Bakersfield, CA, 09-01-2013 Sunday: We have come to the final day of the workweek PLUS the first day of September 2013, what an amazing time to say the least, my friends!  This has been a year of transition, for one thing, we suffered through one of the worst election seasons in recent history and one of the things I credit for this horrifying time is the fact that the 24 hour news cycle seems like it’s now 48 hours packed into 24!  All day long, then all night, the talking heads, pundits, idiots, and clowns pontificate, browbeat, and beat us down in a knock-down, be-all, death to the loser fight!  I mean, how much more can we withstand as human beings, people with the intelligence to right a great many wrongs and yet, the wrongs are never corrected and just continue festering! I realize that all of us are tired that whether or not we like what is happening, we feel impotent as though we can do nothing about it.  I wish there was some sort of political Viagra that would ignite an inferno beneath the rear-ends of the Republican smucks sitting in the House because first things first, if we are going to save what’s left of our nation, we need to defund Obamacare NOW!  No more talk, no more discussion, we waited for Mitt Romney to win the 2012 election and BOOM, he lost!  We waited for the Roberts’ Court to throw it out, and BOOM, he said it was fine except for a minor thing or two.  We hoped that somehow, John Boehner would grow a massive pair of balls and stand up to the tidal wave of lunatic leftists but no, he cowers behind his speaker’s chair, keeping it warm for Nancy Pelosi’s return!   All around us, the Republicans are running around sniveling and whining while the people continue taking it up the giggy as though they were prisoners in a nonstop porn movie!  WHAT IS GOING ON IN THE UNITED STATES OF AMERICA?  OUR ENEMIES HAVE TO BE LAUGHING AT US AROUND THE WORLD!

You know, I used to be a fricking Democrat and thought that if I became a member of the Republican Party, that maybe the losers in both Sacramento and in Washington, D.C., would stand up and fight!  Like some of my co-bloggers here at the American Institute of Culinary Politics-Elemental News of the Day, I do believe that the powers that be in Washington use not only the Internal Revenue Service but the NSA, the CIA, and the FBI as well as the Secret Service monitor our every move every minute of the day and night.  I also believe that the Obama Administration has taken the FBI files as collected by the Clinton Administration that much farther and has so much dirt on every person in power that there are very few dirt-free individuals who are willing to fight back against this encroaching tide of communists!  For all we know, John Boehner is a child-molesting alcoholic and maybe Eric Cantor is a man with multiple wives.  Hell, we know Mitch McConnell is a self-serving smutz, a man who has gotten wealthy off insider trading in Congress!  Maybe our leadership makes these deals so it can retain some semblance of power while we the people continue chafing under the rule of an increasingly more powerful autocrat!  My fellow Americans, if I need to run for office, I will do whatever it takes because there is very little dirt on me.  That does not mean the Obamaists could not sully my reputation by planting fecal material on me but let’s face it, someone is going to have to stand up for the rights of the American people at some point!  Otherwise, our nation is going to be lost and we will disappear beneath the waves as if we were a coastline in some Al Gore horror novels about rising tides, pollution, and hate societies!  Let’s not forget that Al Gore, Sr., was a segregationist, a true HATER, a racist, and a smuck but whoever talks about him, right?  My belief is that the apple never falls far from the tree, folks!

Anyhow, seeing as how it’s Sunday, let me encourage you again to write me about joining my group, HATER, so we can put a million man march onto both Sacramento and Washington, DC!  If we are going to be called haters and maybe lose our livelihoods like the Missouri rodeo clown, then so be it, but that is even more reason for us to stand up and smite these bastards where it hurts most: throwing them out of office!  2014 is going to be the final year in which, we can overturn Obama Claus’ bag of goodies, you know his Christmas sleigh containing Obamacare and its ever-increasing taxes, IRS intrusions, and other heinous things only the Democrats can do.  HATER is the acronym for “Halt Ammiano’s Transgender Education Reforms” now, something we must do and as soon as possible, lest our children fall prey to the homosexual mafia’s retraining and reeducation program turning out armies of Gay children.  I mean, is this the fate of America or are we going to debilitate these bastards by consigning them all to hell?  You tell me because that is what we must do and do soon!

Okay, it’s Sunday, I want to head home without being waylaid by Obamaists on the road back to Ventura, California, and that means, it is now time to make the recipe we have come here to make today!  We are making Fancy Tea Cookies, the best of the best that I, your beloved host, have saved for the ultimate last!   Fancy Tea Cookies use macaroon, a very fine mix of coconut flakes, something you can duplicate using your Cuisinart mixer.  I love this cookie recipe, it is the best of the rest and one with which, and I know you will fall in love!  Therefore, without further discussion, here we go:

(#1559-A) FANCY TEA COOKIES—INSTITUTIONAL SIZE



Having come in professional foodservice at a time when everything was made from scratch, I have it over the heads of my competitors by millions of miles because most of the young hotshot chefs running around going on TV or hosting radio shows have a lot to learn to keep up with me!  One of the things I had the great opportunity to experience was restaurant baking at its best, I mean nowadays, a chef calls his local foodservice company or his local bakery and put an order for whatever he or she needs.  They do this because it’s more profitable to hire illegal aliens who know little to nothing about sanitation much less professional baking unless, of course, it’s in the area of making tortillas by the millions!  I know that whoever makes this recipe is going to become infatuated by it and that is all the more reason to immediately enter one’s kitchen and begin knocking the cookies from this recipe and out to the public!  Believe me, you will be overly pleased by the results so let’s get started!

Method:

1.      Mis-en-place: have everything ready with which to work! Spray 4.5 full sheet pans, using only the best reflective bakeware you have as if you use darker pans, the cookies will be over-browned, not what a professional baker wants by lining them with parchment or wax paper sheets.  Spray each one with PAM Baking spray or some such other food release spray then set aside.  Chef’s Note: never overlook the importance of keeping the pans you use for baking cookies, sheet cakes, and anything else that requires attractive levels of browning clean.  Wipe immediately after every use, then run through the dish machine.  NEVER leave burnt on grime on your most important pans because it does not easily come off after awhile.

2.      Hook up your Hobart mixer and attach the PADDLE attachment.  Add both the butter and the shortening and then at medium speed, begin rotating the paddle around the inside of the bowl, beating the two fats together.  Continue the process for several minutes until the two combine and have become light and fluffy.  Then, stop the machine, scrape down both the bowl and the paddle, then add the sugar and continue beating at medium speed. 

3.      Meanwhile, combine the flour and macaroon coconut and set aside.  Scrape down the sides of the bowl and the paddle once more, add the vanilla and coconut flavorings and continue mixing until incorporated.  Now, scrape it down again, add the flour and macaroon coconut, and quickly mix using either the paddle or switching to the dough hook and mixing until blended.  This takes approximately 30-60 seconds; the idea is NEVER to overmix a cookie dough but sometimes, you have to remove part of the mixture, scrape the bottom, overturn the mix, and mix until blended. 

4.      As soon as blended, scrape the dough out onto a sheet of plastic wrap or wax paper and fold it up—tightly!—and then store in your refrigerator for 30 minutes to overnight.   When ready to bake, preheat your convection oven to 300°F or your standard oven to 350°F. 

5.      Using an ice cream scoop, begin scooping out 1-ounce balls using a #30 scoop and as you do so, space them 6 x 8 or 8 x 8 on the prepared sheet pans.  When you do, place the sheet pans on the middle oven racks of your preheated ovens, taking care to avoid the UPPERMOST shelves of the convection ovens or the BOTTOMMOST and UPPERMOST of the standard ovens as this is where heat is its most intense.  If using the convection oven, flip the switch to “ON” now and bake there for 12-15 minutes or if standard, 16-20 minutes or until they are lightly browned.

6.      As soon as described, pull the pans from the ovens and place atop cooling racks noting that the cookies continue baking another 1-2 minutes on their pans so always pull them out underdone rather than overdone.  After 2-3 minutes, begin transferring the cookies from the pans directly onto the cooling racks with the sheet pans now underneath them serving as drip pans.

7.      Make the glaze using your mixing bowl and WHIP attachment; blend well, then using a ladle or a whisk, dribble syrupy ribbons of glaze over the cookies giving them a wonderful appearance and if desired, sprinkle with additional macaroon.  The cookies are now ready to serve so transfer them onto doily-lined serving trays or serve them individually on doily-lined bread-and-butter plates. 

8.      Always store cookies in a cool, dark place but at room temperature using sanitized airtight gallon containers with tight-fitting lids.  Label, date, and keep as described in an unused icebox or other such pantry cupboard and take care to use within 5-7 days at most; after that, use them or lose them!

9.      Chef’s Note: Macaroon coconut is a specialty item but one you can make yourself (or I should say, ‘mimic’) by using regular flaked coconut run through a Cuisinart using a blade until turned to miniscule flakes.  Keep stored in airtight containers in your fridge for use with just this recipe otherwise, you can buy it from your purveyors!  

These are awesome cookies that definitely live up to their names so never overlook the power of this Hawaiian favorite, one I love myself!  The most important thing when it comes to making and keeping cookies is to have an excellent cool, dark place at room temperature, which in many restaurants is usually a stand-up non-working refrigerator with a lock on the doors.  The lock is to keep hungry employees from eating all of the cookies or taking them home to feed their brats!  You would be surprised at how quickly your delicious cookies will walk out the back door! DO NOT LET THIS HAPPEN TO YOUR INVENTORY COSTS!

I found out about an interesting story of local interest when I came to Bakersfield about this guy who built a wall on a non-designated easement on his property as now his neighbors hate him because their little snots can no longer go through the hole in the wall to neighborhoods on the other side.  Look, if Mr. Hansen can still be sued because some little booger-eating imbecile falls down, cracks his skull, and his neighbors sue him for their brat’s injury, I say build the wall, electrify it, and send the lowlifes home the long way.  Oh, boo hoo, is this the sort of crap we have to suffer in modern times from ungrateful neighbors and other dumb ass putzes?  See you next time, buy some albums, have an awesome time and I hope Obama is impeached!  Yeah, I know, screw those who cannot handle an honest comment!

  1. 1715: Following a reign of 72 years, King Louis XIV of France died four days before his 77th birthday.
  2. 1807: Former Vice President Aaron Burr was found not guilty of treason.  He was then tried on a misdemeanor charge and was then acquitted.
  3. 1902: The George Melies “Le voyage dans la Lune” (“A Trip to the Moon”) opened in France.
  4. 1923: The Japanese cities of Tokyo and Yokohama were devastated by an earthquake that killed 140,000 people.
  5. 1932: New York Mayor James “Gentleman Jimmy” Walker resigned following charges of graft and corruption in his administration.
  6. 1939: World War II began as the Nazis invaded Poland.
  7. 1942: U.S. District Court Judge Martin I. Welsh, ruling from Sacramento, California, on a lawsuit brought by the American Civil Liberties Union on behalf of Fred Korematsu upheld the wartime detention of Japanese-Americans as well as Japanese nationals.
  8. 1951: The United States, Australia, and New Zealand signed a mutual defense pact, the ANZUS Treaty.
  9. 1961:The Soviet Union ended a moratorium on atomic testing with an aboveground nuclear explosion in central Asia.  Meanwhile, elsewhere in the world, a TWA Lockheed Constellation crashed shortly after takeoff from Chicago’s Midway Airport, killing all 78 people onboard.
  10. 1972: American chess master Bobby Fischer won the international chess crown in Reykjavik, Iceland, as Boris Spassky of the Soviet Union resigned before the resumption of Game 21.
  11. 1983: 269 people were killed when a Korean Airlines 747 was shot down by a Soviet jet fighter after it strayed into Soviet airspace.
  12. 2002: The California Legislature approved a $99 billion budget ending a two-month-old standoff.
