Bakersfield, CA, 08-25-2013 Sunday: Hmm, the more I hear, the more I see that people are not very happy with the governor of California, Jerry Brown, signing the so-called “Bathroom Bill,” or Assembly Bill 1266.  I think that maybe I spoke too soon, at first; I was listening to the talk saying that this bill defends the rights of Gay and transgender students who would otherwise be easy targets for bullies and other thuggish gangbanging kids.  After listening to the Jaz McKay radio show on KNZR in Bakersfield, California, another thing I thought had nothing to offer, I must say that I was wrong in what I said.  I think that if this bill is as bad as they say it is, then it is one that needs to be knocked down by the state’s Supreme Court as soon as possible because the school year begins on the 19th of this month!

Now, the last thing I want to be is to be labeled a “hater” because I am pro-LGBT issues and do believe that the time has come in which, all of America and in turn, the rest of the world, has to right the wrongs of the past and to embrace those who are not like us sexually with love!  I realize that to many people, this is an anathema and as one who was raised within the confines of the Catholic Church, I have had some issues within myself that I have managed to address.  However, knowing boys like I do, I suspect that virtually every masculine boy is going to claim to be ‘Gay” and is going to run into the bathrooms of the girls and most likely, terrorize the girls!  If the authorities within the school do not keep track of this and put some sort of restrictions upon it, we are in effect harming the other side of the sexual equation by putting girls at risk of voyeurism, intimidation, and quite possibly sexual assault.  Many girls have never seen a naked boy and suddenly to be forced to be with them in the same locker room, to shower with them, and to dress and to undress with them are going to be upset.  Why is it no one seems to be willing to defend the rights of the straight community, especially those parts of it that will be upset by this sudden change in educational strategy?

I am sorry, I do not know what I was thinking but what I must admit is that if my daughters were faced with this prospect, I think I would either put them into a church-run school or I would have them home-schooled.  This is a recipe for disaster, impending sexual assault disaster and only the Gays will be immune to attack but everyone else is going to be and anyone who protests against this is going to be singled out as a ‘hater’ and to suffer their taunts.   I fear that there is going to be nothing but trouble until the state of California figures out some sort of way in which, they can treat only those who truly feel they are the opposite sex as such instead of making everyone feel uncomfortable.  I think the citizens of this state must do something or the entire state is finally going to fall off into the Pacific Ocean as it has been prophesied that it was going to do for many decades.  All I can say is that I am glad I do not live here in California but if I know my fellow liberals, every time they open one door, they are on their way to opening the next and then the one after that.   It is time we had some sort of meaningful discussion on how better to make everyone equal without infringing upon the rights of anyone group.  NO one should ever be mistreated at any age or at any level in his or her educational career because it is going to lead to one thing for this country: paramount disaster!  

Well, let’s see, it’s Sunday morning, shortly after midnight (nine o’clock p.m. Saturday night, Maui time!) and we have come down to the wire and our final recipe.  As you know if you have come here faithfully every day of this past week, we have been making crumbles, crisps, and whatever else each day.  Today, however, we are going to do something COMPLETELY different, we are going to do some Cajun cookery, a classic dessert with a long history in the Big Easy, Bananas Foster!  If you enjoy caramel as I do, then I assure you, you are going to love this one beyond the shadow of a doubt, it’s that good.  However, if you do not care for bananas, then obviously you will not like it but each of us—especially those who wish to be a professional chef—must at least try everything once or twice!  If you don’t, then you are relegating yourself to peel potatoes, carrots, and turnips the rest of your life!  Let me say this: there is nothing worse than a chef who will not try everything the kitchen makes and the ones who are the worst are the vegans who wish to work in regular restaurants.  They cannot taste half the stuff on the menu, nor can they touch it, the only ones worse are the Muslim cooks who would rather go home than to butcher pork products.  Save yourselves the trouble and become a chicken farmer if you cannot taste what the establishment serves, at least you can be of some use!

When I was a young chef, it was desserts such as this one that made me want to become a dessert-maker exclusively because to me, this was the epitome of classic cooking and cuisine!  Imagine, succulent bananas simmering in a warm caramel sauce, flambéed with brandy, topped with a ball of vanilla cream, I am telling you that life does not get better than this!  Anyhow, if you pay close attention to the directions, the secret of the caramel sauce is not so secret but it can prove to be tricky for those not used to doing things themselves!  I think that once you feel comfortable doing this, the limits will be limitless and you will become a culinary food star, maybe even the next big chef on the Food Channel…no, they’re a bunch a crap, be your own amazing culinary star!

Method:

1.   Mis-en-place: have everything ready with which to work! First, as with all flambéed desserts, we want ROCK-HARD ice cream so scoop the balls, place them into the coldest part of your freezer (after wrapping them plastic wrap, of course, so they do NOT pick undesirable flavors!) and leave them there. 

2.     If you would like to serve your dessert with fresh whipped cream, make it NOW:

3.     Mis-en-place: have everything ready with which to work! Using your electric mixer once more with the WHIP attachment, whip the cream at medium-high speed until soft peaks begin to form, about 5-8 minutes and when they do, begin to scale in the sugar along the sides. Add the rest of the ingredients and stop when it is stiff. Keep it refrigerated!

4.     Now, this is a fairly fast-moving dessert once you get going so as soon as you plan to begin making it, marinade the banana slices after placing them into a dish large enough to hold them all spread out across it in the Torani’s Bananas Foster syrup in your refrigerator taking care to seal it airtight in plastic wrap. 

5.     Place a large skillet atop a low flame.  Into it, place both the butter and the sugar and add a pinch of salt.  Meanwhile, combine the flavorings and the extract together then add them to it.

6.     As soon as these ingredients are in the skillet, IMMEDIATELY begin stirring them around to break them down and to incorporate the sugar and butter together.  You must stir this mixture CONSTANTLY as if you are going to make the caramel sauce correctly; it has to be moving all the time, all the while breaking the butter into smaller and smaller pieces until one incorporates the other.  Never allow the butter to melt faster than the sugar; otherwise, it separates and looks horrible and what’s more, there is NO way to correct this disaster.  STIR CONSTANTLY as mentioned, breaking it down, mixing it together until you form a cohesive caramel sauce. 

7.     Bring out the bananas and add them to the mixture after shaking off the marinade syrup—you can discard it if you wish or save it for use in making banana muffins or quickbreads.  Add the bananas to the mix and quickly stir them around to both coat them in the sauce and to heat them up a bit. 

8.     Place a small skillet atop a low flame and add the brandy; heat it up but do NOT allow it to pre-ignite.

9.     Meanwhile, have your assistant set out the doily-lined underling plates, and then place the bowls atop each one.  Now, place a scoop of rock-hard vanilla ice cream into each one.  Now, ladle the sauce with bananas over each one evening out the portions, then if using the whipped cream, pipe a rosette atop each one and slap the mint sprig onto the plates along with the dessertspoon and the cigar wafers if you have them. 

10. Quickly load the desserts onto a serving cart and take them to the awaiting diners.  Have your assistant bring out the warm brandy and there before the table, ignite it with a match or cigarette lighter and allow it to flame for a moment or two; make sure you have extinguished the lights!

11. Ladle the brandy over each bowl while your assistant serves them and brings up the next round of bowls until you have flambéed all of them. Note, should anyone NOT want the brandy ladled over their dish, let them know that once it ignites, the alcohol quickly burns off all the while increasing its flavor!

12. Leftovers: there are no leftovers with bananas foster, you serve them or you lose them.  The thing with the bananas is to always use fruit that is becoming ripe and needs to be used lest you lose it but then again, bananas can go into the freezer for use in banana quickbreads such as muffins, loaves, pancakes, you name it, they can do it.  Ice cream can go back to the freezer and whipped cream can be used in other preparations.  The idea is to know your clientele or family and friends so you never prepare more than you need. 

Bananas Foster is a dish that was once associated with the Cajun cookery of New Orleans but has since become a tried and true favorite around the world.  Always pay close attention to the formation of the caramel because while you can take shortcuts and make some sort of caramel sauce beforehand, there is nothing better than making it on the spot!  
Gay Symbolism
As I mentioned at the beginning of this article, I have had some sort of epiphany regarding the bill signed by Governor Brown regarding homosexuals in the bathrooms of the opposite sex.  I believe that the Gay agenda has a desire to pay back the straight world for everything they perceive was done to them and the more I hear from my fellow bloggers and friends back home, there is going to be significant blowback over this situation.  Whether they like it or not, the transgender folks running around in the world out there, need to keep their issues to themselves until they get out of high school because there is never going to be a restoration of ancient Greece!  At least the homosexuals of the ancient world usually were great warriors whereas here in California, they all swish around like a bunch of women.  Yes, I know, a lot of people are going to call me a hater but let’s face it, we do need to keep some sort of normalcy in this world because if we do not, our world is going to be savaged by our enemies lurking without it.   People, we need to study this phenomena before we institute it in the rest of the nation because I see nothing but a bunch of problems taking place over this malevolent issue.  We will discuss this the next time we meet again, that is, if I get back home in one piece!
