Bakersfield, CA, 05-04-2013 S: Well, hello, here we are—it’s Saturday!  Do you folks recall last week when someone hacked into the Twitter feed and alerted the world to an ‘explosion in the White House’ and that the President had been ‘injured in the blast?”  Suddenly the worldwide markets took a nosedive and everyone began freaking out when within a short time, the word came that the feed had been hacked as mentioned?  I was somewhat stunned at the time as when I first heard it, I thought, “No, this is a bunch of crap—there’s no way our President could have been injured in a blast at the White House!”  I mean if I truly thought for one minute that we could not trust the White House staff or that some Islamic Jihadist idiot had penetrated to that level, I would say—if true—that the nation was in imminent danger of being lost.  How could someone breach that level of security?  As I said yesterday, yes, we live in a nation that thrives on conspiracy theories and that without them; a part of our national image would vanish.  While I do not tend to believe any of these theories, there are many who do and that says something about the quality of our citizens.  I do not ever recall when taking the nation’s history that there were conspiracies regarding the assassinations of Presidents William McKinley and James A. Garfield—we accept those as our history books tell us.  However, I do realize that the level of the conspiracy—or the supposed conspiracy—surrounding the death of the nation’s sixteenth president, Abraham Lincoln—has dogged the nation to this day and is quite possible the reason “why” we tend to believe this stuff.

Then again, I do believe that some of what transpired in the Washington, D.C. of the 19th Century had a lot to do with the president’s cabinet.  I believe that the likes of Secretaries Edwin M. Stanton and William H. Seward among others had a lot to do with the dragnet that swept forth from the nation’s capitol and burst forth across the formerly Rebel states in a horrifying wave.  I believe that they had many grudges to fulfill whereas both President Lincoln and his successor, the erstwhile West Virginian Andrew Johnson, the first president to suffer impeachment proceedings—had no axes to grind and wanted to heal the nation.  However, the cabinet members wanted to grind the beaten South underneath their boot heels and to make sure they never forgot what they were: vanquished rebel states.  Many people lost their lives in this witch-hunt, what with the assassin, himself, John Wilkes Booth, being among the first to die in the fiery shootout at the barn.  Union security forces captured the remainder, mistreated them on a level similar to what our Iraqi opponents faced in the aftermath of the Iraqi Invasion, so it seems that our nation has had a long history of fulfilling grudges and of torturing the unlucky.

Okay, so we know our nation has a history of doing unkind things to those with whom we disagree, whether or not they are foreigners like the Iraqis—who once were a allies—or homegrown enemies like members of opposing parties or like the Civil War, the Rebels.  I do have to say something that strikes me funny; however, do you realize that if John Wilkes Booth were alive today and had served his prison sentence, he would probably be an exalted professor at one of the nation’s institutions of higher learning?  Hmmm, makes you wonder, doesn’t it, I mean, look at President Obama’s friends, Bill Ayers and his wife, Bernadine Dorn—these two were members of the homegrown terrorist group of the 1960’s and the 1970’s, the Weather Underground, people who blew up numerous people like the two Chechen punks.  Now, they hold distinguished professorships in the nation’s halls of higher education and the left brazenly celebrates them for their amazing success, both as terrorists and the fact that they survived it!  That is why Mr. Booth, had he been living today, would probably be teaching at Harvard, MIT, or some such other leftist university.  Wait, aren’t ALL universities in this country leftist?

Back to what I was talking about in the beginning of our essay, do you not find it amazing that someone hacking into the Twitter feeds could so easily cause the stock market to crash in the way it did?  Let us say, for instance, that if somehow they managed to crash our communications satellites, what havoc could they cause upon us by spreading all sorts of false information, rumors, and bullshit throughout the nation?  The way Americans are so quick to jump on the first thing they hear and then run with it is sometimes absolutely amazing as I once thought we were an educated people!   I have to admit that it frightens me to some degree that our enemies around the world as well as within—and we have many!—have the ability to spread falsehoods and that people and the markets believe it and institutions begin to crash.  We must find a way to fight this terrible weakness within our society as otherwise, if we do not, we stand to lose our nation to the first rumor that captures the majority of our media and also penetrates the financial sector.  Like the terrorists planting the first bomb, a weaker one, to draw the bulk of the people and the rescuers and then lighting off an even bigger one, thereby obliterating more people, we must be aware of this very dangerous open door into our nation’s security.  Okay, enough for the day, we are here to cook, not to seek and to bring in new converts to our way of thinking!

(#1766) POLYNESIAN CHICKEN AND TOMATOES

 


Like Top 40 hit singles, chefs tend to make variations on what works multiple times using different meats and slightly different ingredients.  One of the things about working in oriental or Polynesian restaurants is the fact that on the steam table, they have sauce after sauce after sauce and then they have the vegetables and also the meats.  It is a matter of combining the different ingredients together to form a standard dish or a new one and charge a higher price for it.  That is sort of what makes this recipe successful, it follows the same principles and yet, no one has accused me of serving the same old thing.  I know this is going to work for you so why not try it?

Method:

1.     Mis-en-place: have everything ready with which to work! First, prepare the following marinade for the chicken.  Yes, it is designed for use with seafood and shellfish products but it is just as good with any other type of fresh meat:

Method:


2.     Mis-en-place: have everything ready with which to work! Combine the #2 through #7 ingredients together in the bowl of an electric mixer; then, begin dribbling in the vegetable oil alongside the sides of the bowl until you have a well-blended marinade.  Use it on fish and shrimp and for whatever else for which, you might find it to be appropriate.

3.     As for the chicken, ALWAYS rinse fresh chicken underneath cold running water and if you find it appropriate, remove any loose flaps of excess skin.  All too often, we find that much of the poultry available at the store—even the best!—can be oversized and covered with excess, unattractive skin so take care to remove it. 

4.     Place the chicken into a baking dish, cover it with the Seafood Skewer Marinade, add the red onions, and cover with plastic wrap or a tight-fitting lid if you have one on hand and refrigerate them for at least 8 hours, 24 if possible.

5.     When it’s time to cook, heat standard oven to 350°F or a convection oven—fan in the “on” position—and have ready.  Remove the chicken from the refrigerator about 30 minutes before placing it into the oven.  Pour the marinade into a small saucepot and place over medium flame.  Place the chicken into a new roasting pan and place uncovered into the oven.  Bake for about 15-20 minutes, and then pull the pan out and onto the counter. 

6.     Pour the hot marinade onto the chicken and cover the pan with aluminum foil.  Return to the oven and continue the cooking process for at least another 45-60 minutes OR until a stem thermometer inserted into the thickest parts of both the drums and the thighs reads 165°F or higher. 

7.     While the chicken cooks, prepare the Oriental Tomato Sauce:

(#1767) ORIENTAL TOMATO SAUCE

 


Being a master of sauces is what makes a chef “great” as without that ability, they must rely on the strengths of others, store-bought products such as bases, or on basic sauces alone.  This sauce is an excellent one for use in all Hawaiian and Polynesian cooking, even oriental cooking so keep the recipe on hand.

Method:

8.     Mis-en-place: have everything ready with which to work! Combine the first EIGHT ingredients in the bowl of a Hobart (large) or a Kitchen Aid (small) mixer using the whip attachment.  Rotating the implement on low speed, blend the DRY ingredients together. 

9.     Combine the liquid ingredients together and gradually pour them in along the sides of the bowl, mixing on low speed, and after the first couple of additions, scrape down the sides of the bowl.  What you are doing here is dissolving the dry items, particularly the clear gel or cornstarch, so that there are no BLOBS. Add just enough liquid to break it down as many times; the starch attempts to hold together making it form globs in the finished sauce. 

10. As soon as you have added enough liquid to make the mixture soupy, pour it through a sieve into a saucepot sprayed with Crisco Food Spray or some other such food release spray and then press any blobs of starch remaining through it.  Then, scrape the garlic, ginger, and other spice into the pot with the rest of the ingredients and place it over medium flame.

11. Whisk frequently as it comes to a boil, and then when it does, whisk constantly as you keep it at a boil for 30-60 seconds; then, lower the flame to low and allow it to perk over low flame and as it does so, it will clarify.  Once made, pull the sauce from the heat and keep it warm for use.  Add the tomatoes along with the parsley flakes and minced chilis and hold for service or pour across a finished entree. 

12. Cool leftovers to below 45°F as quickly as possible by pouring remaining sauce into a shallow pan atop a cooling rack.  Stir occasionally to allow the heat to escape then pour it into a sanitized container with a tight-fitting lid and be sure to label, date, and refrigerate.  A sauce such as this remains usable for 6-8 days.  ALWAYS reheat atop a double boiler or Bain Marie over semi-boiling water.

This is an excellent sauce that makes superb dishes out of chicken, pork, and even lamb so keep it on hand in your recipe book.

13. The Chicken: when you pull the chicken from out of the oven, pour the residual marinade down the drain and pour the Oriental Tomato Sauce across the chicken.  As for the second measure of wedged tomatoes, place them across the pan, too, then return to the oven and bake a final 5-10 minutes, enough to semi-cook the tomatoes.  As soon as it’s done, pull the pan from the oven and prepare to serve:

14. Using eight serving plates, place a scoop or double scoop of steamed white rice at the ten o’clock position.  At the six o’clock position, place one chicken thigh and one drum and cover with sauce, especially tomatoes.  Cover with scallions, dust with parsley flakes, and sprinkle paprika atop the rice mounds to give them color.  Then, at the 10 o’clock position, place your vegetables and finally, either at the 12 o’clock, in the center, or along the rim of each plate, place the parsley sprigs.  If you wish to garnish your plates with anything else like kumquats, pineapple, crabapples or anything else, do so now.  Then, serve your dinners!

15. Cool leftovers to 45°F and then refrigerate.  Label, date, and use within 1-2 days, no longer.  Always remove the meat from the sauce if possible before cooling both down as this makes reheating simpler or allows you to cultivate the meat for use in a stir-fry without having it covered in thickened sauce.

This is a great dish using the best ingredients brought to Hawaii for the absolute best dishes.  I encourage all of you to find the wherewithal to visit the islands at least once in your lifetime as to me, it’s the ‘Mecca’ all of us must reach at some point.  I am hoping that when my book comes out, I will be able to relocate there and send my doppelganger to do my bidding for me on the mainland as once I leave, I never intend to return to this mess.  If Hawaii becomes crappy, I think that either Belize or Costa Rica are the logical next best places!
