HUMP DAY
Bakersfield, CA, 10-24-2013 Thursday: The last three days, we have discussed a variety of topics but most of them have to do with the slow decline of the ‘American  Dream’ as the country falls deeper and deeper into debt and its people become more and more dependent upon BIG government to provide for them.  While this might be fine in the short term, in the long run, it is going to be the end of the United States, as we know it because the America that I know was built upon independence of spirit, determination to get ahead in the workplace, and the overall desire of the American people to achieve.  You see this in much of my home state of Hawaii because on one hand, we do have people who rely on the government to keep them afloat but we also have many more that work hard every day of the week and provide for their families.  If there is one thing about my beloved Hawaii that I know, it’s the fact that we are sort of a microcosm of what the mainland used to be, we have people from all over the world who come here and give their all.  Each island has its own culture that envelops everyone who lives on it. When we come together as a whole, you know, the four counties of Oahu, Maui (which, for those of you who do not know it includes Molokai, Lanai, and Kahoolawe), Kauai, and the Big Island, there is nothing, which we can accomplish as long as we maintain the Aloha Spirit!

Now, when we look at the mainland, we see a great deal of strife, not only in its politics but also in the many different groups of people living there.  They come from all over the world and no longer want to assimilate, they grow up there thinking the world owes them everything and then when they don’t get it, they become angry.  There is such an undercurrent of displeasure, especially among the younger people who seem to feel that they owe no one respect including their parents, which would not be tolerated by anyone living here in Hawaii.  The island culture is about family, we revere our elders, we look after their needs and we love our children.  Generation after generation have lived here in the islands, this is and has always been our home and those who come here to live and work among us quickly become a part of it or they go home to what they are used to.  Some never get the Aloha Spirit but most do and once they do, they become part of us and remain here for the rest of eternity.  This is one of the reasons why many of us still long to see a return of the Kingdom and our independence, it’s not because we do NOT want to be a part of the United States, it’s just that being a commonwealth like Puerto Rico might be much more preferable than being an actual state.  In fact, I believe that this is something for which, we must begin pushing; otherwise, we will go down with the ship when it sinks!

Now let me add something about the feeling of the people here when it comes to the President, we are proud that one of our own has made it as far as he has but we are NOT proud of the way he conducts his business.  Yes, we are a big democrat-controlled state but we are the old-style Democrat, NOT the new pro-socialist-possibly communist-style party currently holding power in Washington, D.C.  I realize that some people get hot and bothered when they hear the “C” word but let’s face it, the modern-day Democrats are not MY grandfather’s Democrats, this new breed is going for everything it can get and without a care as to how it does it!   I mean, look at Senate Majority Leader Harry Reid, that man is a shameful thug, I agree with some of the other bloggers that he is a shameful man to have in such a position.  Not only does he lie, whine, and snivel at the podium, he is nothing but a mat outside the President’s door so he can wipe his feet on it when they’re covered in muck from the pit.  If I was from Nevada, I would be ashamed that we elected him to represent us!
The Island of Kauai
Something that bothered me tremendously last week was when the veterans went to Washington, D.C. to visit their memorials and were “encouraged to go away” by the park rangers because of the federal government shutdown.  It was the second weekend of the federal government’s shutdown, they knew the rangers would turn them away and yet, they went and took the barricades and piled them up in front of the White House.  They began the union chant, the same one the union thugs did in Wisconsin when Governor Scott Walker did his best to save his state, “SHAME ON YOU!” This is what the union thugs do, they chant their mantra over and over and think it’s fine because they are Big Labor after all and that should allow them to get away with murder, literally on some occasions.  Yet, when the veterans chanted “SHAME ON YOU” in front of the White House, riot cops showed up and dispersed them and then the news media turned on its hatred saying that the veterans had waved Confederate flags and yelled racist epithets at the President.  I spent most of one day watching every news flash I could, every video post, every place on the Internet where I might actually see this despicable act and could not find it anywhere.  That’s when it hit me, once again, the news media went into crisis mode and did their best to swindle the American people by putting out false stories, hearsay, and other forms of bull-crap.  It makes me sick to think the media is in the tank to the degree that it is for the administration and the President and that should make every American angry!

Wow, I have used the word, ‘anger’ several times throughout today’s post but let’s face it, if you are NOT angry, then you are not paying attention to what it is going, which does not say too much about you.  After all, that is why we have so many people living off the government dole, they find that it’s easier to TAKE rather than to give and one day, as the educated all know, the goodies will disappear.  Christmas comes but once a year and soon, when the liberal agenda is rammed through to the hilt like a sword through flesh, there will be NO need to continue giving freebies away, people will have to do whatever the government tells them to do, plain and simple.

Okay, we have discussed this topic fairly well so let me welcome you to the HUMP DAY edition of the American Institute of Culinary Politics-Elemental News of the Day, this is the place where we discuss the hot topics of the day without a damn about who gets mad.  Perhaps one day, the government will forbid this sort of interaction but until that time, we are not going to worry about it, we are going to speak our minds and then cook our rear-ends off all for you!  Today, we have yet another muffin recipe in an institutional size, one I know that every single one of you is going to love.    Pineapple was once synonymous with Hawaii, that is, until the pineapple island of Lanai became a five-star resort island!  Add almonds to the pineapple and you have one amazing muffin recipe, one of our originals in its institutional size!  Let’s get going, shall we?  Here we go:
(#0009) PINEAPPLE-ALMOND MUFFINS—ORIGINAL FORMULA—INSTITUTIONAL SIZE

Pineapple-Almond Muffins
Some combinations emanate from heaven while others are made in hell but this one; this one comes out of the former to be sure!  Pineapple and almonds are excellent bakery items in and of themselves but put together become an irresistible draw pulling the hungry customer closer and closer until he or she cannot pull away.  The sweetness of the pineapple and the dreaminess of the almonds are like being given a glimpse of heaven but then realizing one is back on earth, smack dab in the middle of a bakery with a reminder in their hands from where they just had been.  I know that every time I make these muffins, the kitchen smells heavenly and everyone practically is blessing me for having made them, something I am sure will happen for you.

Method:

1.     Mis-en-place: have everything ready with which to work!

2.     Preheat standard oven to 350°F or a convection oven—fan “on”—to 300°F.  Spray the baking cups with PAM and then line with paper baking cups. Spray those with PAM and the tops of the pan, too to keep everything from sticking! Note: always use reflective bakeware such as aluminum or stainless steel because the shiny metal reflects away from the muffins as they bake leaving the finished product with tender sides and tops.  Dark bakeware damages baked goods so avoid using it because it draws heat in rather than repelling it.

3.     Double-sift first SIX ingredients together; then, blend in almonds.

4.   Using a Hobart mixer equipped with a paddle attachment, beat eggs till foamy; then, cream in the sugar and the vegetable oil. When combined, blend in remaining ingredients and combine well. Then, fold the DRY into the WET using the least amount of strokes necessary to do so in order to avoid chewiness in the finished product.

5.     Rest the batter for about an hour in your refrigerator and then when time is up, pull the batter out, re-attach the mixing bowl to the machine, and using the paddle attachment, rotate the implement around the bowl at low speed for another 20-30 seconds.  Stop, scrape down the bowl and paddle, and prepare to fill the muffin cups.
6.     Using an ice cream scoop (occasionally dipped in warm water), fill the cups close to their rims.  When all are full of batter, rap the pans gently to settle it, and then place the pans inside the preheated ovens.  In standard ovens, avoid the uppermost and bottommost shelves and in convection, avoid the uppermost, as heat tends to concentrate there, which over-bakes muffins on those racks. Once muffins are on the shelves do NOT move them around as this can cause them to drop, the results being that they will NOT come up again meaning they are lost for good.  Avoid this common pitfall, as this is an unnecessary problem.  Always keep thermometers in your ovens for best results.  
7.     If using standard ovens, check muffins around the 18-minute mark and in convection, check them around 11-13 minutes for doneness by pressing the crowns—GENTLY!—in the center rows and if they feel firm, inert a paring knife or a cake tester into the centers.  If it withdraws clean, they are ready to pull and if not, continue baking another couple of minutes. 
8.     Remove from the oven then and place on cooling rack and cool 2-3 minutes; then, rap pan gently on the edge of the counter to loosen the muffins. Tilt sideways in the pan and complete the cooling process.

9.     While the muffins bake, make a glaze using the ingredients under the FINISH to form a thick glaze and then using it; glaze the muffins while they are still WARM but NOT HOT.  Otherwise, the glaze runs off in rivulets and you have to do it all over again. Alternatively, you can sprinkle powdered sugar through a sifter to give them a fine dusting but either way, do them up festively and you are sure to get rave reviews and happy smiles all around! If you so desire, top the muffins with more toasted and crushed almonds for a decorative look taking care to sprinkle them across the muffins as you glaze them!

10. Serve the muffins immediately by placing them onto serving trays lined with doilies or by serving them individually on doily-lined plates with plenty of whipped butter and fresh pineapple-apricot preserves.  Always use them within a day of baking as otherwise, you will have to store them in your freezer (see the next paragraph) but never in your refrigerator as lack of humidity causes them to dry out, irreparable damage.

11. When completely cool, you may wrap the muffins in plastic wrap and leave out at room temperature for a day and then freeze or refrigerate and after a day, refrigerate or freeze. You may reheat quickly in the microwave oven in 8-10 seconds.

These muffins are amazingly delicious, ones I know that you will and your customers definitely will enjoy, especially if you love the combination of pineapple and toasted almonds.  Always do your best to use them within the first day of baking because, nothing is better than fresh.
The Island of Lanai
You know, I used to spend summers on Lanai, my grandparents on my mama’s side lived there and we used to go over there from Maui, my sisters and I and spend time doing things the old way.  They worked the pine fields, harvesting one of the most difficult fruits there is to pick, one has to wear heavy clothing in the heat of the summer while scorpions and centipedes climb up your legs.  Dole used to be the main harvester of pineapples, which then went to the rest of the country and the world that is one of my fondest memories of life as it was now that the islands have become more of a paradise for outsiders than it did holding on to the ways of old.  Gosh, I miss those days and if I could ever give Hawaii back, what it had 20 years ago or longer, I would.  It is hard to change perfection but that perfection has changed considerably.   Don’t mind me, I am just reminiscing, you know that old song by the Little River Band back in the 1970’s, that’s one of my favorite tunes and says it all!

I am sure that I will be receiving a great deal of hate mail from the lefties out there in the world who read this blog because they will see me as a “traitor” of sorts but hey, we tell it like it is here.  We have quite a few leftwing writers, I think they tend to pile up so the conservative readers become tired in the same way the left-wingers do when all of the conservatives follow one another.  I must say, however, that the defection of Chef Olaf Bologolo to the Tea Party is astounding but I know exactly how the man feels!  When you see that your leaders have lied to you over and over and then proclaim when asked about cancer-stricken children, “Why would I care about that” as Harry Reid recently proclaimed when asked that question, what can you do but change?  There is nothing wrong with change, is that not what Barack Obama promised us when he was president-elect back in 2008?  Unfortunately, there is a whole lot of change going on that he never expected, I wonder how he likes it?  Anyhow, that is going to do it for this HUMP DAY, please buy some of these wonderful CDs by Family, the Streetwalkers, all of them are good!  Then, when we finish them, we will begin promoting CDs by Vanilla Fudge that is one that you will not want to miss!  Aloha, see you tomorrow!

  2. 1648: The Treaty of Westphalia ended the Thirty Years War and effectively destroyed the Holy Roman Empire.
  3. 1861: The first transcontinental telegraph message was sent by Chief Justice Stephen J. Field in San Francisco to President Abraham Lincoln in Washington, D.C., over a line built by Western Union Telegraph Company.
  4. 1901: Widow Anna Edson Taylor became the first person to go over Niagara Falls in a barrel.
