Honeydew Muffins
Bakersfield, CA, 09-20-2013 Friday: Greetings and welcome to the Friday edition of the American Institute of Culinary Politics-Elemental News of the Day, the place where the obscure becomes obvious, the obtuse becomes intelligent, and where the difficult becomes simple all just for you and no one else!  You see, this is the place where we come together and share ideas, discuss the topics of the day, and where we try to enlighten one another without insulting anyone (except for brain-dead liberals when I am here!) and carry on the longstanding tradition of spreading culinary expertise to everyone in need of it!  The problem in this nation is the number of ignorant, low-skilled, unmotivated, and slow-minded numbskulls who vote for Democrats repeatedly and NEVER fail to see the fact that they get NOTHING in return for it!  Yet, they go after and blame those whom their leaders tell them is responsible for their woes without ever asking WHY these people are responsible.  They do it just because their brains do not ask the pertinent and important questions and this, America, is what many of our young people are like, they are fellow travelers on the road to idiocy and eventually, will run this nation and determine its future!  What a dreadful nightmare with which to deal, this is a horrifying glimpse of what’s to come, if we do nothing about it, you know, maybe take back the educational system of the United States, we may enter a new dark ages of sorts!   
Honeydew Melons
My kids have worked with me from the time they were able to walk and to peel carrots, approximately from the ages of five onward.  I did my best to bring them into the kitchen and to work with my kitchen crews and me.  That is one of the things about having family owned and operated businesses, I’m the boss in conjunction with my different husbands and could make rules as they suited me.  On the occasions when I have run a kitchen for someone else, I did everything I could when my kids made it into their teens to bring them in on special functions and have the floor staff teach them how to wait tables and to do it well.  As time went by, all four of my kids worked in virtually every position, three girls and one boy learned everything they could on top of learning the value of money.  This is the obligation we have to our children and I think it’s becoming a lost cause for many families because let’s face it: without good job opportunities and especially, with lack of entry level positions, almost all of our kids today have very little opportunity available to them.  It horrifies me to see the loss of jobs on a scale almost no one alive has ever seen and yet, we have an administration that seems to feel it’s doing a great job by the American people!  I hope to God that in next year’s mid-term elections that we are able to boot out all of these worthless congressmen-and-women around the country but especially so here at home in California.  The Golden State is not so golden and it’s killing everyone I know as well as my own family, this used to be the Number One state in this country and now, I fear, it hovers somewhere near the bottom.

One thing that is definitely hard is the fact that Sacramento cares little about the valley and the agricultural and oil industries loss of production.  I used to think it was mismanagement in the state’s capital when it came to the water problems we suffer whereas now, I think they are determined to drive agriculture completely out of the state.  The water policies Governor Jerry Brown promotes see more water flowing out into the Pacific Ocean rather than heading down the valley to irrigate the valley’s diminishing farms.  At some point, every last farmer is going to sell his or her properties so real estate speculators can build houses, condominiums, apartment units, and strip malls.  It is horrifying the amount of second-class produce coming north into the state from Mexico and the flood of illegal aliens that accompany it.  You would think that with the loss of farms that the illegal immigrants would stop coming and remain in Mexico but no!  The Obama Administration advertises food stamps in Third World countries south of the border, drawing still more undocumented people into the state and the nation.  2014 is the final time I think any of us will ever have and if we do not put a stop to this madness, I hope that the valley and the northern counties will secede from the state and form their own new states.  Otherwise, the exodus of people heading out of California to other places where they are wanted will continue unabated leaving the state to the environmentalist democratic power structure with its armies of non-eco-friendly illegal aliens.  What a waste!
The Flag of Mexico
Today, we are going to continue making some more muffins with today’s recipe being a great recipe for Honeydew Muffins! Like yesterday’s cantaloupe, honeydew has its own sweet flavor, one that is much milder than other melons and yet, we also have amazing ingredients with which, to make it better such as Amoretti’s honeydew syrup.  You see, these amazing syrups—as well as Torani’s products—ones traditionally used to make mixed drinks also do wonders for bakery products.  When it comes to making glazes with which, we decorate not only our muffins and quickbreads but also flavor frostings and sauces, nothing is better than either of these fine products!  The thing about them that is so beneficial to bakers and chefs is that you can find them at many stores AND online at Amazon.com, the world’s largest online department store!  You see, if you can’t find something at your local Smart and Final, you can find it online at Amazon that is where REAL chefs go for their top-notch products!  
(#1808) HONEYDEW MUFFINS

Honeydew—like cantaloupe and other melons—are much under-represented when it comes to making muffins and quickbreads, which is truly tragic!  I love working with melons when it comes to baking just because of this under-representation and unbelievably, people go bonkers over them when they have a chance to try them!  This muffin recipe is amazingly delicious, virtually everyone I know loves them and what with the addition of flavorings available from both Torani’s and Amoretti’s, no one can compete with the things I know how to bake!  I urge you to try this amazing recipe and once you do, you, too, will become a proponent of making quickbreads with every type of melon you can find!

Method:

1.     Mis-en-place: have everything ready with which to work! Place a pot of water atop the stove and bring it to a boil.  Once it is, drop the first measure of fine-diced Honeydew into it and keep there for 45-60 seconds at most; then, drain and reserve the liquid and rinse the fruit with cold water; set aside.

2.      Next, take the second measure of Honeydew and chop it roughly after which, you place it into your Cuisinart.  Using the BLADE attachment, turn it into a mushy liquid and as you do, run the milk through the stack so the fruit liquefies.  As soon as you have done this, stop the process and scrape it into a dish for holding. 

3.      Double-sift the first SEVEN ingredients listed under the DRY MIX then stir in the zest, Honeydew, and if using, the nuts. 

4.      Now, set up your Kitchen Aid tabletop mixer and attach the PADDLE attachment.  Add the egg and begin beating it at medium-high speed until its light.  Add then the sugar and beat the two until light and fluffy.  Finally, pour in the oil and continue the beating process until you CREAM the mixture.  Add the Honeydew-milk puree and the flavorings, mixing well.  Scrape down the sides of the bowl and paddle then fold the DRY ingredients into the WET using the least amount of low speed rotations necessary to do so.

5.      Scrape the sides of the bowl and the paddle once again, and then scrape the batter out into a storage bowl.  Stir shortly with a service spoon so whatever was on the bottom is now intermixed within the batter.  Cover the batter with plastic wrap and refrigerate overnight. 

6.      The next day, pull the muffin batter out of the refrigerator approximately 30 minutes prior to baking.  Preheat standard oven to 375°F or a convection oven to 325°F.  Spray a reflective bakeware muffin pan that is either stainless steel or heavy-duty aluminum but NEVER use a dark bakeware pan as if you do, the finished product is going to suffer because of it.  Reflective bakeware deflects heat away from the baked good rather than pulling it in, something that either makes or breaks a recipe.  Spray the cups heavily, then line with paper or aluminum liners, then spray BOTH the liners and the tops of the pan heavily with food release spray, too, in order to make the de-panning of the muffins easier.

7.      When time is up, stir the batter with a serving spoon; then, using an ice cream scoop, fill the cups up to their rims.  Shake the pan(s)—GENTLY!—to settle the batter, then place the pan(s) on the middle oven rack(s) and bake for 22-24 minutes but NO longer!

8.      As soon as the muffins feel firm to the touch and a paring knife inserted into the center of the middle row(s) of muffins comes out clean, pull them out, place them atop a cooling rack, and cool for ONE minute.  After that, gently rap the pan to loosen the muffins, pull them out and place directly atop the cooling rack with a drip pan underneath them. 

9.      Combine the final ingredients using your electric mixer and the WHIP attachment to form a sugary glaze.   Then, using the whip or a ladle, loop the glaze over the warm muffins until you have coated each of them with a velvety layer of delicious glaze. 

10. The muffins are now ready to serve so either place them atop a doily-lined serving tray for service at your luncheon or brunch buffet or serve them individually on doily-lined bread-and-butter plates.  As for leftovers, individually wrap them in plastic wrap, then zip up tight in Zip-lock freezer bags, label, date, and FREEZE, never refrigerate, as the latter tends to dry them out while the former preserves them.  They remain in good shape in your freezer for about 5-7 days but after that, use them or lose them!

Melon muffins are the new frontier as most bakers never ever think they can make something wonderful using melons.  However, I beg to differ with that school of thought because we have so many different melons, each imbued with its own unique qualities that NOT to use them—especially if one has a glut of overripe fruit!—smacks of insanity!  These muffins are absolutely wonderful, almost like cupcakes that I urge everyone to set their prejudices aside and give ‘em a try!
Mississippi Governor Ross R. Barnett: DEMOCRAT!

Today in history, if you look at our new historical section of the blog, you will see something that today’s Democrats would love to say never happened or better, blame on the Republicans!  However, those dirty dogs simply cannot do it but back in 1962, the governor of Mississippi, Ross R. Barnett—A DEMOCRAT!—would not let James Meredith—a black student!—onto the campus of the University of Mississippi!  These are things many Southern Democrats did many a time and it took a concerted effort of the Federal Government to put an end to the Jim Crow insanity that ruled the region for decades!  Yet, if you listen to today’s Democrats, it’s the Republicans who are the racists and who always have been and yet, yet, it’s the Democrats who authored and enforced the Jim Crow laws and segregation!  This is why our nation suffers, dear readers, you see, the liberals who control education have indoctrinated the young into believing whatever they want them to believe and namely, they believe that the Republicans hate women, blacks, Hispanics, Gays, foreigners, and a whole bunch of other groups and sub-groups when it’s the other way around.  While we may not be happy with Tom Ammiano’s law regarding cross-dressers using their opposite’s bathrooms, we do not hate Gays and to tell you the truth, I do not give a damn whether they can marry or cannot, it’s the least of my worries.   I may not agree with it no more than I agree with Roe v. Wade but let’s face it, it’s the law of the land so there is nothing to say about it.  I just don’t want them going after my kids, that’s all, keep your sexuality to yourself like I keep mine to me!

  Back to the racism of the Democrats, I truly believe that the Dems are bigger racists than the Republicans have ever been because they are the ONES who compartmentalize everyone, you know, put everyone into a box and then try to combine them all together.  I would like to ask my black American friends, WHAT has the Democrat Party done for you lately other than to keep you down and out-of-work, taking you for granted, while your leaders line their own pockets?  I cannot see a single thing they have done for you and yet, you keep voting Democrat because your daddy voted Democrat and his daddy voted Democrat but at one time, you were ALL Republicans!  Let me ask you this: you have had a black president for the past five years and what has he done for YOU?  I would suggest NOTHING but keep you riled up, on edge, angry as can be, and without a legal outlet for it.   Look back to when Ronald Reagan was president, I think MORE blacks were employed in good jobs than ever before and you know what? It can happen again!

  1. 1519: Portuguese explorer Ferdinand Magellan and his crew set out from Spain on five ships to find a western passage to the Spice Islands; however, Magellan was killed on route but one of his ships eventually sailed around the globe.  
  2. 1884: The National Equal Rights Party was formed in San Francisco, California; the convention nominated Belva Ann Bennett Lockwood for president.
  3. 1911: The British liner RMS Olympic collided with the Royal Navy cruiser HMS Hawke off the Isle of Wight; although severely damaged, the Olympic was able to return to Southampton under its own power.
  4. 1958: Martin Luther King was seriously wounded during an book signing at a New York City department store when Izola Curry stabbed him in the chest; Curry was later found incompetent to stand trial.
  5. 1962: Democrat governor Ross R. Barnett blocked James Meredith, a black student, from enrolling at the University of Mississippi; however, Meredith was allowed to enroll later.
