Bakersfield, CA, 09-24-2013 Tuesday: My employees always ask me what to expect when everything changes on the First of October and I have little information that I can share with them other than what is already known.  Of course, we have had someone come in from Covering California, to share the information they feel is necessary to share and yet, the questions go on and on and on, never answered with 100-percent satisfaction.  I mean, I do NOT even know what to expect, all I can do is to depend upon my accountants and my attorneys to keep me posted, the one thing I do know is that I must thin the ranks of my staff and that I cannot afford to hire anyone else.  Add to that the recent signing by Governor Jerry Brown of the bill raising the minimum wage to ten bucks an hour by 2015 and everything looks dark and gloomy.  In truth, I am beginning to believe that I might have to sell my business at a loss and relocate to a business-friendly state such as Texas or Nevada.  Maybe I need to consider leaving the country if it comes to that and go somewhere else like Belize, a destination the board of directors here at the blog has already discussed.  Whatever happens, I have no problem with giving up my California residence nor do I have a problem surrendering my citizenship, it’s not worth that much anymore!

When I first saw that fast food workers were demanding a wage increase to $15 an hour here in California and across the nation, I knew things were going to change in ways no longer doable by a wide variety of America’s foodservice industry owners.  Yet, the state’s leaders in Sacramento and the nation’s in Washington, D.C., have little to no care about what we are going through, they do not care, they do not give a damn, our time is coming to an end and the socialists and their communist sympathizers are going to win.  My father was a brave man, he fought in both Korea and in Vietnam and fought to keep the nation the greatest in the land.  Look at it now, rampant Gay rights trampling the rights of schoolchildren, opening bathrooms to all sorts of perverts here in the once Golden State of California, virtually everything is standing on its head and the people of the nation and state are suffering for it.  When Barack Obama said he was going to ‘fundamentally change the nation in five days,’ boy, was he ever right!  What he has managed to accomplish in close to five-and-a-half years is utterly amazing, I certainly did not think he had the ability to do it.  Look at what the nonstop charge of “racism” can do to a nation, people will not fight back nor defend themselves because of their fear of being thought to be a ‘racist.’  What an amazing strategy!  What is amazing is that it has worked as well as it has!

All right, today, we are going to make a dressing that excessively many chefs buy through their purveyors, French Dressing.  French is a delicious, sugary, tomato-based dressing that most people love.  It is not difficult to make, virtually any chef can do it using ingredients on hand, and let’s face it, anything you make beats anything you can buy so why keep messing around?  Take back your kitchen and your business, you deserve to be a foodservice star!
(#0448-A) FRENCH DRESSING #1—INSTITUTIONAL SIZE



French dressing like oil-and-vinegar dressings are sometimes tough for pantry chefs and prepmasters to make freehand so it pays to have a number one recipe on hand.  This is a great dressing, creamy, flavorful, delicious and not that difficult to make.  I think that once you try this recipe you will rapidly see its benefits quickly, and what’s more, you will be able to dispense with buying prefabricated products and go it alone.

Yield:  about 5.5-6 gallons / Mis-en-place: 20 minutes:

Method:

1.    Mis-en-place: have everything ready with which to work!  Sanitize your Hobart mixing bowl, whip attachment, and once you have done this, combine the ingredients together rotating the implement around the bowl at low speed.  Stop and scrape the bowl down and shake the whip and begin mixing again.  Do this 2-3 times, then stop, taste the dressing and readjust the seasonings as necessary.  Chef’s Note: normally, an oil-infused or oil-based dressing does not develop total flavor until it has sat for 24 hours. 

2.      When you have mixed the dressing, pour it into sanitized five-gallon containers equipped with tight-fitting lids.  Label, date, and keep refrigerated and note that shelf life is approximately 5-7 days.  Never return leftover portions to the parent batch as that has the possibility of souring the entire batch.  Keep the dressing at or below 40°F at all times.

Most chefs will make every other dressing but will buy their French dressings from their purveyors thinking that they will never be able to make one as good as store-bought.  I beg to differ, this dressing is an old one I learned from an old chef who had fifty years in professional kitchens under his belt and one that I have now used for another 30-plus years.

Tomato-based dressings are always popular and most people love them so I think that if you make your own dressings—especially one such as this one—you will be the best chef in your area!  It is important to make everything from scratch as in that way, only can you make a name that lasts for decades and not just a few months!

Tomorrow, we begin offering another great band from the 1960’s, the Association, a band I love and one I know you will, too.  If you do not remember them, think of the hits, “And then along comes Mary,” “Windy,” and “Cherish.”  All of these songs and more made them into a major act that managed to make it from 1966 into 1981, a great accomplishment that most bands from that era never knew.  I think that if you buy every album we advertise, your music collection will be the best in town.  Imagine playing this music in the kitchen as your employees work, it will steer them away from listening to that rap-crap music all too many people love today.
