Bakersfield, CA, 05-09-2013 Th: This pains me to have to say this but we are terminating our long relationship with KNZR 1560 AM and 97.7 FM Radio in Bakersfield, California, due to the fact that the most important show following Rush Limbaugh’s, Mark Levin’s show, is being put back at 6:00 p.m. slot. This means, it is tape-delayed, to make way for a local skank, Inga Barks, someone whom we equate with the terminated Ralph Bailey Jr.  We also feel that since they have committed this ignorant act because they feel that it is important to have six hours of local programming, we are no longer going to promote the Jaz McKay show.  If we have to go elsewhere to catch Mark Levin on at his regular time, then so be it, goodbye and good riddance to a once-fine radio station because your ignorance is going to cost you beaucoup listeners in a very competitive market.  The fact that we have worldwide readership and have actively been promoting the Jaz McKay show to become national, it sucks for him and it sucks for all of you.  The importance of Mark Levin, what he has to say, what he knows, what he’s done, it is important that we hear the man at his normal time instead of being delayed by three hours, it makes no sense.  We are sorry to have to do this but we do what we must do, the board of directors debated it for the past week and came to this conclusion last night and that is why you are hearing about it now.  Please go online and catch Mark Levin live wherever you can find him because if we are to begin reclaiming our nation from the leftists who see success beckoning them at the other end of the tunnel, we must do it NOW!

Local Radio Personality, Inga Barks

You know, there is a great deal of newsworthy stories taking place at present, in fact, most of them began in the past few weeks.  Where do we start?  Well, we can discuss the Boston Police Department’s dragnet as it went out and arrested three accomplices or we can discuss the fact that the “morning-after drug” became available last week for girls as young as fifteen years-old over the counter!   As an American who once lived a very wild life, I am stunned at the level of evil plaguing our nation now, the fact that both Democrats AND Republicans seem to be on a suicidal course as they rush to legalize all of the millions of illegals living in our nation, blows my mind.  The war on drugs is long lost and yet, we have a double system in which, state laws continue legalizing various sorts of drugs while the federal government continues locking people up, ruining their lives once they become part of the system.  Over the weeks, I have read some of my colleagues’ thoughts on this topic and I must admit, I must agree, I think the criminal justice system—when it comes to the “war on drugs”—is about making money.  Everyone at every step of the way makes money while they deprive the poor souls caught up in the system of every vestige of their humanity.   I have seen people I know whose kids have been busted for possessing a couple of pills sent to prison, turned into worse criminals, and then back on the streets where they continue those ways.  Many times, a sweet kid that entered the system comes out an angry, violent, murderous individual and then become repeat offenders.  Is this the America in which we all grew up; is this the country we once loved so dearly?

Then, we continually see the inevitable taking place around us as the tentacles of Obamacare begin grasping onto us, seeking our wallets, our billfolds, our spouse’s purses, people have no idea what is coming.  As I mentioned yesterday, I am preparing my employees to become independent contractors, leaving them to pay their own taxes and their own healthcare.  Sure, some of them will be able to do it correctly while others are going to conflict with the government.  What can I do about it?  There is nothing I can do because if I do everything the way in which, the government wants me to, I am going to have to close my doors or plan on going broke as there’s no way I can meet all of the requirements.  Never did I ever think that as Americans, we would end up in this horrendous position and yet, here we are.  The fact that the bulk of this transformation has taken place in the past five-plus years should frighten the hell out of you because up until now, we lived a life in which, we felt the Constitution would ALWAYS protect us and maintain our way of life.  Look at how much has changed since the forty-fourth president took office—did any of you think this possible.

At the current time, I think that I am planning my retirement.  When I heard that our government was going to emulate the Cypriot government and find a way to plunder our 401 K’s, I began looking for a tax haven somewhere else in the world.  I have no problem relocating myself and my family to the British Virgin Islands, Bermuda, or even the Bahamas.  If we remain in the United States, we stand to lose everything for which, we worked night and day, not something I want or any of you should want.  You need to begin searching for a way OUT of the mess that is coming in less than a year.  January 01, 2014 is going to be a day of terror as people begin learning what Obamacare means for them—fulfilling the obligations of it is going to be a nightmare, not something, any of us can do.  The fact that Chief Justice John Roberts sold us out should have alarmed all of us but then when I look at my fellow Americans, all I see is the executioners leading my fellow sheep to the slaughter. This means, it is time for my family and I to abandon the sinking ship, the USS America and head somewhere else to find refuge!

We have three more days to discuss these topics and more so now, we must move on to the topic of the day, making Jimmy Dean Country Sausage and Eggs.  I love working with sausage, there are many different ways in which, the wily breakfast chef can do it, but I must say, that my way is the BEST way, I think you are going to agree once you sink your teeth into this moist, succulent patty with two gorgeous eggs!  Here we go:

(#1775) COUNTRY SAUSAGE AND EGGS

 


Jimmy Dean is an excellent brand of patty sausage and nowadays, the practice in most restaurants is to highlight the brands used as this typically drives up menu price thereby increasing one’s overall profit margins.  I love working with breakfast foods while not as artistic as let us say, the dinner menu, it is still a lot of fun in today’s culinary world.  People enjoy eating tasty foods and this dish is among the best of all of my breakfast menu items.  Try it once; it becomes addictive, sort of like breakfast crack!  (No, I should not say that, drugs are horrible and it is not a good thing to make fun of something that is destroying our nation).

Yield:  6-8 servings / Mis-en-place: 4-8 hours (potatoes) 8-12 minutes to cook:

Method:

1.     Mis-en-place: have everything ready with which to work!  First, prepare the O’Brien Potatoes:

Potatoes are wonderful—they are like a blank canvass awaiting the chef to apply both his artistry and his tools.  Potatoes O’Brien are one of the classic potato dishes, one seen in a wide variety of restaurants serving everything from breakfast to dinner and this recipe is among the best of the best. I suggest you give it a try on your breakfast menu as not only does it up the cost of the menu item, it also allows the chef to utilize leftover bits and pieces of various vegetables, which makes them profitable.

Method:

2.     Using a vegetable steamer over boiling salted water, cook the potatoes WHOLE.  Steam them, depending upon their size, 45-60 minutes or until a paring knife can penetrate them but still meet some resistance.  Do not overcook the potatoes as this ruins the dish.  Once the potatoes meet the description, remove them from the steamer and plunge them into a bowl of ice water.  Then, peel them and refrigerate for about 30-60 minutes. 

3.     When the potatoes are cool enough to dice without them falling apart, dice them fine using a sharp knife; set aside.

4.     Using the vegetable steamer once again, with fresh salted water, blanch the peppers and the onions.  Each time one becomes tender, remove it and plunge it immediately into a bowl of ice water.  When cool, drain, air-dry (or spin dry in a salad spinner) and set aside.

5.     Next, using a large heavy-duty skillet, add the butter and place over medium-high heat.  Add the peppers, onions, and potatoes and sauté gently until tender.  Add the seasonings and sauté gently until everything is heated through and the spuds are somewhat crusty—they are now ready to serve.

6.     Note: you can prepare the ingredients the night before you plan to serve them, just keep them wrapped up tight in plastic wrap or in sealed containers.

7.     Next, prepare the seasoned flour:

Method:

8.     Combine all ingredients together and store in an airtight jar, baggie, or whatever else and either keep at room temperature or in your freezer until needed.

It is important to have a seasoned flour recipe for breading different foods and this is a good one.  You will use this recipe many times.

9.     Next, when it is time to cook breakfast, prepare your Jimmy Dean patty sausages by removing the wrap from the roll and then slicing them into the specified size.  Use an ounce scale to simplify this task and then keep the patties between sheets of patty paper so they do not stick to one another.  ALWAYS keep them chilled.  To cook the sausages, you will brown them atop a 350°F griddle or in skillets.  

Breakfast Assembly:

10. With everything ready with which to work, bring out your egg skillets.  Breakfast cooks—except in places like Applebee’s and other “popular” restaurants—breakfast cooks prepare eggs to order using their own trusty egg skillets.  Heat them over medium flame and add some oil.  Prepare your eggs to order depending upon how your guests want them.   

11. Meanwhile, when your preferred choice of cooking the sausage patties is ready, dust them in seasoned flour and then cook them to preference by cooking them atop the griddle, in the skillet, or even by baking them in the oven, if you are doing a larger quantity.  Whichever way, save the sausage fat for use in other preparations; i.e., Country Gravy—aka “Sausage” or “White” Gravy, as it is a stupendous flavoring agent, much like bacon fat.  Chef’s Note: keep the patties warm in a low-temperature oven or by the burners as you want it to be hot and moist—this is important and desirable.

12. Now, the time has come to prepare the eggs:  place some oil into each of the skillets after spraying them with Crisco Pan Release and when hot, add two eggs to each skillet (unless, of course, you are poaching or shirring them) and cook to order.  Over-easy eggs take 1-2 minutes, over-medium’s take about 2-3 minutes while over-hard requires about 3-4 minutes.  You can speed the latter by breaking the yolks yourself once you drop the eggs into the skillets.  Always dust the eggs with some of the Stinkbug Seasoning as this gives them amazing flavor! Chef’s Note: most people no longer eat sunny-side-up as they can possibly cause salmonella illness due to their being undercooked.  If you have the opportunity to buy eggs from a local source——do so!  Always rinse the shells of the whole eggs under cold running water. 

13. To Serve: with the eggs cooked to order, prepare your plates by placing the appropriate number out before you atop a work surface.  Place two eggs at the six o’clock position on each plate followed by one sausage patty at the ten o’clock and potatoes at the two o’clock.  Dust the plates with freshly minced parsley flakes and plant an orange slice with a parsley sprig thrust through their centers.  Accompany with two slices of toast per order accompanied by whipped butter and fresh fruit preserves, jellies, or jams.  

14. Leftovers: years ago when I was a young chef, we saved busted egg orders for use in making fried egg sandwiches but nowadays, it is advisable to save nothing save the meat as you can seal this in one of those vacuum storage systems.

Sausage patties are an excellent choice in many a restaurant as they are quite popular, easy to use and to store, and if you place the brand on your menu when you design it, people tend to order the more expensive items by name alone.  The smart chef usually serves both link and patty sausage and the good thing about the latter is that if you sell less of it than the link variety; you can keep it frozen as it quickly defrosts while it cooks.  The seasoned flour is optional; however, I find it to be a wise accompaniment as it keeps the meat from shrinking while providing maximum flavor.  Either way, you be the judge!

          Our break in ties with those at the local powerhouse radio station is going to be complete at the end of this week.  Those of you who once read our old blog at Choseit.com recall that we used to call for the cancelation of the Jaz McKay show, and then, we gave him and his producer, Mr. Puck, a break; but NOT now!  Now, I think we are heading in that direction again as we are lumping him, the worthless skank, Inga Barks, and Ralph Bailey all together in the same stew pot.  When we cut someone loose, it’s almost impossible for them to recover from the drop in business and that is too bad for the smucks running the station.  The one thing we will never do is to begin promoting anyone at the station with the exceptions of Rush Limbaugh, Mark Levin, and George Noory.  As for the local talk show hosts, I suggest you find the Levin Show at 3:00 p.m. somewhere else and then find Laura Ingram or the Michael Savage shows following his show.  The times they do change and sometimes, it’s sad and sometimes, it’s not!  The fact that we give them free publicity should make them think twice but alas, they tend to overlook our power within the blogging community.
