Bakersfield, CA, 05-14-2013 T: Buenos Dias, my good friends, welcome to our blog.  I understand that we have cut 1560 AM and 97.7 FM Radio in Bakersfield, California, loose because of the change in their lineup.  I know that whenever I come to town, I enjoyed listening to Ralph Bailey, Jr., whereas the blog's board of directors chose to throw his big drunken carcass underneath a GET Bus.  I do not have a problem with someone drinking on the job or in coming in buzzed or with a hangover as it is what it is in the world of both professional foodservice and radio.  Granted, the guy acted as if he was a genius but any fool can obtain a diploma and call him-or-herself “smart.”  I also understand that the conservatives here at the blog—which outnumber the rest of us by a fair amount—enjoyed the Mark Levin Show being put on at its REAL time, 3:00 p.m.  No one knew that it was only temporary; that they brought in some has been skank from another local station, Inga Barks, a dimwitted radio host if ever there was one!

You see, whether I agree with what is being discussed matters little, I just want to be entertained, not put to sleep.  Many people seem to feel that if they have a microphone placed before them, they can entertain the audience for three long hours.  Unfortunately, that is entirely false as evidenced by Ms. Barks, who is as tiresome to listen to, as she is ill educated.  Granted, I do not enjoy listening to Mr. Levin trashing the President for three long hours but at least, he puts up rational arguments to support his theories and claims whereas Inga is just plain ignorant, you know: estúpido!  I am in total agreement with my fellow bloggers that 1560 AM Radio has destroyed itself because now, the majority of the people living in the station’s range have switched over to 1180 AM Radio to listen to the alcoholic, Ralph Bailey, instead of listening to a woman who think she knows the topic of what she discusses.  The fact that last year, Ms. Barks found herself taken to jail on a drunken driving arrest should say something as Mr. Bailey has been in jail, too, for the same reason.  How many borrachos do we need on air in Bakersfield, California, at any given time, I love my radio choices in Mukilteo, Washington, when I return home!   

Former Florida Governor Jeb Bush—yet another Bush!

You know, last week, I read an article in the local paper regarding illegal immigration and how it is good for some politicians and not so much for others.  The article had to do with Governor Jeb Bush’s possible presidential run in 2016 and how his association with America’s Hispanic community might help him achieve his long-coveted goal.  I am sorry—is he crazy?  I mean, it’s good for us Democrats, if the Republicans do the worst thing they can do by putting up another Bush, my party is going to destroy them, of that—I have absolutely no doubt!   To me, Jeb Bush might have been a much better choice than his brother might, George W. might, but to put up another Bush to run against our likely nominee, Hillary Clinton, seems to me to be nothing more than blatant suicide.   Who in their right mind would put up the third in a row Bush family member, it is going to be great for the Democrats and bad for the Republicans.  All I can say is that I am amazed; never in my mind would I ever have thought of something so stupid, so ignorant, and so crazy than in putting up yet another Bush for President.

Then again, if he could somehow find a way to get the support of the Hispanic community, he might be able to pull it off and in that sense; I do not fear him as much as I would if he was more like W.  W was a man all his own, he took the nation to war two times and finished neither one, President Barack Obama has had to do that.  Now, I see Mr. Obama traveling down the exact same path and it seems to me that the war itch has taken hold on his body.  Syria beckons him in the same way Iraq beckoned George W. Bush and I hope in my heart that he does not make the same mistake, even in a limited way.  He needs to get past the hearings on Benghazi and their aftermath before he can contemplate sending boots on the ground because if he makes a mistake, he may not make it to the end of this second term, he might be impeached if the Republicans somehow regain the Senate in next year’s election—remember, anything is possible!

Today, we continue making frostings for our cakes; this one is a Quick Chocolate Frosting, a delightful way to quickly top cupcakes or a sheet cake one needs to serve as quickly as possible.  Making frosting is not a difficult thing, virtually anyone who knows how to read can whip up a batch and do it quickly, too!  Here’s our recipe for today:

(#1468) QUICK CHOCOLATE FROSTING

 


We always need to be able to whip up a quick frosting or two and this is an excellent chocolate frosting that I have used since the mid 1970’s.  It was useful for a wide variety of cakes as well as desserts for which a chocolate frosting made them even better than they were.  The ingredients are generally on hand in most people’s homes but if not, you can find them at the nearest grocery store.  Never let frosting sit out at room temperature any longer than necessary as they will sour and do become magnets for foodborne illness-causing microorganisms.  Of course, you can have it out to work with, I am just saying; do not leave it out for hours.

Yield:  2 cups  / Mis-en-place: 10-15 minutes:

Method:

1.     Mis-en-place: have everything ready with which to work! Melt the chocolate in a small skillet or in the microwave: keep a close eye on it during the melting process and the minute the chocolate melts, STOP!  Pull it out and be ready to use it immediately.

2.     Using your Kitchen Aid mixer equipped with a paddle attachment, beat the butter until light and fluffy; then gradually begin scaling in the powdered sugar along the sides of the bowl.  As you do so, continue beating the fledgling frosting at medium-high speed until you incorporate all of the sugar note, that as you add it, add some of the milk along with the salt, syrup, and vanilla so all of the ingredients become incorporated into the mix.

3.     If it stiffens too much, add a bit more milk but continue mixing until you have combined everything.  Then with the use of a spreading tool occasionally dipped in warm water, begin spreading the frosting onto a cooled cake. Always apply frosting to a cake in several mounds and then from each one, begin spreading it outward never retreating back upon where it started as this causes the frosting to catch crumbs from the cake into itself —a very unattractive aspect.  In fact, it is truly unprofessional so do everything in your power to avoid this common pitfall!  Use a bit of warm water to aid you in spreading it and then use a decorating comb aka “cock’s comb” to score the surface of the frosting to give it a classic design.

4.     Should you have any leftovers, ALWAYS refrigerate them!  Frosting holds for about 2-3 days—at MOST!—so be sure to use it within that time frame; after that, throw it out as it is not worth using. 

This is an excellent frosting that is quickly made and versatile, being used for many different things whether they be cakes, brownies, cookies, or anything else for which you might need frosting.

I went up the coast of the Western United States and Canada, working all the way, until I made it to Alaska. From there, I moved to Hawaii for a couple of years (1994-1997) before I returned to Washington State and it was there that I met Stinkbug.
