Bakersfield, CA, 08-09-2013 Friday: Well, well, well, we have come back to the Grateful Dead now that we have completed the Iron Butterfly discography!  How amazing is that, they have the most albums of any group around including the Beatles and Jimi Hendrix although I must say, Jimi has done quite well considering he died a LONG time ago!  His father up there in Seattle, Washington, sure does keep his son’s memory alive by releasing tidbits of notes Jimi plucked on a guitar when he was five years old.  Let me tell you, Papa Hendrix, at some point, the gravy trains comes into the station, the song is sung by the fat lady, and the end is the end!  Anyhow, God bless you for the work you do on your son’s behalf, you have done an admirable job selling merchandise!

Now, I realize that many of you might think that Chef O’Malley is an old crone who’s had her day in the sun.  Well, let me tell you, there was a time back in the 1970’s when I followed different rock groups on the road going to a variety of concerts.  In fact, I almost made it to Woodstock but my boyfriend at the time suffered an attack of appendicitis and I sat by his bedside while he recovered.  Then, the bonehead dumped me for a nurse about a week later and to think, that I could have gone to the Woodstock festival and bathed naked in the water holes with the rest of the hippies is something I will always miss.  Yes, I lived a wild life as a youngster and know that my poor father and mother worried many a night but in the end, I met a good man, met Earl Tiberius O’Malley in the backwoods of Ohio and married him in Las Vegas, Nevada, a year later.   You know, there were times when I felt bad about the kind of life I had lived as a young woman, especially since my father preached at a Baptist church in Ontario, California, but the fact that I managed to recover says all that needs to be said.  We all go through periods in our lifetimes in which, we do things that cause us to be ashamed but it is better to be ashamed than never to be ashamed.   I will say this, I have done my best to impart to my children what is important in life and what is not and the fact that they understand this, are not judgmental, and have lived their lives as best they can is proof enough that everyone can find salvation in their lives…even Republicans!

Okay, it’s Friday and yesterday, we made the first part of our recipe, Crab Cake Mix #1, so today, we are going to make the appetizer that goes with it.  First, let me say this, you can use crab cake mix for other things, things like crab-stuffed prawns, crab-stuffed fish, stuff like that, all you need is alternatives in which, you can move your product—that is your number one job!  It’s always good to have alternative items on one’s menu so they can use them instead of losing them, it’s important to have different ways in which, one can use every last ounce of a product so they make money and NOT lose it. All too often, modern-day young buck chefs, you know, the pricks that go on these cooking shows so they can get a show on the Food Channel, they’re bums, not true chefs.  If you are going to stand there and allow that limey to yell and scream at you without knocking him out, then I do not know what the heck to tell you!  Especially the women, the women take the line of bullcrap and all I can say is, “where oh where did feminism go?  Is this what modern women do nowadays, let a foul-mouthed little prick like Gordon Ramsay scream and yell at them without putting a fist into his mouth?”  I am so sorry, what the heck is happening to the people of our nation, especially the women, you’d think we were all living a century or more ago.  Shameful, plain shameful!
The Food Channel—a Bunch of Crap!
We now move onto to making the crab cake appetizer, now that my rant is over, I am sure you are all glad for that.  There are a wide variety of ways one can present crab cakes but the idea is to give the customer the illusion that he or she is getting something when in reality, they are getting a little bit of something and nothing more.  As Stinkbug says, “It is what it is” to which, I add, “and nothing more.”  Here we go:  
Rainbow Garnish Mix—extremely important!
(#0624) DUNGENESS CRAB CAKE APPETIZER


Crab cakes are among the best selling modern-day ‘reclamation’ appetizers from long ago, you know, that’s how it is, chefs search through ancient cookbooks searching for things they can give a new kiss of life.  We have a great mix for this version but the recipe works for virtually any crab cake mix one has on hand or can make.  However, it’s also about the accompaniments that go along with it and in this case, the sauce is as important as the cakes!  Here we go:

Yield:  1 appetizer serving / Mis-en-place: 4-7 minutes:

Method:

1.     Mis-en-place: have everything ready with which to work! Pre-form the crab cakes taking care to use your portion scale.  Dust them in additional Panko breadcrumbs and then set aside.

2.     Using a hot skillet or a 350°F griddle, douse it with sesame seed oil and when hot, add the crab cakes.  Cook until they are golden-brown on one side, then flip over and cook until golden brown on the second side; however, do NOT overcook nor allow them to dry out, as that is not acceptable. 

3.     Meanwhile, prepare the setup plate by using a salad plate (small one).  Place the cabbage to one side of the plate while placing the sauce on the other half, pooling it out toward the rim.  Place the cakes at an angle against the cabbage, sprinkle with the Rainbow Garnish, and add the parsley sprig, the celery leaf, and the lemon wedge skewered with a cocktail fork.  SERVE IMMEDIATELY!

4.     Keep crab cakes shaped and formed on beds of Panko breadcrumbs to keep them from becoming moist.  Always use within 1-2 days and never freeze them if you can help it as this rapidly diminishes their quality.

This is the ultimate in appetizer production, one people always love and enjoy.  It’s also worth the money so make sure you keep it on both your bar and appetizer menus so you can move them quickly thereby maintaining quality and keeping the customers satisfied.  Here’s the Rainbow Garnish mix:

This is an important garnish in any fine-dining establishment as not only is it simple, it’s also easy and is beautiful to behold on the finished plate.

Yield:  1 cup / Mis-en-place: 20-30 minutes:

Method:

1.     Mis-en-place: have everything ready with which to work! Cut each item separately using a very SHARP knife; rinse each one—especially the red cabbage!—and then place on a sheet pan, cover with wax paper, and allow to air-dry for 30-45 minutes.  Then, toss the ingredients together, spin dry in a salad spinner should you see that they some or all are still moist.  Keep covered in a container and use for a garnish on completed plates ready to serve: sprinkle it around the rim of the plate and serve.  You will need to make this garnish every day!

This simple yet attractive garnish is a Godsend when it comes to garnishing plates.
Thai Sweet Chili Sauce  
This is the pepper-lime sauce recipe:

Some sauces are among the all-time perfect winners and if this sauce isn’t at the top of this list, it should be.  There is something absolutely tantalizing about lime marmalade and when combined with Thai sweet chili sauce, the results are amazingly delicious and drop-dead delightful.  When used to compliment crab cakes, especially Panko-breaded ones, there simply aren’t words to describe how wonderful the coupling is.  This is one you’ll have to try for yourself and if you can’t find the marmalade at the grocery store, go online: you’ll find it there!

Yield: about 2 cups / Mis-en-place: about 25 minutes:

Method:

1.     Combine all ingredients together in a saucepot and heat until the marmalade melts.  Then, transfer to a storage container and chill to below 45°F and use as a sauce for crab cakes and for other appetizers.

This is a marvelous recipe that you will use repeatedly.  People love crab cakes, especially ones made with Panko Japanese breadcrumb flour.  Believe me, once you’ve served these, people will talk positively about you for the rest of your life!
