Bakersfield, CA, 05-13-2013 M: Mis amigos, welcome to the American Institute of Culinary Politics-Elemental News of the Day, El Chilote-style!  I am a Democrat and the first one to appear here at the blog for quite awhile so today, we will adopt a slightly different perspective regarding politics and how we discuss them!  Then again, I might agree with some of my more conservative coworkers as believe it or not, I love this nation as much as the rest of you do and the one thing that irks me is the way my fellow Democrats seem to feel that there the more illegals allowed in, the better.  Let me speak on this topic for a moment, I believe that while it is fine to open the nation to more and more of my fellow Hispanics, at some point, if we do NOT assimilate them, they will outnumber our children’s children’s children one day, which is NOT good for the health and safety of our nation!  Unlike many of my fellow Democrats elected to office, they seem to overlook what happened to the Western Roman Empire!  Do you know that it did NOT fall due to the romanticized version of fire and sword, it fell because it could no longer control its borders and could not stop the great migrations of barbarians that kept showing up on its doorstep.  Yes, I went to school, I am educated, I am not a ‘taco-eating illegal farmhand,’ I am educated and have more than six years of higher education under my belt.  Let me explain something to you before you judge me:

The Roman Empire was the work of Julius Caesar’s great nephew, Octavian, better known as “Augustus Caesar.”  He created the Empire but within several generations, it became more a dictatorship than the Republic the earliest Romans founded.  Over the course of the next several centuries, numerous migrating barbarian hordes invaded its borders and since the Romans had weakened due to constant challenges of its rulers, civil wars, plagues, and a decline in its morality, it left the men weakened.  When the barbarians showed up on their doorstep, sure, the armies went out and at first, they usually bested the barbarians, you know, the nomads, the Huns, other easterners, but as time went by, they could no longer beat back the numbers.  When the Roman Legions met defeat, they gave the current invaders a place to settle and drafted many of their men into their armies to help them against successive hordes.   Unfortunately, the process continued to repeat itself and still more and more outsiders earned land through winning battles and added additional men to learn how to fight like Romans.  Eventually, the barbarians took the Romans over and became their “protectors,” something I see happening here in the United States today!  If we do not address this situation, we stand to lose our nation to the Mexicans in the same way the Romans lost theirs to Attila.

Here is what I see: my fellow Democrats, virtually almost all Hispanic here in the state of California and more so, here in Washington State where I now reside seem to feel that the old ways of doing things are outdated and no longer work.  They know that with the passing of the Immigration Bill, one they have snookered the Republicans into backing is only going to add millions more to my party’s ranks, an enormous number that spread throughout the remaining states will change them from red to blue.  However, at some point, ten years, twenty years, maybe even fifty years from now, what happens when those people—who still live and act like Mexican “Mexicans” and not American Chicanos!—say to the nation’s leaders, “You know what?  We are no longer going to do it your way, we are going to do it OUR way—what are you going to do about it?”

Do you see how vulnerable we are making ourselves?  I am sorry, at some point, history repeats itself—like it always does—and those responsible for our folly will be long gone while our progeny’s progeny are not.  Our offspring will have to answer for this mess and believe me; it is going to be a big flaming mess of cow crap, something no one in our government, whether local, state, or federal—seems to want to see or to believe.   As a Hispanic, I am the lone sheep crying “Wolf” in the desert and no one hears me or if they do, they do NOT care.  I do not want to see America transformed into Mexico, I love Mexico, I find it to be a wonderful place to visit and to enjoy but I do not want to see MY country transformed into the border regions where drug cartels behead people daily.   Yet, our states see the criminal attacks becoming worse and worse, these “immigrant lettuce pickers” are not only raping our women, robbing our banks, and molesting our kids, they are taking us over in ways as yet unseen.  When the government wakes up—much like the frog, you know, la rana, in the pot of simmering water as it reaches a boil—it will be too late for us to do something about it.  The frog will not be able to leap out of the pot and we will not be able to put an end to this very dangerous transformation as promised by our President—a man for whom I voted twice!—told us he was going to do.   Fellow citizens, especially my fellow Latinos, I beg you to seriously consider what is coming and to wake up and to do something about it lest we lose our country, the greatest nation the earth has ever seen since the Roman times.  We do not want what happened to them to happen to us, please, I beg you, begin voting the right way so we can put a stop to this.  I realize that the Democrats say they have our best interests in their heart but once we enter their bus, we keep finding ourselves pushed farther into the back.  We cannot let this happen and we cannot allow our nation to reunite with Mexico; if we do, it will never be the same.

Okay, amigos, today and for the rest of the week or so far, as I see it, we are going to make box cake mixes with homemade frostings.  This is precisely how we do it in the professional restaurant industry (or most of us, anyhow!) as it allows us to control food cost, to maintain quality, and to allow us to make our own desserts.  I know that many people out there are going to say that Chef El Chilote took the easy way out and did a week of box mixes that the dumbest dumbbell could do on his or her own but you know what?  There are ways to bake cakes, cupcakes, and other baked goods and there are ways NOT to do it.  Just because most restaurant bakers use cake mixes does not mean there are not ways in which, they can do it better and that is why I am here—to help you!  First, however, we need to make some frostings, these are the things that make cakes and cupcakes works of art.  Yes, as mentioned, you can use store-bought frosting mixes but they suck!  Here is our first frosting of the week, a simple buttercream frosting:

(#1513) SIMPLE BUTTERCREAM FROSTING

 


Using box cake mixes is a time-honored way of doing things in professional restaurants; however, making one’s own frostings is also time-honored.  Using box mixes, one can obtain the same results every time, which is desirable as much as it is cost effective.  You can also use low-end workers to bake the cakes but it is important to be able to make one’s own frostings, something that is extremely cost-effective.  Too many times, buying premade frostings or frosting mixes is not a good way to make money so keep this recipe on hand and you, my fellow chef will see that your peers consider you to be "great!"

Yield:  one quart-PLUS frosting / Mis-en-place: 30 minutes:

Method:

1.     Mis-en-place: have everything ready with which to work! Hook up a Kitchen Aid mixer with a PADDLE attachment. 



2.     Cut the salted butter into small cubes and then allow it to sit out at room temperature for 10-20 minutes or until it is room temperature.  Place it into the bowl of the electric mixer and then rotating the paddle at medium speed, begin beating it. 

3.     As it beats, stop the paddle every minute or two, scrape down the sides of the mixing bowl and the implement, too, and continue beating.  After about 3-4 minutes, begin adding the sugar—SLOWLY!—in installments over the course of the next 8-10 minutes. 

4.     Stop mixing, scrape down the bowl, paddle, and begin rotating the paddle again on medium high speed and as you do so, SLOWLY begin adding the combined half-and-half and the vanilla flavoring, taking care to scrape down both bowl and paddle several times. 

5.     Continue beating and when the frosting has about doubled in size, throw a little bit of crushed ice into the frosting as this will give it some volume; however, when I say a “little bit,” I mean that, do NOT throw in a large handful.  If you feel the frosting is fluffy enough and does not need the ice, do NOT add it.

6.     Scrape the bowl and paddle down, remove the implement, taste the frosting, and if necessary readjust it.  Using salted butter alleviates you having to add it but if you feel it is NOT salty enough, then add some but keep it sweet as possible!

7.     The frosting is now ready to use to frost cupcakes or a double layer cake.  Depending upon how you frost your cake or cupcakes, i.e., if you use a spreader or a pastry bag, you will get 18-20 cupcakes with the bag or about 36 with the spreading tool. Always dip the spreader into hot water to keep the frosting manageable and if using the bag, always keep the pressure on it to obtain the best swirls.

8.     Always store frosting in the refrigerator when not in use and remember: when you use buttercream frosting, it behooves you to keep the frosted items under refrigeration as it overwhelming heat can cause it to sour, not something any baker desires.

This is the standard simple buttercream frosting every baker who makes his or her own desserts uses.  Making buttercream frosting is simple, one needs to pay close attention to the mixing process so that they do NOT overbeat it as this can cause the butter to turn into mush, not something anyone wants.  This means that you need to remain with it until you finish it, do not traipse off to the crapper while the mixer is still running—this can prove to be disastrous!

SAARBRUCKEN ‘78

          Today is the final day in which, we celebrate the life and times of Frank Zappa and the Mothers of Invention, I believe either our longest or second longest offering of fine rock-and-roll music from the OLD days.  I think the Grateful Dead actually went on longer than I would have to investigate the records and see if that is true.  Either way, we do our best to offer the best in the music of the 1960’s through the modern times, something all too many of the young smucks running around out there in the world have absolutely no knowledge.  The fact that the Rolling Stones are back on the road after an absence of 4-5 years is phenomenal, what with Keith and Mick being 70 years old, Charlie at 71 or 72 and Ronnie Wood at 65 years old.  I would so love to see them one more time, having seen them several times in the late Sixties, several times in the 1970’s, once in the 1980’s, and again, in the late 1990’s.  God bless the Stones, I look forward to the day when we begin looking at the British bands once more and complete America’s offerings.  See you tomorrow, have a great day!

This is a shot of me taken when I was a young cook back in the early 1960's. I served underneath a Master Chef for many years before striking out on my own. I went up the coast of the Western United States and Canada, working all the way, until I made it to Alaska. From there, I moved to Hawaii for a couple of years (1994-1997) before I returned to Washington State and it was there that I met Stinkbug.
