David Sal Silva—Dead but not forgotten!   
Bakersfield, CA, 08-06-2013 Tuesday: Welcome to the American Institute of Culinary Politics-Elemental News of the Day, the place where typically, the conservatives run amuck while giving liberals a miniscule voice.  However, when we liberals do come in, you had better believe that we are going to make up for lost time.  By now, all of you who read this blog should be aware of the case of David Sal Silva, the man beaten to death by sheriff’s deputies and California Highway Patrol officers when they found him passed out in a yard across the street from Kern Medical Center.  If you have NOT, then you need to put the same into the search engine located here at our blog and pull up the information.   As you know, approximately 6-8 officers took turns pummeling, kicking, and abusing this local citizen and in the end killed him after hog tying him and dropping him repeatedly on the pavement.  NO person deserves to die like this, especially when it’s at the hands of officers of the law charged with protecting the community.   I realize that other authors have discussed this tragic event over the course of the past several months and let me say this:  we have undergone the trial of the murderer George Zimmerman, but here in White Supremacy City, we still seek some sort of justice and closure for the murdered man and his family.  What happened in Sanford, Florida, unfortunately seems to happen ALL the fricking time here in Kern County and while yesterday, I called for some sort of divine intervention in bringing Mr. Zimmerman to justice, we have to take care of our own problems here in Bakersfield, California!  The fact that the CHP is not going to cooperate in the investigation into the circumstances of Mr. Silva’s death, much less name their two officers involved is enough to encourage the Reverends Al Sharpton and Jesse Jackson to come to our beleaguered city!

I can assure you that while the murder of Trayvon Martin is a horrible example of what black youths undergo in this society, unfortunately for us here, this sort of thing goes on all the time and worse, it’s usually lawmen that do the killing.  Yes, they put them on desk leave for a week or two but then when the coroner’s report comes in as well as the department’s investigation, ninety-nine percent of the time, the people responsible for the death go free!   I have never seen things like this swept under the rug as often as they are and yet, that is what happens time and again, it’s like the football player who lost his life when an officer accosted him, he swung a beer can or two (reportedly) and then was shot through the head.  David Lee Turner, a former NFL player lost his life a couple of years ago when he went to the convenience store to buy a couple of beers after midnight.  Granted, nothing good happens after midnight; however, why is it that every time a minority member—especially a black man—that he has to put his life into the hands of God and hope that he doesn’t lose it between his destination and home.  It’s almost as if we are under house arrest and that if we take a chance to run to the store after sundown, then it’s possible we might lose our lives due to rambunctious cops!  I think it’s high time we have a federal investigation here in this community and I am pretty damn sure that I heard a call for one several months ago but so far, no one has arrived!

The problem is this: young black males are accused of more crime than either their white or Hispanic counterparts and what’s more, more of them live in both state and federal prisons, are given more time for lesser crimes, and usually end up going back within a year of release.  I know that that sucks, there is not much one can do to contest the facts but at the same time, we need to do something to elevate them to a higher plateau so they do not have to fear being shot on their way to the grocery store.  Losing one’s life over a couple of cans of beer, a bag of Skittles, an iced tea, what is happening to our world when blacks are the number one target of more crimes that any other race put together!  My own children have been raised to respect the authorities and to be careful whenever they find themselves in questionable circumstances.  I am lucky that I have never lost a child or a grandchild and when my great-grandkids get older, I hope to the Lord Almighty that they will grow into old age, too, without going to prison or being taken down by an officer of the law!   People, we must join together and speak out against injustice wherever and whenever we find it as if we don’t, we stand to lose all of our God-given rights, freedoms, and our ability to live our lives unmolested.

The recipe I am presenting to you today is one I discovered years ago when I was working at the Seven Oaks Country Club here in Bakersfield, California.  Granted, I live in Wasco much of the time but over a decade ago, I needed extra work and came aboard this country club’s staff.  While not as swank as the Stockdale or Bakersfield Country Clubs, Seven Oaks tries harder because they are the new kids on the block.  The only reason for their being was the fact that the builder needed an enticement for his high-end homes and voila!  Enter Seven Oaks.  Much of the help there was drug-addled, slipping out the backdoor in the later evening to go out and fire up joints.  If we had late orders, many times I had to cover all of them because the kitchen crew was outside in the rose garden with security smoking the ganja.  Wow, I have never seen a kitchen crew like that but that was the way it was.  Here’s their shrimp cocktail:

Having worked in quite a few top-notch country clubs over the course of my life, I have picked up many ways to do the same thing.  This particular recipe is one I always enjoyed as it utilized the correct size prawn for the right thing.  Profitable, economical, and beautiful to behold and a joy to eat, this is the great cocktail used at the Seven Oaks Country Club at the beginning of the Twenty-First Century and one you can put to use right now!

Yield:  1 serving / Mis-en-place: 2-3 minutes all things being ready:

Method:
1.      Mis-en-place: have everything ready with which to work!

2.      On a bread and butter plate or on a clear glass salad plate, place a pool of cocktail sauce on 1/3 of the plate. Rotate the shrimp around this pool with their tails turned towards the outside.

3.      Place a tight mound of Mesclun on the second third and drizzle with balsamic vinaigrette. Sprinkle with fine diced tomato. Finally, on the last third, lay the cocktail fork with the skewered lemon on it. Insert a parsley sprig into the cocktail sauce and dust the entire appetizer with a sprinkle of freshly minced parsley flakes.

4.      Your cocktail is now ready to serve.  Chef’s Note: always keep the inventory control regarding fresh shellfish as tight as possible cooking only what’s needed on a daily basis and keeping it chilled on ice at all times.  This way, you can never server improper or incorrect product, a must for any professional foodservice operation or chef who values his or her reputation!

This is the favored prawn cocktail of the second-best country club in Bakersfield, California, the Seven Oaks Country Club.  I like the way they did it and this one is perfect for all upscale restaurants, hotels, and country clubs.

I want to encourage you to work hard at making appetizers a prominent menu offering as they bring in more revenue usually, than the entire kitchen department.  It is difficult for many foodservice professionals to see this but if you have a good bar crowd, it is going to be even better if you pair it up with not only an excellent drink menu with specials but also with excellent, five-star bar food.  Yes, the cooks whine and moan but when it comes to getting a pay check versus NOT getting a paycheck or getting one’s Obamacare paid for, they have to see the shining light ahead of them.  They also have to hear the voice of the Good Lord in their ear telling them, “get in there and make those shrimp cocktails, this is what’s keeping you and your family fed!”  Believe me, I have heard the voice loud and clear in my ear as have most of you, we must do whatever it is we must do to keep the cash registers ringing and the doors swinging!

            You know, for weeks I was hot and smoking, friends, I was roaring to come in and do battle with my friend, Moses Scharbug and our boss, Stinkbug.  Those guys are incorrigible conservative hacks at time and it was time for someone to come in and show them the ‘what for.’  It is difficult when one is on the sidelines wondering when the time is going to come for them to come in but eventually, it comes and so do we.  No, not like that you dirty skunks, I am talking about the passage of time as opposed to waiting for the curtains to recede and for a hand to push me out onto the culinary stage.  This, this is the largest platform for politically-minded chefs and cooks and it is true that it’s our duty, our sacred moral duty to instruct our employees so they know what’s in their best interests and to know what’s not.   All of us who either read or write for this blog understand that and I urge all of you to involve yourselves, join with us, and become a part of the fastest growing online super-center of culinary foodservice thought!  See you all tomorrow, have an awesome day!
