Bakersfield, CA, 04-15-2013 M: Hola, friends, welcome to my turn to do the blogs for this upcoming week, as always, I am excited to be back!  When last I was here, my family and I took a lengthy vacation due to the upcoming end of the Mayan calendar, we flew down to the Mexican coastline where we stayed at a lovely home overlooking the water.  We spent our time fishing, going out on the ocean and doing it along the Gulf of California, either way, the fishing was great, our vacation excellent, and lo and behold: the world did not come to a fiery end!   All of that means that all seemingly is well but you know there is something that keeps me from sleeping at night; it is the ongoing takeover of the nation by our present government.  I am a lifelong Democrat, have been since the moment I first began to walk as both my parents and the rest of my relatives espoused the progressive ideals.   I want to see the poor clothed and fed, I want to see the sick given medical treatment without breaking the bank.  There are so many things I want to see that I have spent my life working to instill those ideals in the people working for me, especially the upcoming generations of young chefs and cooks, as they are the ones who will continue leading our foodservice nation forward.  It is important to educate through the way one lives his or her life and not through constant politicking.  One can go on and on about how one group of society has mistreated another, and I never saw much use of bringing out the class warfare that nowadays seems to be rampant.  If we are ever going to achieve the true idealism we so desperately seek, it has to benefit all of us and not just a certain part of society.

What I am talking about is the fact that every time I turn on the television, I see the poor families of the kids and teachers murdered at Sandy Hook Elementary School in Connecticut blubbering on about “gun control.”  Friends, I own guns, in fact, I own quite a few and never once have I ever fired a gun in anger.  I have taught my children from the minute they could walk to view firearms as the tools they are and not tools of mayhem, murder, and savagery that my fellow liberals portray them to be.   Remember, a gun is an inanimate object; it can do nothing until someone picks it up, points it at someone, and then pulls the trigger.  As far as I know, very few Americans own machine guns, the so-called “automatic weapons,” the ones that fire multiple bullets with the pull of the trigger.  Yet, my fellow Democrats, particularly the hypocrite, Senator Dianne Feinstein, self-professed gun owner herself who would deny all of my fellow Americans the right to possess and to use firearms in a legitimate way.  The guns would not have killed the poor innocent children at Sandy Hook, the moviegoers watching the latest Batman movie in Aurora, Colorado, or the high school students at Columbine HAD NOT THE PERPS PICKED UP THE WEAPONS AND USED THEM!  Guns do not fire themselves, it is the person holding the gun and unlike my fellow Democrats, the ones leading the charge to take all of our guns, I think we need to come down heavy on those whom we see misusing guns for their own ends.  I am sorry, I tend to feel that if society did more to seek out and to help the mentally ill, that Gabby Giffords would never have taken a round to the head and others Mr. Loughner would not have killed or wounded.  Let us help those afflicted with mental illness in a kind and caring way and if proven to be a threat to society, than to neutralize that threat in whatever way necessary.

I know that many are going to send me hateful cards and emails to our blogsite criticizing me for having taken an opposing stand on the issues revolving around guns.  For one thing, NO one can overturn the Second Amendment, no matter how much the bastards try.  Moreover, look, it’s the so-called “gun-free zones” that have all the violence, I do not see thugs and misfits murdering school students and teachers in Texas, a state in which, everyone owns a firearm.   Heck, even the teachers own firearms, everyone owns a gun and the nuts seem to go in the opposite direction.  They go to places like the aforementioned Columbine, Aurora, Colorado, Sandy Hook, ALL self-professed “gun-free zones.”  The lunatic Islamist psychiatrist at Fort Hood, someone the federal government is NOT charging with terrorism—an outrage!—but with a workplace shooting (come on, Mr. Obama, grow a pair!) shot his fellow soldiers precisely because they could NOT carry firearms while on the base!   These are the things that attract potential shooters and the only time they give it up—with the exception of Mr. Holmes—is when someone with a gun is bearing down upon them, then they take their own lives!

I have a feeling we shall be discussing more on this topic as the week progresses as I do feel that it is important to make a distinction between the FAR LEFT LIBERALS and the moderate Democrats, ones adhering to the ways of Senators Zell Miller, Joe Lieberman, and other notables from the past.  It makes me sick to think that MY party now mires itself in the class warfare, gun-seizing insanity, overwhelming government growth; these people promote 24/7.  I though the election of Barack Obama in 2008 heralded a new time for our nation and oh, Lord, how wrong was I? 

Today, we are making salads, I am picking up where we left off several weeks ago and it makes more sense for me to present some salads to you as now, we are entering the warmer months, the perfect time for enjoying top-quality salads.   I have never done this category before so I am excited to get into the test kitchen and devise some delicious salads I know all of you gun-owners—including Jaz McKay, our talented local radio host here in Bakersfield, California—can and will enjoy.   Here is my first salad of the week:

(#1750-A) BEAUTIFUL SALADS #1

 


Currently of government-based fear due to the mis-science of Global Warming, it is good to have several excellent and beautiful salads on one’s menu.  Anytime the liberals invade your restaurant, if you have a stellar salad menu containing gems such as this one, you can make them go crazy by presenting them with a salad such as this one.  Proclaim that it’s environment-friendly, and you are going to convert these dimwits for life, of that, there is little doubt.  This is an exhilarating salad, it is beautiful, it tastes great, and the artistic memory retained in the brain is going to be good for your business!
Yield:  4 side salads (starter salads) / Mis-en-place: one hour due to the nuts:

Method:

1.     Mis-en-place: have everything ready with which to work! Note: we leave salads such as this one to the eye of the pantry chef and quantities may vary so use you own judgment, rely upon it, and you will make beautiful products!  First, prepare the Candied Walnuts:

Method:

2.     Mis-en-place: have everything ready.
3.     In a large stockpot, bring the water to a boil over high heat. Add the walnuts and leave there for 2 minutes. By doing it in this fashion, you are ridding yourself of the bitterness of the nuts.

4.     Drain the walnuts and then toss with the powdered sugar. Deep-fry the walnuts approximately 3 minutes or until they turn a golden-brown. Remove them from the fryer at that point and spread them out over a sheet pan lined with a dry towel and let them cool and dry.
Proceed with cleaning and changing the fryer. Please note, too, that the walnuts will be very soft when they are hot but will become crisp when they have cooled. Store them in a sanitized container with a tight-fitting lid, preferably in the refrigerator.
5.     Using four chilled side salad plates, place a foundation of Mesclun lettuces atop each one taking care to pile it slightly higher in the center of each plate.  Then, on one side of each plate, place a series of tangerine segments in a semi-circle pointed in one direction.  Just to their right, place 2-3 slices of kiwifruit (always make sure it is ripe as unripe fruit can cause gastric distress!). 
6.     To the right of the kiwifruit, place several Chinese-cut celery “points” and then to the right of them, place several candied walnuts and while you are at it, place another small grouping of candied walnuts to the left of the tangerine slices. 
7.     To the right of the nuts place past the citrus fruit, place a mound of diagonally cut carrots and then in the center of each salad, place a grouping of radish slices.  Atop each salad, sprinkle them with red seedless grapes and if you would like to use the tomatoes, place them in a semi-circular mound in between the tangerine segments and the carrots. 
8.     Finally, dust the salads with parsley flakes, a fine dusting of paprika if desired and plant a sprig of parsley atop each.  Accompany with salad dressings of choice by serving them in goosenecks and then, your starter salads are ready to serve.   The key to making artistic salads is (1) to find the correct help to do the job and (2) to allow the mind’s eye to design the ultimate product.   If you do not care for this particular grouping, apply one of your own but the combination of these products delights the tastebuds of the diner so keep it in your recipe books and use it as a house salad if you so desire.
Many chefs strive to get out of the pantry department as quickly as possible because designing salads seemingly is beneath them.  However, if one has the artistic ability to make beautiful salads that can set up the entrée in many ways.  First, a beautiful salad demands the diner to eat it and to leave nothing behind and if they do eat the entire salad, it allows the perceptive chef to serve lighter portions of the main entrée.  Furthermore, the brilliant chef can transform it into a full-sized entrée salad, which is even better as the cost of all the products combined is far less than a piece of prime rib, a steak, or even a lobster tail!

          Well, Day Number One is over, that’s always great, please send me cards and emails telling me how much you think I am a smuck for not following the Democratic Party’s line.  I am sorry, it is now more than ever when we need lifelong Democrats to step up and to say, “Enough’s enough; we need to save our nation!”  Enough of this infighting, we may not be one single people but we are the American people!”  People still come here because even though our leaders and illegals screw it up on a daily basis, they still want to be a part of it.  Yes, at one time, we owned slaves (not my family) and at one time, we stole land from Mexico but remember, they did profit from the loss of the Gadsden Purchase.  The United States bought some of Mexico outright and gained the rest because they won the Mexican-American War.  Just like the Native Americans—who were here before there were Mexicans!—we own them a debt of gratitude but we cannot undo what has already been done, do you get my drift?   Yes, many of us are not happy but we lost as much as the Indians have or the native Hawaiians.  That is the story of history and yet, people still come here illegally to share in the American dream.  All I ask is for the far leftist to stop doing what they are doing before it is too late, you know, when January 01, 2014 arrives.  Believe me, things are going to go to hell quickly, have no doubt about that!
