  However, as she ran in the 2007 primaries towards the nomination, she found that many supporters such as Teddy Kennedy were now former supporters as they crossed the line over to Obama.  Had it not been for the high jinks of talk radio host, Rush Limbaugh, and his campaign of sending Republicans voters over to the Democrats in the primaries to keep her in the race, again, Obama would have almost been unopposed.  Then, he went up against Republican John McCain, who some now believe was a lackey in the race because it seemed that no matter what the Republican voters and his vice presidential candidate Sarah Palin urged him to do, he did his best to LOSE the race against Obama.

Now, I think that Mitt Romney put up a better fight against Obama in his reelection bid in 2012; however, I believe that the Democrats were able to select him to be the challenger through emulating the Rush Limbaugh strategy of Operation Chaos because they knew that thanks to his own statewide healthcare plan in Massachusetts, he would lose.   Now, Romney did fight and he fought hard but the pundits swear that four-million Republican voters remained home because they did not care for the candidate.  While that might be true, I have to ask, “WHAT ON EARTH WERE THEY THINKING?  ROMNEY WOULD HAVE BEEN A BETTER PRESIDENT THAN BARACK OBAMA AND WE CERTAINLY WOULD NOT BE FIGHTING TO STOP OBAMACARE NOW!”  No, that is the frustrating aspect of this ongoing soap opera of how to stop this man as he forces us to open our gullets and then shoves Obamacare down our throats.  I hope the Republicans will continue the fight because if the government remains shutdown and the debt goes unfunded, it’s all going to be on the head of Barack Obama.  We need to win this fight and the narrative has to be one in which, Barack Obama receives all of the blame, I just hope that the Occupy Wall Street crowd does not flood the streets with the young, dumb, and politically naïve kids who seem to idolize this first dictator of ours.  Yes, I said it, this man is the FIRST dictator of the United States and if I disappear between here and home when I leave early next week, then you will know what has happened to me!  I TIVO the show, “The Black List,” and I saw the episode last Monday, October 15, 2013, when the criminal nicknamed “the Stew-Maker,” was dissolving people and sending them down the drain…it can happen to anyone including you and me!

You know, when you start watching television shows and you compare your life with what happens on them, that is a very telling insight about oneself.  I think that we are living in an age in which, political retribution has a way of finding everyone the government does not like. I mean, this last year has been phenomenal in the amount of disclosures that made their way to public because even some things are impossible for the news media to overlook such as the IRS and NSA scandals.  We still recall what happened back in the spring and summer when these troubling issues began coming to light and look, they are still viable problems that need to be solved and soon but what with the current hoo-hah over the battle between the Republicans and the Democrats over funding Obamacare, they are all but forgotten!  We know that those two issues are ones that could have brought any other past presidency to its knees whereas now, we seem to be very in harmony with whatever the great leader wants to do.  Who is talking about Benghazi, the loss of four American lives, who is discussing the disaster of “Fast and Furious” and the deaths of two federal employees?  NO one, that’s who!

We could go on all day long but the time has come for me to segue into the foodservice segment of today’s blogpost.  I have chosen a mighty muffin recipe for you today, one I know that you will love, enjoy, and serve throughout the rest of your glorious careers!  Besides, it’s that time of the year, Halloween is coming within a matter of days and then we have the winter holidays of Thanksgiving and Christmas.  Yes, I said, “Christmas,” I do not bow down to the politically correct, I say it how it’s meant to be said.  Besides, all of you PC folks seem to think that the “religion of peace,” Islam, can do no wrong, which is insane.  I could go on another 2-3 paragraphs about how shocked I am visiting Bakersfield to do my week’s stint and to see TWO large Islamic mosques in the conservative bastion of Kern County’s number one city, the famous Nashville West, Bakersfield!  Anyhow, here’s the muffins, let’s get going!
(#0017) PUMPKIN MUFFINS II—ORIGINAL RECIPES—INSTITUTIONAL SIZE


Pumpkin muffins are truly one of the best muffins that life has to offer because they taste like pumpkin pie, something nothing else can or ever will.  I love doing things in season for the times and from early October until the end of November, pumpkin reigns supreme.  Using fresh pumpkin makes them memorable and you can be sure that you will never have tons of leftovers because people will snap them up if you give them the chance!

Method:

1.     Mis-en-place: have everything ready with which to work! Prepare your muffin pans first by selecting stainless steel or heavy-duty aluminum, reflective metals and not dark bakeware as the latter tends to absorb heat rather than repelling it, which leads to overbrowning of the crust, crown, sides, and bottom—NOT something you want!  Spray the pans heavily with PAM Baking Spray or with some such other food release spray, then line the cups with paper or aluminum liners, then spray BOTH the liners and the TOPS of the pans, too, for easy release; set them aside. 

2.   Double-sift the first THIRTEEN ingredients together and set aside.  Preheat standard oven to 350ºF or your convection oven to 300ºF. but with the fan in the “off” position for now. 

3.     Hook up your Hobart mixer and attach the paddle attachment.  Add the eggs and sugar and begin beating the mixture at medium-high speed until light and foamy.  Then, begin adding the vegetable oil in along the sides, slowly, until it becomes CREAMED, meaning a homogenous, emulsified mixture—this is essential to the finished product’s success. 

4.   When it is as described, add the remaining liquid ingredients, if using the raisins, add them to the mixture now, and let them soak for about 10 minutes; then, fold the DRY into the WET using the least amount of low-speed mixer rotations in order to moisten the former with the latter.  NEVER worry about lumps as they bake out during the cooking process but it is important to NOT overmix the batter as this causes overdevelopment in the flour’s gluten, which leads to a chewy, tough product—a BIG NO-NO!

5.     Cover the batter with plastic wrap and refrigerate for about 60 minutes or overnight.  (If you do the overnight situation, cover the pans with wax paper or plastic wrap to protect them from the elements and obviously do not turn the ovens on NOW).  When it is time to fill the muffin cups, use an ice cream scoop dipped in hot water here-and-there to keep the mechanism fluid and un-jammed, and fill the cups close to their rims.

6.     Gently rap the pans to settle the batter, and then place them onto the middle oven racks of your preheated ovens taking care in (1) standard ovens NEVER to put pans at either the HIGHEST or LOWEST racks or (2) convection ovens on the UPPERMOST racks, as this is where the oven heat tends to concentrate.  Once muffins are in the oven, do NOT move the pans around as this could cause the immediate collapse of the rising batter from which, it will NOT recover. 

7.  Standard ovens: bake for about 24-28 minutes or in convection ovens about 18-22 minutes or until a paring knife—when inserted into the centers of the middle rows of muffins withdraws CLEAN.

8.   The minute they inform you they are ready to pull, pull them out and place them atop cooling racks.  Meanwhile, prepare the Finish by combining the ingredients together to form a thick glaze. Keep this glaze warm for now. 

9.     After 1-2 minutes, begin de-panning the muffins by gently rapping the edges of each pan to loosen them and then pry them loose and leave them atilt in their empty baking cups.

10. After another 2-3 minutes, remove the empty muffin pans and place the muffins directly atop the cooling racks with drip pans underneath them and begin swirling the glaze over them using either a whisk or a ladle to give them a sugary glaze in loops and swirls.  Use the glaze up and then serve them by placing them onto doily-lined serving trays and serve at your brunches or your luncheons or serve them individually on bread-and-butter plates.  Either way, serve them with whipped butter and fresh fruit preserves. 

11. Wrap leftovers in plastic wrap, and then zip them uptight in Ziploc freezer bags and label, date, and freeze.  Use within 5-10 days for best results or use them after that in bread puddings or whatever else you might have a need for them.  After that, use them or lose them.  

Everyone loves pumpkin muffins; they taste great, look awesome, and are wonderful at Halloween or anytime of the year.  Pumpkin is something you present and usually get rave reviews over because they have a texture all their own, truly unique.  At October, they are killer, have no doubt about that and if you use fresh pumpkin, they are the absolute greatest!

Speaking of Islam prior to the presentation of the recipe, we are seeing a growing population of Muslims here in Hawaii and that is very troubling.  We look at ourselves as somewhat immune to the problems of the world but terrorism is never far away.  For one thing, people from all over the world pass through here heading east, west, north, and south, and at some point, we most likely will suffer our own terrorist attacks.  All I can say is that I hope law enforcement remains vigilant and that we never let our guard down as otherwise, paradise will no longer be paradise!

I would like to send a shout out to author and activist, Pamela Geller, her new book, “Freedom or Submission: on the Dangers of Islamic Extremism and American Complacency,” 2013, what a book!  You see, this is something that every American needs to read to understand how the Muslims are doing their best to integrate themselves into American society so that by the time there is a general uprising, they will be among us like the Fifth Column they are.  I suspect that they will continue subverting and misleading us while we seem to be oblivious to the coming dangers, it is sort of, like how the Israelis let their guard down in the beginning phases of the Yom Kippur War and almost lost it.  We are doing the same thing America did prior to December 07, 1941, and if we do not somehow reverse this present line of course, it could be the death knell for us.  One thing I can tell you is that the Hawaiian warrior spirit will never let its guard down here but as for the rest of you…OPEN YOUR EYES!
