Bakersfield, CA, 03-30-2013 S:  Hello, friends, I am glad we have arrived at Saturday, for Catholics, this is Holy Saturday, a very important day. I think we can learn something from Jesus, what he dealt with throughout his life and in the context of today’s world, our leaders are sorely wrong in the way they are living.  For one thing, the Sequestration is all we heard about and then when Mr. Obama went to Israel last week, something I congratulated him for, he then went over to Jordan, our number two ally in the Middle East.  Currently, the Jordanians are being overloaded with Syrians escaping the war going on in their midst, something which, the Jordanians cannot handle, they do not have the money as they are one of the few non-oil rich nations.  What does our President do?  Well, he somehow came up with $200 million—yes, $200 million in a time in which our country no longer can afford White House tours, cannot keep control towers open at airports, cannot provide the help and aid our military in the field—and at home, for that matter!—they so desperately need.  Meanwhile, the Vice President, the illustrious Mr. Joe Biden, travels to France and spends $1 million on hotel bills in two days.  How is it our leaders can live so lavishly while our citizens face the overwhelming catastrophe of Obamacare, taking more and more of our money from us on a daily basis and it’s not yet fully in effect!  What in the world is going on?

Do not get me wrong, I hate criticizing our leaders in the way some of my peers do here at the AICP-END but even I am hard-pressed to understand what is happening here.  It is as if a band of Mongols roared in from the steppes of Asia and took over the government in the way they did to the Chinese centuries ago.  They live large, eat well, go to parties, and do all sorts of things while the regular people creep about the streets looking for scraps of food in dumpsters.  The same thing was happening in pre-Revolution France, the people were told to “eat cake” when they asked for food and in time, they rose up in one of the most violent revolutions seen in modern times.  Now, I am not saying that we are heading to a revolution but what I am saying is that it is difficult not to observe similarities, comparisons are there for all to see.  Why is the government so intent upon removing the guns, putting restrictions on the law-abiding citizens while flooding our streets with thugs of the worst kind: rapists, pedophiles, perverts, it’s getting worse by the day.  Is this something they have designed to punish us, I have said it before and will say it again—the blowback of all of this is going to be enormous and I am glad I live in Hawaii and not on the mainland.   All one has to do is to look out their window, smell the air, feel the revolution happening in the hearts and minds of America’s citizens, and our enemies around the world rub their hands in glee!

We are primarily a cooking blog but now, how can we go about our business of cooking when our employees worry about their diminishing checks.  How can I look them in the eye, smile, reassure them that all is going to be okay, to have faith and pray for deliverance.   Friends, I am frightened, I am very frightened, the world is turned upon itself, things are going from bad to worse and it looks like there is no rescue now.   Without faith, I have no idea how or when we are going to be delivered, who knows, maybe this is the End of the World, just a few months off from when we initially expected it.   We live in a time of widespread abortion, child murder, rape, incest, sexual slavery, the times are bad and getting worse and tomorrow of all days is Easter!  The day the Lord returned to us from the grave, yes, I know, it sends you liberals into a tizzy but remember: most of us were raised with God’s love, why did you fall out of the light and into the darkness of liberalism?   The United States is the greatest nation on the face of the earth and now, it’s a crumbling relic of a once prosperous time when we led the world.  Yesterday, I mentioned moving to Belize, something I am seriously considering—somewhere the dream still exists!

Friends, please attend church tomorrow at your time of choosing, it is important that we all return to the Light that is there awaiting us.  We have a strong faith here in the islands and it’s important that we as a people, from one end of the nation to the other, exercise our God-given rights to worship as we please.   Happy Easter to all and one, I mean it with all my heart.  Now, let us get on to what we came here to do today, make another wonderful sauce, Oriental Lemon Sauce:

(#0357) ORIENTAL LEMON SAUCE BASE

 


Nowadays, not every kitchen can afford a saucier to devise the daily sauces so that task typically falls to the sauté chef—if they have one of those!  Unfortunately, what with all of the chain restaurants hiring illegal aliens, the low information folks, and kids (if kids still can find a job), they need to buy premade sauce mixes.  Unfortunately, this sauce mix is not for them, it is for true chefs who need to have a wide variety of different sauces to meet every need and for those of you who like to serve oriental dishes of all types, this one is perfect for that luscious lemon chicken.  You can either use it as an entrée or as an appetizer sauce or, for that matter, as a dipping sauce.  Once you try it, you are going to love it so I suggest you get started!
Yield: about 1.5 quarts / Mis-en-place: 35-45 minutes

Method:
1.     Place the first eight ingredients into the bowl of an electric mixer equipped with a WHIP attachment.   Begin rotating the whip on low speed taking care to lift the bowl—if necessary—in order thoroughly to combine these ingredients together.  When you accomplish this task, turn the mixer off and proceed to the next step:
2.     Combine the next five ingredients in a saucepot and place over medium-high heat; when the liquid begins boiling, pull it from the stove shortly.  Begin ladling in some of the hot liquid into the dry mixture in the mixing bowl, taking care to rotate the whip at medium speed around the insides of the bowl.  Take care to do this rapidly blending the two components together.  Then, pour this mixture through a fine-meshed sieve back into the saucepot and place back atop medium-high flame.  If there are any blobs of spice or gel, do your best to force it through the sieve using a wooden spoon or a rubber spatula, the idea is to blend the liquid into the dry mix, bit-by-bit, mixing all the while, so that the clear gel melds into it without blobs.
3.      As it comes back to a boil, begin whisking it furiously in order to achieve a clear sauce.  It takes a bit for the sauce to begin clarifying but once it does, whisk it constantly so that it does NOT scorch—this is to be avoided at ALL costs!   When it clarifies, lower the heat and simmer it for about 5-10 minutes, permitting both flavor and body to develop and then, whisk in the remaining ingredients and pull from the stove. Pour into a container for use on your steam table for saucing dishes featuring the sauce or for later use, pour it into a shallow container placed atop a cooling rack.  There, cool it quickly to 45°F or less and then prepare it for the fridge by spraying a sheet of wax paper with Crisco Pan Release or some such other food release spray, then placing it—SPRAYED-SIDE-DOWN—atop it to prevent an unattractive skin forming. 
4.     When completely cool, pour it into a sanitized airtight container equipped with a tight-fitting lid, label, date, and keep refrigerated except for when NOT in use; always reheat to 165°F or higher in the top of a double boiler and never return a used amount to the parent batch lest you risk causing foodborne illness-causing bacteria to form.  Use it within 2-3 days; after that, toss it out and start fresh.
5.     NOTE: professional chefs have access to clear gel, a very important thickening agent as like cornstarch it cooks to a CLEAR state. However, the difference between the two is that the clear gel-thickened sauce remains fluid and clear no matter if it is chilled or it is hot—this is why discerning chefs use it not only for sauces but also for pie fillings and other desserts.  If you are at home and cannot find it anywhere, order it from Amazon.com, the world’s largest online department store! 
This is a great, all-around lemon sauce for Oriental dishes and you can bet that you will use it repeatedly. Enjoy!

          People, we must contact our congresspersons and tell them enough is enough, the government is shutting down numerous airport control towers leaving it up to the individual planes landing to decide it among themselves.  Is this how government is supposed to work or are we being punished by this horrendous behemoth looming over us because we will not bow down and worship it?  For those of you who believe in the Book of Revelations, I suggest you begin equating the words of John with what is happening now and begin preparing yourselves for what is to come.  I am considering cancelling my trip to Las Vegas and returning home because I am becoming more and more concerned with the events taking place across the nation and the world.  If the Cypriot government can steal its citizens’ money right out of the banks, it sure as hell can happen here! I mean to do something about it: I am going to look into alternative arrangements in which, to secure my money because the government has no rights to it, not so it can give $200 million to a Middle East kingdom to deal with Syrians flooding their nation while we cannot land our airplanes safely.  Is this what you voted for back in 2008, friends, to be ruled by a potentate intent on consuming our nation like its guava pie at dinner?  Enough is enough, we must hold onto our sovereignty!
