Bakersfield, CA, 06-16-2013 Sunday: We have now arrived at Sunday, our final day together for this go-round and please let me say, I have had a great time having fun with you and undergoing some sort of a political-spiritual conversion.  Yesterday, we brought up the topic of the National Security Agency spying on American citizens, and the big deal about it is this: the strumpets on the left keep blaming the last administration for the troubles of this one.  They say, “Well, it started under the Bush Administration just like Guantanamo Bay, Cuba, and a whole bunch of other questionable programs.  However, when you dig down into the guts of the matter is that yes, some of these things did begin under the Bush Administration but were either closed and reopened or transformed by the present administration.  Look at the Gun Walker Program as created by George Bush’s advisors, they set up a system in which, they actually could track guns sold in the United States across the border but then at some point, put a stop to it.  Later, under the Obama Administration’s first term, it became “Fast and Furious” and was about putting the worst firearms imaginable into the hands of drug lords who then used them to kill—not only a Border Patrol agent and a Drug Enforcement Agency officer—but thousands of innocent Mexican citizens.

          When I first heard this, I had a difficult time believing it because the United States does NOT do this sort of thing.  Yes, maybe we did sell arms to the Iranians so we could deal with the communist takeover in Nicaragua back in the 1980’s and yes, maybe we did sell all sorts of weaponry to Saddam Hussein when he was our “friend.”  However, selling guns to Mexican and South American criminals so they could commit the worst of the worst crimes in order to pass tougher gun control laws in the United States smacks of insanity—it's NOT the "American Way!"  As a lifelong liberal, there is no way that at first, I could believe what I heard vomiting out of the mouth of radio talk shows hosts like Rush Limbaugh and Jaz McKay but after a while and after conducting my own investigation, I determined it to be true.  You see, that is the shocking thing is that if one investigates every bit of information and does it methodically, slowly, and with perseverance, one can come up with all sorts of information, which then has a transformative effect.  I think that based on the current administration’s lack of legality; there is no way I can vote Democrat in 2014, if we get that far!

          Anyhow, we have covered many topics over the course of this week and who knows what else is going to take place over the course of the next seven-to-eight months?  We did not even have the time to discuss the case of the Castro Brothers in Cleveland, Ohio, you know, the bastard that held those three poor women captive for a decade or more.  Now, as a father and a grandfather, let me say this: I would make sure that the worst scumbags in the jail in which, he sits, had access to him and murdered him after castrating him.  They would have money and jobs for life, if that was one of my kids!  As Americans, we have grown complacent and seem to pass a yawn whenever we hear stories of the sexual criminals—released into the population by Governor Jerry Brown due to “budget cuts!”—who cut off their ankle bracelets and run amuck in our communities.  At some point, when are we, as Americans, going to rise up and say, “Enough’s enough, we are not going to take this sort of treatment anymore; it’s got to stop!” 
          There are so many stories that there is never enough time to go over all of them and each day, more and more troublesome things become known.  I am shocked that the government now seems to have NO problem flying drones over American soil spying on its citizens in general and farmers in particular.  President Obama would have been crying had his predecessor ever done any of this, of that—have no doubt whatsoever!  I remember when the Patriot Act became law, a law the current president railed against and said he would overturn is still in effect.  How is it that all of these things have managed to slip through the cracks along with many other questionable or illegal schemes, acts, you name it, they manage to slip through all of the time.  If ever a Democrat was undergoing a “fundamental transformation,” I would have to say that that was me. 
(#1796) HOW TO CLEAN A POMEGRANATE 


Pomegranates are a specialty fruit, good for their seeds and the juice, something easily rendered by a talented pantry chef.  To clean one, follow the steps below:

1.     Cut off both ends of the pomegranate and place it in a bowl of water.  Be sure to cover it with about two-quarts. 

2.     Pull the fruit open and remove the seeds from the white pith.  The water will become deep red and the whitish bits of pith will drift to the surface where you can easily skim it off the surface and then discard it.  Remove all of the seeds and set aside.

3.     Pour the liquid through a fine-meshed sieve into a saucepot.  You should have about 2-3 cups of it and to those 2-3 cups, add one cup of granulated sugar.  Place it over a medium-high flame.

4.     Meanwhile, place the seeds into a food processor equipped with a blade.  Grind the seeds to nothing and then strain the remaining liquid into the pot with the rest of the liquid.  Overall, you want ONE quart total of liquid.  To the pot, add ONE TEASPOON of SALT.

5.     Bring the liquid to a boil and keep it there for a couple of minutes allowing the liquid to become syrup.  Remove it from the stove then, pour it into a sanitized container, and allow it to cool.  Use in a sauce right away or label, date, and either refrigerate or freeze for use later.  Don’t maintain it in your refrigerator for longer than 4-5 days at most; discard or freeze by the end of that time.

6.     You can use this juice in sauces, in baking, and in salad dressings. 

Pomegranates are a much-under-utilized fruit except in Middle Eastern cookery where it is very popular.  By cleaning it in a bowl of water, you minimize the possibility of getting the stain-causing juices all over the kitchen counter and upon your clothes.  It also makes removal of the inner pith and the outside layer much easier.

Friends, it is important to know how to handle virtually all specialty fruits as over the course of time, we come more and more into contact with them and develop the ability to see all sorts of uses for them in our minds.  Creativity is a marvelous companion, it comes to us in the middle of the night and as we work throughout the business day.  The trick is learning how to utilize the ideas when they come to us, no matter what it is, you know, we might receive the idea about transforming our pomegranates into a classy ice cream, sorbet, of even a sherbet.  I think this summer, we are going to spend a great deal of time working with frozen treats, cold soups, you name it, we are going to do it, so I suggest that you be here every day!

I  hope you have gotten something from today’s workout, as pomegranates are the key ingredient in many Israeli and Arabic dishes.  Nowadays, we see these sorts of fruits throughout the year, which is a great thing as it allows us to utilize them on our menus without having to worry about whether or not we will have them or have to 86 them.  I assume certain areas of the nation may not be able to do this but in southern California, you can do almost anything you want to do food-wise without having to fret over it.  If you have specialty grocery stores, you know what I mean!
