Bakersfield, CA, 09-22-2013 Sunday: Welcome to the final day of the week for me and all I can say is that I am glad!  I heard last week, Rush Limbaugh mentioned it on the radio on Thursday, September 12, 2013, that the Department of Housing and Urban Development is seeking to overturn ALL zoning laws in suburbia across the nation so builders of low-cost apartments can slap a housing project in the middle of a middle-income or upper-income neighborhood.  The goal is to continue what they started with bussing so many years ago (something that did not work very well at the time either!) in that they want to make it possible for people of ALL levels to live and work with one another no matter their economic level.  This means that say, an integrated upper-middle-class neighborhood might have a bunch of low-income gangsters or Barrio members living next door to them and instead of bringing the neighborhood UP, it will bring everything down along with the property values.  In addition, the only thing that will go up is the level of crime and racial animus as peoples from different groups, levels of income, and a whole host of other factors that make people different from one another find themselves suddenly put next door to one another.  This is diabolical on the parts of the Democrats and yet, this is precisely what these social engineers want to do, for one thing, they hate the suburbs because they see SOME people escaping while those who can’t live in continually disintegrating circumstances.

Therefore, if the Democrats somehow manage to retake the House and to keep the Senate next year, then you can expect that for the following two years, they will go gung ho down this road in their attempts to force people to live with one another.  Now, please don’t get me wrong, I am not saying that we need to be segregated or that people CAN’T live with one another but generally, neighborhood and property values are determined by circumstances in which, the people living there maintain their homes to the same degree and foster a sense of community spirit.  Now, if you slap a housing project smack dab down in the center of the neighborhood and bring in the crack heads, dope whores, lowlife thugs and street criminals, what do you think is going to happen?  There’s going to be violence, there’s going to be mayhem, there’s going to be assaults, car thefts, it is going to be crazy.  People will turn on one another and this is precisely what the Democrats and liberals want, they want to do as much damage as they possibly can to this nation before it finally wakes up and throws them out of office for decades!  What is it that so many people seem to be oblivious to and lack concern, what will it take to wake them up and get them onboard with us!  WHAT IS WRONG WITH THE PEOPLE OF THIS COUNTRY, ARE YOU SO APATHETIC THAT YOU WILL ALLOW BARACK OBAMA TO TRANSFORM THIS COUNTRY FOR GOOD?  It makes me sick to watch the ongoing break down and dissolution of this country by people who hate it and do not appreciate all of the great things it has done not only for its citizens but also for the rest of the world?  Why does Barack Obama hate this country so much, what is his anger and animus for people with hard-earned wealth, why does he hate these things so much?

Other things of note are the slap down of Los Angeles state senator Ricardo Lara authored a bill that the California State Assembly voted down that would remove tax-exempt status from the Boy Scouts of America in California because they will NOT allow Gay and Lesbian people to be leaders.  Here again, we had an attempt by the militant homosexual agenda that is determined to shove their perversity down our throats one way or the other and like some of my fellow bloggers who have preceded me, I say, “Enough is enough, the time to fight back is now and we must win this fight!”  It has taken a long time for the people of this state to wake up and smell the poisoned coffee on the stove, I am sick and tired of the LGBT community doing everything they can to force this horrifying lifestyle onto us!  At some point, the people of the state and the nation need to begin to fight back instead of being apathetic and accepting all of this crap!  These outrages, one after the other, are going to ruin this country unless we find some way in which, we can ignite the fires of freedom burning inside us all.  Virtually every Christian, every Jew, every Muslim, every religion that promotes the good of every human being should be up in arms against these fricking Democrats, people who are intent on stuffing their filth into every person in this nation.  Long live the Boy Scouts of the United States, long live the Future Farmers of America, every organization that supports American values is under assault!   We need to send a message to Barack Obama that we are no longer going to accept this attack upon the ways of this country and by the way, Mr. President, where were you for seven hours on the night of September 11, 2012, when Benghazi, Libya, was burning and our people called for help?  Were you hanging out with Reggie Love, you seem to be a guy who likes hanging out in the company of other guys, even Michelle said not long ago, that she felt like a “single mother!”

All right, it’s Sunday, let’s get to the final recipe of the week and we will then stop for the day.  We have worked with many melon recipes this week and here is a recipe for my Watermelon Quickbread, a recipe I am working on and still am perfecting.  This is a tough thing with which, to work, watermelon has a deceptive flavor, it’s not overpowering and yet, it’s still a flavor that deserves its own due.  The trick is, pureeing it and removing any seeds, then using the liquid in place of other items like dairy products.  I think that once you buy the Torani’s watermelon syrup along with many of their other offerings as well as Amoretti’s products, you will see a brand-new vista of possibilities, which will make your cooking that much better!
(#1813) WATERMELON QUICKBREAD

Who would ever think that one could make a quickbread out of a watermelon and yet, like watermelon muffins, it can be done, it just requires some patience and determination on the part of the baker.  Watermelon is a funny thing, it is mostly water and you notice that fairly quickly once you puree a good-sized piece of it.  After about 15-20 minutes, you see a large amount of clear liquid above a smaller sized amount of watermelon puree.  The way we obtain this is by putting it atop the stove and allowing the liquid to reduce until it’s thick and then, we harvest that amount and use it as our flavoring base!   Once you try this awesome bread, you, too, will become a lifelong believer!

Method:

1.      Mis-en-place: have everything ready with which to work! Prepare the watermelon first by selecting about a pound or a little bit more, removing as many seeds as possible as pureeing it in your Cuisinart.  Do NOT worry about any remaining seeds, normally, they do not grind up and you can easily remove them.  When the mixture is liquefied, force it through a fine-meshed sieve into a saucepot.  Place the pot atop the stove over a medium flame.  When it comes to a high simmer, reduce the heat and reduce the liquid to about ONE cup. Chef’s Note: when you first see the watermelon puree, you see a homogenous red liquid.  However, if you allow it to sit for 30 minutes or so, you will see water at the top and a red residue on the bottom—this is what we want: the pure flavor. 

2.      As soon as you have a cup of puree, pull the mixture from the stove and pour it into a pie pan, which you then place inside your refrigerator to chill. Next, double-sift the DRY ingredients together and then stir in the zest and the nuts if you use them. Set this mixture aside for the moment. 

3.      Next, hook up your Kitchen Aid or Hobart mixer and attach the PADDLE attachment.  Add the eggs and the sugar and beat until light and foamy; then, add the vegetable oil and beat the mixture until you CREAM it.  Add the remaining ingredients and blend well. 

4.      Now, fold the DRY into the WET using the least amount of low speed mixer rotations as possible to blend the two together.  The idea here is that want to moisten the DRY with the WET but NOT to overmix them as this overdevelops the all—purpose flour’s gluten, thereby toughening the finished product’s texture. 

5.      When the batter is as it should be, stop, scrape down the sides of the bowl and the paddle and rotate the paddle 1-2 more times around the bowl and then stop; remove the paddle, cover the bowl with plastic wrap, and refrigerate for at least TWO hours or better yet: overnight. 

6.      The next day, spray a reflective loaf pan with PAM Baking Spray or line a darker metal bake pan with aluminum foil.  Spray the foil, then line it with wax paper and spray the paper heavily with food release spray.  Stir the batter then scoop it into the prepared loaf pan and rest it for a short while.

7.      Heat your standard oven to 325°F or a convection oven to 275°F.  As soon as the oven is ready, place the loaf pan onto the middle oven rack and if using the convection oven, flip the switch to “ON” now. Bake the loaf for approximately 1 hour, 50 minutes, and then check it for doneness by inserting a paring knife directly into its center.  If it withdraws clean, the loaf is done and if not, continue baking until it is done.   When it is, pull it out, place the loaf atop a cooling rack, baste it with melted butter, and allow it to rest for about 3-4 minutes; then, gently rap the loaf pan to loosen it and remove it, placing it atop the cooling rack.

8.      While the loaf pan rests, prepare the glaze ingredients by combining them together using the mixing bowl and the WHIP attachment.  Add just enough hot water to form a thick glaze.  Then, pour this glaze over the loaf and allow it to firm up or cut the loaf after it rests for at least an hour, slice it, then glaze each slice. The quickbread is now ready to serve.  Serve the slices atop a doily-lined serving tray and accompany with whipped honey butter.  Alternatively, you can serve the slices to order, but however you do it, serve them with the class they deserve!

9.      Wrap leftover slices in plastic wrap and then seal airtight in Ziploc freezer bags.  Store in the freezer but be sure to use them within 3-7 days at most. After that, use them or lose them!

Watermelon is one of those things NO one but the wisest bakers associate with either quickbreads or muffins but let’s face it, if you work in a professional environment, there are times when you have a glut of old watermelons that need to be used lest you throw away good money!  That is precisely what muffins and quickbreads are for, they are meant to serve as vehicles for stuff you need to use and this is precisely how this quickbread came about, I needed to use up old watermelons.  However, the end result is excellent and that is good to know because it makes it all worthwhile, which you will soon discover yourself!

We have had a lot of fun today, what’s more, I must say that September has been a great month here as the Kern County Fair is going on and this year, we have seen Uncle Kracker, Starship, Los Lobos, the Four Tops, Hollywood Stones, REO Speedwagon!  Then at the Fox Theater in downtown Bakersfield, we have seen Kenny Loggins, how much more fun can you have than that?  Bakersfield is coming back to life, we have had so many great shows here this year that every night, I drive over from Taft, thirty-five miles to the west of the city heading towards Santa Barbara and Ventura Counties, so we can hit the Fair during the time it’s here.  I wish we could go over to Paso Robles much more often as virtually every band you think of, from Yes to ZZ Top have been there this summer.  We have lovely summers when it comes to music here in California and maybe one day, you can visit us and take in the sights! Until then, have a great time and I will see you all next year when we fight to reclaim the Senate and to send Harry “the Smuck” Reid packing!

  1. 1776: during the Revolutionary War, the British in New York hanged Captain Nathan Hale, 21, for being a spy.
  2. 1862: President Abraham Lincoln issued the preliminary Emancipation Proclamation declaring that ALL slaves held in rebel states should be free as of January 01, 1863.
  3. 1911: Pitcher Cy Young, 44, gained his 511th and final career win as he hurled a 1-0 shutout for the Boston Rustlers against the Pittsburgh Pirates at Forbes Field.
  4. 1922: Congress passed and President Warren G. Harding signed the Cable Act, which allowed an American woman to retain her U.S. citizenship following marriage to a foreigner, provided the husband proved eligible for American citizenship.
  5. 1927: Gene Tunney successfully defended his heavyweight boxing championship in the famous “Long Count” fight in Chicago, Illinois.
  6. 1938: The musical comedy “Hellzapoppin’” starring Ole Johnson and Chic Johnson began a three-year run on Broadway.
  7. 1961: The Interstate Commerce Commission issued rules prohibiting racial discrimination on interstate busses.  Actress Marion Davies died in Los Angeles, California, at age 64.
  8. 1963: The musical “Fiddler on the Roof” opened on Broadway beginning a run of 3,242 performances.
  9. 1975: Sarah Jane Moore attempted to shoot President Gerald R. Ford outside a San Francisco hotel but missed.  She ended up serving 32 years in prison before being paroled on December 31, 2007.
  10. 1980: The Persian Gulf war between Iran and Iraq erupted into full-scale war that lasted nearly eight years.
