Bakersfield, CA, 04-16-2013 T: I was born in San Diego, grew up in a middle class family and never once did I ever question my heritage as a Chicano or that of my relatives, many of whom came to the United States from Mexico.  My abuela, mis tías, all of them had come across the border at one time or another and had gone either back when their husbands’ work ended or continued to remain in the nation.  It was not until I came to Bakersfield that I realized that back in the 1980’s there was a serious crackdown on Hispanics and that if I didn’t want to find myself in an ICE van headed south, that I had better have my birth certificate and plenty of forms of identification on me.  At the time, I never thought it racial to ask me for my “papers” and when I willingly presented them, showed them who I was, and from where I came, they didn’t bother me anymore.  Back in the 1980’s, all sorts of stuff was going on but the big thing was that Mexicans who didn’t have papers or papers like I did showing I was a citizen risked deportation because the U.S. government involved itself in bringing large numbers of El Salvadorans to the nation due to their civil war.  It was as if suddenly, overnight, EVERY Mexican living in the state of California was being rounded up and shipped out to make way for a new breed of Hispanic, someone much more problematic than the Mexicans are.

  Now, do not get me wrong, I love my country but I also have many relatives living south of the border and I have spent time going back and forth to visit my family on numerous occasions.  I do believe that our nation needs to do something about the border and that the government needs to do it soon.  I realize that to some of my far left liberal compatriots, this sounds like sacrilege but let’s face it, at some point—unless President Obama intends on holding onto office for the rest of his life!—someone from the other side is going to end up being elected and who knows?  They could build their administration on the things Mr. Obama has managed to get away with—you know: recess appointments when there’s no recess, forcing Obamacare through both houses of Congress against rampant opposition across the nation, and basically remaining popular even though the economy is his fault—and might become far worse, possibly a TOTAL dictator.  We have always to remember that what goes around comes around and that could be the death knell for the nation.  We have to fear the chief executive who behaves extra-constitutional meaning someone who molds it to the way HE wants it.

Okay, I realize that with yesterday’s rant about firearms and the idea that the White House should never capitalize on the misery of someone who’s not only lost loved ones but has lost a child or more to a crazed shooter.  I do not think that the Sandy Hook parents should be paraded in front of the cameras no more than I believe they should stand in the halls of congress passing out flyers to members of both houses. To me, that is something that should not be permitted as it makes whoever questions it look like he or she favors the murder of children.   I bet that deep down inside them, each of the parents who lost a loving child secretly wished that someone on the campus had had a firearm, went, and put a bullet through Adam Lanza’s head.  I bet that not a single parent wishes that a school administrator or a teacher had not had a 45-caliber handgun tucked away in their locker. I bet they wished that the first moment shots were heard, that he or she went and retrieved their gun and punched holes in that despicable little puto for having shot the number of children he did.  Surely, had someone had a gun, slapped a clip into it and went and put his or her life on the line and taken out that little bastard, that more children might be alive today!

Sure, many of my friends criticize me for holding the views I do but I tend to be more akin to the Democratic Party that had men like Harry S. Truman, Lyndon Baines Johnson, even Jimmy Carter than the men running the party today.  I was a fan of Bill Clinton and voted for Hillary but it seems to me that when Barack Obama surged onto the scene that suddenly, the party lurched far left.  They lurched farther left than I was prepared to go and while I still am a registered Democrat, I have doubts about the direction my party is going.   At some point, someone is going to have to purge it of the likes of Nancy Pelosi, Harry Reid, Barack Obama, Chuck Schumer, and many, many more. I hope my party is listening to this plea because not only does it come from a disillusioned Democrat; it also comes from a Latino, a member of a fast-rising minority in this nation.  My roots in Catholicism are deep and this ever-increasing drumbeat from the far left regarding Gay Marriage is tearing my allegiance to the party to pieces.   I hope that the Democratic leaders are listening to me because at some point, I may cross to the other side that is if they can rid themselves of all of these wanna-be lightweight pseudo-Democrats like Lindsay Graham, John McCain, Mitch McConnell, and a whole host of others.  I am sorry, in 2012; all you could come up with was Mitt Romney, a guy with a horrible healthcare plan of his own?  Please, give me a break, put up someone on a par with Marco Rubio of Florida, maybe Rand Paul, hell you should have helped Lt. Colonel Alan West retain his congressional seat in Florida, anything is better than the bums you continually put up!

Okay, enough of this for today, it’s time for us to do what we came here to do today, and today, we are making a delicious Mexican-inspired salad, perfect for the nights when you have a Latino Night, if you serve Mexican food, you need to serve the appropriate salad with which to accompany it and this is the one.   The key to doing this is to have the appropriate dishware to pull it off, believe me, if you do that—the guests will go wild with lust for your food!  Here we go:

(#1750-B) MEXICAN SALADS I

 


One of the things most important if one is a chef is the idea that you can present menus based on all sorts of different cuisines, not just the one in which, apprentice-masters schooled you.  If one can reach out and combine disparate ingredients into something memorable and delightful, then one is going to go forward and become an excellent chef.  This salad is but one-step along the way as it enlightens the pantry chef and enlivens the guests.  It is beautiful to behold, a joy to eat, and something for the ages whenever one presents “Mexican Night” to a bunch of non-Latinos or those not close to their heritage.  Always have the appropriate dishware with which, to intensify the effect and you will be quite successful! 
Yield:  four servings / Mis-en-place: 30 minutes:

Method:
1.     Mis-en-place: have everything ready with which to work! First, make the salad dressing:

This is an excellent Mexican-style salad dressing, perfect for use in Latino buffet nights or for when you need a tangy, herbal-infused salad dressing or marinade.  You can spice it up by tossing in some chilis of choice, noting that first, I advise you sauté them in a skillet to increase their potency but ALWAYS take precautions so that you do not touch any sensitive parts of your body lest you live to regret it!
Yield:  about 1.5-quarts / Mis-en-place: 24-48 hours:

Method:

2.     Mis-en-place: have everything ready with which to work! Using an electric mixer equipped with a WHIP attachment, combine the ingredients together on low speed.  It is advisable to use the ring attachment so as not to spatter the walls with oil. 
3.     Pour the dressing into a sanitized airtight container equipped with a tight-fitting lid.  Label, date, and refrigerate.  Take out the desired amount and if you have leftovers, store it in a separate container labeled, dated, and kept refrigerated and NEVER return used amounts to the parent batch.  It is common to keep the dressing refrigerated for 24-48 hours before using it so maximum flavor develops.  The shelf life is about 14 days. 
This is an excellent Mexican-style salad dressing, which you can use as a marinade, too. Proceed:
4.     Using four Hispanic-themed large serving plates pile a mound of Mesclun lettuce atop each one.  Then, place the avocado slices on each one at seven o’clock, the celery at ten o’clock, the carrots at two o’clock, and the Mandarin orange segments at five o’clock. 
5.     Next, place the pineapple chunks at six o’clock, the strawberries at eleven o’clock and the grapes at both one o’clock and at four o’clock.  Peeling grapes is easy, it just takes some time so using a razor sharp paring knife; peel them so you have a multi-hued object.  Over all, scatter the scallions and parsley flakes and then plant each with a sprig of fresh parsley—or fresh cilantro for that matter!—and take to the guests.  Accompany with additional goosenecks of salad dressing, hot tortillas, butter, salsa, and you have it!
Ethnic salads are always a good thing to have in one’s recipe books as it allows you to reach out and diversify one’s menus.  I always enjoy having “Mexican Night,” or “South American Night” and the fact that most of the diners coming to my establishment really have little to no idea as to what—exactly—constitutes a “Mexican Salad.”  With this formula, you can show them!  In addition to that, you also have the Cilantro Dressing, something you can put to use on a wide variety of things so I would definitely add it to your repertoire if I were you!

          I am amazed at some of the comments that have come in that we have had to 86 due to the anger expressed at what me—Chef Pedro Munoz—as shared as his own personal opinions!  That is the problem with Democratic Party politics, if you step outside the box into which, each of us has been placed, it is as if one has committed the worst traitorous act possible.  As I mentioned earlier in the article for today, this is not my grandparents’ Democrat Party.  The one I joined decades ago seems not to want me anymore and that truly hurts me.  I am becoming susceptible to the idea that a third party is going to form that is going to take in the old-time Democrats and combine it with the Tea Party acolytes.  We need to do something to save this nation, to save its constitution, that is still the greatest living document ever devised, and it has influenced so many nations to find something similar to what we have.   When I listened to some of the clips of former British Prime Minister Margaret Thatcher speaking (you know, she died last week two Sundays ago), she sounded as if she was saying something similar that she had been left behind by her party.   I am telling you, this feeling of disconnect is one of the root causes there’s been so much violence over the past five years and I hate to compare it to the same time we have had the first minority president ever in office at the same time.  Something is definitely wrong in America now and it kills me to mention it.  Let’s work together to save our nation shall we?  More on this tomorrow.
