Bakersfield, CA, 08-12-2013 Monday: Aloha and welcome to the 995th official blogpost of the AICP-END, something with which, I have involved myself since last year and I am so happy to be here!  Living in Hawaii is awesome as always although the amount of building coupled with the loss of sugarcane is making most of us who have lived here all of our lives quite sad.  The fact that developers are doing amazing things here is one thing, especially if it helps the native Hawaiians but to me, it seems as though they are making us into a mid-Pacific Disneyland of sorts.  While it is difficult to dispute the economic benefits, it has also altered our ways of life, giving us higher crime problems, more and more homeless who thankfully, the government seeks to repatriate to their homes.  Homeless folks like living here in the same way they enjoy Florida, the weather is usually favorable to living outdoors but at the same time, they live on our beaches, or they live out in the West Maui Mountains, or wherever they can find a place to homestead and call their own.  The problem is tourists do not come here to see the same sort of problems they find back home nor do the locals enjoy people breaking into their homes as though they lived in Bakersfield, California.  Whenever I come to Bakersfield to write my posts and to work in the test kitchens, the management treats me to life here on the mainland in the way that it is and let me tell you this: it is pretty horrific!  The high crime rates here, the amount of homeless people and the amount of people killed by local law enforcement seems quite barbaric.  Yes, it is bad back home but nothing like it is here and what’s more, I have issues with endless land moving in all directions, it is rather intimidating to someone who has grown up in a limited area so-to-speak.  Anyhow, I have not come here to bitch and moan about my problems but to educate you in the ways of professional foodservice so you can improve your own culinary skills!
Pacific Gas and Electric
            I flew in on Friday night, met Roland Carl Davis and his wife at LAX, headed north over the mountains on the I-5, and made it to my hotel room around 3:00 a.m.  The flight over to California was uneventful and after a few hours of sleep, they took me out to Rosedale Highway and Gosford Road to see the implosion of the old steam-generated power plant run by Pacific Gas & Electric.  We went there early in the morning to see the plant come down thanks to pre-set charges and I have to admit, it was somewhat shocking because even though we were over 1,000 feet away from the blast, a man not too far from us was hit by a big piece of steel that caused him to lose his leg.   We were standing no more than a yard or two from this man and at first, when he fell to the ground, screaming and yelling—no one knew what had happened until they saw the pool of blood flooding the parking area where he lay.  People were yelling, screaming, some were crying and the emergency personnel rushed in, swept them up, and the poor guy who lost his leg at the hospital later that day was taken to a helicopter and flown north to Fresno.   Now, I have seen some demolition work in Honolulu, but I have never seen a thing like this.  We touched some nearby debris lying in the parking lot at the Lowe’s Super Center and pulled our hands back in shock: it was blazing hot!  I am sure someone is going to suffer a lawsuit but all I can say is that my trip to Bakersfield did not end in personal tragedy!

  Today, we have come here to pick up with the 101st installment of the Classic Quickbreads and Muffins recipes, something that is a first for me, which makes me so happy.  I’m also happy because the last time I was here, it was the twelfth of December of last year so it was EIGHT months ago!  Boy, this is a dream job, not only do they fly us into town so we can spend a week seeing the sights and sounds of Kern County, we also have the opportunity to work approximately ONCE a year now what with our rotation!  I have to admit, I enjoyed reading the articles written by Moses Scharbug III, but let’s face it, he had about six weeks of bashing President Obama, which needs answering!   I am glad that Bea O’Malley got the first crack but let me say this: I do not think President Obama is to blame for everything going wrong in the country, I believe it’s the Republican Party and also talk radio.  We have talk radio in Hawaii, too, but not all of the local hosts are as rabid as are Rush.  We try to live and let live, we do not care about what a person’s sexual status is or how they go about living their lives.  As long as they are productive citizens, pay their fair share of the property taxes, work hard, that is all that matters because the rest of the time, we have fun living here in the islands!
Golden Raisin Scones
Golden raisin scones are delicious and quite easy to make, all one needs to be able to do is to pay attention to simple directions that I am going to provide you.  To me, scones are like making biscuits, they are the British way of doing things, something I have adapted to my own needs and something you can easily make at home. 
(#0061-G) BASIC GOLDEN RAISIN SCONES

Scones are definitely a good way to present something new to your clientele, giving them something they definitely are going to enjoy.  Made like biscuits, they are much softer, more flavorful, and open to as many flavors with which, the smart chef can combine them.  This one uses the delicious Sunmaid golden raisins, a raisin so good; they bring tears to the eyes of those eating them.  If you have never had the opportunity to taste golden raisins in a baked item, your wait is now over!  Try them; you are going to become a lifelong fan!

Method:

1.     Mis-en-place: have everything ready with which to work! First, SEPARATE the eggs into TWO bowls.  Place one white and two yolks into one bowl and the single egg white into the bowl of a Cuisinart or Shortcut and blend well.  Pour this single white into a small container and refrigerate until needed.  Meanwhile, take the two yolks and one egg white and put them into the machine, doing the same to them.  Pour them through a fine-meshed sieve into a small bowl and have ready.

2.      Double-sift the first EIGHT ingredients together and then place them into the bowl of a Kitchen Aid electric mixer equipped with a PADDLE attachment. 

3.      Begin rotating the blade on low speed, as you do so; begin adding the shortening in along the sides.  Continue mixing until the dry mix is smooth and the shortening particles broken down and well dispersed.  Remove the mixer from the stand, run your hands through the mix—check to see if it is MEALY.  The shortening particles have to be SMALL, not chunky-large as if for flaky biscuits. 

4.      Scrape down the bowl and the paddle to remove any stubborn bits of shortening and then when you determine that the mix is mealy, return the bowl to the mixer stand and reattach the paddle.

5.      Add the egg yolks-one egg white mixture, the golden raisins, and then rotate the paddle around the inside of the bowl on low speed until both are well blended.  Then, add the buttermilk, vanilla syrup, and vanilla extract and quickly blend the mass together until you have a soft, moist dough then STOP!  Scrape down both the bowl and the paddle and pull the dough out onto a lightly floured work surface.  Chef’s Note: if you need to add a small amount of additional liquid because the dough is a touch too dry, add some heavy cream or buttermilk but do NOT under any circumstances make is too WET!

6.      Quickly shape the dough as if working biscuit dough across the board but do NOT knead as this develops the gluten in the flour, which makes the finished product chewy.  Push the dough out until it is about .75-1-inch thick, then using a dough knife, cut out 14 squares of roughly the same size and then, once you have rest the unbaked scones for about 10 minutes. 

7.      Preheat standard oven to 400°F or a convection oven—fan “on”—to 350°F.  Use two 9” pie pans sprayed with PAM Baking Spray or some such other food release spray, and then line each with a sheet of wax paper, spray the paper with food release spray, too, and finally, dust it with a light sheen of all-purpose flour.

8.      Place seven scones onto each pie pan just as you would biscuits—you should have six around the rim with one scone directly in the center.  Bring out the solitary egg white and using a sanitized pastry brush, brush the tops of the scones with it.  

9.      Next, sprinkle your scones with a fine layer of superfine granulated sugar; then—when your oven is ready—place the pan(s) onto the middle rack making sure there is breathing room all around them. Bake the treats for approximately 15-18 minutes or until the tops have browned nicely.

10. Pull the pan from the oven, place atop a cooling rack, and brush heavily with drawn butter to give them a nice, moist sheen as well as a very attractive glaze.  Meanwhile, combine the final ingredients in the bowl of an electric mixer and then when you have a nice syrupy glaze, begin swirling it over and across the scones to give them a beautiful glaze. 

11. Cut the scones with a dough knife along the rows to free them, then remove them and prepare them to serve.  If for institutional service keep them warm in bread warmers or if for a brunch or breakfast function, place them onto decorative serving trays and accompany with preserves, jams, jellies, or whipped honey butter. 

12. Always keep scones covered to maintain freshness but note that generally, they do not freeze well so do your best to make what you need or once cool, wrap up airtight in Ziploc freezer bags, label, date, and freeze.  They maintain their freshness for about 1-2 days; after that, toss them out and start anew.

13. Chef’s Note: you can make the scones a night ahead, brush them with the egg white(s) and wrap for storage in your refrigerator.  Then, the next day, pull them out, leave them atop a cooling rack to come to room temperature and preheat your oven about 20 minutes ahead of use; then, bake as directed!

Scones are a wonderful way to take a break from serving biscuits by serving something much better and definitely a whole lot sweeter.  Easy to make, the trick in making them is never to over-knead the dough, as this is the kiss of death to any dough such as this one.

            My husband, Lalo, came with me on this trip and we have been going out to movies at the Edwards Theater as much as we possibly can.  We saw the movie, “Pacific Rim” on Saturday night and let me tell you, like “Battleship,” the movie was awesome, it was amazing and I am so glad we remained throughout the credits!  Had we not sat through to the bitter end, we would never have known that Ron Perlman was still alive, that he managed to survive being eaten alive by the dead baby of the cloned monster.  One question, however, the aliens must be better, at cloning right, because Lalo said, “I did not think clones could reproduce!”  Any of the readership has any answers about that or are you going to remain silent or do you not know that Perlman survived?  Aloha, friends, I will see all of you tomorrow!

This is a photo of me back in the 1980’s when I was working at a hotel in Honolulu, HI, on Waikiki Beach.  I began my career in the early 1970’s when I apprenticed to cook under one of the masters on the Big Island where I was born.  I moved to Oahu in the early 1980’s after having worked in both Kona and Hilo, HI, and have been there for most of my professional career.  I have also worked on Maui for a few years (1995-1998) and have been on Kauai (2001-2003) before returning to Honolulu.  My goal is to prepare the next generation of chefs for the future and to help the underprivileged in their struggle to attain careers in the foodservice industry.
