Results of the November 2012 Presidential Election
Bakersfield, CA, 05-27-2013 M: Hello, welcome to the American Institute of Culinary Politics-Elemental News of the Day, the place where we discuss matters important to those who spend their lives in the world of professional foodservice.  I am glad to be back, the last time we broke bread together was last November before and after the election and all I can say about that subject is “who’d a thought that President Obama would survive reelection?”  I sure did not, I was hopeful—hoping against hope!—that somehow Mitt Romney would pull off a major upset—would somehow beat a sitting president mired in the muck of politics.  Yet, President Obama sits in the White House for a second term, reelected by the people of America—legal and illegal alike—THERE! I SAID IT, SO WHAT!—albeit with a smaller margin than his first election.  I, however, was certain in my heart that Governor Romney was going to do it, that he would climb Mt. Olympus and dethrone Zeus and toss him over the side in the same way that the Iraqis pulled down the statue of Saddam Hussein when the Americans entered Bagdad figuratively speaking, of course.

Unfortunately, as all of us know, that is not what happened and here we sit, going about our business in year five of President Obama’s two terms in office.  As an outsider, born in Greece and brought to America by my parents decades ago, I have a somewhat different perspective than natural-born citizens.  Greece is a country as old as the Egyptians are, if not older, and has had a tumultuous history over thousands of years.  We have climbed up from the muck of history to become one of the greatest civilizations in the history of the world, a nation studied in countless colleges and universities around the world.  We also became a colony of Rome and then managed to break free until taken by the Muslims.  Eventually, through a series of Balkans Wars in which, we sometimes allied with Bulgaria, Serbia, Albania, and others, we threw off the yoke of the Ottomans for a brief period until taken over by first, the Italian Fascists of Benito Mussolini and then by his ally, Adolf Hitler and the Nazis.  When World War II began to go against the Axis Powers, we began to suffer internal strife as the communists battled the royalists in a horrifying civil war until the British, sent in by Prime Minister Winston Churchill, crushed the Marxists and gave us freedom.

The communists never really left the country and still lurk in the shadows, running as "socialists" and not as communists in order to make it sound as if they are much nicer than they are or would be if elected to lead the nation.  I know how the communists think, I know what they want, I know how they go about achieving it and right now, I must say I see many of those similar signs taking place here in the United States.  Some states are less so while others are more so but wherever you go, the Democrats accomplish their aims by using the millions of illegal aliens who already live here or who presently flood the nation, pouring across the southern border between the U.S. and Mexico as though it did not exist.  I cringe when I see things occurring here every day and know that if somehow, someone does not put an end to it; we stand to lose this beautiful, wonderful country, given to us by God and built upon our blood, sweat, and tears. In fact, I think we are in worse shape than my homeland as at least, they recognize the danger and do their best not to let us slide into the darkened abyss whereas in this country, not only do the Democrats work hard to undermine the Constitution, the Republicans actively help them!  What can we do?

We will discuss this story and others over the course of our time together; I also want to mention the tragic tale of what happened to David Sal Silva, the man beaten to death by Kern County Sheriff’s deputies and California Highway Patrol officers.  As if that were not bad enough, the fact that law enforcement then entered into the homes of witnesses—without warrants!—and waited there for as long as eight hours until the poor befuddled individuals surrendered their phones smacks of an out-of-control government.  Again as someone with outside experience, I have to say that these are the sorts of things that separate a free state from a police state; it looks as if we have gone from the former to the latter relatively overnight.  I feel good that there is a great deal of discussion on this very important topic and yet, there are many more who say nothing or whom seem to feel that what happened is no big deal.  I am sorry, when men and women—sworn to uphold the constitutional rights of ALL citizens!—beat a man to death and then storm into the homes of witnesses to retrieve evidence recorded on their cell phones, what else can we call these atrocious acts but TOTALITARIANISM.

As mentioned, we will discuss more on these topics and others over the course of the week.  All of them are very important, as are others like the Internal Revenue Service going after conservative groups or the Justice Department— as led by Attorney General Eric Holder — going after First Amendment protected rights of the Associated Press’ telephone and information contacts.  What is going on, friends, within the past 6-7 months, look how much has changed since last we met!

Sometimes chefs receive divine inspiration when they visit the walk-in refrigerator assessing what they have left from a very busy weekend.  When the head chef observes the variety of leftover items, he or she sometimes has amazing blasts of revelation in which, they see, not only the immediate picture, but also the greater one at the end of the road, profitability.  This is one of the joys of being a true chef, not some TV smuck who curses the competitors trying to win their approval.  In reality, being a successful chef revolves more around how one can take different ingredients, rework them, and then present them in such a way that the diners swoon with delight when they first see them.  I never thought being a chef required me to misbehave against not only the employees but also the guests; instead, I devoted my time to creating and recreating new and exciting dishes while paying homage to the old.  This dessert is phenomenal; you definitely are going to fall in love with it, of that, there is absolutely NO doubt whatsoever!

Method:
1.      Mis-en-place: have everything ready with which to work! First, bake the cake mix according to the directions on the box.  Chef’s Note: prepare the baking dish by first spraying it heavily with PAM Baking Spray, then lining it with wax paper, then spraying the paper with food release spray, too, and the lightly dusting the sprayed paper with granulated sugar. 
2.      Prepare the Cherries Jubilee Sauce:

Method:
3.      Make the sauce first by having everything ready.  Have the cherries drained and the juice reserved and if you need to add a little bit of water or additional orange juice, please do so. 

4.    Combine the cherry and orange juices together and set aside. Combine the granulated sugar, salt, cinnamon, and either the clear gel or the cornstarch in the bowl of a Kitchen Aid electric mixer equipped with a whip attachment and blend together well. Add the lemon juice, almond extract, and the cherry syrup and then gradually add the juice mixture mixing well as you do so.

5.      Pour the sauce mixture through a fine-meshed sieve into a saucepot sprayed with PAM or some such other food release spray.  Place over medium-high heat and bring to a boil.  As soon as it is, lower the temperature to a low simmer and allow it to perk for a few minutes over a low flame; keep warm until serving time.

6.      When the cake exits the oven, place it atop a cooling rack for 3-4 minutes; then, spray a sheet of wax paper, place it atop the cooling cake—SPRAYED SIDE-DOWN—and then place a second baking dish or sheet pan atop the paper.  Now, using a quick FLIP move, flip the cake over so that the top is now the bottom.  Remove the baking dish in which, you baked the cake, gently as possible so that you do NOT tear the corners.  This is WHY we spray the paper heavily with food release as well as the pan to make the de-panning process that much simpler.

7.      Next, scoop out twelve ice cream balls and place onto a sheet pan lined with wax paper and return to the freezer for the time being.  At this point, prepare the whipped cream recipe below:

Like many other standard products, the more one can make for him-or-herself and from scratch, the more individual your cooking abilities and the more they’ll stand out.  It is important to be able to make fresh whipped cream from scratch and to do it right, something more people than you’d ever believe know how to do.  I love fresh whipped cream and even though it does not stand up for very long, it is the best!  Try making this one and you will see precisely what I mean!

Method:
8.      Mis-en-place Whipped Cream: have everything ready with which to work! Using your electric mixer once more with the WHIP attachment, whip the cream at medium-high speed until soft peaks begin to form, about 5-8 minutes and when they do, begin to scale in the sugar along the sides. Add the rest of the ingredients and stop when it is stiff.

9.      To Serve the Dessert: bring out twelve decorative underliners and place doilies atop them.  Then, bring out twelve chilled serving bowls and into each, place a slice of cake. Atop them, place a rock-hard scoop of Tillamook old-fashioned vanilla ice cream and place them onto a large serving tray or onto an attractive serving cart and take out to the dining room where your guests await the finale.  Place the whipped cream into a large pastry bag equipped with a large star tip or a pair of pastry bags with the same.  Finally, finish the Jubilee Sauce below:

10. Place the brandy in a skillet over a moderate flame and heat up. Add the cherries to the Jubilee sauce, bring out to the table as well, and place on a trivet. Ignite the brandy with a match or cigarette lighter, taking care to stand back, and begin ladling the flaming brandy over the jubilee sauce.  The trick with the brandy is to keep it warm on a steam table but never to get it too hot to burn off the alcohol. Always take care when igniting liqueurs so as not to burn yourself should the flames flare up in your face.

11. Spoon the flambéed Jubilee sauce over the ice cream-and-cake portions with plenty of cherries over each one.  Then, take the pastry bag(s) and twisting them into a tight twist, pipe a large rosette of whipped cream over each serving. Finally, complete the shortcakes with a sprig of fresh mint—your Cherries Jubilee Shortcake is now ready to serve!      

12. This is one of the great, old-time classic desserts of French origins but is mostly associated with the culture and cuisine of New Orleans, LA.  Normally, servers will take a transport cart to the diners’ table and will ignite the brandy there.  They will have the Jubilee sauce in a decorative pot over a burner with low flame just to keep it warm and will flambe it there at tableside in total darkness while the diners and other guests at other tables “ooh and ah” with delight.  This dessert usually commands a high price because of its presentation but as far as costs are concerned, it is not that expensive so it is mostly profit.

This is an elegant combination using ideas from two desserts: strawberries shortcake and cherries jubilee.  The idea is that many times in the world of professional foodservice, we have an amalgam of leftover items needing that we must use and this dessert allows us to combine them together for something entirely new and what’s more, profitable.  Try it out and you are going to see that it is perfect for all of your dessert needs, especially for banquets.

The thing about being a chef is that one needs to be able to enter the walk-in refrigerators and freezers and to look at everything available to him or her every single day of the week.  All too often, the thing that destroys most of the young shooting-star-chefs is their inability to read the leftovers sitting in front of them or the bits and pieces of this and that that need to be utilized and soon before common sense and the county health codes dictate you must discard them.  In fact, when one goes about making their daily specials menus, this is where gifted chefs make money because the smart chef who can transform disparate ingredients into a top-selling menu selection is where experience separates the young and ignorant from the older and successful chefs.   Granted, you need to do this relatively quickly and safely, too, as giving someone foodborne illness is never a good thing but let’s face it, experience teaches all of these very important skills!

            One of the things that is enjoyable here is that when we arrive at the corporate offices of the AICP-END, the first thing Moses Scharbug hands us is every CD advertised here from the day following our earlier departure to the day when we enter the door once again.  This is one of the perks of being an author here at the blog, which makes it great because not only do we get a chance to speak directly to YOU, the readership, we also get this exquisite music, which not all of us have heard or possess.  I must admit that when I arrived last week to commence my week here, I took a crash course in the 13th Floor Elevators and let me say this, for a band that originally put out four albums, they have a lasting legacy of psychedelic music, something sadly, which has been long gone.  Sure, we have all sorts of would-be psychedelic artists, artists who think that dropping a hit of acid opens the doors to the universe and beyond, which sad to say, is nowhere near the truth of it all.   The 13th Floor Elevators are amazing, I almost become stoned and hallucinatory listening to these CDs and the one I recommend to all of you was their final album, “Bull of the Woods.”  Lead guitarist, Stacy Sutherland, was a unique individual, shot to death by an irate spouse back in the late 1960’s, his guitar work is amazing and I highly recommend it.  I will see you all tomorrow!
