Bakersfield, CA, 05-03-2013 F: Hello, Happy Friday, it’s a great day to be alive in the ongoing era of big government, yet, what did the “big government” approach do for us when the two little Chechen punks tried to blow up Boston?  Literally nothing, it took a man defying the “stay inside” edict to go outside and smoke a cigarette to bring the little bastard down, you know—the remaining terrorist, Dzhokhar Tsarnaev.   What I find to be so amazing is how the truth has come out that not only did Vladimir Putin’s Russia inform the U.S.—on numerous occasions!—about the elder brother, Tamerlan Tsarnaev—and his desire to do us harm by riding the JIHAD TRAIL that one must wonder why the Federal Bureau of Investigation interviewed him but once?   Then the word comes out that maybe one agency was aware of the Tsarnaev Brothers’ radical ideas but once again, the self-imposed government “wall of silence” kept the various agencies from communicating.  Is that not why President George W. Bush created the Department of Homeland Security, to put an end to this Clinton-era mess that allowed the September 11, 2001 conspirators to pull off their fiendish plan.

The thing that bugs me most is the nasty question of why our nation is so in bed with the Saudi Arabian government and why we seem to do their bidding on so many things.  We keep hearing about the mystery Saudi the country either deported last week or is going to deport and how the First Lady visited him in his hospital room while not visiting any of the injured two-hundred-and-sixty-plus victims in the same hospital?  Again, I am troubled by the secretive nature of all of this and the “why” our government is so intent on not calling anything terrorism but just incidents, incidents to be tried in the judicial system, NOT in Guantanamo.  I know that nuts like Alex Jones are beating the drum about what’s to come in the United States as the President and his administration sell us out but I do not quite yet believe all of that claptrap.  If I did, I would be listening to Mr. Jones’ radio show and Mr. George Noory’s, as he seems to visit that talk show radio host more than he seems to visit that man more than any other individual does.

That seems to be the way of America more so than other nation, we seem to plague ourselves with conspiracy theory after conspiracy theory while never solving a one.  We still question ‘who shot John F. Kennedy in Dallas that day’ and also believe that maybe James Earl Ray was innocent of shooting down the Reverend Martin Luther King, Jr.  Add to that many other recent conspiracies like did Sirhan B. Sirhan really act alone or was there a conspiracy to kill Senator Robert F. Kennedy from an outside foreign power?  We also ask ourselves as to whether or not President George W. Bush was behind the terror attacks of September 11, 2001 and now we question as to whether or not all of these multiple terror attacks under President Obama were known by him.  That seems to be the way our nation goes, we seek to blame others for what truly is nothing more than an isolated event but I guess each nation has its own dirty laundry and Americans tend to think we have a monopoly on it.

Well, it’s Friday, there’s no point in getting lost in this entire mysterious hubbub, I am sure at some point, thanks to the Freedom of Information Act, and we will truly know all of the answers to these questions and many more sometime in the next 100 years.  I recall that the British were going to inform the world as to the identity of the infamous Jack the Ripper one hundred years AFTER the crimes occurred but it seems that that timeframe has long come and gone and we STILL do not know his identity.  It is what it is, my friends, that is the world in which, we find ourselves and all I can say is, I hope we find out the answers to all of these mysteries after we die! If the universe is just, we will know the truth but in modern-day America, we are never going to know anything the government does not want us to know nor anything they think we are too stupid to know.  There it is, let’s do some cooking!

Today, we are making a shrimp dish, something that ninety-nine percent of the American public tends to enjoy.  Hawaii has many shrimp, some of it is imported but they manage always to come up with their own, too.  It used to be that worldwide, the best shrimp emanated from the Gulf of California, along the Baha California coastline, but then at some point in the 1990’s, the Vietnamese and if I recall correctly, maybe the Thai began soaking the United States with their varieties as they were cheaper but they were also nastier.   Yet, one cannot argue with saving money on one’s food cost so we sucked it up, bought the shrimp, and over time, people became used to the crappier quality of shrimp and prawns.   We try to use the best but you are definitely a prisoner of what you have available to you.  Maybe President Obama can help us with that.  Let’s write him and complain, ask for his intercession like the Pope, or something, maybe the Grand Ayatollah of Iran?  Sorry, that’s a joke, don’t send the DHS to arrest the writers here at the AICP-END blog!

(#1769) ORIENTAL SWEET-AND-SOUR PRAWNS

 


Now that most items restaurants serve seem to be available to normal folks, there’s no excuse not to fix shrimp dishes either at home or at the job.  This one is one of those classic dishes that virtually ever oriental restaurant under the sun has on its menu, whether or not it’s a part of their ethnic menu that demonstrates how popular this dish is.  Try it, I guarantee you are going to LOVE it, I am telling you, and it’s that good! Bon appétit!

The Prawn Stir-Fry:

Method:

1.     Mis-en-place: have everything ready with which to work! Sauce Directions:

2.     Combine the first SIX ingredients in the bowl of an electric mixer equipped with a WHIP attachment; then, with the attachment rotating around the bowl on slow speed, blend them well. 

3.     Next, combine the rest of the ingredients (with the exception of the final two) in another bowl.  Then, begin slowly adding them along the sides of the bowl, taking care to make sure that the WHIP gets into the tight spots at the very bottom of the bowl—blend well! 

4.     Force the above mixture through a fine-meshed sieve into a heavy-bottomed saucepot sprayed heavily with food release spray.  Add the bay leaves and parsley flakes.  Place the pot over medium flame and begin heating it to near boiling.  As soon as it reaches high heat, bring quickly to a boil, stirring constantly, until the sauce begins to clarify; then, stop stirring, drop heat to minimum, allow the sauce to simmer over low, low flame, stirring occasionally.

5.     Check the flavor and readjust it as necessary, then transfer to your steam table for immediate use or pour into a shallow pan, cooling it to below 45°F as quickly as possible, then transfer to the fridge to complete the cooling process.  Finally, pour it into a sanitized airtight container, label, date, and keep refrigerated.  Always reheat cold sauces to 165°F or higher and NEVER return used leftover portions to the parent batch.  Shelf life is about 5-7 days at most.

6.     The Prawns: peel the shrimp one-by-one and then remove the line from their backs by slicing them from tail to head with a sharp paring knife. However, do not go deeper than necessary, just remove the wastes from each shrimp, and then rinse off underneath cold running water.

7.     The Vegetables: blanch the vegetables separately from one another in the top of a vegetable steamer over but NOT on boiling, salted water.  Cook each one to al dente-tenderness then remove and place immediately into ice water to retard any further cooking.  Keep there until ice cold, then drain, strain and spin dry in a salad spinner; set aside.

8.     The Stir-Fry: place a large skillet or sautoir atop medium-high flame and add the sesame oil.  When the oil begins to sizzle, place the shrimp into the skillet taking care to avoid spattering grease, and begin the sauté process.  Heat it quickly, stirring almost constantly, then when the meat is hot, lower the flame and pour the prepared sauce into the pan.  Heat the vegetables in the microwave and then add them to the sauté, incorporating them quickly.  After a few minutes over low heat, check the seasonings, readjust if necessary, and prepare to serve.

9.     Place a mound of steamed white rice in the center of each serving plate then top with a mound of the pork stir-fry.  Atop that, sprinkle slivered scallions and plant a sprig of fresh parsley atop each plate.  Your stir-fries are now ready to serve.

10. Cool leftovers to 45°F or below as quickly as possible and note that it is best to separate the sauce from the rest of the ingredients if possible so you can reheat it properly without tearing the meat and veggies apart.  You may also have to add new vegetables if they become overcooked.  Shelf life is about 1-2 days.

Everyone tends to love shrimp no matter what form the chef presents him or her!  This is a great dish, one that resonate flavor from one end of the dining room to the other and I promise that you will be pleased with the accolades you receive once you put it on your menu!

          I said yesterday that the history books would not be friendly to President Barack Obama other than to say that the man, ‘got his way on almost everything no matter what it took to do it.’  As they say, history is written by the winners but in this case, if the nation continues to exist in the way in which, the Founders intended it to, his administration is not going to be on the winning side historically.  Then again, I could be totally wrong and end up in one of those so-called NAFTA prisons that continue springing up around the nation (all you need to do is to listen to the Alex Jones Radio Show) so if I suddenly disappear, then you know where to begin to searching for me!  Anyhow, we won’t dwell on the what might happens, we will think positively and hope that the Good Lord still smiles down upon our nation and that the time of Christianity has not yet fallen into decline.  What with the way our Muslim friends behave, however, maybe the American ship has sailed—God forbid!
