Bakersfield, CA, 04-30-2013 T: Here it is, the final day of April, then we enter the month of May and as always, it appears as it is going to be a very hot month.  I am aware of the problem with Galkos Construction Company and their crookedness regarding their sales and installation of solar systems.  If one believes their salespeople, then one believes that man has also stepped onto the planet, Mars.  Their salesman, Jeff Lennon, a brother of the “Lennon Sisters” (so he says) socked it to the grandmother of one of the authors here at the American Institute of Culinary Politics-Elemental News of the Day by talking her into taking a lease, you know, by backing her into it.  She thought that she had found a way in which, she would benefit by putting double the normal amount of solar panels atop her roof and that the leasing company would buy ALL of the generated power.  She thought not only would she pay little to nothing for electricity, that she would make tons of money by selling the surplus to the leasing company who would then disperse it to Pacific Gas and Electric.  Unfortunately, that was not the way it works, my friends, and now, she is facing financial ruin, the possibility of losing her lifelong home, and of being destitute upon the streets of Shafter, California.  She faces this all because she signed the contract that she thought would not only help her with her soaring power costs but would also help her neighbors by providing solar energy.  You know, saving the trees, cutting out the use of oil, gas, and coal—you know: the whole story!

  What she did not understand was that she owed the leasing company—Green Day—for all energy produced by her system over and above the amount they contracted to buy from her home.  Well, with double the number of solar panels atop the roof, she is generating power like mad and has now found out that she owes them an additional true up of about $300 over and above her current power bill.  The question is, how does one regulate the amount of power one produces?  It is difficult as hell to view the online account and to figure out exactly how much is being produced at any given time.  What’s more, she cannot go outside and shut the system down for half the day because if she does that, they know it almost instantaneously.  Her internet system is directly hooked up with them so the information from the rooftop panels flows from her house to them and they can tell if there’s funny business going on and penalize her.  If she wants to get out of the contract, she is going to have to come up with about $60,000 to buy her way out or if she cannot keep up the monthly lease payments—another $300—they can slap a lien on her home and quite possibly wrest it away from her.

Now, she sits on her front porch, a shadow of the woman she once was, she has no money for an attorney and is frightened to contact the Public Utilities Commission knowing full good and well they will side with GCI.  If she wants to sell her home and move into a retirement village, she will have to find a buyer who will also be able to qualify for the assumption of the solar lease as well as someone crazy enough to take this burden atop their shoulders!

I have to ask this question, how horrible is that?  If you believe that you are doing the right thing by going solar, you are joining many more of your fellow Americans.  The problem is in finding a reputable company with whom to do business and that is not always easy.  Oh, sure, your local utility company probably has a website replete with glowing reviews of the solar providers located in your area.  I am sure, too, that they will be happy to come out to your home, sit down for as long as it takes, answer all of your questions, and then tell you how they hope you BUY the system as if you lease it, you are getting the best of the deal.  They tell you, oh boo hoo, if you lease it, we are responsible for the upkeep for the rest of eternity, something that costs us a great deal of money while you reap the benefits.  You sit there and listen to the sob story and think, “Wow, if I lease the system, they are going to BUY all of the energy produced in excess of what I need and my bank account at the end of each year is going to be flush with way more money than with what I started!”  You think that the salesperson unwittingly maneuvered him-or-herself into the corner and that by jumping on the lease, you will be residing on Easy Street!  Yeah, right!

That is precisely what the bastards want YOU to do, to lease the damned thing because they then benefit from all of the rebates, from all of the government-granted special funds, income, and what not that goes with owning and operating one’s solar system.  First, if you hire a reputable company, the system is never going to break down whereas if you lease it, you are imprisoned forever and cannot get out from underneath it.   Our friend’s poor grandmother sits on her porch chain-smoking cigarettes, openly discussing suicide after burning the house down and ending the solar company’s crushing burden.  This is horrible to hear this once vibrant woman talking this way but every time she calls them for help, they point to the fact that she signed the contract in good mind, that to get out from this bone-crushing mess would almost require an act of congress.  Good luck with hoping for that!  I am sure that we will continue discussing this tragic situation as the week goes by but for now, we must move onto what it is we have come here to do today, cook some Hawaiian food!

Hawaiian-Style Pork and Squash

Hawaiians have benefitted in some ways through their relationship with the British and American whalers and missionaries who came to their islands because they brought all sorts of foods with which the islanders were not familiar.  They brought tomatoes, salmon, corned beef, SPAM, and a whole bunch of other animals, vegetables, and fruits.  When one goes to a typical Hawaiian eatery, many times, they find themselves surprised by the foods offered there because many of them do NOT seem Polynesian in the least and yet—like the following dish—they are.  Try this one and remember, you have the ultimate end taste completely in your hands but note that the three most important flavorings in the Hawaiian pantheon of spices and flavorings are garlic, ginger, and Shoyu or for the uninitiated, soy sauce.  They prefer the Japanese variety—Shoyu—to the Chinese one, however.  Here’s our recipe:

Living in the Hawaiian Islands is an experience most love forever and the time I spent living there was among the best years of my life with the exception of the woman to whom I was married but that is a story for another day!  However, the culinary world there is one of old friends combined with new ones in a wide variety of ways and this dish, featuring typical mainland foods combined in a uniquely Polynesian way is absolutely delicious. I think you definitely will enjoy this dish unless, of course, you don’t care for pork—substitute chicken if you must!

Method:

1.     Mis-en-place: have everything ready with which to work! The Tomato Sauce: in the bowl of a Kitchen Aid mixer equipped with a WHIP attachment, combine the first SIX ingredients together; then, combine the remaining items (wet ingredients) together then pour them into the DRY mixture—SLOWLY—while rotating the whip on low speed.  It is important to blend the above aforementioned ingredients the best you can so as to prevent the formation of any sort of lumps.


2.     Transfer this mixture to a saucepot and place over medium-heat.  Bring it to a boil, and then drop the temperature after ONE minute.  Allow it to simmer over a very low flame so that it clarifies.  Once there, leave it over low flame or transfer it to the top of a double boiler over simmering water. 

3.     Now, to cook the pork, this is what we are going to do: we are going to blanch it TWICE before moving it to the pot of chicken stock.  I designed this procedure to eradicate the scum and other bits and pieces of fresh pork meat that tends to CLOUD the liquid.  Since this is a presentation piece, we want it to be as beautiful as possible when we arrive at the end.  Therefore, blanch the pork meat in the first pot and the minute it comes to a boil, stop, drain the water off, rinse the pork, and transfer it to the SECOND pot. 

4.     Repeat the procedure and then after you rinse it a second time, transfer it to the THIRD pot, the one containing the simmering chicken stock.  Cook the meat until you have totally tenderized it, then stop, pull it off the fire, and allow the pork cubes to soak in the liquid until required.

5.     Meanwhile, blanch the vegetables SEPARATELY in salted simmering pots of water just until al dente-tender; the moment they are, 1-2 minutes approximately, remove them from the liquid, discarding it, and transfer them into bowls of ice water so that all further cooking STOPS.  When cold, drain them and if you have a Salad Spinner, spin them DRY or pat dry with paper towels.  While this is ongoing, cook the rice:

Method:

6.     Place water in an ovenproof saucepot equipped with a tight-fitting lid and then, at this point, add the salt and pepper.  Turn a standard oven to 375°F or a convection oven to 325°F and have ready.

7.     Bring water to a boil and when it is, add the rice and stir.  It will shortly sink to the bottom and stick and this is the crucial stage: stir it as quickly as possible to get it waterborne and stir over the next minute or two frequently.  Bring it to a boil once more and keep there until the water has dropped to the level of the rice; then, slap on the lid, place inside your preheated oven and bake for 25 minutes or until the rice has absorbed the liquid.

8.     Check and when the water has been absorbed, remove the pot from the oven and crack the lid.  Allow the steam to escape for a minute or so and then fluff it with a fork.  Now, either serve the rice or refrigerate it in a shallow pan for use later in the day.


9.     Serving option: To serve, spoon it directly onto the plate or place it in a serving bowl and garnish with a little bit of freshly minced parsley and a sprinkle or two of Spanish paprika. ALTERNATIVELY, spray 6-8 soup cups with PAM or some such other food release spray and place a few pimientos, parsley flakes, or slivered scallions in the bottom and pack with the cold rice. Heat it in your microwave for 2-3 minutes or until piping hot.  Slap the soup cups on each of 6-8 plates so the rice slides out with its garnish and accompany with an entrée of choice and vegetables. Either way, this is a great recipe.

No cook is complete without a recipe for steamed white rice.  This is the basic formula for making rice in the oven or on the top of your stove. You don’t need a rice cooker to make good rice.

The Pork Procedure:

10. Now, in a large stockpot, combine the sauce, the pork pieces, and the vegetables.  Heat the mixture up as this is going to be complete dish.   Broil the pineapple wedges underneath an overhead flame or if you are so-gifted, on a BROILER.  Mark them the best you can and then pull them from the flame. 

11. Fluff the rice and place a mound in the center of each of six-to-eight plates (or serve as suggested in the above rice recipe).  Then, with the aid of a ladle, ladle the Hawaiian-style Pork and Squash over each mound making it as attractive as possible.  Be sure to have sauce surrounding the rice mounds so that it looks “moist” and then on one side, place a grilled pineapple wedge followed by a parsley sprig.  Dust the finished dishes with freshly minced parsley flakes, then, they are ready for service.

12. Always cool leftover rice or pork-and-sauce to below 45°F as quickly as possible.  Do this by transferring leftovers to a sanitized pan and place atop cooling racks to cool.  Then, plastic-wrap, label, date, and refrigerate at or below 42°F and use within 1-2 days.  Reheat in the microwave for best results with fresh rice if necessary but make sure you reheat the food to 165°F or higher.

This is yet another excellent dish from Hawaii, one I had the pleasure of both eating and fixing and it’s amazing to me how well the Hawaiian people have adopted many non-Hawaiian foods into their traditional dishes, things such as tomatoes are not native to the islands but you would not know otherwise!
