Bakersfield, CA, 06-02-2013 Su: Welcome to the Sunday Edition of the American Institute of Culinary Politics-Elemental News of the Day, the place where we cover the events of the past week as well as those to come.  Yesterday, I discussed the terror attack that took place in London, England, and much of what I have heard on televised news has downplayed the fact that the man who killed the soldier and then gave an interview to a passerby is originally from Nigeria and a convert to Islam mentioned none of that.  They mentioned none of that, that the man is a radical Islamist and that he is a naturalized British citizen who came from Nigeria, a man who bravely told the citizen on the street that “YOU PEOPLE WILL NEVER BE SAFE.”  Did anyone do anything, did anyone attempt to help the soldier lying dead in the street?  No, no one did anything, the soldier died and only when the bobbies arrived did they shoot him and his partner.  This is the world in which, we live, a world in which, the authorities do everything they can to keep from telling us the truth that the Islamic religion is at war with the rest of the world!

The thing that upsets most of us is that our world is at war with radical Islam and that it presently is devouring us completely while our leaders do everything they can to keep from telling us the truth.  One sometimes has to wonder what is going to happen with the dangerous influx of Muslims entering every western nation without end.  We have organizations like CAIR, the Council on American-Islamic Relations, who go out there beating the bush and spread the line of crap about how “Islam is our friend and means us no harm.”  As someone coming from a country once ruled by the Ottoman Empire, all I can say is that Islam is NOT our friend and that I did not have any problems with the Serbs massacring the number of Muslims they did during the War in Bosnia and Kosovo.  When times are bad, leaders must step up the plate and do the things needing to be done as if they do not, the region and the world is going to hell.  Everywhere around us living in Greece as kids, we saw reminders of life under Islam and remember the stories of our grandparents and great-grandparents.  It was not a pleasant time, nor was it a happy one as life being a “Dhemmi” is not a good thing.  Being a “Dhemmi” means being a slave and in that sense, one can understand the feelings of Black Americans because they suffered much of the same problems during the period of slavery.  However, I think life under Islam was far worse and all I can say is that I am glad I did not live there during that time.  We need to stop it from coming here, however, before it’s too late.

Anyhow, it’s Sunday, you do not wish to hear a political agenda nor do you wish to undergo a lesson on World History and the dangers posed to us by radical Islam.  I realize that many of you living not only in the United States but around the world believe it was “Bush’s Problem,” I’m sorry, it’s not, and it’s a worldwide issue that has been ongoing since the 1970’s.  During the Seventies, we had many enemies in this nation from among the Islamic states but when the Iranian Revolution took place and we helped their opponents, we found ourselves mired in an ongoing War on Terror.  You can look this information up for yourself, you can study the situation and then you can ask yourself questions about why the U.S. government does the things it does.  Why does the President concern himself more with the American people than he does with our enemies?  I do not have that answer, I can only ask the same questions.  The problem is, we are getting hit on all sides, we see Obamacare bearing down on us, we see terrorist attacks happening within the borders of the United States more and more, we see an army of illegal aliens marching across the border.  WHAT CAN WE DO ABOUT IT?  I DON’T KNOW,  YOU TELL ME AND WE WILL DO IT TOGETHER!

Today, we finish the week’s workout of recipes by doing a dessert dedicated to the wife of co-blogger, Chef Brian CarrickLinda Carrick is a godsend, she is amazingly beautiful, always has a smile on her face, and is a lovely woman who has inspired me to create this special recipe for her.  I think it is one for the ages, one that I plan to add to my dessert menus and keeping there throughout the months when blackberries are widely available at a decent price.   All of us here at the blog love Linda, she is the sweetest woman I have met or known and I am pleased to present this dessert named after her.  I know that one day, I will be traveling across the country and will see it on someone’s menu, and I think that that is going to be the greatest compliment ever!  Here we go:
(#1786) BLACKBERRIES ALA LINDA


Blackberries are one of life’s special treats, to some almost as good as sex itself because they are so deliciously sweet.  I love working with fresh locally grown blackberries and in places in which, they were not readily available, and I had them imported.  This dessert is a summertime treat, of that, there is no doubt, I do believe it’s one that you could introduce to your seasonal dessert menu and I guarantee that it would meet with success.  I named this dessert for Brian Carrick’s wonderful wife, a lovely black woman with a sweet tooth unparalleled by anyone else the chef has ever met in his life.  She is as gorgeous as is this amazing dessert; it is one I serve with great pleasure!

Method:

1.   Mis-en-place: have everything ready with which to work! First, prepare the sauce by combing the first THREE ingredients in a heavy-duty saucepot sprayed with food release spray of some sort.  Place over medium flame and allow it to come to a high simmer. 

2.     Meanwhile, in the bowl of an electric mixer equipped with a WHIP attachment, combine the sugar and the clear gel (or cornstarch if that is all you have) and blend well.  As soon as the liquid is near boiling, begin incorporating it into the dry ingredients by slowly pouring it in along the sides all the while rotating the whip around the bowl’s interior.  Stop mixing, scrape down both the sides and the whip with a rubber spatula, and then continue rotating the whip again for 30-60 seconds. 

3.     Pour the mixture through a fine-meshed sieve back into the original pot, taking care to force any blobs of gel through to the liquid below.  Return to the flame, bring to a boil—stirring constantly—and then once there, and allow it to remain there until it clarifies.  Then, drop the heat underneath the pot and add the remaining two ingredients; after 3-4 more minutes, pour the sauce into a shallow pan placed atop a cooling rack and cool it down to room temperature.  When it is, place it into an airtight container and refrigerate.

4.     Prepare the pudding mix as directed using ice-cold milk or half-and-half, if you truly wish to be decadent and refrigerate.  Note: if you wish to make your own vanilla pudding, please do so, the reason I suggest it here is to simplify the procedure for you as much like store-bought cake mixes, it is difficult to beat the pudding mixes available to us; however, if you wish it all to be YOU, then make your own.  I suggest using clear gel in place of cornstarch as it makes a much better product.

5.     Clean the blackberries by picking through them, rinsing them, then placing them into an airtight container and covering with the granulated sugar.  This sweetens the berries and draws out the juice, two very important things.  Keep refrigerated until time to serve.

6.     Prepare the whipped cream by beating the cream at medium speed using a Kitchen Aid mixer outfitted with a whip attachment.  Beat it until it begins forming soft peaks, then begin adding the powdered sugar in along the sides of the bowl with the vanilla flavoring.  When the cream approaches firm peaks, STOP mixing, transfer to a large pastry bag outfitted with a large star tip; keep refrigerated until needed.

7.     To serve, use FOUR elegant stemware glasses placed atop doily-lined underliners.  Into each glass, place one-eighth of the blackberries with some of the juice.  Then, atop the berries, place a similar amount of vanilla pudding.  Atop that, place an equal amount of the blackberry sauce.  Atop that layer, do the same thing all over again, which gives you TWO layers. 

8.   Now, pipe the whipped cream across the top of each glass. Using a cock’s comb or decorating triangle, spread the cream across the top of each glass, back-and-forth until each dessert has a heavy layer of whipped cream replete with grooves.  Finally, atop each one plant a sprig of fresh mint, then, place the desserts atop a serving tray and take out to the awaiting guests.  If desired, plant a cigar wafer atop each one and leave with the diners—they are going to be astonished!

This is a delightful dessert, too good to be true and what with the availability of fresh berries available to us throughout the summer, it is almost criminal not to use them!

You can make your own cornstarch pudding, which in this case makes sense-using cornstarch instead of clear gel.  Clear gel is the perfect thickening agent for clear sauces and pie fillings as in both cases, one desires clarity as well as fluidity at whatever level they want.  Remember, you can buy your clear gel at Amazon.com or from your foodservice purveyor.  My hope is that one day, Smart and Final will begin carrying this animal-based thickener so all of us can obtain 25-pound bags at a decent price.  Look for it, use it, broadcast it to everyone you know!

Friends, do not forget any of the things we have covered over the course of this week, it is important that as Americans, no matter if we were born here or became citizens, to uphold this great nation and to protect our allies.  By now, all of us must be totally tired and overwhelmed with the things we see every night on the television news but that should also stimulate us to defend this great nation and all who love it.  We need to throw those who don’t over the side of the ship and hope that the sharks devour them!
