Bakersfield, CA, 04-29-2013 M: I am so excited to be back that I am practically speechless!  For one thing, the world did not end in a fiery inferno on December 21, 2012, so I guess we can toss the Mayan Calendar prophecy out of the door—that’s a good thing!  However, once again, we find our nation in discord over the recent bombings at the Boston Marathon a couple of weeks ago, something that leaves me speechless to this day.  I am so sorry to hear that the two terrorists were American citizens or on their way to becoming American, one has to wonder, what in heck is going on?  We allow these people to come here for “asylum” and then when we allow them to attend the best schools, to live their lives in freedom, to chase the American dream, we are stunned when the sons of bitches do something like they did: pile explosives into pressure cookers and attack our fellow citizens while they enjoy a sporting event.  What gives?  I mean, there’s no rhyme or reason as to why these little bastards did what they did and then when you couple it with the talking heads and pundits on the alphabet channels going on and on about how they hoped it was a “white Tea Party member,” I mean, it leaves me in a state of shock.  Then, these a-holes go on to tell us that the fact that these boys are/were Muslim means nothing to the investigation, has little to nothing to do with it, I mean, how can one say something like that when they obviously were emulating the jihadists of their home land?  Chechnya is a well-known Islamist radicalized sub-state in the former Soviet Union, one that has caused our Russian “friends” great distress off-and-on since the iron curtain collapsed.  Hell, the Russians told us to watch out for the older brother, whom we did, but then passed him on into the system whereby he became an American citizen or wait—maybe it was the younger one who’s the citizen, but the older one was the brains behind this horrid attack.

We lost three people, killed by the bombers but have even more wounded in varying states of injury, most of them quite serious.  People lost limbs, eyes, bits and pieces of their bodies thanks to the ball bearings, screws, nails, and other shrapnel that blew them apart.  Now, our leaders, or at least most of the ones in the administration and the President’s party tell us that they will try the surviving brother in the federal court system meanwhile as they smack down and downplay the Islamist connection.  Come on, Mr. President, why won’t you commit to the idea that terrorism is alive and well, especially the homegrown variety featuring naturalized U.S. citizens from hotspots around the world.  Why can we not put a moratorium on the nations that despise us, that hate us, who wish us ill?  Why do we continue allowing Muslims into the United States, I am telling you, there is something terribly distressing that our southern border remains wide open while we continue allowing Muslims into the country on humanitarian grounds.  No matter how many people you let into the nation to show that we are a society unblemished by racism, ethnic hatreds, etcetera, etcetera, when in fact, that is precisely what our enemies seem to be motivated by, their hatred for us!

I would like to say something about this increasingly dangerous threat, we are allowing those who hold the seeds of our demise into the country and at some point, this suicidal situation must come to its inevitable end.  Yes, I understand the shame with the internment of the Japanese citizens living on our western coasts during World War II but at some point, common sense must come to the forefront and we must ignite our survival instincts!

The next thing that irritates the hell out of me as an American citizen is the latitude that the government gives to the remaining terrorist suspect in charging him as a common criminal rather than as the slimy little backstabbing terrorist that he is.  Tamerlan Tsarnaev lies dead of multiple gunshot wounds, goodbye, and good riddance to that troubled little piece of human garbage.  However, his younger brother, Dzhokhar Tsarnaev lies in a hospital bed (or did at the time of this writing) with a bullet wound through his throat and guess what?  The administration almost immediately declared that it would try him as a common criminal rather than as the terrorist scum he is and that they would give him all of his rights as enumerated under the Constitution of the United States as well as under the Miranda Act of 1966 or 67.  I am asking you this: we were kind enough to offer them asylum from “persecution” in their homeland but once they take up arms, bombs, whatever against American civilians, then why must we be so “nice?”  Send them to Guantanamo Bay, try them before an American military tribunal, and sentence him to a lifetime of hard labor busting up rocks!  He does not deserve living out the rest of his life (hopefully!) in a country club American prison, he deserves constant torment every single waking moment until the day his last breath exits his body.  Enough is enough, for once, I agree with that worthless RINO, Senator Lindsay Graham, scumbag that he is.

I am asking you to reflect for a moment on this somber topic, it’s something that we have been doing quite a bit here at the AICP-END lately, what with all of the issues that are taking place in the nation now—like legalizing more than eleven million illegal aliens.  It’s amazing how within less than a week, a major al-Qaida strike was shut down north of the border when some terrorists were brought down by a joint taskforce of the Royal Canadian Mounted Police and the Federal Bureau of Investigation.  Could it be that all of this was part of a bigger plot?  The news media reported that the Canadian terrorists were going to blow bridges between Canada and the U.S., possibly more but authorities apprehended them at the last moment; therefore, it appears to me that we are under siege and that we need to be on high alert at all times!  Oh, for the color-coded threat system George W. Bush had while he was in office, that man knew how to deal with terrorism and did a damned fine job of it!

Okay, we cannot spend the entire blog’s allotment on discussing politics as I am fearful that the government might shut our blog down once again as it did during the summer of 2010.  Back then, all we discussed was the political scene until we commenced writing about food ninety percent of the time and discussing politics 10 percent of the time.  We reopen the Hawaiian and Polynesian Cuisine category once again and today, I am presenting to you an amazing recipe for Deep-Pit Chicken Hawaiian-style.  If you are ready to do it to it, I suggest that we get going and do it now:

(#1762) DEEP-PIT CHICKEN

 


Chicken is a magnificent creature with which to work as there are myriad ways in which, to prepare it.  The Hawaiian and Polynesian peoples love it and this is one of the ways I learned to prepare it while living and working in Hawaii.  I think that once you have had the opportunity to place the first bite into your mouth, you definitely will agree with me on this, as this dish is among the best in my entire repertoire and quite possibly yours, too.

Method:


1.     Mis-en-place: have everything ready with which to work! First of all, always rinsed your fresh chicken pieces and then remove any loose flaps of skin that might make them appear unattractive; I am not saying remove all of the fat as fat is necessary, just some of the excess, if it exists. 

2.     Preheat standard oven to 375°F or a convection oven—fan “off” for now—to 325°F.  Select a baking dish or roasting pan having a tight-fitting lid and then spray it heavily with food release spray.  Place the chicken pieces within it, then into the preheated oven, and bake for about 20 minutes; then, remove the pan and pour out some of the excess fat.  Drop the oven temperature by 50°F.

3.     Combine the soy sauce, chicken stock, brown sugar, and the rest of the ingredients up to but not including the veggies in the bowl of an electric mixer equipped with a WHIP attachment.  When blended, pour the mixture over the blanched chicken pieces, then add the vegetables, cover with aluminum foil, and then top with the tight-fitting lid to acquire a double seal.  Return to the oven and if using the convection oven, turn the switch to “on” now and bake the contents for about 2-2.5 hours.

4.     When time is up, remove the pan from the oven, remove the lid and foil, taking care to stand back to prevent being scalded by the escaping steam.  Strain the liquid out of the pan into a heavy-duty saucepot and place over medium flame.  When it comes to a boil, stir in enough of the cornstarch/clear gel to give it a mild thickness and return it to a boil.  When it’s there, leave it there for about 45-60 seconds until it’s clear, then pour it over the contents of the pan, recover, and return to the oven. 

5.     Bake the chicken for another 30 minutes, then remove it and check the temperature.  Cooked chicken must register 165°F or higher and once there—and the meat is tender—remove it and prepare to serve.  To serve, place 2-3 pieces of chicken onto each plate at six o’clock accompanied by the pan sauce, the veggie garnishes but take care to remove the parsley sprigs.  Place 1-2 scoops of steamed white rice onto each serving plate (double the suggested amount of rice if necessary—you be the judge) at two o’clock and oriental-style vegetables at 10 o’clock.  Garnish with freshly minced parsley flakes, slivered scallions, and sprinkle the rice scoops with shaken paprika.  Serve with soy sauce, hot sauce, and anything else deemed necessary, then enjoy.

6.     Always strain the liquid from leftovers so you can cool the chicken as quickly as possible.  In addition to removing the liquid, strain out any vegetable matter remaining in it then cool both the chicken pieces and the liquid separate from one another.  As soon as it’s at 45°F or cooler, place the liquid into one sanitized container equipped with a tight-fitting lid and the chicken into another.  Label, date, keep refrigerated and when reheating, always return to 165°F.  Also, add new vegetable garnishes replacing the old but note, it’s important to serve the leftovers as soon as possible, within 1-2 days.  After that, discard them and start anew.

Deep-pit chicken is a Hawaiian-Polynesian tradition; it is tasty, easy to make, and looks wonderful.  In addition to that, it does not take a great deal of attention once it’s up-and-running and the thing to do is to prep it the day before so all you have to do is to cook it the next.

One thing I would care to mention is that many times, when we make recipes such as the one above that the perfect seasoning formula many times is the tongue of the person preparing it.  Therefore, unless your tastebuds are desensitized, you need to be the final judge when preparing the dish so therefore, I urge you to be acquainted with all of the different herbs and spices as well as the various spice formulas used in different cuisines.  Perhaps one of these days, we will spend a week doing a series on the spices and herbs used by different cultures and regions around the world.

          Thanks for joining me here today and please note that the battle to secure the Senate and to keep the House commences now, not next year.  I realize that now is only the end of April 2013 but let me say this: we need to begin sifting through the possible candidates whom we can put up for office so we do not screw ourselves as we did in 2010 when we lost some key seats.  We lost some last year, too, but this time, we cannot afford to do so, it’s important to fight competitively for every single seat, especially in the Senate as if we do not reclaim it or worse—lose the Senate—the horrors of Obamacare, officially Patient Protection and Affordable Care Act is going to come to full fruition. The medical system is going to transform forever and we will no longer have access to the type of healthcare with which, we are accustomed.  Please, let me recommend to you a very important book, one we are pushing everywhere: Obama Care Survival Guide by Nick J. Tate, a very important book published by Humanix Books, West Palm Beach, Florida, 2012.
