MAY DAY!

Bakersfield, CA, 05-01-2013 W: Today is May Day, the day when the international communist conspiracy celebrates its good success around the world.  This is the day when in the 19th Century, most European nations had large communist-backed labor unions parading around the streets so they could not only demonstrate their solidarity, they could also influence the intelligentsia with their numbers and their power.  Nowadays, we have a struggling labor sector in the United States that seems only to demonstrate its power in beating up the Tea Party groups around the nation rather than actually making a difference by improving the lives of their members.  I have been a union member several times throughout my life and sadly do not remember them doing me much good over the course of my forced involvement.  Yes, it was forced involvement as if I did not join the union, I could not work, nor could I do anything about where my union dues went.  I am so glad that unionism is becoming an extinct entity around the nation and that more and governors that are more conservative have been kicking their state employees’ unions to the curb.  NO labor organization should ever be able to force a worker into joining something, which, he or she has no wish to be a part; yet, we have a big pro-labor president residing in the White House who practically demands it to be!  I wonder how he is celebrating today’s date.  With the big union bosses of the nation?

A couple of weeks ago, we had a terrorist event in the United States, primarily in Boston, Massachusetts and then word that the FBI and the Royal Canadian Mounted Police has broken up an Iranian-inspired al-Qaida plot intent on blowing the train bridges coming across from Canada to New York.  At the time, that was bad but then New York mayor Michael Bloomberg—one of the worst imbeciles in a position of power within the United States!—made a statement to the press that America really needs to “reinterpret its relationship with the Constitution.”  What the fool means is that Americans need to surrender more and more of their rights as free people so the government can protect us from evil.  Once again, I suspect that there is a big desire to grab guns on the part of Mr. Bloomberg, which should be alarming to all Americans, no matter their political stripe!  Once freedom is lost, no one ever gets it back again as to do so require yet another revolution in order to seize power back.  We have had one revolution so it’s a given that the next revolution our nation would have would be one on a par with the French Revolution, a much more vicious murderous one than the American one a few decades before.

The interesting thing about this is that when one considers the idea that a second revolution would be much worse, let’s investigate that idea:  the American Revolution was about “freedom” whereas the French one was about “class” meaning that there were three classes in France at the time: (1) the royalty/aristocracy (2) the church and (3) the peasants.  They had a government composed of three chambers or so I recall and while the poor had the most numbers, the wealthy and the clergy joined forces together to beat the lowborn every single time.  No matter they had the numbers, when the royals and the aristocrats joined with the church (the first and second estates), they always snuffed out whatever the poor or the third estate attempted to do.  Sure, the government appeared to be one in which all parties had representation but in fact, it was a whitewashing of what the first two estates had been doing to the third: legalized rape in many ways. 

France

At some point, no one would put up with this anymore and the first noted uprising was that in which the citizens of Paris took the city over.  On the fourteenth of July, the citizens marched on the Bastille, the central prison of the city and demanded the release of the prisoners as well as arms from the mayor of the city.  The King of France, Louis XVI had troops marching on the city to quell the uprising and the Parisians were intent on throwing them back but needed arms with which to do it.  When the mob appeared at the gates of the Bastille, the governor of the prison became afraid and ordered his staff of retired soldiers and his thirty Swiss mercenaries to fire on the crowd, which they did, killing at least 90 members of the mob.   Angry, the crowd returned with cannons and with gusto, blew down the doors of the venerable fortress, stormed it, killed all of the guards, and put the heads of the governor and the mayor upon pikes and paraded around the city.  Armed with weapons from the prison arsenal, they repelled the French soldiers and so the French Revolution began.

What is different about what happened in the French Revolution and with what happened in ours?  Ours was about independence; theirs was about class as the French people were done with the rich and powerful, as well as the Catholic Church, which was supposed to minister to them. Because it was about class, their revolution was much more horrible as people denounced one another with the victims dragged away to their deaths at the hands of the executioners operating the guillotine.  They went before kangaroo courts, who eagerly pronounced sentence, and then their guards paraded them through the streets as people hurled every imaginable piece of refuse at the unfortunates and then lost their heads to the ever rising and lowering blades.  Some among us can see the seeds of such a revolution taking place here as we have the “ninety-nine percenters,” you know, the “Occupy Wall Street” garbage, the riffraff that is angry that they have nothing, who will not blame themselves for their own misfortunes.  These people hate the successful, much like the Muslims who need someone to blame for their own inadequacies, they cannot look at themselves.  They see the wealthy as someone whose birth gives them the tools of success and yet, never see the seeds of their own stupidity alive and well within their own worthless hearts.  These people use drugs, drink, knock up women/get knocked up at an early age and so are behind the Obama eight ball forever.  People simply cannot take responsibility for their own lives, they need to blame someone else and it is from this intense brew of anger, hatred, and disharmony that revolutions arise.  Is this what President Obama—the Pied Piper desires?—you be the judge!

We will discuss more of this idea tomorrow.  Today, we are here to cook some tasty Hawaiian Luau Pork, another delicious red sauce replete with other intense flavors, too.  I urge all of you to give this recipe a try as I know you are definitely going to enjoy it, of that, I have absolutely little to no doubt!  Here we go:

 
(#1763) HAWAIIAN LUAU PORK

 


Pork is one of the godsends of the Polynesian culture what with wild pigs running about in the wilder places of each of the islands.  Roasting a whole pig is a time-honored art and while we are not doing that here, we are still using the pork meat available to us, which makes this is a uniquely wonderful and delicious dish.  Try it and discover your island heritage, you will be glad you did! Method:

1.     Mis-en-place: have everything ready with which to work! The Sweet-and-Sour Sauce: in the bowl of a Kitchen Aid mixer equipped with a WHIP attachment, combine the first EIGHT ingredients together; then, combine the remaining items (wet ingredients) together then pour them into the DRY mixture—SLOWLY—while rotating the whip on low speed.  It is important to blend the above aforementioned ingredients the best you can to prevent the formation of any sort of lumps.

2.     Transfer this mixture to a saucepot and place over medium-heat.  Bring it to a boil, and then drop the temperature after ONE minute.  Allow it to simmer over a very low flame so that it clarifies.  Once there, leave it over low flame or transfer it to the top of a double boiler over simmering water. 

3.     Now, to cook the pork, this is what we are going to do: we are going to blanch it TWICE before moving it to the pot of chicken stock.  I designed this procedure to eradicate the scum and other bits and pieces of fresh pork meat that tends to CLOUD the liquid.  Since this is a presentation piece, we want it to be as beautiful as possible when we arrive at the end.  Therefore, blanch the pork meat in the first pot and the minute it comes to a boil, stop, drain the water off, rinse the pork, and transfer it to the SECOND pot. 

4.     Repeat the procedure and then after you rinse it a second time, transfer it to the THIRD pot, the one containing the simmering chicken stock.  Cook the meat until you have totally tenderized it, then stop, pull it off the fire, and allow the pork cubes to soak in the liquid until required.

5.     Meanwhile, blanch the vegetables SEPARATELY in salted simmering pots of water just until al dente-tender; the moment they are, 1-2 minutes approximately, remove them from the liquid, discarding it, and transfer them into bowls of ice water so that all further cooking STOPS.  When cold, drain them and if you have a Salad Spinner, spin them DRY or pat dry with paper towels.  While this is ongoing, cook the rice:

Method:

6.     Place water in an ovenproof saucepot equipped with a tight-fitting lid and then, at this point, add both the salt and pepper.  Turn a standard oven to 375°F or a convection oven to 325°F and have ready.

7.     Bring water to a boil and when it is, add the rice and stir.  It will shortly sink to the bottom and stick and this is the crucial stage: stir it as quickly as possible to get it waterborne and stir over the next minute or two frequently.  Bring it to a boil once more and keep there until the water has dropped to the level of the rice; then, slap on the lid, place inside your preheated oven and bake for 25 minutes or until the rice has absorbed the liquid.

8.     Check and when the water has been absorbed, remove the pot from the oven and crack the lid.  Allow the steam to escape for a minute or so and then fluff it with a fork.  Now, either serve the rice or refrigerate it in a shallow pan for use later in the day.

9.     Serving option: To serve, spoon it directly onto the plate or place it in a serving bowl and garnish with a little bit of freshly minced parsley and a sprinkle or two of Spanish paprika. ALTERNATIVELY, spray 6-8 soup cups with PAM or some such other food release spray and place a few pimientos, parsley flakes, or slivered scallions in the bottom and pack with the cold rice. Heat it in your microwave for 2-3 minutes or until piping hot.  Slap the soup cups on each of 6-8 plates so the rice slides out with its garnish and accompany with an entrée of choice and vegetables. Either way, this is a great recipe.

No cook is complete without a recipe for steamed white rice.  This is the basic formula for making rice in the oven or on the top of your stove. You don’t need a rice cooker to make good rice.

 
The Pork Procedure:

10. Now, in a large stockpot, combine the sauce, the pork pieces, and the vegetables.  Heat the mixture up as this is going to be complete dish.   Broil the pineapple wedges underneath an overhead flame or if you are so-gifted, on a BROILER.  Mark them the best you can and then pull them from the flame. 

11. Fluff the rice and place a mound in the center of each of six-to-eight plates (or serve as suggested in the above rice recipe).  Then, with the aid of a ladle, ladle the Hawaiian-style Pork and Squash over each mound making it as attractive as possible.  Be sure to have sauce surrounding the rice mounds so that it looks “moist” and then on one side, place a grilled pineapple wedge followed by a parsley sprig.  Dust the finished dishes with freshly minced parsley flakes, then, they are ready for service.

12. Always cool leftover rice or pork-and-sauce to below 45°F as quickly as possible.  Do this by transferring leftovers to a sanitized pan and place atop cooling racks to cool.  Then, plastic-wrap, label, date, and refrigerate at or below 42°F and use within 1-2 days.  Reheat in the microwave for best results with fresh rice if necessary but make sure you reheat the food to 165°F or higher.

Here again, we have yet another fine Hawaiian-style pork recipe featuring more or less the same ingredients yet combined in a different way.  Yes, maybe the cherry juice is not native to the islands but then again, so are many other things so let’s not concern ourselves with it.  The Hawaiian people are good at adapting non-native food sources to fit their needs as if we on the mainland adapt ingredients elsewhere from around the world.

          I believe that our nation is facing circumstances similar to what happened to the French during their revolution.  It was a bloody affair, countless people died in horrible ways and even more lost their lives to famine, disease, and the wars that followed.  In many ways, we can compare what happened in France to what took place in Iran because once again, you had a class-based revolution that was horrible to observe from either within the nation or from without.  The important thing is that we never forget our historical references because that is what helps us avoid the potential pitfalls awaiting us among the political rocks of the swirling sea of politics surrounding us.  We will discuss more on this tomorrow so until then, buy some of the recommended CDs, become followers of our blog, and most of all, keep cooking with your eyes open!
