Bakersfield, CA, 05-05-2013 Su: I am always glad when Sunday arrives as that means my workweek is over and done, I am out the backdoor for the next six months. I expect to return sometime in early October, which is great, I love that time of year.  My wife and I got married on October 31, 2011, and I must say that I am lucky to have Linda in my life.  I could have had other women but she is the true sweetheart of every woman I have ever known.  My second wife in the early days was someone I truly loved but then when she started schlepping the bartenders at the country club, I had no other choice but to find a woman twenty years her junior.  For the next couple of years, she drove me into deep depression because she always swore that she had never been untrue but I knew otherwise and will always know otherwise. I am sorry that I did not dump her sooner and marry the twenty-year-old girl but that did not happen for which, I am glad, because Linda makes all of them look like skanks.

We covered many topics this week, things I hope to which, you have given thought because it is important to protect America for future generations.  I think this “Gay” thing is getting out of hand as last week, something I have been predicting for awhile came to light: now, there is a push to legalize polygamy, it is the next battle on the breakdown of American society, something I knew would follow on the coattails of gay marriage.  I do not believe that gay marriage is something any moral nation can endure and once it makes its way through the legal process, virtually every other form of marriage is there for the asking.  I mean, how can you deny one against another?  When I see articles proclaiming that ‘women and children in polygamist marriages are not hurt,’ what the hell else am I supposed to believe?  Any logical person with a brain on his or her shoulders knows that that is a bunch of bullshit, there is absolutely no way it could ever be true.  If you believe it is true, I suggest you investigate the “lost boys” of the fundamentalist Mormon religion, the elders virtually boot all of the young males out of the society to fend for themselves as there are only so many women to go round and the bulk of the sons never stand a chance.  Read about that pervert Warren Jeffs that man is an evil SOB and he deserves to burn in hell once he dies in federal prison.

Now, here’s the thing: I do not believe that homosexuality is an evil thing; I just believe that many of its proponents are as they intend to restructure society by placing themselves about the “normal” people.  I do not believe their statistics when they say there are larger numbers of fruits than there are; they just want to make it sound like there are.  The idea is that since they cannot reproduce, they will recruit in the nation’s schools, beginning in the elementary schools of America.  Once they managed to crack that door, everything else was just a matter of time and currently, the militarized Gays are marching on straight society.  I think that if our nation is going to remain strong, we need to put all of these movements down but when you have a party like the Democrats who are intent on doing any-and-everything they can to break down the fundamental blocks of society, how do we stop it?

Last week, the senate majority leader, Harry Reid, began the drumbeat about how the Tea Party is really an anarchist party, intent on having NO government rather than limited government.  The Tea Party has never said that and I must say, Senator Reid made sure he did not call them violent, he just intimated that they would be violent if they could be to attain their goals.  What a load of cow crap, there’s not one iota of truth anywhere in that statement.  Virtually every person attacking government is a radicalized left-winger or a Jihadist.   When is the last time someone on the right of America lit off a bomb or attacked a government official?  Never happened, not once, read your American history!  The time is coming and soon when we are going to need to stand up and to put an end to this because if we do not, we are going to lose our nation, mark my words on that, that is what is going to happen!

The other thing that I am insulted over is the fact that the politicians are proposing that they and their staffs are not obligated to use Obamacare because it WILL COST THEM TOO MUCH!  What in the name of God?  If it is going to cost these people who make way more money than most Americans make, and they want OUT of it, what is going to happen to the rest of the nation?  We are going to be overwhelmed with this individual mandate, it is going to be as onerous as it sounds, Chief Justice John Roberts needs to be taken to the woodshed and horsewhipped.   I am so disgusted by all of this that it kills me to think that the men into whom we put so much faith, trust, and loyalty are no better than their democratic counterparts.  I think the Tea Party is going to have to take House Leader John Boehner, House Majority Leader Eric Cantor, and House Majority Whip Kevin McCarthy out in the next election cycle—these slugs have to go!

Since this is Sunday, let’s get down to brass tacks, shall we and jump into our final Hawaiian dish of the week, the classic pork stir-fry.  Making stir-fries is all about the quality of both the ingredients and the sauces and stocks.  It is important always to cook everything just to the point at which it is most perfect and NEVER to overcook anything.  If you do, you ruin the dish and everyone thinks you are a putz!  Do not be a putz, be a professional chef by doing it right every single time!

(#1768) PORK STIR-FRY

 


Here’s a dish that generally is popular unless, of course, you live near a mosque or some such other obstruction, which we seldom see in Hawaii.  Most people there revere pork and this is one of the traditional ways in which, the citizens prepare it.  I remember my first experiences after moving there when all of my in-laws got together and put on feasts, the first time in my honor.  The foods of Hawaii are one of the things that so engrossed me in living in that state because virtually every event required celebration.  As everyone knows, what is a good celebration without food, right?  Once you try this dish, I guarantee you will be a true adept at it!

Method:

1.     Mis-en-place: have everything ready with which to work! Place the first four ingredients into a heavy-duty saucepot and place atop medium flame.  As it comes to a boil, do NOT allow it to achieve it—just keep it below it.  Skim any scum arising to the top and discard it.  This may go on for more than a half-hour so continue removing and discarding it and if, necessary, replace the liquid in the pot.  Cook the pork cubes until they soften so they become tender.  Chef’s note: always buy meat with fat on it; NEVER buy meat without as you lose your best tenderizing agent if you do.

2.     Blanch the vegetables separately from one another in the top of a vegetable steamer over but NOT on boiling, salted water.  Cook each one to al dente-tenderness then remove and place immediately into ice water to retard any further cooking.  Keep there until ice cold, then drain, strain and spin dry in a salad spinner; set aside.

3.     Using an electric countertop mixer equipped with a WHIP attachment, combine the first TWELVE ingredients underneath “the Sauce” heading.  Blend well, and then scoop the mixture out of the bowl and into a heavy-bottomed saucepot.  Place it atop medium-high flame and bring to a boil; once there, thicken it with either a clear gel slurry or a cornstarch one.  Thicken enough to what you consider appropriate thickness noting that the sauce is going to dilute somewhat when you combine it with the meat and vegetables. 

4.     Allow the sauce to come to and maintain a high simmer for several minutes—just until it clarifies—then drop the flame to LOW and allow it to perk slowly over low heat.  

5.     Place a large skillet or sautoir atop medium-high flame and add the sesame oil.  When the oil begins to sizzle, place the pork into the skillet taking care to avoid spattering grease, and begin the sauté process.  Heat it quickly, stirring almost constantly, then when the meat is hot, lower the flame and pour the prepared sauce into the pan.  Heat the vegetables in the microwave and then add them to the sauté, incorporating them quickly.  After a few minutes over low heat, check the seasonings, readjust if necessary, and prepare to serve.

6.     Place a mound of steamed white rice in the center of each serving plate then top with a mound of the pork stir-fry.  Atop that, sprinkle slivered scallions and plant a sprig of fresh parsley atop each plate.  Your stir-fries are now ready to serve.

7.     Cool leftovers to 45°F or below as quickly as possible and note that it is best to separate the sauce from the rest of the ingredients if possible so you can reheat it properly without tearing the meat and veggies apart.  You may also have to add new vegetables if they become overcooked.  Shelf life is about 1-2 days.

Pork stir-fries are a great way to utilize fresh pork meat as most people love them.
