Obamacare—the End of the Nation as we know it?
Bakersfield, CA, 09-23-2013 Monday: Greetings and welcome to the best foodservice-political blog on the Internet, the place where we do our best to educate the uninformed voters and to fire them up to do something about the sad state of the world in which, they live.  It blows my mind to think about all of these young folks, scrabbling hard to find some sort of career in which, they can prosper, and yet finding nothing thanks to President Obama’s signature act, Obamacare.  As we approach the first day of the act taking place, October 01, 2013, people are finding at best they have lost their healthcare and at worst, have lost their jobs instead.  I see it all around me, people who thought they had a lifelong career suddenly discovering they do NOT.  I see people wandering aimlessly about, having lost their insurance, their livelihoods, their ability to make ends meet, all gone out the window.  Virtually everything BIG LABOR ever accomplished is going out the window like so much dust, gone into the atmosphere for good.  Times are bad, people are suffering, and yet, few are willing to pin the blame where it belongs on the back of President Barack Obama

I remember the promises the man made when he forced his healthcare act through both houses of Congress, you will be able to keep your health plan, you will be able to keep your doctor—if you like him, of course—and all sorts of other empty promises, all of which, we now know were meaningless.  We have a major huckster on our hands, a man who will smile in your face while pulling your safety net away, leaving you dangling in space.  How many people have to be hurt before we stand up and say, “enough!”  Let’s face it, we are living in a new America, not one any of us ever expected or wanted and yet, it’s here, it’s one in which, everyone who has anything in life needs to suffer punishment for having it.   For the first time in a long time, we are undergoing a period of class warfare with the top dog doing his best to keep its fires lit and burning.  As a member of the Libertarian Party of the United States, I believe in live and let live, without a great deal of government influence and now, I wonder if we are living in an era of increasing Stalinism, I hope to God we find a way to bring back the America we all knew and loved!   As the week progresses, we will discuss this topic more and more and who knows, maybe I can interest some of you in becoming Libertarians or at least looking into what it is we offer!

I have chosen the Mis-en-Place Index, the category in which, we do Prepmaster recipes, things such as salad dressings, stuff like that.  In big and busy kitchens, chefs rely on the Prepmaster to do a wide variety of different jobs, whether it is to make the basic products that the chefs transform into five-star dishes.  In fact, if we did not have the position, the pantry chef would be overburdened and would have to work overtime, something we can no longer afford to pay!   Anyhow, the first recipe of the day is an institutional-sized recipe for Bleu Cheese Dressing, something very important for professional foodservice operations.  I know that those of you who work in the world of top-rated restaurants realize the fact that it is important to have signature recipes like the President’s healthcare plan.  However, GREAT recipes are not bull-crap like the ‘Patient Protection and Affordable Care Act,” a great big lie if ever there was one.   Here is our recipe—I hope you enjoy it!
(#0434) BLEU CHEESE DRESSING #1—INSTITUTIONAL SIZE

Learning to make salad dressings is one of the passages for every young chef as working in the pantry department is a time-honored pathway to better things.  Bleu cheese dressings are standard to practically every restaurant and while lesser chefs may buy their dressings pre-made, the best make theirs from scratch.  Over the course of time, you regular guests will come to appreciate your particular style and will know that nothing else in town compares with yours, a very important thing to building customer loyalty and increasing diners through word of mouth!

Yield:  about 30 gallons / Mis-en-place: 20 minutes:

Method:

1.      Mis-en-place: have everything ready with which to work!  Thoroughly clean and sanitize your Hobart mixing bowl and WHIP attachment. 

2.  Place the mayonnaise into the bowl and add the bleu cheese to it.  Combine the mayonnaise and the cheese together rotating the whip on low speed.

3.      Now, combine the seasonings (with the exception of the parsley flakes) with the liquid ingredients in another bowl and whisk together briskly to combine and to break the flavorings down so there are NO clumps.  When you have done this, pour the mixture into the mixing bowl and again, rotating the whip on low speed, blend them well. 

4.      Stop, scrape down the sides of the bowl and the whip attachment and fold in the freshly minced parsley flakes, ones that you have rinsed and dried as best as possible.  It is important to squeeze out as much of the chlorophyll as possible so that you do NOT discolor the finished dressing but that you have the green flakes interspersed throughout it. 

5.      When the dressing is complete, taste it for flavor, and if necessary, increase the salt, pepper, and garlic so that it meets your flavor standards.  Then, pour the dressing into a sanitized bin with a tight-fitting lid or into five-gallon containers with tight-fitting lids.  Label, date, and keep refrigerated at ALL times and never return leftover portions to the parent batch, as this is the quickest way to sour the entire batch!  Shelf life for the dressing is 5-7 days so use it well within that time. 

This is the original bleu cheese dressing I learned to make back in the early 1970’s and it has fulfilled every task to which, I have assigned it.  The flavor is marvelous; people love it, as will you so keep the recipe near at hand, as you will use it repeatedly!

I think that as you rid your kitchens of premade dressings you purchase from your foodservice purveyors, you will find that making great dressing recipes will repay you with not only profits but also additional business as people discover or re-discover your business and frequent it a great deal more.  Word of mouth is essential for success and let’s face it, success in the world of Obamacare and dwindling money means you have to work that much harder unless, of course, you plan to hire nothing but illegal aliens to run your business.  What a world in which, we live!

Friends, while there may not be a whole lot of Libertarians in Congress at the present time, it does not mean we cannot begin electing them and ridding ourselves of the RINOs working in conjunction with the Democrats.  Our nation is disappearing like a drowning person beneath the waves and if we do not do something to put it back on track, the end will come with very few mourning its passing.  It should be clear to everyone that the Russian president, Vladimir Putin, has more control over what the U.S. does than our own government.  Since when did the United States allow others to tell us what to do?:  At first, Mr. Obama wanted to attack Syria, which, at the time of this writing, was crazy enough AND a departure from Libertarian ideals but it’s embarrassing to admit that the greatness of this nation no longer exists.  Great job, Democrats and Republicans, too, it is high time we elect a NEW political party to lead the nation to better times.  Elect Libertarians to blaze the way, my friends, elect Libertarians NOW!
