“Appetizers Index, Part XXXVII: Today, Chef O’Malley talks about ‘Naked and Afraid’ (and what it would be like to do it with the Rock) as well as shows the Readership how to make the Best Bay Shrimp Quesadilla in the World!” by Bea O’Malley

990th BLOGPOST AT THE AICP-END!

The Rock—Bea thinks it would be Cool if she and he were on “Naked and Afraid”
Bakersfield, CA, 08-07-2013 Wednesday: Welcome to the seventh day of August, that means we have about FOUR solid weeks of heat to go, then it will fluctuate a bit back-and-forth, and then by the time the Fair arrives towards the end of September, the air is going to cool down—how wonderful!  I have found that as I have continued to grow older without suffering a stroke, a heart attack, or falling down the stairs and breaking a hip or elbow, I can no longer tolerate the heat.  I have watched that show, “Naked and Afraid” lately and all I can think is that I would be ‘afraid to be naked’ in front of anyone with the exception of my old husband.  The poor guy is partially blind but there was a day, I think they could have dropped the two of us onto a shark-infested reef and we could have survived, whereas now, I think we’d both be dead!  I have to ask this question, when did it become acceptable for television networks to show a program like “Naked and Afraid,” I mean, if I was still a young girl, my family would have been aghast if they had seen a program like that!  My poor father, Randolph and mom, Gerta, would have probably thrown a waste basket through the television the first time they saw some naked man with a fuzzy spot over his hoo-hah and some bimbo with fuzzy spots over her boobs and muff, I mean, what has happened to our world?  While I think the format is alright, you know—taking two total strangers, removing their clothes, dropping them into the heart of darkness, and saying ‘y’all need to survive for three weeks,” I am not sure how we are supposed to present shows like this to our kids, grandkids, and great-grandkids.  Then again, if I had it to do all over again and they dropped me with someone like the Rock into the backwoods of Africa, well, my life might have gone in a completely different direction, if you know what I mean.
Gay Flag—the Flag of Sinners and Losers!
Wow, I cannot get that image out of my mind or what our kids might have looked like.  However, there are times when I watch him in the movies and wonder if the poor boy is not a Gay or bi-sexual.   Oh, now do not get me started, you know how I and any other God-fearing black woman or man feels about the Gays, I am sorry, when it comes to the issue of ‘civil rights,’ blacks and Gays are NOT the same.  The difference between me and a Gay boy, is that when I wake up in the morning, I cannot wish I was yellow, blue, or purple and have it happen whereas for a Gay, hey, they do NOT have to act on it!  A Gay boy can go out find himself a chick, discover that he likes it, and forego hanging out with his fruity-toot friends!  I do not believe that they have NO choice, of course, they have a choice, they do not have to go out there and be with one another, it’s all a matter of behavior and anyone who says it’s not is a liar!  Over the course of my life, I have worked with many sissy-boys and each time, I did my best to make them see the light.  I think the problem with a lot of them is that they do not feel they are attractive to the other side and rather than trying to go out and find a lifelong mate, they take the first Gay boy strolling down the street and say, “I got me a man!” I say ‘whoa to them, you all need to go to church and get your souls saved lest you end up burning in the fiery hell Satan reserves for those who sleep with the same kind.  Quit taking the easy way out, be a man, find a woman, and quit sniveling, it makes me and most self-respecting Americans sick to see a bunch of losers who can’t find themselves a mate.  That goes for you dikes, too, look, you all can find a man, just drop some weight, the men will come to you.  I hate it when I see people giving up because they lack self-confidence, y’all can do it if you try.  Buy some makeup, get a nice dress, quit going to bed with members of the same team and grow up.  That goes for you, Mr. Obama, quit jumping on every specialty group just because you think it’s gonna earn you some more votes, you cannot run for the presidency anymore, sir, do the right thing, tell the Gays to straighten up, and don’t worry about what that cracker vice president of yours says anymore.  Otherwise, your legacy is going to be dirt, Mr. President!
President Obama—quit hanging out with the Gays, sir!
Today, our appetizer is going to be a marvelous bay shrimp quesadilla, I love Mexican food, don’t you?  What’s more, quesadillas, tacos, and wraps are all easy to make quite profitable, and tasty, to boot.  I know that many chefs detest getting down to making appetizer and hors d’ oeuvres menus but let’s face it: if you have a bar crowd full of young, dumb, and somewhat wealthy individuals in there, would you NOT like to relieve them of their money while providing the ultimate in dining experiences?  Of course you would, do not be a wimp when it comes to exerting a little more sweat, in this day and age of disappearing money—thanks to the Republicans!—we must do whatever it is we must do to earn that foodservice dollar.  We need to pull the youngsters—aged 21 and over—away from Carl’s Junior’s, Wendy’s, Taco Bell, McDonald’s and all other fast food joints.  Let’s face it, the young folks believe what Madison Avenue advertisements tell them, they will go out and buy a hamburger from Carl’s Juniors, the house of sluts, and give themselves a heart attack due to all of the fat, grease, and calories.  We could get them to come in and join us, by offering them free appetizers from 4:00 p.m. to 6:00 p.m. and then after they get snockered, raise the prices and keep them there until 2:00 a.m.  Then, we can call them cabs and send them home—all on us so they don’t end up killing someone or going to jail.  Here is my recipe for a bay shrimp quesadilla:
(#0618) BAY SHRIMP QUESADILLA

Mexican food is always popular and all I can say is if we have to do it, then we must be the best at what we do.  This delicious appetizer is just that and more, it is one that the bar crowd will order around the clock (or at least as long as the bar is open!) so give it a shot on your appetizer menu, you will find it to be a major success!

Yield:  one appetizer / Mis-en-place: 4-5 minutes:

Qty.
Measure
Item
Other
2
Each
Burrito-sized flour tortillas

Cup
Shredded Tillamook pepper-jack cheese

1
Cup
Fresh bay shrimp

1
Pinch
Kosher salt

.25
Cup
Tomato Salsa of choice

.25
Cup
Tomatillo Salsa of choice

.25
Cup
Sour cream

1
Each
Lime wedge

2-3
Each
Radish flowers

1
Large
Celery leaf and sprig

1
Each
Parsley sprig
Rinsed
Freshly minced parsley flakes
Rinsed and dried
Oriental-sliver-cut scallions

Method:
1.      Mis-en-place: have everything ready with which to work!
2.      Place one tortilla on a cutting board and sprinkle with the shredded pepper jack cheese. On top of that, spread the bay shrimp out evenly. Sprinkle with a little kosher salt and then put the other tortilla on top.

3.      On a lightly oiled griddle set at about 350 F. Cook till lightly browned on one side and then, flip over and continue cooking until lightly browned and the cheese is melted.

4.      Put the finished quesadilla on the board and cut into half. Cut each half into thirds. Place on a salad plate, points to the center. Place the two salsas in ramekins in the center of the plate. Drizzle the sour cream in center of plate over both salsas.

5.      Finally, sprinkle with the bias-cut green onions around the rim of the plate and garnish with a lime wedge on a cocktail fork, a parsley and celery sprig, and 2-3 radish flowers. Dust with parsley flakes over everything and then, SERVE HOT!

Everyone loves Mexican food, particularly the younger folks running around out there, something most of us notice every time a chain restaurant of one type or another advertises on television.  Therefore, I say, we must take advantage of that amazingly large pot of money and to put it to good use—OUR use!  Everyone loves this appetizer as will you so give it a shot and see what it does for you!
Flour Tortillas—use only the Best!
Alright, that means tomorrow is the best day of the week, HUMP DAY, and then we have but three more days to go.  I am excited by the fact that it appears that I will be authoring articles for the blog for ONE week this year.  What else I know is that I will NOT be the one doing the 1,000th blogpost, something that is horribly sad because the person who does it receives a bonus of $1,000 and a vacation for their immediate family to Uganda, Africa!   Boy, would I love to go on that trip and if I could do it naked with the Rock, let me tell you, I would not be afraid.  With my luck, however, they might pair me up with Snoop Dog, sorry, that man looks like a lowlife bum and probably smells like one, too!

THE STAR COLLECTION
As always, we have a great time around here and that is why we want all of you to become a part of the organization by submitting articles to us for inspection and full-credit.  It is a great thing if you would do this, as it is a symbiotic relationship: we give you the space to share your recipes and in return, you send us more and more people who will become dedicated followers of the END.  Currently of multi-diversity across the Internet, it is important that we hear the voices of more and more people from all walks of the foodservice profession —join us. We urge our readership to write to us, leave comments, and if there are any of you, who would care to write an article for us, please get in touch via Magnolia Hilltop Brewers, P.O. Box 20669, Bakersfield, CA 93390-0669.  We obviously do not pay anything but give YOU full byline and that, my friends, is worth its weight in gold.  We want as many people who want to write to be able to do so and we believe that by presenting a forum for our fellow chefs, we are doing something for our beloved industry.  We love diversity and hope to add new and different authors to our pantheon of chefs, food and beverage directors, and culinary professionals.  Come on and join us, it will be fun! Expect that when all of us have run through our cycle, we will be introducing some brand-new talent or so Stinky says.
SCORCHING BEAUTY
We have touted the AARC Technology Company here in Bakersfield, CA, and must add the Nerds on Call.com folks.  Without them keeping our blog up-and-running, there is no telling where we would be now.  We have a great many problematic issues here at the AICP-END because even with the best security systems in the world, malware and other terrible fecal materials manage to penetrate the blogsite.  Do yourself a favor, hire the best, and note, you can have online help via a remote button on your desktop for just $25 per month!  Get in contact with the Nerds now!  Here’s another note: do NOT do business with Galkos Construction, Inc., those people are nothing but crooks as if you lease your system, you will never pay it off, plus you have to pay them for excess energy produced by your system, the electric company does not buy all of it nor do they!  AVOID GCI AT ALL COSTS; DO NOT DO BUSINESS WITH THESE CROOKS!
SUN AND STEEL
We are selling recipes all the time and you can order things you would like copies of simply by mailing us your name, address, the recipe you would like and a check for $1.00.  You can buy an entire week’s worth of recipes when we do a series simply by sending us a check or money order (no cash please!) for $20 and we will have it out to you in the next day’s mail.  Please become a part of the AICP-END by sending us your names, addresses, and information and we will welcome all of you with open arms!
RARE FLIGHT
To buy paintings, recipes, or full article series, please send us your information by mailing us at P.O. Box #20669, Bakersfield, CA, 93309-0669.  You can call about paintings at 661-834-5185; we will take all calls and provide to you as much information as is available.  It is time that we begin taking the next step and to immortalize Beverly Carrick for eternity and begin moving towards the establishment of a website of our own! God bless each single one of you amongst our fan base!
LIGHT AND HEAVY—THE BEST OF IRON BUTTERFLY
Please, make sure you buy all of the music we advertise here on a daily basis, the fact is that if you use our links, it gives us the necessary financial wherewithal to keep this stupendous blog up-and-running.  We do the world a service and it’s even more important when the liberals get a chance to do the blogging as after awhile, reading the words spewed by the conservatives tends to make one sick.  Yes, there are some things upon which, I agree with them but most of the time, they are rare!  I think that we need to keep our national defense strong but that we do not have to spend five hundred dollars on a screwdriver.  We need to let the smartest people be the bean counters and not hire dummies and losers to fill them.  You get what you pay for, right?
IN-A-GADDA-DA-VIDA DELUXE EDITION
Anyhow, let us close with this impassioned plea—please leave some comments and/or become a follower. What's more, why not spend some money and purchase an album by Country Joe and the Fish or Iron Butterfly, and/or buy a cookbook from Amazon.com—we want to make some money here so help us out by buying something!  Allied with them, we are pleased to market their merchandise!  Amazon.com is one of the greatest—if not the ultimate greatest!—online department stores in which, one can find almost everything on the planet.  We love them and they love us and we want all of you to visit them daily, take advantage of their deals on everything from kitchen equipment to cookbooks, CDs, DVDs, and everything else a person could want.  Everything you buy from them puts money into our pockets, which allows us to keep this fine blog up-and-running 24/7/365!  God bless America and God bless Amazon.com!
Thanks, my friends!

This is me back in the 1980’s when I was working at a restaurant in Wasco, CA, my hometown.  I joined the Chefs de Cuisine of Greater Bakersfield, ACF, not long after it was chartered and am still a member even though the chapter is no longer in operation.  I began working in foodservice in the late 1960’s, moved from Wasco, CA, to Monterey, CA, and then returned to my hometown in 2004.  I have been a foodserver, a Mixologist, and am a Certified Cook.  I am equally at home in both the kitchen and behind the bar (and on the floor, too).
