Bakersfield, CA, 03-18-2013 M:  Greetings again, hello, how is everyone and are we ready to get this show on the road?  When last I was here, it was the first week of August and I know I was saying some pretty unusual things for a member of the Green Party who votes Democrat.  I have had some fears over where the country was going and said that if Mr. Obama won reelection, that maybe it would be a good thing if the world did come to an end on December 21, 2012, you know—the Mayan Calendar prophecy and all that stuff.  Well, it looks as if it did not come to pass, which is fine with me because I enjoy the world and like it for what it is.  I had some disagreement with where the Democrats wanted to take the party but now am reconciled to what is happening in the nation and the world.   I think the number one problem exists with the Republicans who seemingly have become the party of “no,” something I realize the Dems became when George W. Bush held the office.   I think the Republicans do their best to throw stumbling blocks in front of progress but now, progress seems to be unstoppable.   
The things upon which, I differed were the Affordable Healthcare Act because for many of us in a position to hire our fellow Americans, that is the ONE thing that is going to derail that idea forever because there is no way that any of us can afford it.   I spoke to my employees about the ramifications of what the passage, the reinforcing of it means to them, and they were stunned: they thought that everyone was going to be better off and when I told them the opposite, they were shocked.  EVERY person is going to have to buy insurance as otherwise; they are going to have to pay a painful fine.  Even the young and the dumb who bask in the sunshine of good health are going to need to obtain health insurance as otherwise, when it comes time to file their income taxes, if they do not have it, they are in trouble!   People need to have insurance whether they like it or not with very few exceptions: (1) the illegals are still going to haunt the hospital emergency rooms of our nation and (2) those flying under the radar in our society.  In essence, those the law is meant to benefit are going to be in the same place they were when this entire brouhaha began in 2009: still living in the shadows!
I am torn, my friends, I believe in the need for laws to combat the effects of Global Warming and as of now, with very few exceptions, the Democrats are the only ones concerned with the issue.  Yes, I know that “evidence” appeared several years ago when emails from East Anglia University in the United Kingdom were hacked but that was a set up as all of us know that Global Warming is real.  It is a major threat to the developed world and even worse in the less-developed world and it is up to the United States and the European Union to forge ahead.  The amount of pollution encircling our globe increases exponentially every single day and something must be done lest we do usher in the end of the world as predicted by the Mayans.  I believe President Obama is concerned with this issue that he is fighting very hard to save the planet and that without him or his guidance; we stand to lose the world, as we know it.  We must thank our lucky stars that in these dangerous times we have someone as gifted as he to lead the world, I just wish he would do something to make the Obamacare Act more palatable to business owners, I would hate to have to close my doors and put my people out in the street!
Anyhow, we will continue this discussion and more as the days unfold but one further thing: I am sorry that Mayor Bloomberg is having issues with what he is trying to do for his fellow New Yorkers; it is high time someone stood up and provided guidance to the calorie-challenged among us.  I for one have forbid my servers to serve anything but the proper quantities of beverages to the customers as if we do not follow his lead, who is going to be responsible for the explosion of the grossly overweight who are to come?  I do not want to be responsible for fattening up the customers who depend upon my guidance to enlighten and to lead them nutritionally as if I do not, they will suffer more heart attacks, greater health issues, you name it, its coming and it is up to us to do something about it now!

I drew the card for the Saucier once again and I am glad to do it, it is always important for professional chefs to delve into the world of the sauce-monger, as without him or her, our foods are horribly bland, tasteless, and yucky.  One of the things I am going to attempt to do this week is to present sauce ideas that are light, heart-friendly, and nutritionally sound so you can begin finding your own way.   If any of you have anything to say or to add to what we do here this week, please! Leave your comments so we can all work hard to learn together, that is an extremely necessary thing for us to do in this increasingly discordant world.  We need to work together and we need to do it soon, so without anything else, let us get started, shall we?

(#0387) RED ONION SAUCE

 

In the “old days,” the choices of ingredients for sauces were pretty basic as the great French chefs tended to have a wide variety of sauces all based upon the “Five Families” of sauces.  Nowadays, however, modern chefs reach out and pull a wide variety of ingredients together creating many more sauces than ever existed in the Golden Age of French Cuisine and once the genie is out of the bottle, there is no putting him (or her) back in.  This sauce is a savory yet sweet one perfect for dishes that want some zing but also a fair amount of sweetness.  Once you have tried this sauce, you will find it to be a fine addition to your pantheon of sauces so try it!
Yield:  6-7 cups / Mis-en-place: 1 hour:

Method:

1.     Mis-en-place: have everything ready with which to work! Combine the chicken stock and the orange juice and place over a medium-low flame.  You want it to be HOT when you combine it with the roux.

2.     Place the butter into a skillet and raise the flame to medium.  As it heats, add the julienned onions and the two sugars.  Begin sautéing them, taking care to stir them frequently.    
3.     As the onions begin tenderizing, add the vinegar, which leads to the mixture caramelizing.  Take care frequently to stir the mixture, as this is important, you do NOT want it to scorch or to burn in any way as this leads to a negative flavor, which the saucier cannot remove.
4.     Add the seasonings to the above mixture with the exception of the parsley flakes.  As you continue stirring, add the flour to the onions and cook the mixture until you have a semi-dark roux before you.  Raise the temperature underneath the stock-juice mixture to a boil, then begin whisking it into the roux, taking care to whisk constantly so that both parts incorporate thoroughly. 
5.     Let the sauce boil for 1-2 minutes; then, reduce the heat to bare minimum and simmer the sauce for 15-20 minutes.  Through the process of reduction, the sauce both thickens and the flavors intensify.  When time is up, check and readjust the flavor as necessary and either tighten with a bit of cornstarch or clear gel slurry or a pinch of additional dark roux.  Your sauce is now ready.
6.     Keep the sauce warm on your steam table or close to the burners for immediate use; otherwise, if you plan to use it later, transfer it into a pan placed atop a cooling rack and allow it cool.  When completely cool, pour the sauce into a sanitized airtight container equipped with a tight-fitting lid.  Label, date, and refrigerate but use within 1-2 days. 
7.     Uses:  red onion sauce is for use on poultry, seafood, pork, or game animals.  Use it singly or in conjunction with other sauces. 
Making sauces is what it is all about as that is what provides variety to an otherwise base menu.  This is where successful specials emanate, the marriage of an excellent sauce with an exceptional cut of meat, seafood, or poultry.  Keep the recipe on hand, as you definitely are going to find a place for it!

AHEAD OF THEIR TIME

          Last time I was here, I believe, we were doing albums by Spirit, Jo Jo Gunne, and Jay Ferguson and I am so excited that we are doing the Mothers of Invention and Frank Zappa.  I had the opportunity to have seen Frank and the Mothers numerous times while living in California back in the day.  I lived in Hanford, California, which is sort of a nowhere place except to those who live there but we used to go down to Los Angeles, Hollywood, and over the coast numerous times while in college and I am telling you, I am quite proud that I saw them!  These guys were very talented, sure, it was mostly Mr. Zappa who had the creative spark and yes, the original band was not musically as sound as the band during the Eighties but you know what?  It is what it is and the Mothers were one of those acts that everyone needed to see at least once in their lifetime!  All of the original albums released by Warner Brothers Records were great, maybe not for the musicianship as mentioned but then, Frank was always a great guitarist no matter where you rank him.  Anyhow, please be sure to buy all of the albums advertised by us because the AICP-END recommends nothing but the best!  There, I said it, act on it!
