AFFORDABLE CARE ACT BEGINS TOMORROW:
Bakersfield, CA, 09-30-2013 Monday: Hello, and welcome to the final day of the month of September 2013, tomorrow is the beginning of the Affordable Care Act, you know, Obamacare, the end of the United States as we know it, something everyone has known was going to happen and yet, here we are.  Like the last several years leading up to the Civil War, the so-called Antebellum,’ everyone knows that Obamacare is going to lead to something worse but something no one knows how to fix or believe is going to be as bad as it’s going to be, it is like walking the ‘last mile’ before execution.  The Patient Protection and Affordable Care Act is NONE of these, insurance rates are going UP, medical costs are going higher, too, fewer and fewer healthcare providers are available, and no one is going to fix it.  At the time of this writing, we know that the leadership of the House, John Boehner, Eric Cantor, Kevin McCarthy, have passed a bill to fund the government for a short-term period but will NOT fund Obamacare.  The President makes it all about him, he personalizes it as though it is a direct assault upon him and while he proclaims he will NOT alter the law in anyway, he alters it himself by postponing some parts and setting others aside, all to benefit his union cronies.  Everyone SEES the contradictions of it all and yet no one— including the protectors of the country, the press— does anything about it at all.  This, my friends, is how free nations suddenly lose their liberties, those charged with being the watchdogs do little to nothing to help the citizens and yet throw in with those seeking to destroy the country as it stands.

  How did we get here?  Well, as a fan of the Constitution of the United States, we have to know and understand the founding documents as they detail what government can and cannot do.  When President Dwight D. Eisenhower bid the nation farewell in 1961 on his last night in power, he warned the nation to ‘beware the military-industrial complex,’ an entity unto its own and with no control.  The fact that up until the beginning of the Cold War, the United States had no formal armaments industry; but following World War II, it was too profitable NOT to continue developing the necessary weapons to destroy humanity many times over.  We must wonder which one controls the government, is it the military-industrial complex or is it the elected leaders of this nation.   We must consider what presently is ongoing in the country and the world, we have a president who the uneducated and the hopeful put in office, the so-called “president of peace,’ the Nobel Peace Prize winner who now wants to start a war with Syria over something that does not directly affect us.  He hammered his predecessor over what he had done in the way of feeding the military-industrial complex and now lo and behold, he seems to be caught up in the thing against which he so virulently fought.  My, how times have changed and look with what we now have to deal the most oppressive government ever!   I do not believe that any of us ever thought that THIS was what was going to happen, the IRS, the NSA, this is not what the founders wanted for this country nor expected.  They set it up precisely to prevent the things that now seem commonplace and every day, almost ‘ho hum,’ to be precise.

The main thing we need to discuss is the Constitution and what those opposed to it are doing to circumvent it.  This is something that we will discuss over the course of the week but the one thing I must discuss with you each day is the Bill of Rights and how this very precious document is being set aside.  It is being set aside so the new era of BIG GOVERNMENT a la the Obamaists can set our nation on a course heretofore un-traveled by OUR country but all too often by others who have gone down this road to ruin.   Most of those other nations, ones with socialist leaders or worse began the takeover by forcing healthcare onto its citizens (usually without so much as a peep because the people saw it as a ‘positive’ thing) and the outlawing of personal firearms.  Tell me, what is happening now?  Tomorrow, Obamacare begins for all and with every single gun crime, that a mentally ill individual commits the government blames the GUN and not the person holding it.  Tell me, when someone stabs someone with a knife or beats someone to death with a tire iron, do our elected leaders try with all their might to take away our rights to own knives and tire irons?  Of course, not, it does not even cross their minds although I believe in Cuba people must register their knives with the authorities lest they attempt an uprising of sorts!

Most of you know, I am a member of the Constitution Party of the United States, it is a moral choice of mine to be affiliated with this group who have NO chance of ever winning a senatorial or house seat much less the presidency of the nation.  This puts me into a difficult situation of sorts as for WHOM do I vote.  I cannot vote for a single Democrat as your grandparents’ democrat party no longer exists and if I vote for the Republicans, I am voting for moderates who stand no chance of ever winning the presidency either.  Libertarians are great but I cannot agree with some of their social issue stands so it either forces me to wait for someone like Ross Perot or Ralph Nader to come along, which does not happen very often, not even a John Anderson!  I either must vote for a spineless Republican or refrain from voting, it is like being in locked room with a snake and a bunch of rats and no way out, eventually, to stay alive, you must go with the snake by feeding it the rats one-by-one, or wait for it to bite you and end your misery.   None of these choices are good ones, to say the least.

Let’s look at the First Amendment and read what it says and then, we will begin a series no one has done in quite a while, the Coffee Shop Favorites, something I am proud to do.  The First Amendment was one of the most cherished of the Founders’ dreams, a nation in which, one could speak on whatever topic they wished without fear of going to prison for it.  Now, if you speak out against a certain political segment of this nation, they call you a ‘racist’ and use that horrible word to silence people as NO one wants to instigators to call them a ‘racist.’  I say, “SHAME on them, WOE to them, one day, they will pay the price for bringing back the specter of the nation’s racist past, something we have worked hard to overcome in the past half-century!”

 The First Amendment says, “Congress shall make no law respecting an establishment of religion, or prohibiting the free exercise thereof; or abridging the freedom of speech, or of the press; or the right of the people peacefully to assemble, and to petition the Government for a redress of grievances.” In this country, Christianity is ALWAYS under assault and the right to free speech is under assault as those who speak out against liberals, democrats, homosexuals, and other favored groups of the militant liberal-socialist agenda, they find themselves being silenced by vociferous attacks directed against them.  Was this the nation the Founders sought to create or is this one that they would no longer recognize?  We must begin standing up for our rights as granted by the Founding Documents as if we do not; we will not have them in another 20-50 years.  Now, let’s look at the Second Amendment:
Under Assault around the Clock: Christianity
The Second Amendment reads: “A well-regulated Militia, being necessary to the security of a free State, the right of the people to keep and bear Arms, shall not be infringed.” Here again, we find ourselves under constant assault, what with the federal government, state and local governments ALL hard at work to legislate our guns away from us.  Most people understand that the amendment does not grant us the right to own fully automatic weapons, grenade launchers, bazookas, and what not but we do have the right to own handguns and long guns without having government at ANY level take them away from us.  Yet, this is precisely what the Democrats do every single time there is a gun crime! It’s what I asked you earlier, do they attempt to take away our knives, our crowbars, our two-by-fours if one of them or a combination of them a criminal uses to commit a crime?  No, of course not, but let me add this: after what goes on, on a weekly basis in Chicago and without intervention by government—especially the little ballerina, Rahm Emanuel—what does it tell you about putting an end to gun violence?  It tells you that the liberals are totally fine with black-on-black violence when they should have federal marshals, the National Guard, and every other law enforcement agency patrolling the streets 24/7/365!

We will continue with more of this tomorrow but let’s veer over into the recipe portion of today, today, we are going to make a great coffee shop recipe, grilled pork chops with a delicious red onion sauce, lip-smacking good, to be precise!  I think the days of coffee shops have long since been gone due to the inundation with hundreds of fast food franchises on every single corner much like gas stations of old.  I love pork chops as do many of you and I know that once you try this amazing dish, you will be delighted with the outcome!  It is time to take back the streets against fast food invasions and to restore the coffee shop and all of the well-paying jobs they once provided!  Here we go:
(#1817) PORK CHOPS WITH RED ONION SAUCE



Chefs always seek the best ways in which, to present old favorites in new ways and this entrée represents that idea at its utmost best.  Red onions have a flavor of their own and when combined with sugar and other flavorful additions, they become the ultimate topping for a dish such as this one featuring pork chops with plenty of fat along the edges.  I think that if you give this one a shot, you will find it to be among the best pork chop dishes you have ever made in your entire life!

Method:

1.     Mis-en-place: have everything ready with which to work! Always rinse the chops under cold running water then set aside to dry.  Then, place the meat into a storage pan and douse with vegetable oil, Adolph’s meat tenderizer, cover with a tight-fitting lid or plastic wrap, and refrigerate 24-48 hours before using if you have the time.  Chef’s Note: you can use ONE 6-8 ounce pork chop in place of two should you wish to do so.

2.     Seasoned flour: Combine all ingredients together and store in an airtight jar, baggie, or whatever else and either keep at room temperature or in your freezer until needed.

3.     Stinkbug Seasoning: Combine all ingredients together in the bowl of an electric mixer and mix well. Store the finished seasoning in an airtight, DRY container.

4.     Red Onion Sauce: Mis-en-place: have everything ready with which to work! Combine the chicken stock and the orange juice and place over a medium-low flame.  You want it to be HOT when you combine it with the roux.


5.   Place the butter into a skillet and raise the flame to medium.  As it heats, add the julienned onions and the two sugars.  Begin sautéing them, taking care to stir them frequently.    

6.     As the onions begin tenderizing, add the vinegar, which leads to the mixture caramelizing.  Take care frequently to stir the mixture, as this is important, you do NOT want it to scorch or to burn in any way as this leads to a negative flavor, which the saucier cannot remove.

7.     Add the seasonings to the above mixture with the exception of the parsley flakes.  As you continue stirring, add the flour to the onions and cook the mixture until you have a semi-dark roux before you.  Raise the temperature underneath the stock-juice mixture to a boil, then begin whisking it into the roux, taking care to whisk constantly so that both parts incorporate thoroughly. 

8.     Let the sauce boil for 1-2 minutes; then, reduce the heat to bare minimum and simmer the sauce for 15-20 minutes.  Through the process of reduction, the sauce both thickens and the flavors intensify.  When time is up, check and readjust the flavor as necessary and either tighten with a bit of cornstarch or clear gel slurry or a pinch of additional dark roux.  Your sauce is now ready.

9.     Keep the sauce warm on your steam table or close to the burners for immediate use; otherwise, if you plan to use it later, transfer it into a pan placed atop a cooling rack and allow it cool.  When completely cool, pour the sauce into a sanitized airtight container equipped with a tight-fitting lid.  Label, date, and refrigerate but use within 1-2 days. 

10. Uses:  red onion sauce is for use on poultry, seafood, pork, or game animals.  Use it singly or in conjunction with other sauces.

11. The Pork Chops: preheat standard oven to 350°F and place 2-3 heavy-duty sauté pans over medium-low heat.  Dust the pork chops in the seasoned flour, shaking off the excess, then set aside on a couple of plates or pie pans.  When warm to the touch, spray with Crisco Pan Release food spray then pour in a layer of vegetable oil and allow it to heat.  When hot, add the floured pork chops and sprinkle with a liberal dose of the Stinkbug seasoning. 

12. Cook the chops slowly, allowing them to brown on one side before flipping them over.  Do your best to crisp the fat, as the fat is what gives the ultimate flavor to the meat, a very important thing so NEVER overlook it.  When you have browned both sides, transfer the chops to a sheet pan and place inside the oven on the middle oven rack. 

13. Bake the chops for about 10-15 minutes allowing them to tenderize.  When the chops are tender to the touch, pull them out of the oven and begin setting the plates.  If using TWO chops, layer them off one another and if one, place it at the front third of the plate.  Place the vegetables at the 10 o’clock position and the vegetables at the 2 o’clock position.  Ladle the red onion sauce over the meat and then dust with parsley flakes, paprika, and place the sprig of parsley in the center of the plate.  The pork chops are now ready for immediate service!

14. Should you have leftover pork chops, separate the meat from the sauce reserving the former while disposing of the latter.  Use the meat in a secondary dish such as stir-fries or something along those lines but never as a pork chop entrée again.  Always keep leftovers wrapped up in plastic wrap and if not used within 24 hours, seal airtight in Ziploc bags, label, date, and freeze.  Use within seven days but after that, toss them out and start anew.

Coffee shops have progressed over the years (or at least the ones that remain have) and a wider variety of entrees are available.  Pan-fried pork chops with red onion sauce is definitely a crowd-pleaser so keep this recipe handy, you will be using it repeatedly!

You know, small businesses that employed hundreds of thousands of American workers is one of the things that made America what it once was, a bastion of full employment and opportunity.  Now, as liberalism has forced numerous coffee shops to shut down or compete with the chain restaurant model, American jobs have fallen by the wayside as illegal aliens take them over one-by-one.  I think that the most important thing we can do is to reclaim our nation and to re-instill the work ethic into the younger members of our society, the so-called ‘Millennials.”  These kids have nothing upon which, to base their lives other than substance abuse, fast-living, indiscriminate sex, and other immoral practices that cause the nation to descend into disease, decay, and eventually ruin.  This is what the liberals want in this nation, they want to RULE but do not care what it is they eventually rule.  They would rather control a ruined economy, a listless society, a culture of violence; they do not care, just so long as they are the ones ruling it.  If they did care, President Obama and his cohorts would be in the city of Chicago setting it right rather than allowing it to descend into Third World anarchy!

GREATEST HITS
I am so happy to be back this year, my last go-round for this year but we still have six days to go so let’s enjoy them!  Recently, I came to Bakersfield ahead of time so we could see REO Speedwagon at the Kern County Fair and the Starship among others.  We also went to the historic Fox Theater where we saw an amazing show on a Saturday night, Kenny Loggins!  I must say, that was one of the best live shows I have seen in ages, Kenny is still the same and delivers the hits with the gusto of a man in his twenties!  However, as with the rest of our generation, being 20-years-old was a long time ago but what the hell right?  Anyhow, I hope you have enjoyed yourself today and I urge you to send us your friends, family, neighbors, coworkers and anyone else you know because this week is a very important week to be sure!  We will cover as many of the amendments as possible and eventually will publish a separate page with the entire U.S. Constitution on it!  One more thing before I conclude today’s blog is that the entire text of Dwight D. My fellow Americans:

Three days from now, after half a century in the service of our country, I shall lay down the responsibilities of office as, in traditional and solemn ceremony; the authority of the Presidency is vested in my successor.

This evening I come to you with a message of leave-taking and farewell, and to share a few final thoughts with you, my countrymen.

Like every other citizen, I wish the new President, and all who will labor with him, Godspeed. I pray that the coming years will be blessed with peace and prosperity for all.

Our people expect their President and the Congress to find essential agreement on issues of great moment, the wise resolution of which will better shape the future of the Nation.

My own relations with the Congress, which began on a remote and tenuous basis when, long ago, a member of the Senate appointed me to West Point, have since ranged to the intimate during the war and immediate post-war period, and, finally, to the mutually interdependent during these past eight years.

In this final relationship, the Congress and the Administration have, on most vital issues, cooperated well; to serve the national good rather than mere partisanship, and so have assured that the business of the Nation should go forward. So, my official relationship with the Congress ends in a feeling, on my part, of gratitude that we have been able to do so much together.

II.
We now stand ten years past the midpoint of a century that has witnessed four major wars among great nations. Three of these involved our own country. Despite these holocausts, America is today the strongest, the most influential and most productive nation in the world. Understandably proud of this pre-eminence, we yet realize that America's leadership and prestige depend, not merely upon our unmatched material progress, riches and military strength, but on how we use our power in the interests of world peace and human betterment.

III.
Throughout America's adventure in free government, our basic purposes have been to keep the peace; to foster progress in human achievement, and to enhance liberty, dignity and integrity among people and among nations. To strive for less would be unworthy of a free and religious people. Any failure traceable to arrogance or our lack of comprehension or readiness to sacrifice would inflict upon us grievous hurt both at home and abroad.

Progress toward these noble goals is persistently threatened by the conflict now engulfing the world. It commands our whole attention, absorbs our very beings. We face a hostile ideology -- global in scope, atheistic in character, ruthless in purpose, and insidious in method. Unhappily, the danger is poses promises to be of indefinite duration. To meet it successfully, there is called for, not so much the emotional and transitory sacrifices of crisis, but rather those, which enable us to carry forward steadily, surely, and without complaint the burdens of a prolonged and complex struggle -- with liberty the stake. Only thus shall we remain, despite every provocation, on our charted course toward permanent peace and human betterment.

Crises there will continue to be. In meeting them, whether foreign or domestic, great or small, there is a recurring temptation to feel that some spectacular and costly action could become the miraculous solution to all current difficulties. A huge increase in newer elements of our defense; development of unrealistic programs to cure every ill in agriculture; a dramatic expansion in basic and applied research -- these and many other possibilities, each possibly promising in itself, may be suggested as the only way to the road we wish to travel.

But each proposal must be weighed in the light of a broader consideration: the need to maintain balance in and among national programs -- balance between the private and the public economy, balance between cost and hoped for advantage -- balance between the clearly necessary and the comfortably desirable; balance between our essential requirements as a nation and the duties imposed by the nation upon the individual; balance between actions of the moment and the national welfare of the future. Good judgment seeks balance and progress; lack of it eventually finds imbalance and frustration.

The record of many decades stands as proof that our people and their government have, in the main, understood these truths and have responded to them well, in the face of stress and threat. But threats, new in kind or degree, constantly arise. I mention two only.

IV.
A vital element in keeping the peace is our military establishment. Our arms must be mighty, ready for instant action, so that no potential aggressor may be tempted to risk his own destruction.

Our military organization today bears little relation to that known by any of my predecessors in peacetime, or indeed by the fighting men of World War II or Korea.

Until the latest of our world conflicts, the United States had no armaments industry. American makers of plowshares could, with time and as required, make swords as well. But now we can no longer risk emergency improvisation of national defense; we have been compelled to create a permanent armaments industry of vast proportions. Added to this, three and a half million men and women are directly engaged in the defense establishment. We annually spend on military security more than the net income of all United States corporations.

This conjunction of an immense military establishment and a large arms industry is new in the American experience. The total influence -- economic, political, even spiritual -- is felt in every city, every State house, every office of the Federal government. We recognize the imperative need for this development. Yet we must not fail to comprehend its grave implications. Our toil, resources and livelihood are all involved; so is the very structure of our society.

In the councils of government, we must guard against the acquisition of unwarranted influence, whether sought or unsought, by the military-industrial complex. The potential for the disastrous rise of misplaced power exists and will persist.

We must never let the weight of this combination endanger our liberties or democratic processes. We should take nothing for granted. Only an alert and knowledgeable citizenry can compel the proper meshing of the huge industrial and military machinery of defense with our peaceful methods and goals, so that security and liberty may prosper together.

Akin to, and largely responsible for the sweeping changes in our industrial-military posture, has been the technological revolution during recent decades.

In this revolution, research has become central; it also becomes more formalized, complex, and costly. A steadily increasing share is conducted for, by, or at the direction of, the Federal government.

Today, the solitary inventor, tinkering in his shop, has been overshadowed by task forces of scientists in laboratories and testing fields. In the same fashion, the free university, historically the fountainhead of free ideas and scientific discovery has experienced a revolution in the conduct of research. Partly because of the huge costs involved, a government contract becomes virtually a substitute for intellectual curiosity. For every old blackboard, there are now hundreds of new electronic computers.

The prospect of domination of the nation's scholars by Federal employment, project allocations, and the power of money is ever present and is gravely to be regarded.

Yet, in holding scientific research and discovery in respect, as we should, we must also be alert to the equal and opposite danger that public policy could itself become the captive of a scientific technological elite.

It is the task of statesmanship to mold, to balance, and to integrate these and other forces, new and old, within the principles of our democratic system -- ever aiming toward the supreme goals of our free society.

V.
Another factor in maintaining balance involves the element of time. As we peer into society's future, we -- you and I, and our government -- must avoid the impulse to live only for today, plundering, for our own ease and convenience, the precious resources of tomorrow. We cannot mortgage the material assets of our grandchildren without risking the loss also of their political and spiritual heritage. We want democracy to survive for all generations to come, not to become the insolvent phantom of tomorrow.

VI.

Down the long lane of the history, yet to be written America knows that this world of ours, ever growing smaller, must avoid becoming a community of dreadful fear and hate, and be instead, a proud confederation of mutual trust and respect.

Such a confederation must be one of equals. The weakest must come to the conference table with the same confidence as do we, protected as we are by our moral, economic, and military strength. That table, though scarred by many past frustrations, cannot be abandoned for the certain agony of the battlefield.

Disarmament, with mutual honor and confidence, is a continuing imperative. Together we must learn how to compose differences, not with arms, but with intellect and decent purpose. Because this need is so sharp and apparent I confess that, I lay down my official responsibilities in this field with a definite sense of disappointment. As one who has witnessed the horror and the lingering sadness of war -- as one who knows that another war could utterly destroy this civilization which has been so slowly and painfully built over thousands of years -- I wish I could say tonight that a lasting peace is in sight.

Happily, I can say that war has been avoided. Steady progress toward our ultimate goal has been made. But, so much remains to be done. As a private citizen, I shall never cease to do what little I can to help the world advance along that road.

VII.
So -- in this my last good night to you as your President -- I thank you for the many opportunities you have given me for public service in war and peace. I trust that in that service you find some things worthy; as for the rest of it, I know you will find ways to improve performance in the future.

You and I -- my fellow citizens -- need to be strong in our faith that all nations, under God, will reach the goal of peace with justice. May we be ever unswerving in devotion to principle, confident but humble with power, diligent in pursuit of the Nation's great goals.

To all the peoples of the world, I once more give expression to America's prayerful and continuing aspiration:

We pray that peoples of all faiths, all races, all nations, may have their great human needs satisfied; that those now denied opportunity shall come to enjoy it to the full; that all who yearn for freedom may experience its spiritual blessings; that those who have freedom will understand, also, its heavy responsibilities; that all who are insensitive to the needs of others will learn charity; that the scourges of poverty, disease and ignorance will be made to disappear from the earth, and that, in the goodness of time, all peoples will come to live together in a peace guaranteed by the binding force of mutual respect and love.
