Bakersfield, CA, 09-03-2013 Tuesday: Hello, friends, welcome to the American Institute of Culinary Politics-Elemental News of the Day, this is the place where we come together daily to discuss the hot topics as well as whatever is on today’s plate, you know, sort of the Blue Plate Special at the local diner.  However, our Blue Plate Specials are more like the Gold Plate Extravaganza as we show you how to do NOTHING but the ultimate best!  Anyhow, did you know that the Golden State is under assault by psycho liberal politicians who now want to—at the time of this writing—to put NON-citizens—you know, illegal aliens!—on juries?  If Jerry BrownCalifornia’s asinine governor—signs AB 1401, we would be the first state to allow illegal aliens to serve on our juries!  Now, you know, I for one do not consider someone who swam across the Rio Grande to be a peer of mine and if I ever were tried, convicted, and sent to prison and an illegal aliens was on the jury, I would not recognize the authority of the court!  How can we do this, who in their right mind would think this is acceptable, it’s all about this burning liberal desire for punishment and payback of the majority race of this nation!  Ever since the President came to power, a lot of people had the idea that the uniquely American bugaboo about race was finally going to be put behind us—NOT IN FRONT OF US!

My family is NOT from the South, we never owned slaves, in fact, and my family lost several of its members in the War between the States, fighting on the side of the North!  I am damned mad and hot under the collar whenever I see any of these leftwing, mind-numb politicians continuing to heap one outrage atop us after another.  It is bad enough that we have to live under increasing numbers of those who are not like us, who do not speak the same language (or wish to), and who do not give a damn about our ways or way of life.  No—these people are intent upon one thing and that is paying back the majority for perceived sins of their past, something of which, most of us had nothing to do with nor would ever have condoned!  I for one am damned mad when I see crap such as this AB 1401, coming on the heels of the Tom Ammiano bill that legalized transgender youths—you know, those who feel like the opposite sex on any given day—to access the bathrooms of the opposite sex.  I am telling you, we already have a class-action lawsuit under way to put a stop to this insanity in our state and let me warn the governor and Mr. Ammiano, if anything happens to any of my grandchildren, you, my friends, will have a bulls’ eye on your backs, figuratively speaking, that is.  I would NEVER condone anyone putting a high-powered slug through your heads!  I would condone someone pelting you with buckets of illegal alien sewage and maybe even dropping you into the sewers to savor it, along with the rest of your leftist friends!  It kills me to see California going down the garden path to be not only the laughing stock of the civilized world but also a third rate, Third World cesspool with illegals sitting on our juries sending American citizens to prison!  The time has come to put a stop to this increasingly homo-loving, illegal-loving idiocy as if we don’t, our state is lost; you know the old adage—as so goes California, my friends, so goes the nation!

You know, the election of 2014 cannot come soon enough, we have a lot of electoral payback to dish out next year.  For one thing, we must dispose of numerous RINO Republicans who while voting to end Obamacare over forty times do little else to stop it.  In fact, I have read some of what my friends here at the blog say in their posts and am in total agreement with them that the Republicans are an offshoot of the Democrats!  We need to strengthen the Tea Party and to include more and more independents if we are to put an end to this silent coup with the face of Big BrotherPresident Obama—on the screen all the blazing time!  How many more times do we have to watch this man say, “I,” “me,” “mine,” or “myself” before we begin puking our guts?  This man has to insert himself into virtually every cause, every problem, and every single ongoing thing of the day unless, of course, it has to do with the murder of an Australian college student and baseball player, then—he’s totally silent!  Charles Lane did not deserve to be gunned down by a couple of punks, intent on killing a “peckerwood,” no, they scream and shout about how Rush Limbaugh is the man inserting RACE into the equation when in fact, it’s always the President!  Why does he not say, “if I had another son, he’d look like Charles Lane?” He does not say it because he does not give a damn, it’s that simple!—I am so frothing mad, we must do something to bring our nation to back where it was intended to be, not this socialist Marxist Saul Alinsky madness!

Okay, today, we are going to make some hotdog buns, something dear to my heart as was yesterday’s recipe for hamburgers!  Just think, you are barbequing at home celebrating a day like yesterday’s Labor Day and out comes fresh homemade buns—how awesome is that, I ask you?   Well, it is awesome, there is nothing better than a fresh bun into which, to slap your weenie, people love it, of that have little to no doubt and what’s more, they are not difficult to make so here goes:

In the days of yore, every restaurant made its own baked goods, even if it was a hole-in-the-wall or a hotdog cart and I believe that it is important to continue the tradition rather than buying stuff made by some factory in Mexico!  I realize that every restaurant or foodservice owner feels that she or he is under assault from all levels of government, i.e., taxation, but I feel much more revenue comes into the restaurant if everyone knows you bake your own breads!  A good baker can crank out more baked goods in eight hours of work than can local bakery because they make only the things you need and not stuff they want you to buy!  I love baking, restaurant baking has kept me employed for more than 40 years and I assure you that you can become your own HOTSHOT foodservice baker, thereby putting your name in lights alongside the restaurant’s name and what’s more, everyone will be beating a path to your door to try the latest thing; this could be it!

Method:

1.      Mis-en-place: have everything ready with which to work! First, select a half- or quarter- sheet pan that is either stainless steel or heavy-duty aluminum.  NEVER choose a dark pan for baking as they absorb heat rather than deflect it away from the baking items.  This causes them to become over dark, not something you want or need in a finished roll.  It is always important to keep your baking and cake pans clean and free from dark residues leftover from previous bake times.  Line it with a sheet of parchment paper, spray it with PAM Baking Spray or with some such other food release spray, and then lightly dust it with white cornmeal. 

2.      Next, we use the Brick Method for this recipe, which is presented here for your use:
THE BRICK METHOD

Professional bakeries use steam-injected ovens, which increase the “spring” of their yeast breads.  Never use this technique for quickbreads or muffins—ONLY for yeast breads. 

The term, “oven spring” is one used by bakers around the world and it means that when the risen raw dough—either loaves or rolls—is placed inside one’s preheated convection oven, it jumps the moment the fan is switched “on.” Bakeries use steam-injected convection ovens, which allow them to (1) increase the size of their yeast breads through the phenomenon of “oven spring” as well as (2) hardening the outer crusts through the injection of steam at a crucial moment at the start of the baking process. 

Normally, loaves traditionally bake in standard ovens but bakeries tend to bake both loaves and rolls in convection ovens because it increases their size once you turn the fan "on."   Bakers at home generally do not have convection ovens unless they have either a Jenn-Aire Range or restaurant equipment. However, most restaurant bakers have convection ovens but do NOT have steam-injection capacity so it is convenient for them to use the Brick Method, too, as I have done over the course of my entire career.  Therefore, if one wants to bake like a professional bakery in a bakery, they must use this method:

This is how it works: first, buy 3-4 firebricks at your local hardware store and if at home, buy a metal half hotel pan from the local restaurant supply store.  While making your bread dough, heat the bricks on the stovetop (gas is best) as well as a pot of hot water.  Then, when your yeast loaves are proofing and ALMOST ready to hit the preheated oven, approximately 5 minutes before they are due to enter it place the metal pan on the oven floor. Then, place 1-2 HOT bricks within it using heavy gloves, and then standing back so as to avoid the sudden upward-rising blast of hot steam, pour the water over the bricks. Then, slam the door shut and allow the oven to steam for at least 5 minutes.

When the proofed bread is ready to go in, place it atop the middle oven rack of the steam-injected oven and shut the door immediately.  Allow them to bathe within the steam for at least 5 minutes and if using a convection oven, throw the switch “on” after 1-2 minutes and watch the loaves or rolls JUMP UP.  After a total of five minutes, remove the pan, the bricks, and whatever—if any—water remains and continue baking until baked.

I discovered this method years ago when I first read about “oven spring” in a baker’s book from the 1950’s.  I talked to professional bread bakers outside of restaurants and they explained the process to me.  I began employing it, discovered fantastic test results, and have used it both on the job and at home for at least 25 years.  You can obtain similar results and have success with your baking by employing it, just remember to be extremely careful!]

3.      Hook up your Kitchen Aid mixer and attach the PADDLE (we will use the hook in a minute or so, so have it ready!).  Add the first NINE ingredients to the bowl and blend them well rotating the paddle implement on LOW speed.  After a minute or two, remove the PADDLE and attach the DOUGH HOOK. 

4.      Mixing on low speed, begin adding WARM water in along the edges of the bowl and as you do so, the dough will slowly begin to coalesce becoming a rotating ball of bread dough.  As you continue rotating the hook, the dough is going to pull off the hook and onto the bowl and back again.  Continue adding the water until USED UP; then, continue rotating the hook slowly. 

5.      Most of the time, the baker needs to add additional bread flour and the reason for this is because making yeast breads is unlike making quickbreads; this means that they are imprecise. The reason for this is that at different times of the year, humidity in the kitchen, kitchen temperature, and quality of the flour, it might take more flour or it might take less.  The trick is seeing when the dough is ready for work or when it is not. 

6.      Slowly rotate the hook around the bowl and as you do so—if the dough is on the sides of the bowl and back onto the hook and again off—begin adding additional bread flour in along the sides of the bowl until the dough climbs onto the hook and remains there!  Rotate the hook slowly for about a minute and if the dough remains on the hook, it is ready with which to work and if not, continue adding the flour. 

7.      When the dough tells you it’s ‘ready,’ pull it out of the bowl and onto a lightly floured work surface.  (At this point, heat the water and prepare your brick!).  Begin to knead the bread dough—quickly—as this is ROLL DOUGH, not loaf dough so it does not to be overdeveloped. 

a.      Push it out, roll it flat with a pin, then pull it over in upon itself and repeat.  Continue folding it in upon itself but do this quickly, no longer than 30-60 minutes at most.  If the dough begins to show “stretch marks” or other tears in its otherwise unblemished surface, STOP WORKING IT IMMEDIATELY!

b.      Roll it into a ball, place it into a lightly floured bowl approximately double its size, cover with a towel, and place someplace warm such as an unused oven, a high kitchen shelf, or somewhere where it is warm, and allow it to proof.  Roll doughs need to proof ONE time so prepare everything else!

8.      Preheat standard oven to 375°F or a convection oven—fan in the “on” position—to 325°F.  Place the second egg into a Cuisinart or Shortcut and quickly blend to break down all connective strands.  Pour this into a small bowl and bring out a sanitized foodservice brush.   When the oven is hot, follow the BRICK METHOD, humidify the oven as soon as you cut the rolls, and proof them for the final time.

9.      As soon as the dough doubles in size, insert your index finger into its center; if the depression remains and does not fill itself back in, the dough is ready to roll.  If it is not, recover it and return it to its proofing place so it can attain a bit more volume. 

10. As soon as the dough tells you, ‘it’s ready,’ pull it out of the bowl and onto the work surface.  Using some flour on your hands and on the board, quickly roll it out and then cut out approximately 7-8 pieces of equal size. 

11. Roll these pieces into CIGARS and then place next to one another on the prepared sheet pan.  Brush heavily with the pureed egg and return it to the warm proofing spot.  Allow the rolls to DOUBLE in size and as soon as they are, pop them into your humidified oven.  

12. Bake the rolls for 12-18 minutes or until they are even BIGGER and golden-brown.  As soon as they are, give them a feel to see if they are ‘hard’ on their bottoms, then pull them out, place atop a cooling rack, and begin basting heavily with the drawn butter.  (The reason for drawing the butter is to eliminate any unsightly blobs of milk fat so never overlook this very important step!)

13. The buns are now ready to serve with homemade hamburgers so go for it.  Slice them in half with a sharpened serrated-edged bread knife and serve with your best hamburgers! 

14. You need to wrap leftover buns individually in plastic wrap and used within 24-36 hours—after that—use them or lose them!  You can freeze them but they are never quite the same if you do that so do your utmost to avoid that step!

There is nothing better than homemade breads when it comes to serving hamburgers and hotdogs that was how we did things in the Old Days!  You will love this great recipe as it is the best of the best and most likely, something most of the younger generation of cooks and chefs have seen much less worked with over the course of their short careers!

It was still somewhat nice and the area was still the original "restaurant row" of the city.   4. 1861: During the American Civil War, Confederate forces invaded the border state of Kentucky, which had declared its neutrality in the conflict.
  5. 1939: Britain, France, Australia, and New Zealand declared war on Germany, two days after the Nazi invasion of Poland.
