Bakersfield, CA, 08-15-2013 Thursday: Aloha, aloha, welcome to the best foodservice blog on the Internet, one that discusses a wide variety of topics whether they have to do with the culinary arts, politics, or even sports.  You know, one of the things that shocked me is the fact that Major League Baseball is so determined to pursue Alex Rodriguez of the New York Yankees, I am somewhat dumbfounded and curious as to how it works, I mean, if I test all the time and the tests show NO use of drugs, then why would I rate punishment by the baseball powers that be?   Granted, I do not know everything that goes on in the world of sports but I know what I know and that is it seems to me that as long as a person tests negative for banned drugs, how can they go after him still?  Let’s face it, we live in a world of suspicion, even in Hawaii, to enter our places of business, especially if they are the BIG HOTELS where the tourists go, we have to pass by security on our way in and our way out.  We have to give them whatever specimens they need no matter our level of employment or our status.  Yes, when someone has to have someone observe him or her pee into a cup, that can be both degrading and unnerving and it’s not something any of us living in the normal world ever want to accept but accept we must.  Otherwise, there is no offer or retention of employment and we quickly fall from grace.  Even small business owners need to know that their employees are doing right by them because nothing is worse than to have some drug-addled miscreant cause major problems for one’s business or organization.  Yes, we do have many drugs in Hawaii, we are like everywhere else, pot is somewhat accepted by most other drugs are not.   While I feel they will never crack down on pot or ‘pakalolo’ in Hawaii, they will not go the route that California has because it causes nothing but problems.  It is legal for medicinal purposes in the islands but not in the same way, it is in this crazy state and especially this county!

            Since I have been in town, the big topic here is the shooting by the two gangbanging thugs who murdered two workers at a pot collective here in Bakersfield a month ago.  On July 17, two thugs, Aaron Patrick Burris, aged 32 and his sixteen-year-old skank, Miracle Jackson, entered the First Reliable marijuana collective on Chester Avenue and within a matter of a few minutes, shot both the owner and his security guard dead.  They then took twenty bucks out of the cash register and stole some pot and then disappeared into the early morning.  Well, they caught the thug but his ho got away and most of the people here at the AICP-END blog believe she’s lying in a ditch somewhere with a bullet to the head.  They surmise, how could they find the gangbanging Eastside Crips member but not the wahini, therefore, she must be dead in a culvert somewhere.   This is the problem with legalized pot, instead of going through reputable sources, people go to these specialty stores and as you see, they sometimes get whacked by punks who are out to make a name for themselves or to steal both their money and their drugs.  I think I liked it the way it used to be back in Hawaii, grown out in the cane fields where not everybody with a right mind ever went after dark; otherwise, the growers would shoot you!

  Now, we all know that Honolulu is a big city and it has its moments but I can tell you, Happy Valley on Maui up by Wailuku is not a happy place to visit or live, particularly after dark.  Young punks live everywhere, the thing is that in Hawaii, you might escape a situation with your life that here on the mainland you most likely would NOT.  We do have Asian gangs and of course, we have our share of minorities who have relocated here, it’s not so bad for those of us who live here but REAL tourists do need to be careful because the local boys can smell out an outsider and make sure he or she does not insult them.  I remember talking to Chef Carrick about how when he moved to the islands, he first had to undergo a seasoning period in which, he was an outcast while working at the local hospital, that is, until his locally-born wife had to intervene.  Then, all was well for him and the local girls wanted to be with him as much as they could.  I know he hopes to return to the islands and to become a part of the scene there with his wife, Linda.

We are going to make a wonderful muffin recipe now, one for Pear-Currant Muffins, a recipe I developed on my own.  I think that everyone is going to enjoy this one as while I do favor the very luscious red pear, there are so many different types of pears from which, one can design their muffins!  Here we go:
(#1728) PEAR-CURRANT MUFFINS



Many times in the world of professional foodservice as well as at home, we find ourselves with leftover produce requiring immediate use!  Many times, we go to the grocery store or the roadside fruit stand and find things we deem to be of highest quality and at the best price possible and then when we get them home, find that we might have made a mistake!  Never trust grocers pushing fresh delicious berries or other fruits at great prices because all too often, they know something that might not be evident to us.  However, if one likes to bake and has things needing immediate use, this is a great way to use them at their utmost flavor!  Normally when produce begins to go bad, it’s flavors intensify and the baked goods we produce using them come out absolutely amazing!  This is a great muffin recipe, one I know everyone is going to love so why not try it immediately?

Yield:  12 Medium (3/8-cup) or 18 small (0.25-cup) muffins / Mis-en-place: 45-50 minutes:

Method:
1.      Mis-en-place: have everything ready with which to work! First, peel and core the pears and then puree in your food processor.  Set them aside and proceed.

2.      Prepare the muffin cups by using stainless steel or aluminum, as long as they are reflective, as it is important to repel the heat rather than drawing it in as do darker bakeware.  Spray the cups heavily with PAM Baking Spray or some such other food release spray, then line with paper or aluminum baking cups, and finally spray both the cups and the tops of the pan(s) heavily with PAM, too; set aside.

3.      Preheat standard oven to 375°F or a convection oven—fan in the “off” position for the moment—to 325°F.  Hook up your Hobart/Kitchen Aid mixer and attach the PADDLE attachment. 

4.      Double-sift the DRY ingredients together and then stir in the currants (and nuts, if using), setting it aside until required.  Begin beating the egg at medium-high speed and add the sugar, beating it together until you have “creamed” the mixture.

5.      Add then the remaining WET ingredients, rotating the paddle slowly, until you combine everything.  Scrape the sides of the bowl with a rubber spatula and now, fold the DRY mixture into the WET using the least amount of low-speed mixer rotations until you have moistened the former with the latter; then, scrape down the sides of the mixing bowl and beat on medium speed for approximately 30 seconds before stopping.

6.      Rest the batter for 10 minutes; then, using an ice cream scoop occasionally dipped in cold water to fill the cups about ¾’s full.  Shake the pan(s) gently to settle the batter then place the pan(s) on the middle oven rack(s) (flipping the fan into the “on” position if using a convection oven) and bake for about 23-25 minutes OR until they are golden brown. 

7.      Test for doneness by inserting a paring knife or cake tester into the center of the middle row(s) of muffins and if it withdraws “clean,” they are done so pull them out, place atop a cooling rack, and cool for 1-2 minutes.  Then, remove the pans leaving them atilt in the muffin cups for another 2-3 minutes before finally transferring them directly onto the cooling rack(s) to finish cooling.

8.      Combine the final three ingredients to form a glaze and when the muffins are cool enough that you can apply it without it turning to liquid and running off onto the drip tray, do so.  Drizzle it back and forth with a swirling motion so that ribbons of sugary glaze festoon the finished products.

9.      Serve the muffins with whipped butter and enjoy.  Wrap leftovers with plastic wrap and if you plan to use them within a day, do NOT refrigerate.  If you plan to use them the next day, you can refrigerate them but if you plan to use them later, bag them up tight in Zip-Loc Freezer bags and freeze.  Label, date, and store taking care to use them within 5-7 days at most; after that, cut them up for use in bread puddings or grind them up for use in crumb cakes.   

These are wonderful muffins, everyone loves them and the great thing is, like banana muffins, they allow the baker to rid oneself of older fruit, something that is very important if one is interested in saving or making money and besides: older fruits have intensified flavor due to the chemistry-taking place.   In addition to this, use flavorings available to us from Torani’s or Amoretti’s and also Kern’s very good nectars to achieve maximum flavor that most other bakers have no way to copy!

            That is going to do it for today and remember: when and if you visit us in the islands, remember that it’s best to find out about what areas are okay to visit and what ones are not.  Most of the time, we urge you—as visitors—never to go to the local beaches after dark but while most of them have been closed when the sun goes down, that does not mean that locals are not out there having a party.  All too often, ignorant outsiders can walk up, start chitchatting, and find themselves with their nose all bust open, so I urge you to stick to the tourist beaches and other areas until you have experienced the islands by living in them for a time.  I know that even Chef Itzi, who is following me, has issues because she looks like a haoele even though she is of mixed parentage, the fact that she speak the language in the way everyone else does is what has helped her go through school without having a bunch of problems.  Always learn about the place you plan to visit before going there, that is the best advice I can give you!  That’s it for the Hump Day edition, see you all tomorrow!  Aloha and have a good one!

This is a photo of me back in the 1980’s when I was working at a hotel in Honolulu, HI, on Waikiki Beach.  I began my career in the early 1970’s when I apprenticed to cook under one of the masters on the Big Island where I was born.  I moved to Oahu in the early 1980’s after having worked in both Kona and Hilo, HI, and have been there for most of my professional career.  I have also worked on Maui for a few years (1995-1998) and have been on Kauai (2001-2003) before returning to Honolulu.  My goal is to prepare the next generation of chefs for the future and to help the underprivileged in their struggle to attain careers in the foodservice industry.
