Bakersfield, CA, 10-21-2013 Monday: Living in Hawaii makes us sort of ‘detached’ from what goes on in the rest of the nation but I must say, it seems that President Barack Obama has a lot of disgust for the American people.  Well, let me dispel the idea that we do NOT pay attention to what happens across the rest of the country because we do.  The thing that irritates the hell out of me right now is the fact that the President is one of the most obstinate politicians this nation has ever seen and the fact that at the time of this writing a week ago, today, he was doing everything in his power to force his rampant, frothing-at-the-mouth socialist agenda down our throats!   When last I was here, back in March of this year, we still had a good six months to go before we had to begin signing up for the unaffordable Affordable Care Act.  When last I was here, I was waxing philosophical when I said it was an ‘honor to have someone from your state sitting in the White House and boy, how erroneous was I?  Now, I wish that even Joe Biden was the president because at least I think that man cares somewhat about the country and would never have done what the present occupant in the White House has done.  Granted, unemployment in Hawaii has fallen to just over six-percent but that was before the mandate to buy insurance began in earnest.  I suspect that many more people will go back on unemployment because like it or not, it is far easier for those among the lower middle class to allow the government to play mother and father and provide the things that otherwise will break the bank of these families.   The time to fight back is NOW and we must support the Republicans doing battle against this administration because every day, we see exactly of what it is capable.  When the World War II veterans,—aided by Governor Sarah Palin, Senators Cruz, Lee, and Paul, among others—had to bring the barricades they tore down over the weekend of October 11-13 to the White House!  Then, the news media begins bashing THEM for being out of line when it’s this administration and President who are out of line!

Moreover, I am becoming tired of the rampant class warfare the Democrats running the country continually wage and which to some degree, it has spilled over into the Islands.  We have many people who barely get by and many of them—especially the Hawaiian people such as myself!—spout the liberal dribble about how ‘rich white people hold them down,’ which is simply preposterous!  I hate to say this to my brothers and sisters but you have to do a whole lot more than blaming others for your misfortunes in life!  We did not want to lose the Kingdom but now that it’s over and done, there is nothing we can do about it but persevere and win the game.  However, if you are content to live on governmental handouts, then you, my fellow Hawaiians, have already lost the game.  It’s like being a wild animal that comes around and receives handouts of food from friendly strangers, after awhile, that animal becomes dependent on those handouts.  It forgets how to find its own food because people have given it enough with which to get bye.  I like watching the show on the Animal Planet Channel, you know, “Gator Boys,” and all too often people find themselves overrun with nuisance gators because they feed them.  The animal is not stupid, it knows, ‘hey, I can go to this people’s cottage and get some food and if they forget to feed me, I will eat their dog.’  Well, that is what is going on in this nation of ours, the longer people remain on unemployment insurance and welfare, the more they forget how to fend for themselves.  The best government governs least, meaning that people need to be self-reliant because once they become dependent upon government, Big Brother has them right where it wants them!  I think there’s some truth in “The Hunger Games,” that movie and those books are right on many facts!

At least at the time of this writing, the fourteenth day of the federal government shutdown, the president appeared as though he were beginning to cave.  I mean, it is on HIM, Harry Reid, Charles Schumer, Dick Durbin, and Nancy Pelosi the fate of the nation.  The fact that they have gotten ALL of what they wanted for most of the time Mr. Obama has been in office has made them blind to the fact that at some point—when the Republicans’ collective spines finally began to grow steel!—an inevitable smackdown was on its way.  This is what is happening NOW, the Democrats are somewhat stunned that even with their allies in the news media, they are now beginning to falter and I so hope that next year in 2014, we destroy the Democrats!  I hope that in the next presidential election in 2016 that we run Ted Cruz and Marco Rubio and then when they criticize them, we can use the cry of “RACISM!”  It would be so great to have turnabout that it would be worth giving any amount of money to the Tea Party. Giving it to the Republican Party is putting money into the pockets of those who like running the John McCain’s, the Mitt Romney’s, the George Herbert Walker Bushes instead of men like Ronald Reagan who spout conservatism at every step!  As Rush Limbaugh says, “Conservatism works every time it’s tried,” how right is that?  I think that if the Republican Party found a way to boot men like Karl Rove out the door, that it might be able to reformulate and to seize power across this great nation of ours!

Since we have six more days after today’s session, we will continue our argument for and against the Obama Administration and all of its devious policies, shenanigans, and other games it seems to be drawn to do.  Heck, we are trying to sign people up for our own particular brand of Obamacare, the Hawaii Health Connector, which is having its own glitches but that is for another day.  Now, we will move on to the recipe part of today’s blogpost, I am doing the Classic Quickbreads and Muffins Category for the first time since June 2011!  I realize that others have done it more often than I have but this is my first FULL week doing this very popular category and what we are going to do both today and the remainder of the week is original muffin recipes in institutional sizes!  I, like the rest of the folk’s blogging here, believe that we should return to the ways of old, we should do everything from scratch because that is what life is about, self-reliance.  If we can find the time to make our own recipes instead of buying stuff from foodservice purveyors, we will be unique among a sea of sameness.  Our first recipe kicking the week off is for Banana-Coconut Muffins so here we go:


(#0011) BANANA-COCONUT MUFFINS—ORIGINAL FORMULA—INSTITUTIONAL SIZE


Banana-Coconut muffins are one of my best creations over the course of a lengthy career as a baker and this particular recipe was my original institutional-sized formula for this amazing quickbread.  Bananas never go to waste—especially if you toss the old ones into the freezer, you can use them at any time.  I can tell you, it is great to never lose a dime on one’s fruits because you can always use them in baked goods, I assure you, the uglier the bananas, the better they taste as chemically, their sugars intensify with their over-ripeness, which the sugar puts into suspended animation.

Method:

1.   Mis-en-place: have everything ready with which to work! The Bananas: generally, the best bananas for baking are those that are overly ripe, which the perceptive baker then tosses into the freezer for use later.  Pull them out the night before baking and allow them to defrost in the refrigerator overnight.  The next day, peel them and puree them allotting about TWO frozen bananas for ONE fresh banana.

2.     Prepare your muffin pans by selecting nothing but stainless steel or aluminum bakeware, NEVER dark bakeware as the former repels heat away from the baking muffins whereas the latter draws it in, thereby causing the muffins to over-brown, become crusty, and not edible.  Spray the pans heavily with PAM Baking Spray or Crisco Pan Release, or some such other food release spray.  Next, line them with paper or aluminum liners, then spray the liners and the tops of the pans heavily with food release spray, too, so that the finished products depan easily and the muffins pull away from the paper when the diner peels it off them.  Set your pans aside and proceed:

3.     Double-sift the first NINE ingredients and then stir in the coconut; set this mixture aside.
 
4.     Hook up your Hobart mixer with your paddle attachment and begin beating the eggs and the sugar together at medium-high speed. Cream them together (creaming means creating a homogenous mixture) and then add the oil to it, finishing the emulsification.  Stop mixing, add the remaining liquid ingredients and blend well. 

5.     Now, add the DRY mix to the WET.  Rotate the paddle around the bowl at low speed for about 45-60 seconds OR until you moisten the former with the latter.  NEVER overmix a quickbread batter (the term, “quickbread” takes in muffins, loaves, and pancakes/waffles, ALL items made with baking powder/soda and NOT yeast) as this causes the gluten to overdevelop.  Overdevelopment of the gluten causes the finished product to be chewy, tough, and very unappetizing so avoid this common pitfall!

6.     As soon as you have combined the batter, STOP mixing, scrape down the sides of the bowl and the paddle, and rotate the paddle one more time for about 20 seconds.  Now, cover the batter with plastic wrap and refrigerate for it about an hour.

7.  \Meanwhile, preheat your standard oven to 350º or your convection oven to 300°F.  Combine the ingredients listed under the “Finish” and blend them well—this is your sugar glaze.  Have this ready; you can keep it warm if you want for easier use. 

8.     When the time is up for the batter, stir it to mix any pockets of liquid and then using an ice cream scoop—occasionally dipped in hot water to keep the mechanism fluid—and fill the pans close to their rims.  Gently shake the pans to settle the batter, and then place them onto the middle oven racks.  In a convection oven, avoid the uppermost rack and in standard ovens, avoid both the bottommost and the uppermost, as this is where the heat typically concentrates at its most intense.  I advise you to always use oven thermometers for best results because if you do not, your oven could be way more hot then it should. 

9.     Standard ovens: bake the muffins about 18-24 minutes and in convection, about 14-18 minutes; however, keep your eyes on them and once the middle row seems set, the muffins are close to done so test them with a paring knife or cake tester inserted into their middles.  If it withdraws CLEAN, they are ready to exit the oven so begin pulling them mow.  However, never move the pans around the oven once they begin to bake as if they collapse, they will NOT rise back up—a wasted effort.  However, once they are set and if some of them are not quite DRY, at this point, you can move them around so if you feel the need to do so, do it, just be careful!

10. As soon as the muffins test DONE, pull the pans out and place them atop cooling racks.  After 2-3 minutes, begin de-panning the muffins by first gently rapping the pans to loosen them and then using a butter knife, pull them out and leave them atilt in the empty muffin cups for another 3-4 minutes. 

11. Now, remove the muffin pans for good and place the muffins directly atop the cooling racks with drip pans beneath them.  Begin swirling the glaze over them with a whip or a ladle so that the muffins have a syrupy glaze looped over them.  They are now ready to serve so place the muffins onto doily-lined serving trays and take out to the brunch line or your luncheon buffet OR serve them individually by keeping them warm in bread warmers and serving them on individual bread-and-butter plates. 

12. If you plan to use the muffins within a day, keep them covered in pans with plastic wrap and if you have leftovers at the end of the day, wrap them individually with plastic wrap and then zip them up tight in Ziploc bags, which you then label and freeze.  Use them within 5-7 days as after that, their quality begins to decline.  You can use them in bread puddings, as crumbs for fillings, or for anything else you mind have a use for them!

This was the original institutional-sized formula I created using this combination and I can tell you, it was one of the most popular.  Generally, bananas are a great item to use in quickbreads and while coconut is not always the most popular with some diners, when combined with bananas, it can be.  This is a winning combination to be sure and I can tell you that after having served them for more than 40-plus years, they have never lost their luster!

Banana-Coconut sure is a flavor combination from the Islands, to be sure, and that should excite all of you into immediately running this recipe at your foodservice establishment.    I know that it is easy to do things the cheap way, the simple way but let me say this in agreement with my fellow bloggers, I believe that if you do things from scratch just as we do here, your clientele will REWARD you, try it and see for yourself: I am right!

  1. 1797: The U.S. Navy frigate, Constitution, also known as “Old Ironsides,” was christened in Boston’s harbor.
  2. 1805: A British fleet commanded by Admiral Horatio Nelson defeated a combined French-Spanish flotilla in the Battle of Trafalgar; however, Nelson lost his life to a sniper.
  3. 1879: Thomas Edison perfected a workable electric light at his laboratory in Menlo Park, New Jersey.
  4. 1912: Classical music conductor Sir Georg Solti was born Gyorgy Stern in Budapest, Hungary.
  5. 1917: Members of the First Division of the U.S. Army training in Luneville, France, became the first Americans to see action on the front lines of World War I.
  6. 1944: During World War II, U.S. troops captured the German city of Aachen.

  13. 1986: Pro-Iranian kidnappers in Lebanon abducted American Edward Tracy who was ultimately released in 1991.
  14. 1991: American hostage Jesse Turner was released by his kidnappers in Lebanon after nearly five years in captivity.
